A Study on Vegetable Intakes and Dietary Habits of Middle School Students in Chungnam (충남지역 중학생의 채소 섭취실태와 식습관에 관한 연구)

  • The purpose of this study was to provide basic data for nutritional education for juveniles' desirable vegetable intake by analyzing their vegetable intake, dietary habit and nutrient intakes according to gender of middle school students in Chungnam. The average age of the subjects was 15.0, height was 162.5 cm, weight was 53.5 kg and their average BMI was $20.1kg/m^2$. The frequency of eating supper in girls was lower than that in boys. Many respondents answered that a meal-time was 10~20 minutes. Without gender difference, more than 90% respondents thought that vegetables were good for health. As for the preference of vegetable, subjects responded, "I am in the middle", "I like them", "I dislike them", "I like them very much", and "I dislike them very much" in order, without gender difference. The frequent eaten leaf vegetable was Chinese cabbage, the frequent eaten fruit vegetable was cucumber, and the frequent eaten root vegetable was radish. The favorite leaf vegetable was lettuce, the favorite fruit vegetable was corn, and the favorite root vegetable was sweet potato. The preference degrees of taro and ginger were very low. The reasons why they liked a vegetable were that it was delicious and they ate it at home often. In addition, the reason why they disliked vegetables was that they are untasty in flavor or texture and it showed that many students had a prejudice that vegetables were untasty. The intakes of plant protein, dietary fiber, ash and INQs of dietary fiber, calcium, vitamin C, folate, vitamin E in the group with high preference of vegetables were significantly higher than those of low preference group. The study results indicate that intake frequency and preference of root vegetables in juveniles are low and the major reasons of these results are taste and eating experience of vegetables. In addition, the intake amounts of dietary fiber and folate are poor in the subjects with low preference of vegetables. Therefore, families and schools should make efforts that juveniles can recognize the importance of vegetable intake and select various vegetables properly through the development of cooking methods and systematic nutrition education.

Relation between Beverage Consumption Pattern and Metabolic Syndrome among Healthy Korean Adults (건강한 한국성인의 음료섭취패턴과 대사증후군의 연관성 연구 -2013~2015년 국민건강영양조사를 바탕으로-)

  • Objectives: The purpose of this study is to describe beverage patterns among healthy Korean adults and investigate their association with prevalence and components of metabolic syndrome. Methods: Subjects consisted of 6,927 Korean adults, aged 19-64 years in the $6^{th}$ Korea National Health and Nutrition Examination Survey (KNHANES, 2013-2015). Beverages were regrouped into twelve groups based on food codes and beverage intake (g/day) was assessed by 24-hour recall. Factor analysis was used to obtain beverage patterns. Waist circumference and body mass index (BMI) were used as anthropometric data; fasting blood glucose, triglyceride, high density lipoprotein (HDL), and blood pressure were used as biochemical indicators. The odds ratio (OR) for prevalence of metabolic syndrome and components of metabolic syndrome was assessed using logistic regression analysis. Results: Three beverage patterns were identified using factor analysis: 1) carbonated soft drinks 2) coffee (without added sugar or powdered creamer), and 3) alcoholic beverages. Subjects with high scores for the carbonated soft drink and coffee without added sugar or powdered creamer patterns were younger and subjects with high scores for the alcoholic beverage pattern were older. There were significant differences in gender distribution in all three beverage patterns, with men more likely to have high scores for carbonated soft drink and alcoholic beverage patterns. On the other hand, women were more likely to have higher scores for coffee without added sugar or powdered creamer pattern. Within each pattern, there were significant differences in sociodemographic and lifestyle characteristics such as education, household income, frequency of eating out, and smoking status according to the quartile of pattern scores. Alcoholic beverages and carbonated soft drinks patterns were associated with an increased levels of metabolic syndrome components, but coffee without added sugar or powdered creamer was not associated with any of metabolic syndrome components in healthy Korean adults after adjusting for age, sex, education, BMI, weight management, household income, smoking status, frequency of eating out, and energy intake. Conclusions: Alcoholic beverages and carbonated soft drinks patterns are associated with increased levels of metabolic syndrome components while coffee without added sugar or powdered creamer pattern is not associated with any of metabolic syndrome components in healthy Korean adults.

