A Discrete Mathematical Model Applied to Genetic Regulation and Metabolic Networks

  • This paper describes the use of a discrete mathematical model to represent the basic mechanisms of regulation of the bacteria E. coli in batch fermentation. The specific phenomena studied were the changes in metabolism and genetic regulation when the bacteria use three different carbon substrates (glucose, glycerol, and acetate). The model correctly predicts the behavior of E. coli vis-a-vis substrate mixtures. In a mixture of glucose, glycerol, and acetate, it prefers glucose, then glycerol, and finally acetate. The model included 67 nodes; 28 were genes, 20 enzymes, and 19 regulators/biochemical compounds. The model represents both the genetic regulation and metabolic networks in an integrated form, which is how they function biologically. This is one of the first attempts to include both of these networks in one model. Previously, discrete mathematical models were used only to describe genetic regulation networks. The study of the network dynamics generated 8 $(2^3)$ fixed points, one for each nutrient configuration (substrate mixture) in the medium. The fixed points of the discrete model reflect the phenotypes described. Gene expression and the patterns of the metabolic fluxes generated are described accurately. The activation of the gene regulation network depends basically on the presence of glucose and glycerol. The model predicts the behavior when mixed carbon sources are utilized as well as when there is no carbon source present. Fictitious jokers (Joker1, Joker2, and Repressor SdhC) had to be created to control 12 genes whose regulation mechanism is unknown, since glycerol and glucose do not act directly on the genes. The approach presented in this paper is particularly useful to investigate potential unknown gene regulation mechanisms; such a novel approach can also be used to describe other gene regulation situations such as the comparison between non-recombinant and recombinant yeast strain, producing recombinant proteins, presently under investigation in our group.

양양지역 송이 발생과 기상요소의 상관관계 (Correlation Coefficients between Pine Mushroom Emergence and Meteorological Elements in Yangyang County, Korea)

