Traditional cuisine reflects cooking traditions shaped by political, economic, social, cultural, and environmental conditions characterized by authenticity and uniqueness. Traditional food is not only a part of our cultural heritage but also a knowledge resource. Application of food science and technology in Korean traditional foods was reviewed from six points of view, including food preservation, fermentation, changes in food materials, utilization of food functionality, and packaging and development of cooking appliances. Books from disparate times were chosen in order to cover a wide range of materials from the past to the present. Food preservation and fermentation techniques were applied to various food materials. Combination of science and skills contributes to the accessibility of diverse food materials and better quality foods. Koreans use assorted and resilient plants, which have an abundance of functional substances such as food materials. Among cooking appliances, microwave oven and refrigerator are the most innovative products with huge influences on food eating patterns as well as lifestyle. Packaging effectively reduces post-harvest preservation losses, and better packaging has technical improvements for storage and distribution. Kimchi was chosen as an example in order to study technology from the past to the present. Availability of Kimchi cabbage, enrichment of functional ingredients, identification of useful microbial species, standardization of recipe for commercialization, prevention of texture softening, introduction of salted Kimchi cabbage and Kimchi refrigerators, and packaging were reviewed. The future of traditional foods in the market will be competitive. First, traditional foods market should be maintained to protect the diversity of food materials. Secondly, tailored foods for individuals should be considered using foods with functional properties. Information on health benefits would provide insights into health and traditional food products. Third, speedy transfer of new technology to the traditional food industry is needed to ensure food quality production and new opportunities in the market. Fourth, safety of traditional foods should be ensured without sacrificing the essential characteristics of culturally important foods. Improvement of logistics, distribution, and facility should be carried out. As demand for convenience foods increases, traditional foods should be developed into products.
The purpose of this study is to propose the direction of environmental education for early childhood children based on the environment-friendly life style and to improve the possibility of application of it at home and kindergarten. This study reviewed reflectively the early studies on the concepts of ecocentrism, the emerging process of it, the importance of environmental education for early childhood children based on the ecocentrism, and the practice of these kinds of education at home and kindergarten. The main concepts connected to the environment-friendly life style based on ecocentrism, that is, 'preservation of nature', 'interdepentence', 'wholeness', 'equilibrium' are the foundations of environmental education for early childhood children. When these kinds of concepts are considered, the aims of environmental education for early childhood children should be focused on the life style that attaches great importance to the symbiosis of human being and nature. The educational contents and methods in harmony with ecocentrism are as follows: The educational methods should be connected to the education based on ordinariness, the learning through adults' model, the family-community-centered activities, and ways of thinking of the unity of knowledge and conduct. And educational contents should include all of the life styles in clothes, food, and shelter. And the educational methods also should be connected to the education through joint working of children and teacher, play-centered education, activities considering ages and individual variations, and education connected home. And educational contents should include many different kinds of activities of experiencing nature outside home and kindergarten.
Background: Pollinators are important ecological elements due to their role in the maintenance of ecosystem health, wild plant reproduction, crop production and food security. The pollinator-plant interaction supports the preservation of plant and animal populations and it also improves the yield in pollination dependent crops. Having knowledge about the plant-pollinator interaction is necessary for development of pesticide risk assessment of pollinators and conservation of endangering species. Results: Traditional methods to discover the relatedness of insects and plants are based on tracing the visiting pollinators by field observations as well as palynology. These methods are time-consuming and needs expert taxonomists to identify different groups of pollinators such as insects or identify flowering plants through palynology. With pace of technology, using molecular methods become popular in identification and classification of organisms. DNA metabarcoding, which is the combination of DNA barcoding and high throughput sequencing, can be applied as an alternative method in identification of mixed origin environmental samples such as pollen loads attached to the body of insects and has been used in DNA-based discovery of plant-pollinator relationship. Conclusions: DNA metabarcoding is practical for plant-pollinator studies, however, lack of reference sequence in online databases, taxonomic resolution, universality of primers are the most crucial limitations. Using multiple molecular markers is preferable due to the limitations of developed universal primers, which improves taxa richness and taxonomic resolution of the studied community.