Evaluation of community water fluoridation program on dental caries prevention in Ulsan (울산광역시 수돗물불소농도조정사업의 치아우식예방 효과평가)

  • Objectives: The aim of this study was to investigate the effect of water fluoridation program(WFP) on dental caries prevention in Ulsan, Korea. Methods: The data of control group were extracted from 2012 Korean National Oral Health Survey(KNOHS). Since 1998, WFP was implemented in Ulsan. The subjects were 670 subjects including 10 to 12-years old children in 2009. The control subjects were 4,871 people in non-fluoridated metropolitan cities comparable to Ulsan. The control subjects were selected from 2012 KNOHS. A self-reported questionnaire was completed by the variables including oral health behaviors on daily frequency of toothbrushing, eating snacks and beverages. Oral health examination was carried out by two dentists who received a training in KNOHS with an inter-examiner-agreement. Caries preventive fraction was calculated by the difference of DMFT and DMFS index. The preventive effects of the WFP program were focused on gender, number of fissure sealed teeth, daily frequency of toothbrushing, eating snacks and beverages. Data were analyzed using SPSS $19.0^{(R)}$(SPSS Inc., Chicago, IL, USA) statistical package. Results: DMFT indices of 12-year-old subjects(n=670) in WFP and control population(n=4,871) were 2.11 and 1.23, respectively with an estimated prevention effect of 41.7%. Conclusions: WFP in Ulsan reduced the prevalence of dental caries. WFP should be recommended for the public oral health program in other metropolitan cities.

Effect of knife castration on leukocyte cytokine expression and indicators of stress, pain, and inflammation in Korean cattle bull calves

  • Objective: This study investigated the effects of surgical castration on behavior, physiological and inflammatory indicators, and leukocyte cytokine mRNA levels in Korean cattle bull calves. Methods: Nineteen Korean cattle bull calves (average body weight, 254.5 kg; average age, 8.2 months) were divided into two treatment groups: control (n = 9) and castration (n = 10). Surgical castration was performed using Newberry knives and a Henderson castrating tool. Blood was obtained just before castration (0 h) and at 0.5 h, 6 h, 1 d, 3 d, 7 d, and 14 d after castration. Plasma cortisol (PC), saliva cortisol (SC), plasma substance P, and plasma haptoglobin concentrations, and the leucocyte mRNA levels of the interleukin-1-alpha (IL1A), interleukin-1-beta (IL1B), interleukin-1 receptor antagonist (IL1RN), and interleukin-6 (IL6) genes were analyzed. Results: Castration decreased (p<0.01) the average daily gain and gain/feed ratio. Castration reduced the time spent eating (p<0.001) and the eating frequency (p<0.01) and increased (p<0.001) the lying frequency. Castration temporarily increased (p<0.05) circulating PC and SC concentrations at 0.5 h after castration. Castration temporarily increased (p<0.05) plasma substance P concentrations at 1 d after castration. Castration increased (p<0.05) plasma haptoglobin concentrations at 1 and 3 d after castration. Castration increased (p<0.05) leukocyte mRNA levels of the IL1A, IL1B, IL1RN, and IL6 genes at 6 h after castration. Conclusion: Castration temporarily induced stress and expression of leucocyte inflammatory cytokine genes in Korean cattle bull calves.

Depression, Health-Related Habits, Eating Habits, and Nutrient Intake of Male Youth Before and After the Outbreak of the COVID-19 Pandemic -Analysis of the 2018 and 2020 Korea National Health and Nutrition Examination Survey- (코로나19 전후 남자청년의 우울, 건강 관련 습관, 식습관 및 영양소 섭취량의 변화 -2018년, 2020년 국민건강영양조사 자료 분석-)

  • This study analyzed the differences in the general characteristics, mental and health-related factors, eating habits, and nutrient intake of Korean male youths before and after the outbreak of the coronavirus disease 2019 (COVID-19). The data of a total of 1,231 subjects, from among the participants in the 2018 and 2020 Korea National Health and Nutrition Examination Survey (KNHANES), were analyzed. The 2020 group had fewer married members than the 2018 group. The subjects in the 2020 group weighed more (P<0.05), had a higher waist circumference (P<0.01), and showed greater weight gain (P<0.05) than the 2018 group subjects. The aerobic physical activity of the 2020 group was lower (P<0.01) compared to the 2018 group. The members of the 2020 group had higher depression scores (P<0.01), suicidal tendencies (P<0.01), and need for counseling for mental problems (P<0.05) than those of the 2018 group. The prevalence of high fasting blood sugar levels and diabetes was higher in the 2020 group compared to the 2018 group. The frequency of breakfast (P<0.01) and dining out (P<0.001) and the proportion of breakfast (P<0.01) and dinner (P<0.05) taken with the family or non-family members was lower in the 2020 group than in the 2018 group. The rate of dietary supplement intake of the 2020 group was higher than that of the 2018 group (P<0.01). There were significant differences in the protein (P<0.05), riboflavin (P<0.01), and carbohydrate (P<0.01) intakes between the two groups. These results suggest that male youths had a higher waist circumference and high levels of depression, and showed a decrease in frequency of breakfast intake and dining out after the out break COVID-19 pandemic. Therefore, nutrition and health promotion programs are urgently needed to improve mental health, other health-related factors and nutritional status of male adults that are associated with the COVID-19 pandemic.

