  • Deer Antler has been known for its traditional oriental medicinal properties and has been widely used to promote growth, boost immune function, treat blood loss and chronic joint pain. Recent study showed imported (New Zealand) Deer Antler was beneficial in reducing the side effects of cancer treatments. However, there was no intervention study conducted on the effect of Korean Deer Antler on reducing the oxidative stress to patients with diabetes. One of the sensitive ways to measure endogenous oxidative stress is by measuring cellular DNA damage using single cell gel electrophoresis (COMET assay). This study was conducted to investigate the possible beneficial effect of commercial Deer Antler drink (provided by Chung-yang Deer Farm) on lymphocyte DNA damage and blood glucose of diabetic patients. Ten patients (4 men, 6 women) participated in the study and consumed 2 pouches of Deer Antler drink every day for 20 days. Blood was collected on the morning before and after the intervention for lymphocyte isolation and blood glucose analysis. Both systolic and diastolic blood pressure showed a tendency to decrease but did not reach statistical significance after the trial. Blood glucose level was not affected by the supplementation. After the intervention, over 50% reduction were noted in the cellular DNA damage, expressed as tail length (TL) and tail moment (TM: tail length ${\times}$ percent tail DNA) . Although we did not obtain beneficial effect on lowering blood glucose levels in the patients, this results suggest that Deer Antler may initially act in protecting endogenous DNA damage in short-term experiment.

  • This study was conducted to investigate beverage consumptions in relation to food intakes of Korean young people. One hundred thirty five college students(61 males and 74 females) living in Taegu, Kyung-buk and Taejon answered to questionnaires and recorded three day food intakes between May 20 and June 5, 1997. The preferred beverages were fruit juice, carbonated drink, dairy drink, sport beverage for male students, and fruit juice, dairy drink, sport beverage and carbonated drink for female students. Beverage taken most frequently was coffee for both. Frequent consumption of orange juice was associated with consumption of vegetables, meats, and fats and oils used for frying, and light cola seemed to be consumed with greasy dishes. Beverage consumption contributed to intakes of calcium and vitamin $B_2$more than other nutrients. 4.6% of total energy intake, 15.5% of calcium intake, 11.4% of vitamin $B_2$ provided from beverages in female. Contributions of beverages to nutrient intakes were higher in female than in male students. Calcium intake was the lowest among nutrients for males, and intakes of iron and vitamin A were the lowest for females as compared to the recommended dietary allowances. Therefore it is necessary to guide college students to choose beverages for balanced intakes of necessary nutrients.

  • With the change of patterns and the environment of the national standard of living the prohlem of environmental pollution became increasingly serious. Because of the enormous increase of various kinds of used and (after utilization) useless articles, efforts to save resources as well as the environment and the promotion of reprated utilization and recycling are inavoidable. The recognition of an environmental an health problem, and the desire for nonpollution created a desire for environment-friendly products in order to avoid an environmental consumptionism. Drink vending machines making use of vessels only once are closely related to the environmental problem. It is therefore necessary to develop an ecologically designed vending machine. In this study the backgrounds and concepts of green design, classification, construction and the environment of a drink vending machine arc analyzed. From this st1.rting-point a concept for the design of a drink vending machine is developed by two concepts : Type A (seperated-gathering type) and Type B (recycling type). Then three defferent types of vending-machines arc introduced a wall -adherable type, a center est1.blishable type and a desk top type. The conclusion of the text is threefold. There are needs for an ecological design of vending machines, ergonomIc considerations and a harmonization of the styldapperarance) of the machine and its circumferences.

  • Quality deterioration of barley drink during storage was examined by measuring viable count, titratable acidity (TA), turbidity and pH of barley drinks with or without barley particles stored at temperatures of 20, 25, 30, and 35$^{\circ}C$. Qualitative analysis of organic acids in spoiled barley drink was also performed. TA of barley drink during storage increased to 0.009, 0.0095, 0.0097 and 0.020% at 20, 25, 30 and 35$^{\circ}C$, respectively. TA reached the mixima between 7 and 10 days of storage and reduced from then on. pH values followed the exactly reverse trend of TA. The rate of bacterial spoilage of barley drinks was faster when it was stored at higher temperatures. The numbers of bacteria were in the range between 9.0${\times}10^6-8.0{\times}10^8$ cells/ml depending on the storage temperatures and the different brands. Those samples with higher bacterial growths showed higher optical densities. Volatile organic acids such as acetic, formic, propionic, isobutyric, isovaleric acids were detected in addition to ethyl alcohol. Non-volatile organic acids such as pyruvic, lactic, oxalacetic, succinic, fumaric acids were detected. Among them, acetic acids were most important in their quantities. Five different kinds of spoilage bacteria were isolated and identified as Bacillus Licheniformis, Bacillus coagulans, Badillus cirulans, Bacillus stearothermophilus and Bacillus brevis, all of which were found to form endospores.
