미강 식이섬유의 조성과 보수력 및 전분노화에 미치는 영향 (Composition, Water-Holding Capacity and Effect on Starch Retrogradation of Rice Bran Dietary Fiber)

  • 추청과 수천 두 품종의 벼에서 얻은 미강에 함유된 총 식이섬유를 AOAC방법으로 정량하였고, acid detergent fiber(ADF) 방법으로 식이섬유의 성분을 분석하였다. 미강의 식이섬유 함량은 25% 이상이었고 대부분 불용성이었다. 미강 식이섬유의 주성분은 헤미셀룰로오스이었으며 상당량의 셀룰로오스와 uronic acid가 특징적으로 함유되어 있었다. 화학적 처리에 의한 가용성 식이섬유(SDF)의 함량과 보수력(WHC)의 변화를 측정한 결과, 산과 알칼리를 연속적으로 처리한 경우에 SDF함량과 WHC가 뚜렷하게 증가하였다. 미강 식이섬유의 기능성을 조사하기 위하여 밀가루에 미강 식이섬유를 여러 가지 함량으로($0{\sim}100%$) 첨가하고 WHC를 측정한 결과, 식이섬유의 첨가량에 비례하여 밀가루의 WHC가 증가하였다. 또한 differential scanning calorimetry(DSC)로 얻은 thermogram으로부터 미강 식이섬유는 전분의 노화를 지연시킴을 알 수 있었다.

운동 수행 능력 및 체력증진을 위한 효율적 영양관리에 관한 연구 -식이급식 조건에 대하여- (A Study on Nutritional Management for Improvement of Exercise Capacity and Physical Fitness -For Dietary Feeding Condition-)

  • This study was directed to further clarify the effect of resting time or dietary condition for the improvement of exercise capacity and physical fitness, and the changes of some body consitiuents and physiological functions which are related to the exercise metabolism. Sixteen male students(8 athletes and 8 nonathletes)were participated during 3 weeks(Aug. 20-Sep.9, 1989). Each subject performed two treadmill running trials at an absolute intensity (1 mintute in 3.4mph/15% slope and 2 minutes in 5.5mph/20% slope). In the resting time trials, general diet was fed before 1, 2, 4 and 12 hours of the treadmill exercise loaded. in the dietary condition trials, high carbohydrate(HC), high fat(HF) and high protein(HP) diet were fed before 2 hours of the treadmill exercise loaded. Control trial was that of resting time before treadmill exercise loaded after 12 hours of general diet feeding. Measurement were made to study the change of blood glucose, palmitate, lactate, blood pressure and heart rate. The results obtained are summarized as follows: Mean daily metabolizable period. In resting time trial, the blood glucose concentration of athlete and nonathlete from 2 hours group was similar to control group. The blood palmitate concentration of athlete was increased in 1 and 2 hours group but those of nonathlete was not only increased in 1 and2 hours group but was more increased in 12 hours group, compared with both control group. The blood lactate concentration was increased in all experimental group, compared with both control group and those of nonathlete was much higher than athlets. The elevation rate of blood pressure in pre-and after-exercise of athlete was lower than those of nonathlete. In dietary composition trial, the blood glucose concentration of athlete and nonathlete in HC group was higher than other diet groups. The blood lactate concentration of athlete and nonathlete in HC group was lower than other diet groups. There was no remarkable change of the blood palmitate concentration and heart rate in each dietary composition trial, but those of nonathlete was low in HC and high in HP group. In above results, it was suggested that the effective condition of resting time and dietary composition for the improvement of exercise capacity of nonathlete may be 2 hours and HC diet, respectively. But it was showed that the exercise capacity of athlete may not be affected by experimental condition of resting time, except 1 hour after feeding or of dietary composition because of well adaptation in new exercise condition.

Preliminary Studies on the Effects of Dietary Genetically Modified Soya and Corn on Growth Performance and Body Composition of Juvenile Olive Flounder(Paralichthys olivaceus) and Rockfish (Sebastes schlegeli)