A Study on awareness of environmental management Knowledge and enviromental management behavior of Housewives (주부의 환경관리지식 인지도와 환경관리행동에 관한 연구)

  • The purpose of this study to investigate the awareness of environmental management knowledge and behavior and the effect of independent variables (The environmental management behavior of housewives are composed of five activities-clothing, eating, housing, buying, family management. The independent variables are composed of objective variable and subjective variable). The Research Questions are as follows; 1. Are there significant differences in the housewife's awareness of the environmental management knowledge according to the objective variable and the subjective variable? 2. How much are the effects of related variables on the awareness of environmental management knowledge? 3. Are there significant differences in the housewife's environmental management behavior according to objective variable and subjective variable and awareness of environmental management knowledge? 4. How much are effects of related variables on the housewife's environmental management behavior? For these purpose, a theoretical framework was developed by literature review and applied to empirical test. The data was collected through the questionnaire those respondents were 477 housewives in seoul. It was analyzed by various statistical methods such as Frequency. Percentile, GLM, F-test, T-test, Duncan's Multiple Range Test, Pearson's Correlations Analysis Simple Regression Analysis, and Multiple Regression Analysis. The results of this research are as follows; 1. The awareness of environmental management knowledge had significant differences according to the variables such as housewife's age, husband's job, family number, education experience of environment, frequencies of contracting mass media, the perceived adequacy of resources, social-altruistic orientation. 2. Among all of these variables affecting the awareness of environmental management knowledge, the perceived adequacy of resources had the highest effects and the next were family number, social-altruistic, type of residence in order. 3. Total Environmental management behavior of housewives had significant differences according to the variables such of environment, frequencies of contracting mass media, the satisfaction of household labor, the perceived adequacy of resources, biospheric orientation, social-altruistic orientation, egoism orientation, the awareness of environmental management knowledge. The clothing, eating, housing, family management behavior had the high level, the buying management behavior had the average level. The clothing, eating, housing, buying, family management behavior had significant differences according to the variables such as the satisfaction of household labor, the perceived adequacy of resources, biospheric orientation, social-altruistic orientation, egoism orientation, the awareness of environmental management knowledge. In particular, the clothing, eating, housing, buying management behavior had significant differences according to the variables such as education experience of environment. And the housing, buying management behavior had significant differences according to the variables such as frequencies of contracting mass media. 4. Among all of theses variables affecting environmental management behavior, the most influence variables was awareness of environmental management knowledge and the next were influence of housewife's job, biospheric orientation, the satisfaction of household labor, education experience of environment, frequencies of contraction mass media, egoism orientation in order. Among all of theses variables effecting the clothing, eating, housing, buying management behavior the variables affecting the family management behavior, the most influences variables was housewife's job. In the result of analysing the housewife's environmental management behavior and awareness of environmental management knowledge, influences of education experience of environment had the highest effect and frequencies of contracting mass media may more influencial than other variables. And Concrete and systematic knowledge and technique of environmental education is requisite. The result of this study could be attributed to develop the efficient environmental information. More emphasis should be given to environmental education and a long range environmental policy. in particular, environmental education be effectively related to environmental behavior, life-education and systematic support must be provided. In addition, further study of environmental problem is needed for and application of various theoretical approaches and research method.

