Effects of High Dietary Calcium and Fat Levels on the Performance, Intestinal pH, Body Composition and Size and Weight of Organs in Growing Chickens

  • The effect of fat supplementation of high calcium (Ca) diets on the performance, intestinal pH, body composition and size and weight of organs in growing chickens were investigated in two experiments. Growing chickens tolerated a high dietary level of Ca (22.5 vs 12.1 g/kg) in the presence of 6.3 g/kg of available phosphorus without any significant effect on performance. Intestinal pH was significantly increased by the addition of excess Ca and fat which probably created the right pH for the formation of insoluble Ca soaps. Excess dietary Ca increased carcass linoleic acid concentration at the expense of palmitic and stearic acid contents, whilst the addition of sunflower oil (80 g/kg diet) to the diet increased carcass linoleic acid concentration at the expense of palmitic acid content of the carcass. Intestinal and visceral organ size and weight were not influenced by excess Ca or fat. However, there was a non significant increase in the intestinal dry weight per unit of length caused by excess dietary Ca. It was concluded that excess dietary Ca of 22.5 g/kg did not significantly influence the performance of meat chickens. However, excess Ca increased intestinal pH and altered carcass fatty acid composition. Fat supplementation did not alter intestinal pH with high Ca diets. Excess dietary fat altered carcass fatty acid composition and reduced protein content. Intestinal and visceral organ size and weights were not influenced by excess dietary levels of Ca of fat.

Influence of Supplementing Dairy Cows Grazing on Pasture with Feeds Rich in Linoleic Acid on Milk Fat Conjugated Linoleic Acid (CLA) Content

  • Three experiments were conducted to investigate the hypothesis that cows grazing on pasture produce the highest proportion of c-9 t-11 CLA in milk fat and no further increase can be achieved through supplementation of diets rich in linoleic acid, such as full-fat extruded soybeans or soybean oil. In experiment 1, 18 lactating Holstein cows were used in a randomized complete block design with measurements made from wk 4 to 6 of the experiment. In experiment 2, three cannulated lactating Holstein cows were used in a $3{\times}3$ Latin square design. Each period was 4 wk with measurements made in the final wk of each period. Cows in both experiments were assigned at random to treatments: a, conventional total mixed ration (TMR); b, pasture (PS); or c, PS supplemented with 2.5 kg/cow per day of full-fat extruded soybeans (PES). In both experiments, feed intake, milk yield, milk composition, and fatty acid profile of milk and blood serum were measured, along with fatty acid composition of bacteria harvested from rumen digesta in experiment 2. In experiment 3, 10 cows which had continuously grazed a pasture for six weeks were assigned to two groups, with one group (n = 5) on pasture diet alone (PS) and the other group (n = 5) supplemented with 452 g of soy oil/cow per day for 7 d (OIL). In experiment 1, cows in PS treatment produced 350% more c-9, t-11 CLA compared with cows in TMR treatment (1.70 vs. 0.5% of fat), with no further increase for cows in PES treatment (1.50% of fat). Serum c-9, t-11 CLA increased by 233% in PS treatment compared with TMR treatment (0.21 vs. 0.09% of fat) with no further increase for cows in PES treatment (0.18% of fat). In experiment 2, cows in PS treatment produced 300% more c-9 t-11 CLA in their milk fat compared with cows in TMR treatment (1.77 vs. 0.59% of fat), but no further increase for cows in PES treatment (1.84% of fat) was observed. Serum c-9, t-11 CLA increased by 250% for cows in PS treatment compared with cows in TMR treatment (0.27 vs. 0.11% of fat), with no further increase for cows in PES treatment (0.31% of fat). The c-9, t-11 CLA content of ruminal bacteria for cows in PS treatment was 200% or more of TMR treatment, but no further increase in bacterial c-9, t-11 CLA for cows in PES treatment was observed. Supplementation of soy oil in experiment 3 also did not increase the c-9 t-11 CLA content of milk fat compared with cows fed a full pasture diet (1.60 vs. 1.54% of fat). Based on these findings, it was concluded that supplementing with feeds rich in linoleic acid, such as full-fat extruded soybeans or an equivalent amount of soy oil, to cows grazing perennial ryegrass pasture may not increase milk fat c-9 t-11 CLA contents.