2000년대 이후 우리나라의 하구환경 관리는 수십 년간 지속된 개발 일변도의 하구이용에서 벗어나 통합적 관점에서 하구환경을 보전하려는 정책적 변화가 시작되었으나, 그 동안 축적된 연구와 경험의 부족으로 이를 시행할 수 있는 지원 제도가 구축되지 못하였다. 그러나 최근 이러한 한계를 극복하고 통합적 하구환경관리를 지원하기 위한 연구사업이 진행되고 있다. 이 연구는 우리나라 하구관리 정책지원을 위한 연구사업 현황을 크게 하구정책의 수요 충족, 인식 증진 및 지식기반 확충이라는 3가지 측면에서 해외 사례와의 갭 분석을 통해 검토하고, 전문가 대상 설문조사에 기초한 계층화 분석을 기반으로 통합적 하구관리 지원을 위한 정책적 방향을 모색하였다. 분석결과, 우리나라의 하구역 연구사업은 하구환경 관리를 위한 통합적 관점의 정책방향 설정이 필요한 것으로 나타났다. 또한 지역 단위의 인식증진 활동, 교육 프로그램 개발 등을 지원하는 직접적인 내용이 향후 연구사업에 반영되어야 할 것이며, 하구생태계의 구조와 기능에 대한 연구가 더욱 필요하다. 통합적 하구관리정책을 효과적으로 지원하기 위해서는 현행 환경관리체제에 내재된 근본적인 문제와 우리나라 하구역 연구사업이 가지는 한계를 극복할 수 있는 현실적인 방안의 개발이 요구된다.
Paper cultural asset show various deterioration characteristics and behaviors according to the environmental conditions during the storage. The understanding of the paper itself and its conservation knowledge is thus prerequisite to preserve paper cultural assets and pass them to descendants in a good condition. The Annals of Joseon Dynasty is one of the most important our written cultural assets (National treasure No.151) and it is registered as a UNESCO Memory of the World. The Annals of Joseon Dynasty is composed of 1707 volumes and 1,187 books that were written on the official history of 472 years(AD 1392-1863) from King Taejo to King Chuljong (25 generations). Among them, beewax-treated Annals show severe damages due to the deterioration of wax materials such as breaking, hardening, darkening, discoloring and whitening. Urgent measures should be taken to preserve the Annals and prevent further deterioration. Therefore, a systematic and scientific approach on the conservation and restoration of the Annals of Joseon Dynasty is definitely necessary. So it can be used an example to show how much the preservation science can conserve the paper cultural assets. In this respect, this study focuses on analyzing paper properties and deterioration behaviors of the Annals of King Sejong, the most damaged one, using non-destructive micro analysis techniques.
환경유전자(eDNA)는 다양한 환경(수중, 토양, 대기)에 존재하는 생물체로부터 유래된 유전물질을 의미한다. eDNA는 높은 민감도, 짧은 조사시간 등 많은 장점들이 존재하며 이로 인해 생물 모니터링 및 유해생물과 멸종위기 생물을 탐색하는 분야에 다양하게 활용되고 있다. 이러한 eDNA를 채집하기 위해서는 대상생물 및 대상유전자뿐만 아니라 현장 여과방법 및 eDNA 보존방법과 같이 매우 다양한 항목들을 고려해야 한다. 특히 환경에서 eDNA를 채집하는 방법은 eDNA 농도와 직결되는 항목으로서 적절한 채집방법을 사용하여 eDNA를 채집할 때 정확한 분석결과를 얻을 수 있다. 또한 현장에서 채집한 eDNA를 보존하고 추출하는 과정에서도 정확한 방법을 사용하였을 때 현장에 분포하는 eDNA의 농도를 정확하게 파악할 수 있다. 특히 eDNA 연구를 시작하는 연구자들에게 eDNA 분야는 초기 진입 장벽이 매우 높은 기술로서 이를 위한 기초 자료가 매우 절실하다. 본 연구에서는 본 연구는 eDNA가 수생태계를 연구하기 위한 도구로서 보다 널리 이용되며, eDNA를 이용하기 시작하는 연구자들에게 도움을 주고자 수생태계에서 eDNA를 채집하고 및 운반하는 방법과 실험실에서 eDNA를 추출하는 방법을 소개하고, 보다 간편하고 효율적인 eDNA 채집 도구와 방법을 제시하였다.