  • Two feeding experiments were conducted to investigate the effects of dietary genetically modified (GM) soya and com on growth performance, feed utilization and body composition of juvenile olive flounder, Paralichthys olivaceus and rockfish, Sebastes schlegelii. For each fish species, four isonitrogenous (50% crude protein) and isocaloric (4.1 kcal/g) diets (designated as nGM soya, GM soya, nGM com and GM com) were formulated to contain 20% non-GM (nGM) and GM soya and com. Thirty olive flounder (initial body weight, 15.4${\pm}$0.4 g) and fifty rockfish (initial body weight, 3.1${\pm}$0.02 g) were distributed in each 400 L tank (200 L water) in a flow through system. Each experimental diet was fed to triplicate groups of fish to visual satiation, twice a day (9:00 hand 17:00 h) for 6 weeks. Growth performance was measured every three weeks. No effects of GM feedstuffs on survival were observed. Dietary inclusion of GM feedstuffs did not affect growth performance and feed utilization of fishes, except for rockfish fed GM com. Rockfish fed the GM com diet showed higher weight gain, daily feed intake and daily protein intake than did fish fed the nGM com diet, but no significant differences were observed in final body weight between the dietary treatments. Condition factor, hepatosomatic index, visceral somatic index and body composition were not altered by the inclusion of GM feedstuffs. These results indicate that dietary inclusion of GM soya and com could have no effects on growth performance and feed utilization of juvenile flounder and rockfish. Lower weight gain and feed intake in flounder and rockfish fed the diets containing 20% soya were likely due to anti-nutritional factors, rather than transgenic factors in the feedstuffs. Dietary inclusion of GM soya and com at the level tested did not alter the body composition of fishes. Further studies to investigate the effects of GM feedstuffs on health conditions and the development of fishes, as well as those of residue of transgenic fragments in ambient environments and in animals are necessary for safe use of the ingredients in aquaculture.

조정 종목 상비군 선수의 훈련기 신체구성 및 영양섭취에 관한 연구 (A Study of Body Composition and Energy Intake for Intensive Training Period on Junior Rowing Team Players)

  • The purpose of this study was to provide the basic information on nutritional condition for improving performance of the national junior rowing team players(male n=17, female n=14). To attain this purpose, their body composition and energy intake situations were investigated during their three-week winter training camp. Measurement of body composition measured by the interval, and two days, and dietary intake in this study to investigate the type and amount of food, the researchers measured directly, and then refer to the record subjects to investigate the dietary intake and the adoption of a Weighing Method. The result is as follows. During training, body composition due to the high intensity training to maintain a properly balanced diet is the consumption of energy, weight and body composition has a positive influence. The male players' average energy intake is 5,951.6 kcal(72.6 kcal/kgBW, 150%), the rate of the three main nutrients, carbohydrate, fat, protein, is 72.6 : 8.7 : 18.7 respectively. For the female, the average energy intake is 3,685.6 kcal(51.8 kcal/kgBW, 121%), and the rate of the three main nutrients is 76.3 : 8.5 : 15.2. Both of male and female were taken sufficient Vitamin, mineral and other nutrient according to %RI(recommended intake). Based on the results of a survey of elite athletes and nutrition management and the systematic introduction and review of the program in conjunction with a professional nutritionist would need, and can also be applied to expand the school to the scene, the reality of the program review and development of qualified need.

THE EFFECTS OF DIETARY ENERGY LEVELS ON THE CARCASS COMPOSITION OF THE BROILERS

  • A study was conducted to determine the carcass composition of broilers when fed with three varying levels of dietary energy (3,000, 3,200 and 3,400 kcal/kg ME) at 20% crude protein and 0.79% Total Sulphur Amino Acid. The results showed that there was a significant (p < 0.05) increase in the ME intake of the chickens when the ME of the diet increased. Other factors like the protein intake, dressing percentage, weight gain and feed intake were not significantly affected. On the carcass, the increasing dietary ME levels resulted in a significant (p < 0.05) increase in the abdominal fat percentage and carcass fat percentage and a significant (p < 0.05) decrease in the carcass protein percentage. Similarly, the dietary ME produced a significant (p < 0.05) increase in the amount of and fat percentages of breast meat, thigh meat, and drumstick meat with a significant reduction in the protein percentage. There seemed to be an inverse relationship between the percentages of protein and fat. An increase in fat percentages always resulted in similar reduction in the protein content of the meat. These results also showed major differences between the white and red meat of the chicken.

Effects of Dietary Protein and Energy on Growth Performance and Muscle Composition in Broilers Treated with Clenbuterol

  • The present study was conducted to examine the effects of dietary protein (20, 22, 24%) with a constant protein-to-energy ratio on clenbuterol-induced performance in broilers. The protein-to-energy ratio was based on adequate level (22% protein, 3,100 kcal of energy). Female broiler chickens were used for a $3{\times}2$ factorial arrangement and fed diets with or without 1 ppm clenbuterol from 14- to 32-days of age. Feed efficiency improved with increasing dietary protein level, regardless of clenbuterol treatment. The dietary clenbuterol increased weights of breast and leg muscles (gastrocnemius and peroneus longus), and clenbuterol markedly reduced protein content of leg muscles in chickens fed the 20% protein diet, but did not in chickens fed the 22 and 24% protein diets. Feeding the 24% protein diet with clenbuterol improved the protien accretion (peroneus longus) by 8.4%. Clenbuterol decreased DNA content and increased the protein/DNA ratio in breast muscle regardless of dietary protein intake. Clenbuterol had no effect on RNA content in both breast and leg muscles. The present results demonstrated that various protein levels which retain the same protein-to-energy ratio in the diet markedly alter the protein accretion induced by ${\beta}$-agonist in broilers.