  • The sodium amuounts of 35 food items and of the city supplied tap water in Seoul area were analyzed ay the Atomic Absorption Spectrophotometry. The Korean food exchange lists for the sodium resricted diets were developed from the available data and the ones newly obtained in this research. The food exchange lists provided in this research is compiled from (1) Milk group (2) Vegetable groups : A with the carbhydrate content of 0-4.9% and -B with that of 5.0-14.9% (3) Fruit group (4 ) Grains and starch food group (5) Meat groups : -Low fat meat and protein foods with the fat content of 0-3.0gm ; -Medium fat meat and protein foods with that of 5.0gm and : -High fat meat and protein foods with that of 8.0gm and (6) Fat group. Lists of sweets, alcoholic and nonalcoholic beverages and seasonings and condiments were also provided with the amount of sodium they contain in portions commonly used. 고지방 식이에 첨가된 쑥이 흰 쥐의 혈액성분에 미치는 영향 (The Effects of Mugwort Powder Supplemented to High Fat Diets on Blood Components Levels in Rats)

  • This study was designed to elucidate the effects of mugwort powder supplemented to high fat diets on blood components levels in rats. The levels of mugwort content in the experimental diets were divided into 12, 21, 28% and the fat levels in high fat diet was 30% of total caloie intake. Forty-nine male Sprague-Dawley rats weighing 72.5$\pm$0.3g were divided into group I(add mugwort during 8 weeks), group II(add during 4 weeks) andcontrol group. The results of this study were summarized as follows : 1. There were no difference in body weight gain and FER throughout eight weeks of experiment. The organ weights were somewhat higher in control group, but not significant. 2. The mugwort groups(I, II) were significantly higher than control group in RBC. This result showed that the mugwort affect the content of RBC. Author would like to conclude this result that the RBC content of experim-ental animal was affected by the iron in the mugwort. There were no difference among experimental groups in Hb, Hct. 3. It was noteworty that the concentration of serum glucose and triglyceride in the mugwort groups(I, II) was significantly lower than the control group. This result concluded that concentration of serum glucose and triglyceride which had become high by high fat diet were affected by the calcium or dietary fiber in the mugwort. There were no difference among experimental groups in albumin, total cho-lesterol, HDL-cholesterol.

Effect of Cooking Methods and Lifestyle on Elementary School Children′s Preference for Vegetables Provided in School Lunches

  • Food preference of children may be determined by various lifestyle and environmental factors. This study evaluated the effect of rural or urban inhabitance, cooking methods, and frequency of exposure to vegetable dishes on the acceptance of vegetables by 452 fifth grade children. The subjects were students utilizing meal service in public elementary schools in Boryeoung-city, Chungcheong-nam-do (urban); Cheolwon-gun, Gangwondo (rural); or Pocheon-gun, Kyeonggi-do (suburban). A survey was used to determine the preference of students for 59 foods containing vegetables as a primary ingredient, and categorized by fat content (high, low, or intermediate). Children with working mothers and those living in urban areas tended to have less preference for vegetables than their counterparts in rural areas or with mothers who remained at home. Preference for vegetable foods was correlated with the frequency that vegetable foods were prepared by mothers. Vegetable dishes with a high fat content were preferred over those with low or intermediate fat content, except far soup. This study suggests that children who live in urban areas and whose mothers work outside of the home may be predisposed to nutritional deficiencies due to poor acceptance of vegetable foods, and that all children may be at risk for over-consumption of dietary fat, due to a preference for high fat foods.

