Relationship between Emulsion Stability Index and HLB Value of Emulsifier in the Analysis of W/O Emulsion Stability (W/O형 유화계의 유화안정성 분석에 있어서의 유화안정지수와 HLB값과의 관계 규명)

  • The stability of W/O emulsions (milk fat : water=4 : 1, w/w) containing various emulsifiers was compared to determine the effect of different chemical types of emulsifiers in relation to the change of HLB value caused by emulsifier type and the influence of single vs. binary emulsifier systems. These variables were compared at emulsifier HLB values of 0.5~16.7 and at emulsifier concentrations of 1.0~3.0%(w/w). Eleven emulsifiers used as 11 different single mixtures and 16 different binary mixtures were evaluated in W/O type emulsion systems containing 20.0%(w/w) of water in milk fat. This W/O emulsion was stable (more than 90.0 of ESI value) in the range of low value of emulsifier HLB (less than 4.7 of HLB value). All the ESI values of binary emulsifier systems were higher than those of single emulsifier systems. But, the influence pattern of emulsifier HLB on this emulsion stability in single emulsifier systems was very similar to the trend in binary emulsifier systems.

  • A Polymeric emulsifier was synthesized by solution polymerization with 2-ethylhexyl acrylate, n-butyl acrylate, and acrylic acid. A series of polymeric emulsifier have been used in the emulsion copolymerization of 2-ethylhexyl actryacrylate and n-butyl acrylate. The size of the synthesized latex particles was around 145 nm and its distribution was very narrow. Emulsion with polymeric emusifier showed no coagulum after 7 cycles of freeze-thaw test, while the emulsion with traditional emulsifier exhibited coagulum after 2 cycles. The adhesion tests showed that the initial tackiness and peel strength decreased as the molecular weight and acrylic acid content of polymeric emulsifier increased, whereas the holding power increased.

Optimization of the Conditions for the O/W Emulsion Containing ${\omega}3$ Polyunsaturated Fatty Acid (${\omega}3$계 고도불포화지방산을 함유한 고안정성 수중유적형 유화계의 확립)

  • The stabilities of O/W emulsions (lipophilic core material:lipophobic wall material=3:2, w/w) containing various kinds of emulsifiers were compared to determine the optimal conditions of the HLB (hydrophilic lipophilic balance) value, the concentration and composition of emulsifier, the ratio of core material to the wall material, and the concentration and composition of polymers in the wall material. The effect of different chemical types of emulsifiers and the influence of single vs. binary emulsifier systems were compared with 13 kinds of emulsifier HLB values of $0.6{\sim}16.7$ at the concentration of 0.50%(w/w). The emulsion system was stable (more than 99.0 of ESI value) when the HLB value of the emulsifier was more than 11.0 or less than 2.8 of emulsifier HLB value. But it was unstable (less than 40.0 of ESI value) at the HLB value of the emulsifier between 3.4 and 8.6. Especially, we could find out the emulsion containing the emulsifier of polyglycerol polyricinoleate (PGPR, HLB 0.6) became stable creamy state. And, the ESI value of binary emulsifier system containing 0.25%(w/w) of PGPR and 0.25%(w/w) of polyoxyethylene sorbitan monolaurate (PSML, HLB 16.7) was higher than that of any single emulsifier system at the concentration of 0.50%(w/w). The highest emulsion stability was obtained in the liquefied wall material composed of 0.25%(w/v) of waxy corn starch and 0.50%(w/v) of agar.

The Effect of Molecular Size and Degree of Phosphorylation on the Emulsion Stability of Microcrystalline Chitin (Chitin의 분자량과 Phosphorylation 정도가 Microcrystalline Chitin의 유화안정 능력에 미치는 영향)

  • This study was carried to investigate the emulsion stability of microcrystalline chitins (MCC) prepared from chitins of different molecular sizes and different degrees of phosphorylation in a model fatty food system. Chitins of low, medium and high molecular size prepared from crabshells were phosphorylated to 30-50% to make MCC. MCC prepared from chitin of medium molecular size revealed a high emulsion stability. The best emulsion stability was observed in MCC prepared from medium size chitin with 40% phosphorylation (M-40-MCC). The fat binding capacity of MCC was not significantly different among the samples. MCC with 50% phosphorylation had more fat binding capacity, ranging from 650-690%. When 2.46% of M-40-MCC was applied to a coconutoil-water system as an emulsifier, emulsion separation was observed from 10 min after emulsification, indicating that it could not be used as a sole emulsifier. When 50% of emulsifier (Span-60 &Tween-60) in a liquid coffee creamer, selected as a model fatty foods, was replaced by M-40-MCC, emulsion stability was as good as control. Consistency of liquid creamer was decreased and L value increased as the amount of MCC repacement increased. A liquid creamer with 50% emulsifier replaced by MCC had sensory characteristics equivalent to control.