  • 지금까지 자생지의 기상환경평가는 주로 월별 기상 자료와 연간 발생량을 토대로 하여 분석하였다. 또한, 기상자료도 발생 인근지역의 종관기상자료(기상청)를 주로 활용하였으므로, 기상요소와 버섯 발생량의 상관성을 명확히 구명하는 데 효과적이지 못했다. 따라서 본 연구에서는 강원도 양양의 자생지에 기상측기를 설치하고, 3년간($2003{\sim}2005$)년 자생지 주변의 기상환경과 버섯발생량을 측정 및 조사하여 이들의 상관관계를 분석하였다. 송이의 출현 개체수는 발생초일(9월상/중순)부터 발생종일(10월상/중순)까지 거의 매일 조사하여 기록하였다. 10월의 고온과 잦은 강우현상에 의해 발생종일이 늦추어진 2005년에 가장 많은 송이가 발생하였고, 9월의 적은 강우와 10월의 무 강우현상에 의해 발생종일이 앞당겨진 2004년에 송이가 가장 적게 발생하였다. 수분관련 기상요소(상대습도, 토양수분, 강우량)가 온도관련 기상요소(기온, 지온, 지중열류량, 일사량)보다 발생량과 상관성이 다소 높은 것으로 조사되었으나, 이들의 상관관계는 매우 낮았고($r=0.15{\sim}0.46$), 통계적으로도 유의하지 않았다. 상관관계가 낮은 이유로는 발생량에 관여하는 인자가 기상요소뿐만 아니라 송이의 생물적 특징, 소나무와의 공생관계, 토양, 주변식생 등 다양한 인자가 존재하기 때문으로 생각되었다. 연중 균사생장을 하는 이 버섯원기를 형성하기 위해서는 저온자극이 필요한데, 본 연구에서는 지하 0.05m 깊이의 3일 이동평균된 지온이 $19.5^{\circ}C$ 이하로 떨어지는 일시적인 저온충격이 필요하며 이로부터 16일 후에 버섯이 발생하는 것으로 조사되었고, 송이의 발생종일은 3일 이동평균된 지온이 $14^{\circ}C$ 이하로 떨어졌을 때 나타났다. 받아 흡수기능이 다소 억제되나 그 정도가 매우 경미하였으므로 BCG는 막창자꼬리점막 흡수세포의 기능에 큰 손상을 주지 않는다고 생각된다.PRAM 기록기를 사용할 때에는 in-situ 타원계를 사용할 때보다 1/10 정도의 크기를 보여주어 PRAM 기록기와 분광타원계를 사용하여 결정한 GST의 고온광학물성의 신뢰성을 확인하여 주었다.>, 여자 $179.1{\pm}37.2%$이었다. 평균필요량에 비해 가장 낮은 양을 섭취한 영양소는 엽산으로서 남자 $60.1{\pm}10.8%$, 여자 $54.6{\pm}9.9%$로 조사되었다. 칼슘의 섭취량은 평균필요량에 비해 전체 $74.9{\pm}31.9%$로 나타났다. 에너지 섭취량에 있어서 남자 노인들은 모두가 필요추정량의 75% 미만을 섭취하고 있었고 여자 노인의 경우에도 97%가 필요추정량의 75% 미만을 섭취하여 에너지 섭취량이 매우 낮았다 반면에 단백질 섭취량에 있어서는 남자 노인의 경우 100%가 평균필요량의 125%를 초과하였고, 여자 노인의 경우에는 91%가 평균필요량의 125%를 초과하여 대조적이었다. 비타민 A와 E는 각각 평균필요량과 충분섭취량의 125%를 초과하는 비율이 높게 나타난 반면에 비타민 $B_2$는 특히 남자 노인에서 평균필요량의 75%미만을 섭취한 비율이 높게 나타났다. 엽산 섭취량에 있어서는 평균필요량의 75% 미만을 섭취한 비율이 전체 96%로 나타나 심각한 부족상태로 조사되었다 반면에 철의 섭취량은 남녀 모두 100%가 평균필요량의 125%를 초과하여 섭취한 것으로 나타났다. 아연의 섭취량은 남자 17%,여자 15%가 평균필요량의 75% 미만을 섭취한 것으로 조사되었다. 에너지와 엽산은 모든 노인들에서 평균필요량에 미달되게 섭취한 것으로 나타났다.

한국 임해 공단 연안에서 퇴적물 해수 및 굴 (Crassostrea gigas)의 중금속 함량 (The Concentrations of Heavy Metals in Sediment Seawater and Oyster (Crassostrea gigas) in Coastal Region of Industrial Complex in Korea)

  • To investigate the degree of contamination from Korean coastal region, the concentrations of Cu, Pb, Zn and Cd in sediments, seawater and oyster (Crassostrea gigas) at Masan Bay, Onsan Bay, Daesan industrial complex and their control areas were analysed. Values for sediments, seawater and oyster in the industrial complex coastal region were higher than those in the control area except for seawater in Daesan. The values for dissolved phasc of Cu, Pb, Zn and Cd in seawater showed 0.3~1.75 ${\mu}g/l$, 0.013~0.12 ${\mu}g/l$, 0.20~6.14 ${\mu}g/l$ and 0.007~0.021 ${\mu}g/l$, respectively. The concentrations of Cu, Pb, Zn and Cd in sediments werd 12.0~47.8 ${\mu}g/g$, 6.16~59.5 ${\mu}g/g$, 43.0~230 ${\mu}g/g$ and 0.52~11.2 ${\mu}g/g$, respectively. The concentrations of Cu, Pb, Zn and Cd in oyster showed 12.1~85.6 ${\mu}g/g$, 0.267~1.48 ${\mu}g/g$, 1, 070~3, 250 ${\mu}g/g$ and 3.23~7.71 ${\mu}g/g$, respectively. The contents of heavy metals in oysters at industrial complex coastal region showed that they were not seriously contaminated compared with those of Mussel Watch (1992).