형상관리는 생산품의 기능과 생애주기에 걸쳐 생산품의 요구사항, 설계 그리고 운전에 필요한 정보 등의 물리적인 특성 및 생산품의 성능을 일관성 있게 유지하며, 이를 확립하기 위한 관리의 한 부분이다. 최근 형상관리 개념이 조직의 구성과 프로젝트 변경관리를 통한 가치의 창출, 리스크에 의한 가치 보전, 변경관리의 사업관리 분야 적용 등 여러 가지로 형태로 정의되고 있음에도 불구하고, 점차 정립이 진행되어가고 있다. CM은 기본적으로 기록과 프로젝트 성능에 대하여 프로젝트의 범위와 시간, 비용을 만족하도록 제공하고 있다. 해외의 세계적인 기업들은 이미 형상관리 시스템을 도입하여 적용하고 있으며, 그로 인한 효과를 보고 있다. 또한 형상관리는 모든 프로젝트에 대하여 전망과 통찰력을 제공한다. 본 연구는 현재 현장에서 사용 중인 시스템을 검토하고 효율적으로 개선할 수 있도록 현재 이슈가 되고 있는 형상관리의 소개와 적용을 연구하였다. 또한 작업절차에 대한 관련 시스템의 구성과 변경관리 및 형상관리의 방법을 보다 효율적인 프로세스 개선방안을 제시하였다. 마지막으로 이 과정에서 가상 프로젝트에 대한 시나리오를 작성하여 시뮬레이션을 통해 결과를 분석함으로서 본 연구의 실용가능성을 검토하였다.
연구는 세종대왕자태실의 문화적 가치에 따른 활용방안을 수립하기 위한 것으로 대중이 가지는 다양한 인식과 의견을 종합 분석하고자 SNS를 통하여 데이터를 수집하고 분석에 활용하였다. 수집기간은 2007년 06월 01일-2017년 06월 30일까지(약 10년 동안)이며, '태실, 성주태실, 세종대왕자태실' 키워드를 포함하고 있는 블로그, 카페, 지식IN에서 자료를 수집하였다. 그리고 빅데이터 분석 기법인 텍스트 마이닝 기법을 활용하여 분석하였으며 주요 분석 결과에 따라 태실의 활용 방안을 도출하였다. 그 결과 세종대왕, 왕자, 성주, 풍수, 문화, 보존, 축복 등의 주요 키워드를 도출하였고, 키워드 '세계', '유산', '문화유산'의 연관성과 '태실', '경상북도', '문화재'의 연관성이 높아 세계문화유산으로서의 태실의 가치를 확인할 수 있었다. 그리고 태실 주변의 시설 재정비 및 환경개선을 통해 방문객들이 자극을 느끼거나 기분전환 할 수 있도록 유도할 수 있는 요인이 필요하다고 판단된다.