A Survey on Self-reported Health and Eating Habit of Elite Female Adolescent Athletes in Incheon by Sport Type (인천지역 대표 중고등학교 여자 선수의 운동경기 종목별 건강 및 식습관에 관한 조사)

  • This study was carried out to investigate the self-reported health and eating habit of the elite female adolescent athletes in Incheon. The subjects were 102 elite female athletes of middle and high schools located in Inchon. A self-administered Questionnaire was used for this cross-sectional survey. Statistical analysis by two-way ANOVA was performed to discriminate between the main effects of age (as middle and high school athletes) and sports type, and their interaction. As use of nutritional supplements, 35.8% of the total subjects took vitamin and iron supplements and 62.5% of field and track athletes took vitamin and iron supplements. While mental stress related to exercise was much in fencing &gt; shooting &gt; field and track &gt; swimming athletes, physical burden during training was higher in swimming &gt; field and track &gt; fencing &gt; shooting athletes. More than half of the subjects showed irregular menstrual cycle. As the most severe problem of eating habit, they reported skipping meal &gt; overeating &gt; prejudiced meal &gt; preference to salty and spicy foods. More than half of the subjects skipped meal over three times per week. Fencing and shooting athletes showed very significantly higher frequency of skipping meal and more irregular breakfast time compared to those of other sport types. As for snack, they ate cookies, carbonated drink, chocolate, candy &gt; milk, yogurt, ice cream &gt; cake, bread, rice cake &gt; fried noodle &gt; hamburger, pizza. Therefore, nutritional counseling and education by sport type are necessary for health and good eating habit of these elite female adolescent athletes.

Effects on School Lunch Service Programme of Elementary School in Rural Area (농촌지역(農村地域) 국민학교(國民學校) 급식아동(給食兒童)과 성장발달(成長發達)과 식생활(食生活) 습관(習慣))

  • The purpose of this study is to know the effects on school lunch service programme of elementary school in rural area, by using the group consisting of the sixth year students in the schools that have provided them with the lunch for six years or longer(male student:312, & female student:324), while using the comparing group consisting of the sixth year students in the schools that have not provided them with the school lunch under their similar living condition(male student: 306 & female student:322). In addition, this study was carried out by examining all continued information about their height and weight shown in the developmetal record for six years from the 1st to 6th year, and by checking their eating habits on the basis of questionnaires. The result of this study is summarized as follows. As the result of comparing the values of their height and weight grown for 6 years, it was shown that the height of the male group provided with school lunch is 27.8 cm while the male group without lunch is 27.1 cm. And the female group provided with school lunch indicated the growing value of 29.9 cm while the group without lunch did 28.4 cm. Then, it appeared that both male and female groups provided with school lunch show higher growing values of 0.7 cm, respectively, and 1.5 cm than these groups without lunch. Also, the weight of the group without lunch was 14.8 kg. Moreover, the weight of the female group provided with school lunch was 16.9 kg while the group without lunch was 17.2 kg. Then, it was shown that the male group provided with school lunch indicates heavier growing value of 0.9 kg than the group without lunch while the female group without lunch does heavier value of 0.3 kg than the group provided with school lunch. It's figure showed that although this distribution according to percentile in the 1st year is similar to the standard regular curve it is positioned in the upper group(more thatn 70%) divided centering around 50% in the 6th year, of which distribution of children provided with school lunch was higher. When comparing the values of physical status in the 6th year, it was also shown that male children with school lunch are better than these children without lunch in jumping, throwing, chinning and lifting while female children are better than these children without lunch only in jumping, which were a significant difference. In addition, the group provided with lunch showed distribution of the higher physical grade. The result of analysis on their breakfast indicated that the children with every morning breakfast account for 67.6% of the group provided with school lunch while the group without lunch for 57.8%. Regarding the reason that they do not have the breakfast, the group with school lunch answered "Because of habits"(50.7%) while the group without lunch did "Because they have no appetite"(58.9%). When comparing the degree of preference for hot or salty food, it was apparent that these children with school lunch generally tend to prefer less hot or sailty food. With respect to the frequency and place of their eating between meals, it was shown that about 70.0% of both groups has the eating between meals, more than one time a day. Then, the group with school lunch had the eating between meals at home(45.2%) while the group without lunch did it in the process of returning to home(48.4%). Regarding the degree of their preference for a certain food, it was shown that more children of the group with school lunch do not prefer a food to others. Also, their eating attitude indicated that such children as eating the food with chat after completely swallowing food and with T.V watching are larger and lower among the group with school lunch, which showed a remarkable defference from the group without lunch. With respect to their sanitary habits such as hand washing and toothing, these children who always wash their hand before eating, accounted for 84.4 % of the group provided with school lunch while the group without lunch did for 63.6%, of which the female group with school lunch indicated a remarkable difference. The actual condition of their nutrition education showed that these children who answered "Received this education" accounted for 78.0% of the group with school lunch while the group without lunch accounted for 57.5%.

