  • This study was conducted to investigate Korean youths' use of fastfood and family restaurants in different regions, especially among cities and rural towns. Total 1,600 questionnaire surveys were distributed to Junior high and Senior high school students and 1,487 were used for the analysis. In order to consider regional differences as well as overall characteristics of youths' fastfood and family restaurant visiting behaviors, the subjects were evenly sampled from north Seoul, south Seoul, big cities, middle/small cities and small towns. As for the frequency of visiting fastfood restaurants, 58.3% of the respondents answered 'once to five times' a week. South Seoul area showed the highest frequency. 'Easiness' was the main reason of eating fastfood, which was up to 57.8% of the overall respondents while 42.8% of the small town youth ate fastfood because of the 'good taste.' As for the concepts on fastfood, 42.7% understood it as 'easy to eat' while 33.6% responded as 'easy to get fat.' For the question of getting channel of fastfood information, 44.8% answered 'TV' and 28.3% responded 'from friends.' Coupons were found to affect fastfood restaurant visits, highest in south Seoul, and lowest in small cities. For the question of the relationship of Koreanized menus and fastfood restaurant visits, small towns showed the highest frequency, while South/North Seoul had the lowest frequency. For the percentage of visiting family restaurants, respondents answered in the order of South Seoul(59.7%), North Seoul(44.5%), Big cities(39.5%), small cities(19.4%), and small towns(13.1%). Most of youth visited family restaurants because of the taste, while youths of middle/small cities visited due to the atmosphere. The effect of coupons on visiting family restaurants were found to be lower than the one of fastfood restaurants. Korean youths were found to visit fastfood restaurants very frequently in all regions and the tendency of visiting family restaurants is also increasing. At this point, balanced menus and education for healthy eating habits are urgently needed for the youth.

  • The purposes of this study were to examine the influence of breakfast consumption frequency on school food waste and to compare its effect with food service satisfaction and food service management type. The subjects who participated in this study were composed of 978 first grade high school students from 30 high schools in Daegu. The hierarchical multiple regression analysis was carried out for the data analysis using SPSS 12.0 program. School food waste was estimated by visual evaluation method. The questionnaires containing breakfast eating frequency, food service satisfaction, and food service management type were surveyed. According to the results, school food waste was significantly affected by breakfast eating frequency. In contrast, food service satisfaction had a negative effect on school food waste, which was more significantly apparent in less frequent breakfast. Although the amount of lunch waste was influenced by food service satisfaction related with menu, it was not significantly affected by food service management type and food service satisfaction related with hygiene and service. In conclusion, the results indicate that eating breakfast is estimated as a characteristic strategy for improving efficiency of school food service by curtailing food waste. This study suggested that the importance of eating breakfast could be incorporated into the subjects of continuous nutritional education and the strategic planning for promoting efficiency of school food service.

  • The purpose of this study was to investigate the patterns of fast food intake in residential areas and its relation to eating habits among 551 6th grade students (286 male students and 265 female students) from elementary schools located in Gangnam-gu, Dongjak-gu and Seongbuk-gu, Seoul. The results of this study were as follows. 1) There were significant differences in the preference for fast food among districts (p<0.05) and children from Seongbuk-gu showed a greater preference for fast food than those from Gangnam-gu and Dongjak-gu. In terms of preferences for particular types of fast food, children from Seongbuk-gu liked hamburgers more than those from Gangnam-gu and Dongjak-gu so that there were significant differences among districts (p<0.05). With regards to the frequency of intake of the various types of fast food, there were differences in hamburger, pizza and chicken among three districts (p<0.05) and children from Seongbuk-gu ate fast food 1 to significant 2 times more often than those from Gangnam-gu and Dongjak-gu. 2) There were significant differences in the regularity of mealtimes between districts (p<0.05), with children from Seongbuk-gu showing more irregularity in their mealtimes than those from Gangnam-gu and Dongjak-gu. There were significant differences in the frequency of snack intake (p<0.05), and children from Seongbuk-gu tended to take a snack 1 to 2 times more often than those from Gangnam-gu and Dongjak-gu. 3) In the frequency of fast food intake in accordance with obesity, there were significant differences between the obesity index (p<0.05). In particular, children who were underweight had a tendency to eat more fast food. There were significant differences between the frequency of fast food intake depending on children's pocket money (p<0.05), and children who took fast food more than twice a week tended to have more pocket money. According to these results, we report there are partly different trends in the consumption of fast food and food habits among the districts in Seoul. Therefore we suggest that different interventions be implemented within the different districts to reduce reliance on fast food restaurants and to address the perceptions of healthy eating as well as time and convenience barriers.