대상 지역에서 조사된 관속식물은 53과 114속 124종 16변종 1품종으로 총 141종류로 조사되었다. 이것은 한국산 관속식물 4,191종류의 3.36%에 해당된다. 이들 중에서 귀화식물은 11과 20속 20종 2변종으로 총23종류로서 남한 전체에 분포되어 있는 귀화식물 267종에 대한 이 지역 귀화식물 지수는 8.61%로 조사되었다. 조사된 관속식물은 양치식물이 전체의 0.71%, 나자식물이 0.71%, 피자식물이 98.58%를 차지하고 있어 대부분이 피자식물로 구성되어 있는 것으로 조사되었다. 식물의 생활형의 특성으로 구분하여, 휴면형은 1년생 식물 (Th)이 45종 31.91%, Th (w)이 19종 13.48%, 반지중식물 (H)이 17종 12.06% 등의 순으로 분포하였다. 조사대상지역 관속식물의 번식형이 지하기관형 (Radicoid form)은 지하나 지상에 연결체를 전혀 만들지 않는 단립식물의 비율이 99종 70.21%로 가장 많았으며, R4는 13종 9.22%, R2.3은 12종 8.51%로 조사되었다. 번식형 중 종자나 과실의 산포를 유형화한 산포기관형 (Disseminule form)은 중력산포형 ($D_4$)이 62종 43.97%, 풍수산포형 ($D_1$)이 23종 16.31%, $D_{1.4}$이 21종 14.89% 등의 순으로 분포한다. 이러한 식물의 생활형의 분포비율을 조사함으로써 식물 군락에서 종 조성 뿐만 아니라 환경요소에 대한 군집의 반응 또는 공간의 사용, 군락 내에서의 가능한 경쟁관계에 대한 정보를 파악하여 생물다양성을 유지 증진하기 위한 서식지 보존에 관한 기초자료로 활용 되어 질 수 있을 것으로 사료된다. 한편, 금후 과제로서 생물 분포량을 조사하여 식물상과의 상관을 분석함으로서 비오톱 유형별 서식지의 질을 판정할 수 있을 것으로 기대된다.
1970년 중요무형문화재 보유자 인정제도가 도입되면서 '원형규범'이 채택되었다. 규범으로 채택되기 이전에도 '원형'은 문화재 보존의 방향으로 통용되고 있었다. 법규상 원형의 개념은 형태적인 개념이다. 그러나 구전 및 실연에 의해 전승되어온 무형문화재의 특성상 과거 어느 시점에 누구에 의해 실연되는 것을 원형의 형태로 확인하거나 특정할 수 없으므로, 지정 인정행위의 시점에서 현존인이 실연하는 기 예능을 중심으로 원형을 설정하고 보유자를 인정하였다. 따라서 근원적 실체로서 '원형' 이 아닌 지정 인정 당시의 보유 기 예능이 '잠정적 원형'으로 설정되면서 '원형보존' 정책이 시행되었다. 원형보존 정책은 '원형'을 보유한 보유자의 전수교육과 전승자 양성을 통하여 시행되었으며, 보유자(보유단체)를 중심으로 한 배타적인 전승환경이 조성되기에 이른다. 그러나 이러한 원형보존 정책에도 불구하고 지정 당시의 기 예능은 사회적 환경과 수요에 맞게끔 변화가 진행되어 보존하고자 했던 형태적 의미의 '원형'은 보존되지 않았다. 그럼에도 불구하고 원형규범은 근대화, 서구화 등 외부환경으로부터 우리 전통문화를 보존하기 위한 사회적 실천의 지침 내지는 지향점을 지닌 시대적 담론이었으며, 무형문화재 보존정책의 당위적 지침으로 정책적 실효를 거두었다고 평가할 수 있다. 2016년 3월 시행될 예정인 무형법은 무형문화재의 변화적 속성을 고려하여 '원형' 대신 '전형'을 도입하였다. '전형'은 무형문화재 주변부의 변화를 인정하여 원형의 경직성을 탈피하고자 한 것이다. 그러나 법규상 '전형'에 해당하는 고유한 가치, 지식, 기법이 문화재 보존의 지침 또는 원칙에 따라 유지되어야 하므로 전형은 원형과의 단절보다는 관련성과 연장선에서 볼 수도 있다.