지하수 관개에 의한 수도의 멸준양상과 그 방지책에 관한 연구 (Studies on the Rice Yield Decreased by Ground Water Irrigation and Its Preventive Methods)

  • The purposes of this thesis are to clarify experimentally the variation of ground water temperature in tube wells during the irrigation period of paddy rice, and the effect of ground water irrigation on the growth, grain yield and yield components of the rice plant, and, furthermore, when and why the plant is most liable to be damaged by ground water, and also to find out the effective ground water irrigation methods. The results obtained in this experiment are as follows; 1. The temperature of ground water in tube wells varies according to the location, year, and the depth of the well. The average temperatures of ground water in a tubewells, 6.3m, 8.0m deep are $14.5^{\circ}C$ and $13.1^{\circ}C$, respercively, during the irrigation period of paddy rice (From the middle of June to the end of September). In the former the temperature rises continuously from $12.3^{\circ}C$ to 16.4$^{\circ}C$ and in the latter from $12.4^{\circ}C$ to $13.8^{\circ}C$ during the same period. These temperatures are approximately the same value as the estimated temperatures. The temperature difference between the ground water and the surface water is approximately $11^{\circ}C$. 2. The results obtained from the analysis of the water quality of the "Seoho" reservoir and that of water from the tube well show that the pH values of the ground water and the surface water are 6.35 and 6.00, respectively, and inorganic components such as N, PO4, Na, Cl, SiO2 and Ca are contained more in the ground water than in the surface water while K, SO4, Fe and Mg are contained less in the ground water. 3. The response of growth, yield and yield components of paddy rice to ground water irrigation are as follows; (l) Using ground water irrigation during the watered rice nursery period(seeding date: 30 April, 1970), the chracteristics of a young rice plant, such as plant height, number of leaves, and number of tillers are inferior to those of young rice plants irrigated with surface water during the same period. (2) In cases where ground water and surface water are supplied separately by the gravity flow method, it is found that ground water irrigation to the rice plant delays the stage at which there is a maximum increase in the number of tillers by 6 days. (3) At the tillering stage of rice plant just after transplanting, the effect of ground water irrigation on the increase in the number of tillers is better, compared with the method of supplying surface water throughout the whole irrigation period. Conversely, the number of tillers is decreased by ground water irrigation at the reproductive stage. Plant height is extremely restrained by ground water irrigation. (4) Heading date is clearly delayed by the ground water irrigation when it is practised during the growth stages or at the reproductive stage only. (5) The heading date of rice plants is slightly delayed by irrigation with the gravity flow method as compared with the standing water method. (6) The response of yield and of yield components of rice to ground water irrigation are as follows: \circled1 When ground water irrigation is practised during the growth stages and the reproductive stage, the culm length of the rice plant is reduced by 11 percent and 8 percent, respectively, when compared with the surface water irrigation used throughout all the growth stages. \circled2 Panicle length is found to be the longest on the test plot in which ground water irrigation is practised at the tillering stage. A similar tendency as that seen in the culm length is observed on other test plots. \circled3 The number of panicles is found to be the least on the plot in which ground water irrigation is practised by the gravity flow method throughout all the growth stages of the rice plant. No significant difference is found between the other plots. \circled4 The number of spikelets per panicle at the various stages of rice growth at which_ surface or ground water is supplied by gravity flow method are as follows; surface water at all growth stages‥‥‥‥‥ 98.5. Ground water at all growth stages‥‥‥‥‥‥62.2 Ground water at the tillering stage‥‥‥‥‥ 82.6. Ground water at the reproductive stage ‥‥‥‥‥ 74.1. \circled5 Ripening percentage is about 70 percent on the test plot in which ground water irrigation is practised during all the growth stages and at the tillering stage only. However, when ground water irrigation is practised, at the reproductive stage, the ripening percentage is reduced to 50 percent. This means that 20 percent reduction in the ripening percentage by using ground water irrigation at the reproductive stage. \circled6 The weight of 1,000 kernels is found to show a similar tendency as in the case of ripening percentage i. e. the ground water irrigation during all the growth stages and at the reproductive stage results in a decreased weight of the 1,000 kernels. \circled7 The yield of brown rice from the various treatments are as follows; Gravity flow; Surface water at all growth stages‥‥‥‥‥‥514kg/10a. Ground water at all growth stages‥‥‥‥‥‥428kg/10a. Ground water at the reproductive stage‥‥‥‥‥‥430kg/10a. Standing water; Surface water at all growh stages‥‥‥‥‥‥556kg/10a. Ground water at all growth stages‥‥‥‥‥‥441kg/10a. Ground water at the reproductive stage‥‥‥‥‥‥450kg/10a. The above figures show that ground water irrigation by the gravity flow and by the standing water method during all the growth stages resulted in an 18 percent and a 21 percent decrease in the yield of brown rice, respectively, when compared with surface water irrigation. Also ground water irrigation by gravity flow and by standing water resulted in respective decreases in yield of 16 percent and 19 percent, compared with the surface irrigation method. 4. Results obtained from the experiments on the improvement of ground water irrigation efficiency to paddy rice are as follows; (1) When the standing water irrigation with surface water is practised, the daily average water temperature in a paddy field is 25.2$^{\circ}C$, but, when the gravity flow method is practised with the same irrigation water, the daily average water temperature is 24.5$^{\circ}C$. This means that the former is 0.7$^{\circ}C$ higher than the latter. On the other hand, when ground water is used, the daily water temperatures in a paddy field are respectively 21.$0^{\circ}C$ and 19.3$^{\circ}C$ by practising standing water and the gravity flow method. It can be seen that the former is approximately 1.$0^{\circ}C$ higher than the latter. (2) When the non-water-logged cultivation is practised, the yield of brown rice is 516.3kg/10a, while the yield of brown rice from ground water irrigation plot throughout the whole irrigation period and surface water irrigation plot are 446.3kg/10a and 556.4kg/10a, respectivelely. This means that there is no significant difference in yields between surface water irrigation practice and non-water-logged cultivation, and also means that non-water-logged cultivation results in a 12.6 percent increase in yield compared with the yield from the ground water irrigation plot. (3) The black and white coloring on the inside surface of the water warming ponds has no substantial effect on the temperature of the water. The average daily water temperatures of the various water warming ponds, having different depths, are expressed as Y=aX+b, while the daily average water temperatures at various depths in a water warming pond are expressed as Y=a(b)x (where Y: the daily average water temperature, a,b: constants depending on the type of water warming pond, X; water depth). As the depth of water warning pond is increased, the diurnal difference of the highest and the lowest water temperature is decreased, and also, the time at which the highest water temperature occurs, is delayed. (4) The degree of warming by using a polyethylene tube, 100m in length and 10cm in diameter, is 4~9$^{\circ}C$. Heat exchange rate of a polyethylene tube is 1.5 times higher than that or a water warming channel. 정력자약침의 천식억제(喘息抑制) 및 면역조절효과(免疫調癤效果)에 대(對)한 실험적(實驗的) 연구(硏究) (Immuno-regulatory Effect of Lepidii Semen Herbal-acupuncture at $Joksamni(ST_{36})$ on OVA- induced Asthma in Mice)