  • Objectives: The frequency of eating out among adolescents seems to be connected to a high rate of skipping breakfast and be interrelated to various nutritional problems. The purpose of this study was to assess the dietary habits of breakfast and eating out and investigate their relationships in male adolescents. Methods: This study conducted a cross-sectional survey. Dietary habits and eating out status were surveyed among 510 male students at a high school in Incheon and compared according to their breakfast skipping and breakfast type. Results: The percentages of subjects in the breakfast skipping group and breakfast group were 41.0% and 59.0%, respectively, and the breakfast group comprised a Korean meal group (74%) and a convenience meal group (26%). In the breakfast skipping group, the percentage of subjects buying and eating snacks due to hunger was 39.7%. Reasons for eating breakfast among subjects who ate breakfast were because parents prepared breakfast (41.9%) and out of habit (31.5%) in the Korean meal group, in contrast to because parents prepared breakfast (36.7%) and due to hunger (29.1%) in the convenience meal group (P < 0.001). Breakfast preparer was mother (91.4%) in the Korean meal group, in contrast to mother (67.1%) and self (20.3%) in the convenience meal group (P < 0.001). A high proportion of the breakfast group woke up at 07~07:30 or 06:30-07, whereas a high proportion of the breakfast skipping group woke up at 07~07:30 or after 07:30, showing a significant difference according to breakfast skipping (P < 0.001). A high proportion of the breakfast group spent 10,000 won (32.5%) a week eating out while a high proportion of the breakfast skipping group spent 20,000 won or more (28.2%), showing a significant difference (P < 0.01). Conclusions: About 40% of male high school students skipped breakfast and consumed snacks as a solution after breakfast skipping. The students who skipped breakfast spent more money on eating out. These results show that breakfast status may be related to eating out. Therefore, practical education on food choice and meal preparation along with regular breakfast instruction is needed in male adolescents.

We questioned 270 male and female students attending certain middle schools in the Daegu area about their eating habits and food preferences. Eating habits were found to be most regular for students in families where only one parent worked and irregular for students in families where both parents worked. There was a positive correlation between a higher level of academic education of the father and the frequency of consumption of instant foods. There was also a positive correlation between a higher level of academic education of the mother and the frequency of snack consumption. Male students had a higher preference for consuming animal foods than did female students. Students that lived in extended families tented to have a higher preference for vegetable foods. On the other hand, students that lived in nuclear families and students that lived in families where both parents worked preferred snacks more. Based on these results, parental employment and academic education level influences the eating habits and food preferences of middle school students.

We surveyed and analyzed the correlation between the life stress and eating habit of university students. It is analyzed that the objects suffered stress most by 'schooling' and 'job complication.' Surveying the general eating habit of university students, it is found that they do not eat meal regularly, i.e., 'average meals (40.9%)' and 'irregular meal(35.2%).' No significant difference was observed in the regularity of meals between sexes. When it comes to overeating or voracity, male students answered 'sometimes(77.6%)' or 'often(22.5%)', but female students answered 'sometimes(66.2%)' or 'often(28.2%)', which means that female students are more frequent in overeating or voracity. The frequency of eating snack is more than once a day 60.1% in female students and 47.3% in male students, which shows that the rate of female students is much higher than that of male students. • Objectives: Although breakfast is important to nutrition balance, prevention of overeating, and weight control, people in their 20s (males: 55.1%, females: 49.9%) were reported to have the highest rate of skipping breakfast in 2016 Korea Health Statistics. This study aims to examine dietary habits and nutrient intake depending on breakfast frequency among young women in Seoul. Methods: The subjects were 655 young women in Seoul from August to October 2016, and the survey was performed by using a questionnaire that included general characteristics, dietary habits, and eating behavior. Body composition was determined by bioelectric impedance analysis. Nutritional status was examined by the 24-hour recall method. Results: The participants were classified by breakfast intake frequency; '${\geq}5times/week$ (n=160)', '1-4 times/week (n=327)', and 'breakfast skipping (n=168)'. The 'breakfast skipping' group had lower frequency and regularity of meals. In addition, the 'breakfast skipping' group had a higher frequency of eating-out and late-night meals. There was no difference in total calories between the 'breakfast skipping' group and other groups, but the 'breakfast skipping' group had significantly low carbohydrate and fiber intakes. The participants showed lower intakes of calories, fiber, vitamin A, vitamin C, niacin, folic acid, calcium, potassium, and zinc in comparison with recommended intakes. Especially, the 'breakfast skipping' group had significantly lower fiber, vitamin A, vitamin C, calcium, potassium levels compared to the '${\geq}5times/week$' group. For Mean Adequacy Ratio (MAR), the 'breakfast skipping' group recorded a ratio of 0.60, which was lower than those of other groups. Index of Nutritional Quality (INQ) including fiber, vitamin C, calcium and phosphorus were significantly lower in the breakfast skipper group, compared to the breakfast eater group. Conclusions: The 'breakfast skipping' group showed low regularity of meals and a high frequency of eating-out and late-night meals. The breakfast regular eater group showed high intake of micronutrients and quality of meals was high in general. Skipping breakfast could lower nutrient intake and quality of meals, which requires attention.