Preparation of Cosmeceuticals Containing Broussonetia kazinoki Extracts: Optimization Using Central Composite Design Method (닥나무 추출물이 함유된 Cosmeceuticals의 제조: 중심합성계획모델을 이용한 최적화)

  • In this paper, the stability criteria of cosmeceuticals emulsion containing Broussonetia kazinoki extracts was established using the central composite design model. As optimization conditions of the emulsification using the central composite design model, concentrations of the emulsifier and emulsion stabilizer were used as a quantitative factor while emulsion stability index (ESI) and polydispersity index (PDI) were used as a reaction value. The targeted values of ESI and PDI were estimated as over 60% and the minimum number, respectively. Optimized concentrations of the emulsifier and emulsion stabilizer were 3.73 and 3.07 wt%, respectively, from the emulsification optimization based on ESI and PDI values. The estimated reaction values of ESI and PDI were 60% and 0.585, respectively. As concentrations of the emulsifier and emulsion stabilizer increased, the stability of the emulsion prepared tended to increase. The emulsifier was one of the most influential factors for ESI than the emulsion stabilizer. On the other hand, the PDI value was similarly affected by both the emulsion and emulsion stabilizer. The ESI of the cosmeceuticals emulsion prepared under experimental conditions deduced from the central synthesis planning model showed at least about 45% of the stability. However, all of the emulsions were separated after 4 weeks from the initial preparation. When the concentration of the emulsifier was more than 3.72 wt%, the ESI value was over 60%. Also the layer separation rate decreased with increasing the emulsion stabilizer concentration.

Emulsion Stability of Low Viscosity W/O Emulsion and Application of Inorganic Sunscreen Agents (저점도 W/O 에멀젼의 유화 안정성 증진 및 무기 자외선 차단제의 적용)

  • In this study, we tried the various experiments using the emulsifier, electrolyte, stabilizer and gelling agent in order to improve a stability of low viscosity W/O emulsion. As a result, when we used polyglyceryl-4 diisostearate/polyhydroxystearate/sebacate as a main emulsifier, PEG-30 dipolyhydroxystearate and cetyl PEG/PPG-10/1 dimethicone as a co-emulsifier for stable emulsification system, 0.5 % sodium chloride as an electrolyte, 1 % distearyldimonium chloride as a stabilizer, 0.5 % glyceryl behenate/eicosadioate as an oil gelling agent, emulsion particle is the best. Also, we got the stable and low viscosity W/O emulsion maintained at a constant viscosity at 2,000 cps or less. In addition, we were able to examine the possibility of development of low viscosity fluids type sunscreens with excellent feeling and stability through the application of inorganic sunscreen agents.

Effect of Glutamic Acid and Monosodium Glutamate on Oxidative Stability of Riboflavin Photosensitized Oil-in-Water Emulsion

  • Effects of glutamic acid (Glu) and monosodium glutamate (MSG) on oxidative stability of oil-in-water (O/W) emulsions with different emulsifier charges during riboflavin (RF) photosensitization were evaluated by analyzing headspace oxygen content and conjugated dienes. Cetyltrimethylammonium bromide (CTAB), Tween 20, and sodium dodecyl sulfate (SDS) were used as cationic, neutral, and anionic emulsifiers, respectively. Glu acted as an antioxidant in CTAB- and Tween-20-stabilized O/W emulsions during RF sensitization, whereas Glu acted as prooxidants in SDS-stabilized O/W emulsions in the dark. However, adding MSG did not have a constant impact on the degree of oxidation in O/W emulsions irrespective of the emulsifier charge. In RF-photosensitized O/W emulsions, the emulsifier charge had a greater influence on antioxidant properties of Glu than on those of MSG.

  • This study was aimed to evaluate the effectiveness of hydrophilic, lipophilic antioxidants and emulsifiers by HLB (hydrophilic lipophilic balance) in different oil systems. Lipophilic antioxidant (${\delta}-tocopherol$), hydrophilic antioxidant (gallic acid) and emulsifier(lecithin, tween 20, span 60) were evaluated in relation to oil stability in bulk oil system (soybean oil) and emulsified with Tween 80 at $60^{\circ}C$. In the storage test ($60^{\circ}C$), gallic acid was more effective on the stability of oil oxidation than ${\delta}-tocopherol$ in bulk and emulsion system. Lecithin as a hydrophilic emulsifier was more effective than tween 20 on the stability of oil oxidation in bulk and emulsion system. Also span 60, a lipophilic emulsifier, was more effective than tween 20, a hydrophilic emulsifier, in bulk and emulsion systems.

Emulsion Graft Copolymerization of Methyl Methacrylate onto Cotton Fiber (면섬유에 대한 Methyl Methacrylate의 유화 그라프트 중합)

  • Emulsion graft copolymerization of MMA onto cotton fiber using Ce(IV) salt as an initiator was carried out. Graft yield and graft efficiency were observed according to the kinds and concentrations of emulsifier and polymerization conditions. The physical properties of MMA grafted cotton fabric were investigated. The results of this study were as follows: 1. The heighest graft yield of emulsion graft polymerization occurred at the concentration below cmc of emulsifier, which was different from emulsion polymerization. Nonionic sur- factant as an emulsifier was more effective than anionic one. 2. The highest graft yield was obtained at the initiator concentration $1{\times}10^{-2}mol/l$. The viscometric molecular weight of PMMA was in the order of 106. 3. As reaction time increased, the graft yield increased but the graft efficiency decreased. 4. Elevation of reaction temperature resulted in increase of graft yield. The apparent activation energy of MMA graft polymerization was 4.72 Kcal/mol. 5. Physical properties of MMA grafted cotton fabric varied with increase of grafting. Thickness and stiffness showed a noticeable increase, whereas tensile strength and elongation was slightly increased. Crease recovery increased as the graft yield increase up to $50\%$ and decreased thereafter.
