Microwave energy (2450 MHz) was applied to extract health-effective component (HEC) from grape seed. Three different solvents approved for grape seed extract such as water, ethanol and acetone, were confirmed in their microwave-heating properties and by which extraction efficiencies were determined. Microwave-assisted extraction (MAE) was performed under different parameters; microwave power : (0, 50, 100 and 150), time : (1, 3, 5, 7, and 9 min), the sample to solvent ratio : (1:20, 1:10, 1:5 and 1:2.5), and particle size(whole, 20, 40 and 60 mesh) and the subsequent extracts were used for determining their physicochemical properties, such as total yield : (TY), total phenolics : (TP), catechin content : (CC), electron donating ability : (EDA), and browning color. The heating properties of solvent demonstrated the optimal ranges of microwave and time as 100 W and 2 to 6 min. The TY and HFC content were higher with increasing powers in water and ethanol solvent, while HFC content were lower in acetone at over 100 W. The longer of extraction time up to 5 min, the higher extraction efficiency. Based upon the overall MAE efficiency and solvent recovery, it was found optimal to use 10 times volume of ethanol for 10 mesh of seed particle at 100 W.

For this study, extracts of Vitex rotundifolia stems were prepared using reflux water extraction (WE), reflux ethanol extraction (EE) and hot water extract under high pressure (HWE). The extracts were investigated for the total content of phenolic compounds, antioxidant activities, and inhibitory potencies for xanthine oxidase and tyrosinase. The EE extraction method yielded the highest content of polyphenol compounds (176.34 mg/g). The electron donating abilities (EDA) were 93.46${\sim}$96.92%, when extracts were assayed at 1.0 mg/mL. The superoxide dismutase (SOD)-like activity was the highest in the WE extract (47.32% at 1.0 mg/mL). The nitrite scavenging abilities (pH 1.2) were 84.61${\sim}$88.36% and the inhibition of xanthine oxidase were over 90% at 0.5 mg/mL. Tyrosinase inhibition of HWE and WE were 57.84% and 53.47% respectively. It implies that V. rotundifolia stems have potent physiological activities and their activities were differently exhibited depending on solvent fractions.

Extraction characteristics of solid Cheonggukjang and the functional properties of corresponding extracts were monitored by the response surface methodology (RSM). The maximum extraction yield of 12.08% was obtained under the specific extraction conditions, such as microwave power of 132.40 W, ratio of solvent to sample content of 7.57 g/mL and extraction time of 14.11 min. The maximum electron donating ability (EDA) was found as 33.53% at the conditions of 113.26 W microwave power, 16.39 g/mL of ratio of solvent to sample content and 12.67 min extraction time. The maximum superoxide dismutase (SOD) -like activity was 89.62% under the extraction conditions of 61.82 W, 17.06 g/mL and 9.03 min. Based on superimposition of three dimensional RSM with respect to extraction yield, electron donating ability and SOD-like activity obtained under the various extraction conditions, the optimum ranges of extraction conditions were found to be microwave power of $75{\sim}140W$, ratio of solvent to sample content of $3{\sim}12g/mL$ and extraction time of $1{\sim}11min$, respectively.
To develop the health and functional food material from oats, this study was conducted to determine the biologiral activities(antibacterial, antioxidative and mtltmor effects) of oat bran's soluble ${\beta}$-glucans obtained from oat bran concentrate(OBC) by central composite experimental design. The antibacterial effect of oat's ${\beta}$-glucans in the concentration of 250, 500$\mu\textrm{g}$/disc was not detected by paper disc method, and no antioxidative effect of them in the concentration of 5% by electron donating ability. The growth inhibition on tumor cell lines of oat's soluble ${\beta}$ -glucans was significantly higher in the experimental fraction of No. 7(temperature 45$^{\circ}C$, ethanol 15%, pH 6) than the other fractions(p<0.05). The maximal values of growth inhibitions on AGS, Hep3B and A549 cell lines in the cancentration of 1mg/ml are 59%, 58% and 54% respectively. In addition, the inhibition effect on three tumor cell lines of No. 1(temperature 5$^{\circ}C$, ethanol 5%, pH 6) was relatively high. From the results of response surface methodology, as the values of independent variables changed, they influenced the growth inhibition effect on this cell lines. With this on work further research is required to clarify antitumor effects.