An Exploratory Study for Identifying Factors Related to Breakfast in Elementary, Middle and High School Students ($\cdot$$\cdot$고 학생의 아침식사와 관련된 요인들에 대한 탐색적 연구)

  • This study was carried out to identify factors related to breakfasts in elementary, middle and high school students. This study was surveyed by questionnaires and data was analyzed by SPSS program. Exploratory analysis was conducted according to three school student groups (elementary children, middle school students, and high school students). The subjects were 1,886 school students (female 893, male 959) of 51 schools in the nationwide region. The distribution of subjects was elementary school children 544, middle school students 661 and high school students 681. The results are summarized as follows. Only sixty percent of the subjects had breakfast regularly. About one fourth of the subjects had the habit of skipping breakfast or eating it 2$\sim$3 times per week. Frequency of having breakfast and reasions of skipping breakfast were significantly different according to school student groups (p < 0.001 respectively). The rate of skipping breakfast was $14.4\%$ in elementary school, $16.1\%$ in middle school, and $25.0\%$ in high school. The main reason for skipping breakfast was 'not delicious or poor appetite' in elementary school ($42.5\%$), but 'busy' in middle ($50.2\%$) and high school ($61.1\%$). There was no significant difference in frequency of having breakfast according to living areas (rural and urban). There were not significant differences between frequency of having breakfast and BMI and degree of satisfaction on body weight. But there were significant difference in frequency of having breakfast according to economical status (p < 0.05). There were significant differences in degree of school performance according to frequency of having breakfast (p < 0.001) There was significant relationship between the time of attending school and the frequency of having breakfast. But there were significant relationships between frequency of having breakfast and time of rising. These findings suggested that the time of rising was controlled by having enough time that students eat breakfast. And mother (or person who prepares meals) must have more concerns about preparing breakfast for children and students.

Biochemical Characteristics and Dietary Intake according to the Frequency of Milk Consumption in Korean Adolescents: Data from the 2010~2011 Korea National Health and Nutrition Examination Survey (한국 청소년의 우유섭취 빈도에 따른 혈액 생화학적 특성 및 영양 섭취: 2010~2011 국민건강영양조사 자료를 이용하여)

  • Objectives: The purpose of this study was to examine the biochemical characteristics and dietary intake of adolescents aged 12 to 18 years according to the frequency of milk consumption. Methods: Data from the 2010~2011 Korea National Health and Nutrition Examination Survey was used for the study. The study examined adolescents' (12~18 years) demographic characteristics (house income level, residence region, skipping or not-skipping of breakfast/lunch/dinner, eating-out frequency), anthropometric characteristics (height, weight, weight status), biochemical characteristics (fasting plasma glucose, blood urea nitrogen, creatine, triglycerides, cholesterol, HDL-cholesterol, hemoglobin, hematocrit) and nutrient intakes through quantitative and qualitative evaluation using the Korean Dietary Reference Intakes (KDRI), index of nutrition quality (INQ), nutrition adequacy ratio (NAR) of 3 groups (< 1/week, 1~6/week, ≥ 1/day) according to the frequency of milk consumption. Results: There were significant differences in gender and income levels among the 3 groups. There were no differences in height, weight, and weight status among groups. There were differences in biochemical characteristics and nutrient intake. In boys, there were differences in the mean of BUN and HDL-cholesterol, in quantitative intakes of riboflavin, calcium, phosphorus, potassium by KDRI levels, in qualitative intakes of riboflavin, calcium, phosphorus by INQ and riboflavin, calcium, phosphorus by NAR among 3 groups. In girls, there were differences in the mean of blood urea nitrogen, creatine, HDL-cholesterol, in quantitative intakes of protein, riboflavin, calcium, phosphorus by KDRI levels, in qualitative intakes of riboflavin, calcium, phosphorus by INQ and riboflavin, calcium, phosphorus by NAR among the 3 groups. Conclusions: In Korean adolescents, boys had a higher frequency of milk consumption than girls, and higher the income level, higher the frequency of milk consumption. Consumption of milk appeared to have a positive association with triglycerides, HDL-cholesterol, and indices related to muscle mass. Regular consumption of milk is an important factor in enhancing the intake of riboflavin, calcium, and phosphorus, which adolescents lack. The results of the study indicate a need to prepare an environment and education program to increase milk consumption in adolescents at home and school.