  • Objectives : The aim of this study was to investigate the asthma-suppressive and immuno-regulatory effect of Lepidii Semen Herbal-acupu ncture(LS-HA) at $Joksanmi(ST_{36})$ on ovalbumin(OVA)-induced asthma in mice. Methods : C57BL/6 mice out of all the experimental groups, except the Normal group and the LS-HA group, were sensitized and challenged with OVA. The mice in the LS-HA group and the OVA-LS-HA group were treated with LS-HA(1%) at $Joksanmi(ST_{36})$. The mice in the OVA-Saline group were injected with saline at $Joksanmi(ST_{36})$. The mice in the OVA-Needle-Prick group were treated with a single prick with an injection needle at $Joksanmi(ST_{36})$. LS-HA, saline injection and needle prick were administered for 8 weeks, three times a week. Results : The lung weight and total cells in lung of the OVA-LS-HA group decreased significantly compared with those of the OVA-Control group. Total leukocytes and eosinophils in BALF of the OVA-LS-HA group decreased significantly compared with those of the OVA-Control group. The collagen accumulation in the lung sections of the OVA-LS-HA group decreased significantly compared with that of the OVA-control group. The concentrations of IL-4, IL-5, IL-13, IgE in BALF and serum of the OVA-LS-HA group decreased significantly compared with those of the OVA-Control group. The numbers of $Gr-1^+/CD11b^+$, $CCR3^+$, $CD3e^+$, $CD19^+$, $CD3e^+/CD69^+$cells in the OVA-LS-HA group decreased significantly compared with those of the OVA-Control group. The mRNA expressions of $TNF-{\alpha}$, IL-5, IL-4 and IL-13 in lung of the OVA-LS-HA group decreased significantly compared with those of the OVA-Control group. Conclusions: These results suggest that LS-HA at $Joksamni(ST_{36})$ is considered to be effective in treating asthma and to be put to practical use in the future asthma clinic.