이중에너지 방사선 흡수계측법(DEXA)을 이용한 성인들의 체구성과 골밀도 분석 (The analysis of body composition and bone mineral density in adult by using dual energy X-ray absorptiometry)

  • This study was to evaluate the body composition and bone mineral density according to aging in adult and investigated the relationship between various parameters such as body mass index(BMI), bone mineral density(BMD), bone mineral content(BMC), lean body mass(LBM), fat mass(FM) and the value obtained from dual energy X-ray absorptiometry(DEXA). The subjects were composed of healthy adult male and female who were $20^{\sim}73$ years old and they were divided three group according to age (A group : 20-39 yrs., B group : 40-59 yrs., C group : more than 60 yrs.). The conclusion derived from statistical analysis was as follows : 1. Bone mineral content and density were significantly affected by lean body mass(relatively, R=0.85 - 0.63). 2. There was significant difference among age groups in total bone mineral density. 3. There was significant difference among age groups in bone mineral content of male and female. 4. Lean body mass is diminished according to age, but there was not significant difference among age groups. 5. Fat mass of A group in male had the highest mass and followed by C group and B group. In female groups, fat mass of A group had the highest mass and followed by B group and C group. Abdominal fat mass is increased according to age. This result suggest that aging was closely relation with loss of muscle mass, bone mineral density and bone mineral content.

일부 신도시 고등학생의 식생활태도, 체위와 체력 변화에 대한 연구 (Effects of Eating Behavior and Body Fat on Exercise Performance of High School Students in Sungnam Area)

  • This study was carried out with 505(243 boys and 262 girls in the Sungnam area) high school students to investigate the effects of eating behavior and anthropometric variables of weight and height on excercise performance. General characteristics about subjects and eating behavior were surveyed by questionnaire, anthropometric data were collected using two methods. The weight and height of subjects in 1996 were measured, but the same data in 1995 were collected from health records of each student. Body fat content of subjects was measured by BIA(Body Impedance Analysis). The grades of exercise performance, which were evaluated by physical education teachers were collected from records of a physical strength test score of each subject. From these, the following result were found. Groups with different eating behaviors such as skipping meals, overeating, food preference for a specific food(milk, carbonated drink etc.) were significantly different in their weight and height and body fat contents. The growth rate of height in first and second grade boys was significantly higher than that for grade boys. The amount of weight gain from second grade to third grade was significantly more than that of other grades both for boys and girls. The mean of BMI was $21.66\pm{2.95}$ in boy, $21.50\pm{2.62}$ in girls. The percentage of body fat was $24.91\pm{6.55%}$ in boy $34.73\pm{4.88%}$ in girls. Amounts of body fat were significantly increased in third grade. The group with higher fat content and the higher BMI group had lower values of physical strength. And the ability to exercises perform decreased significantly by promotion of grade. The other variables such as degree of concern about weight control and preference of exercise, and frequencies of exercise per week were significant factors in body fat content and physical strength. As a countermeasure for these problems, nutrition and health education must be developed for adolescents and a practical, proper physical activity guidance campaign for them is necessary.

Gastric Fluid and Heat Stress Response of Listeria monocytogenes Inoculated on Frankfurters Formulated with 10%, 20%, and 30% Fat Content

  • This study evaluated the effects of frankfurter fat content on Listeria monocytogenes resistance to heat stress and gastric fluid, and the Caco-2 cell invasion efficiency of the pathogen. A 10-strain mixture of L. monocytogenes was inoculated on frankfurters formulated with 10%, 20%, and 30% fat content (10%: F10, 20%: F20, 30%: F30) and stored at $10^{\circ}C$ for 30 d. The samples were analyzed for L. monocytogenes resistance to heat stress and a simulated gastric fluid challenge. The total bacteria and L. monocytogenes survival rates were measured on tryptic soy agar plus 0.6% yeast extract and Palcam agar, respectively. L. monocytogenes colonies inoculated on F10, F20, and F30 samples were used for a Caco-2 cell invasion assay. In general, no obvious differences were observed between the survival rates of total bacteria and L. monocytogenes grown on different fat contents under heat stress and gastric fluid challenge. However, L. monocytogenes obtained from the F30 samples had a significantly higher Caco-2 cell invasion efficiency than those in the F10 and F20 samples (p<0.05). These results indicate that although high fat content in food may not be related to L. monocytogenes resistance to heat stress and gastric fluid, it may increase the Caco-2 cell invasion efficiency of the pathogen.