Ecotoxicological effects of ballast water effluent teated by an electrolytic method on marine environment

  • Ballast water effluent treated by an electrolytic method contains reactive chlorine species and disinfection by-products (DBPs). In this study, we conducted whole effluent toxicity (WET) testing and ecological risk assessment (ERA) to investigate its ecotoxicological effects on marine environment. WET testing was carried out for three marine pelagic organisms, i.e., diatom Skeletonema costatum, rotifer Brachionus plicatilis and fish Paralichthys olivaceus. The biological toxicity test revealed that S. costatum was the only organism that showed apparent toxicity to the effluent; it showed no observed effect concentration (NOEC), lowest observable effect concentration (LOEC) and effect concentration of 50% (EC50) values of 12.5%, 25.0% and 83.3%, respectively, at brackish water condition. In contrast, it showed insignificant toxicity at seawater condition. B. plicatilis and P. olivaceus also showed no toxicities to the effluent at the both salinity conditions. Meanwhile, chemical analysis revealed that the ballast water effluent contained total residual oxidants (TROs) below $0.03{\mu}g/L$ and a total of 20 DBPs including bromate, volatile halogenated organic compounds (VOCs), halogenated acetonitriles (HANs), halogenated acetic acids (HAAs) and chloropicrin. Based on ERA, the 20 DBPs were not considered to have persistency, bioaccumulation and toxicity (PBT) properties. Except monobromoacetic acid, the ratio of predicted environmental concentration (PEC) to predicted no effect concentration (PNEC) of the other 19 DBPs did not exceed 1. Thus, our results of WET testing and ERA indicated that the ballast water effluent treated by electrolysis and subsequently neutralization was considered to have no adverse impacts on marine environment.

청열탕(淸熱湯)의 생물전환을 통한 항아토피피부염 효능(效能) 연구(硏究) (Effect of Cheongyeoltang (CYT) using Bioconversion on Atopic Dermatitis)

  • In order to improve efficacy of oriental medicines and to study the application of fermented oriental medicine in clinicals, the efficacy of CYT and CYTBH on atopic dermatitis were evaluated. The results and conclusions are as follows. CYT and CYTBH significantly improved the atopic dermatitis symptoms in NC/Nga mice by naked eye evaluation and significantly decreased clinical index in both groups. CYT and CYTBH both decreased the cell numbers of CD3+, CD11b+Gr-1+ cells in dorsal skin. Of the cells, CYT significantly decreased CD11b+Gr-1+ cells whereas CYTBH significantly decreased all immune cells. CYT and CYTBH both decreased the production rate of IL-4 and IFN-${\gamma}$ activated by CD3/CD28. In the case of CYTBH, significant decrease in all cases was observed. CYT and CYTBH decreased the production rate of IL-5, IL-13 and IL-17 in serum. Significant decrease of IL-5 in the case of CYT and IL-5 and IL-13 in the case of CYTBH were observed. CYT and CYTBH significantly decreased transcription of IL-5 mRNA and IL-13 mRNA in skin. Significant decrease in IgG1 and IgE immunoglobulins in serum were oberved in both groups. Significant decrease was only observed in the case of CYTBH. Both CYT and CYTBH significantly decreased the secretion of histamine. Both CYT and CYTBH suppressed erythema, hemorrhage, edema, excoriation, erosion of skin tissues of NC/Nga mice resulting in the decrease of thickness of epidermis. Significant decrease of infiltration of obese cells was also observed. The results above indicated that both CYT and CYTBH had significant efficacy in the treatment of atopic dermatitis through immune modulation. Animal studies showed that CYTBH had superior activity than that of CYT suggesting further and continuous studies on the changes in ingredients or absorption improvement by fermentation should follow.

금오산에서 산회지와 비산화지의 식물군집구조 비교 (A Comparison of the Plant Community Structures in the Burned and Unburned Areas of Mt Kumo-san)

  • This is a report on the recovery of vegetation and secondary succession in the burned area studied from April, 1990 to April. 1991. The forest fire occurred in a part of Mt. $K\v{u}mo-san$ on April, 1986 and the pine forest and its understory vegetation were burned out completely. The floristic compositions of burned (B) and unburned (U) areas were composed of sixty eight and thirty one species (vascular plants), respectively. These species were divided into invaders (47 species), increasers (15 species), deceasers (3 species), neutrals (3 species), and retreaters (10 species) on the basis of summed dominance ratio ($SDR_3$). Biological spectra showed the $H-D_1-R_5-e$ type in both the burned and unburned areas. The species of Lespedeza ($SDR_3$=94.7), Miscanthus (91.95), Festuca (68.33), and Spodiopogon (52.06) were dominant in the burned areas, while the species of Pinus (76.67), Robinia (56.25), Quercus (52.08), and Carex (40.25)were dominant in the unburned area. Dominance index (C) in burned and unburned areas was 0.15 and 0.25, respectively. the index of similarity (CCs) was 0.42. The degree of succession (DS) and species diversity (H) in burned and unburned areas were 675.8, 884.2 and 4.07, 2.05, respectively. The degree of succession in the burned area graduall increased and the burned area was recovered to be simmilar to the unburned area. Evenness index in burned and unburned areas was 0.965 and 0.595, respectively.

발효 청미래덩굴잎 추출물의 혼합에 의한 토복령의 항산화활성 증진효과 (Enhanced Anti-oxidant Activity Effects of Smilax china L. Rhizome Water Extracts Added with Its Fermented Leaf Water Extracts)