한국고유식품중(韓國固有食品中)의 지질함량(脂質含量)에 관(關)한 조사연구(調査硏究) (Contents of Lipids of Traditional Diet in Korea)

  • The purpose of this survey was to determine crude fat, crude protein, phospholipid, and total Cholesterol contents of Seolnong-Tang and Other 11 Samples which are traditional diet in Korea, The results obtained were summarized as folllows; 1) The content of crude protein was $7.34{\pm}1.08%$ in Chueo-Tang to $2.94{\pm}0.08%$ in Sundae-Gug, and the content of crude fat was $7.20{\pm}0.31%$ in Seonji-Gug to $2.64{\pm}0.31%$ in Jog-Tang 2) Triglyceride Content of fat was the highest value in Seolnong-Tang ($89.09{\pm}1.34%$) and the lowest one Samgae-Tang ($75.29{\pm}0.37%$). 3) Phospolipid content of fat showed the highest group in Yuqqae-Jang ($12.39{\pm}0.28%$) and Seonji-Gug ($12.18{\pm}0.31%$) the lowest group was Seolnong-Tang ($4.88{\pm}0.73%$) and Dogani-Tang ($4091{\pm}0.30%$). 4) In total cholesterol content of fat extracted, Bosin-fang ($1732.28{\pm}80.85mg%$) was the highest value and Dogani-Tang ($570.66{\pm}22.04mg%$) showed the lowest. 5) In total cholesterol contents of one diet, the highest group was Seonji-Gug ($667.40{\pm}35.73mg$) and Bosin-Tang ($652.96{\pm}22.27mg$) the lowest group was Jog-Tang ($147.64{\pm}17.33mg$) Daggom-Tang ($174.32{\pm}16.63mg$) and Dogani-Tang ($176.36{\pm}19.13mg$).

Meat Tenderness Characteristics of Ten Major Muscles from Hanwoo Steers according to Quality Grades of Carcasses

  • The objective of this study was to determine the influence of quality grade (QG) on meat tenderness characteristics of ten major muscles from Hanwoo steers. A total of 25 Hanwoo carcasses ($5\;carcasses{\times}5\;QGs$) were selected. Intramuscular fat content, collagen content, sarcomere length, and Warner-Bratzler shear force (WBSF) of Longissimus thoracis (LT), Longissimus lumborum (LL), Psoas major (PM), Semisponals (SS), Triceps brachii (TB), Semimembranosus (SM), Gluteus medius (GM), Rectus Abdominis (RA), Superficialis flexor (SF), and Internal and external intercostal (IC) were determined. IC had the highest fat content, followed by LT, RA, LL, PM, GM, SS, SF, TB, and SM. High-fat muscles such as LT, LL, IC, RA, and PM had significantly (p<0.05) different fat contents among QGs. Collagen contents were significantly (p<0.05) different among QGs. With decreasing QG, increasing collagen content was found in muscles. There were significant (p<0.05) differences in sarcomere length among QGs of several muscles. However, no significant (p>0.05) difference in sarcomere length was found among QGs for LL, PM, or RA muscle. PM had the lowest WBSF, followed by LL, LT, RA, IC, GM, SM, SF, SS, and TB. WBSF of QG $1^{{+}{+}}$ was lower than that of QG 1 for SS, TB, and SM. All muscles of QG 1 showed lower WBSF than QG 3 except TB or IC. Results of this study suggested that differences in WBSF among these 10 muscles by QG were due to differences in collagen content and sarcomere length.