  • Aspergillus oryzae로 발효시킨 청미래덩굴(Smilax china L) 잎열수추출물(FSCL)의 첨가가 토복령 열수추출물(SCLR)의 항산화능에 미치는 영향을 조사하기 위하여 각 2% 열수추출물을 0:100 (A), 20:80 (B), 40:60 (C), 60:40 (D), 80:20 (E), 100:0 (F) (v/v)의 조건으로 혼합하였을 때 total polypheno l(TP) 및 total flavonoid (TF) 함량, $OD_{475}$, 전자공여능(EDA), 철환원력(FRAP), xanthine oxidase (XO) 및 aldehyde oxidase (AO)에 대한 저해활성과 관능적 품질을 조사하였다. A와 F의 TP 함량은 각각 3.78 및 9.37 mg/100 mL, TF 함량은 각각 0.24 및 1.84 mg/100 mL로 FSCL이 SCLR에 비하여 TP는 2.48배, TF는 7.67배가 높았으며 FSCL의 첨가비율이 높아질수록 비례적으로 높았다($R^2=0.9887$, $R^2=0.9592$). $OD_{475}$는 FSCL의 첨가비율이 높아질수록 거의 비례적으로 높은 흡광도를 나타내었다($R^2=0.9850$). EDA (% at mL)는 A (25.75%)에 비하여 F (54.63%)에서 2.12배가 높았으며 FSCL의 첨가비율이 높을수록 높아지는 경향을 보였다($R^2=0.9668$). FRAP ($Fe^{2+}{\mu}mole/g$ of dry basis)의 경우도 EDA와 마찬가지로 A (1.18)에 비하여 F (4.92)에서 4.17배가 높았으며, FSCL의 첨가비율이 높아질수록 비례적으로 높았다($R^2$=0.9907). A의 XO에 대한 저해활성(mg/mL of $IC_{50}$)은 1.19로 F의 2.96에 비하여 59.80%가 높았으며, FSCL의 첨가비율이 높아질수록 비례적으로 감소하였다($R^2$=0.9490). 그러나 AO에 대한 저해활성(mg/mL of $IC_{50}$)은 XO의 경우와 반대로 A (3.37)에 비하여 F (1.41)에서 58.16%의 높은 저해활성을 나타내었으며, FSCL의 첨가비율이 높아질수록 높아지는 경향을 보였다. 향에 대한 기호도는 A와 F에서는 각각 2.77 및 2.72점으로 비슷한 값을 보였으며 발효청미래덩굴잎 열수추출물을 20-80 비율로 혼합하였을 때는 다소 향상되는 경향을 나타내었으나 상호간의 유의적인 차이는 없었다. 그러나 40% 혼합(C) 하였을 때는 무첨가 경우(A 또는 F)에 비하여 유의적으로 향상되었다. 맛에 대한 기호도는 F에 비하여 A에서 다소 높은 값을 나타내었으며 C에서 가장 높은 값을 나타내었다. 색상에 대한 기호도는 40-80% 첨가한 경우가 A, F 및 B보다 높았다. 입맛과 종합적인 품질에 대한 기호도는 C, D에서 가장 높았다. 이상의 결과 A. oryzae로 발효시킨 청미래덩굴잎의 열수추출물은 보이차 스타일의 적갈색을 나타내며, 토복령 열수추출물과 혼합함으로써 음료로서의 기호성이 높아짐과 동시에 EDA 및 FRAP와 같은 항산화활성이 높아지나, ROS 생성계 효소로 알려져 있는 XO와 AO의 활성 억제현상은 상반된 결과를 나타내고 있어 이와 관련된 기능성 식품 개발에 대한 기초자료로 활용할 수 있을 것으로 생각한다. 그러나 현재 실험의 결과만으로는 어떠한 성분이 이러한 항산화활성의 변화에 관여하는지는 확인할 수 없으며 추후 계속적인 연구 검토가 필요하다.

식품영양학 전공 및 비전공 여대생의 식습관 및 건강관심도에 관한 비교 연구 - 삼육대학교를 중심으로 - (Comparative Study of Dietary Habits, Mini Dietary Assessment Scores, and Health Interest between Female Students in the Department of Food and Nutrition and Other Departments, Sahmyook University)

  • 본 연구는 삼육대학교에 재학 중인 여대생(식품영양학 전공 여대생 79명과 비전공 여대생 77명) 총 156명을 대상으로 식품영양학 전공자와 비전공자의 식습관, 식생활 평가, 음주와 흡연 등의 기호식품 섭취 및 건강 관심도에 관한 사항 등을 비교하기 위하여 2009년 9월부터 2009년 12월 사이에 실시하였다. 1. 전체 여대생들의 평균 신장과 체중은 각각 161.56${\pm}$4.42 cm, 51.98${\pm}$5.07 kg이었으며, 체질량지수는 19.92${\pm}$1.86 kg/$m^2$로 조사되었다. 그러나 식품영양 전공자와 비전공자의 신장, 체중 및 체질량지수 평균값에는 유의한 차이는 없었다. 2. 식품영양학 전공자는 비전공자에 비해 김치 이외의 채소를 식사 때마다 먹는 비율(39.2%)과 튀김이나 기름에 볶는 요리를 주 2회 이상 먹는 비율(38.0%)이 높았으며, 과일이나 과일 주스를 매일 먹는 비율(29.1%)과 삼겹살 갈비 등 지방이 많은 육류를 주 2회 이상 먹는 비율(15.2%)로 유의하게 낮았다(p<0.05). 3. 하루에 1회 정도 간식을 섭취하는 것으로 조사되었으며, 간식의 섭취에 있어서 식품영양전공자의 경우 우유 및 유제품(37.1%), 과일(40.0%), 패스트푸드 및 튀김류(25.7%)의 섭취가 비전공자에 비해 높게 섭취하는 것으로 조사되었다(p<0.05). 4. 식품영양 전공자의 영양소 섭취 상태는 비타민 C와 비타민 E의 섭취량이 높았으며, 비전공자의 경우 비타민 $B_1$과 콜레스테롤의 섭취량이 높게 조사되었다(p<0.05). 5. 식품영양 전공자는 7.6%만이 건강에 관심이 있다고 답하였으며, 건강을 유지하기 가장 중요한 부분으로 규칙적인 운동 35.5%, 규칙적인 식사 및 영양 보충 32.9%로 답하였다. 식품영양 전공자는 27.8%, 비전공자는 31.2%가 운동을 한다고 답하였으며, 운동은 일주일에 1~2회 하는 것(43.5%)으로 조사되었고, 1회 운동 시 소요되는 시간은 전체 조사 대상자의 45.7%가 30분~1시간 정도라고 답하였다. 6. 식품영양 전공자의 경우 24.1%, 비전공자의 경우 29.9%가 영양제를 복용하고 있었으며, 복용하고 있는 영양제의 종류로는 비타민제제가 69.1%로 가장 많이 차지하였다. 7. 본 연구에서는 여대생들이 흡연보다는 음주를 많이 하는 것으로 조사되었다. 본 연구에 응한 여대생의 87.8%는 음주를 하는 것으로 조사되었으며, 음주를 하지 않는 여대생은 12.2%에 불과하였다. 특히 비전공자의 92.2%는 음주를 한다고 답하였다. 일반적으로 식품영양 전공 여대생들이 영양적 지식을 바탕으로 식품의 선택과 영양소 섭취량이 비전공 여대생에 비해 더 양호할 것으로 생각되나, 본 연구에서의 식품영양 전공 여대생들의 식생활 평가는 비전공자 여대생에 비해 아주 우수한 편은 아니었으며, 영양소 섭취 상태에서 식품영양 전공자들은 항산화물질인 비타민 C와 비타민 E의 섭취량이 높은 반면에, 비전공자들은 콜레스테롤의 섭취량이 높게 조사되었다. 따라서 식품영양 전공 여대생의 경우, 배운 지식을 실생활에 응용하여 적용할 수 있는 실질적인 방법의 유도가 필요하며, 식생활 개선을 위한 계기가 마련되어야 할 것이다. 비전공자의 경우 주입식의 지식보다는 경험을 통한 영양교육이 절실히 요구되며, 다양한 도구들은 이용한 식품영양에 관한 교양 수업의 방법이 도입되어야 할 것이다. 또한 대중매체의 정확한 정보의 전달을 통해 누구나 쉽게 접할 수 있는 영양교육 형태도 필요할 것으로 사료된다.