Distillers Dried Grain from Makgeolli By-product Is Useful as a Dietary Ingredient for Growth of Juvenile Sea Cucumber Apostichopus japonicus

  • We tested the effects of various distillers dried grains (DDGs) in a formulated diet on growth and body composition of juvenile sea cucumber Apostichopus japonicus. DDG is a solid residue obtained by filtering an aqueous mixture of fermented rice with Aspergillus oryzae and yeasts. Six isonitrogenous and isocaloric diets (DDG0, DDG-G, DDG-C, DDG-K, DDG-W, and DDG-P) were formulated to contain 20% DDG obtained from different Makgeolli factories. Juvenile sea cucumber (average weight, $2.1{\pm}0.02$ g) were randomly distributed in eighteen 50-L rectangular plastic tanks (40 L of water each) in a seawater flow-through system at a density of 50 juveniles/tank. Three replicate groups of sea cucumber were fed each of the six experimental diets at a feeding rate of 5% body weight per day for 22 weeks. At the end of the feeding experiment, survival and weight gain of the juvenile sea cucumber were not affected by the type of dietary DDG (P > 0.05), and the proximate and amino acid compositions of the whole body were not affected by dietary DDG diets (P > 0.05). These results indicate that rice-based DDG is a potential dietary ingredient that could be used at dietary concentrations of up to 20% for growth of juvenile sea cucumber.

죽순의 영양성분 및 죽순의 식이섬유가 장내미생물에 미치는 영향 (The Nutritional Composition of Bamboo Shoots and the Effects of its Fiber on Intestinal Microorganisms)

  • This study evaluated the composition two popular species of edible bamboo shoots in Korea (Phyllostachyspubescens and Sinoarundinarianigra) and the effect of their abundant dietary fiber on intestinal microorganisms in healthy young women. The ranges of total moisture, crude protein, crude lipid, crude ash, and dietary fiber content were 87.190.8, 2.943.5, 0.150.39, 0.411.05, and 4.206.15% (wet weight basis), respectively. Moisture and crude ash content increased after heat treatment; however, crude protein, crude lipid, and dietary fiber content were reduced after heating. The major minerals found in bamboo shoots were potassium, phosphorous, sulfur, magnesium, and calcium. In addition, glucose and fructose were abundant free sugars, while asparagine and tyrosine were the most abundant free amino acids. Approximately 70% of the total free fatty acids found in bamboo shoots were linoleic acid and linolenic acid. The ascorbic acid content was 6.60~17.56 mg/100 g (wet weight basis), and one phenolic compound, p-hydroxy benzoic acid, was 0.10.2% (wet weight basis) and detected by HPLC analysis. The intake of bamboo shoots for seven days significantly increased viable cell counts of Lactobacillus spp. and reduced viable cell counts of Bacteriodes spp. in feces (p<0.05). In our data, bamboo shoots may be useful in the food industry as high dietary fiber ingredients.

Linolenic acid/linoleic acid 비율이 다른 식이가 연령이 다른 흰쥐의 뇌구조지방 조성과 Acetylcholinesterase 활성에 미치는 영향 (Influence of Dietary Linolenic Acid/linoleic Acid Ratio on Brain Lipid Composition and Acetylcholinestease Activity in Different Aged Rats)

  • This study was undertaken to investigate the influence of age and dietary linolenic acid content and the linolenic acid/linoleic acid (LAN/LA) ratio on the brain lipid composition and membrane-bound enzyme, acetylcholinesterase(AchE) activities. AchE was selected as a test case for the relationship between cell lipid composition and cell membrane function. The male rats were fed diets with 0.2, 0.4, 0.6 of LNA/LA ratio within 8% LNA(H-LNA) or 4% LNA(L-LAN) of total fatty acid content for different feeding period(1, 4, 12 month). The fats used s source were sesame oil, perilla oil, soybean oil and beef tallow. The AchE activity of brain crude synaptosomal fraction was reduced with advancing age, showing 20-30% reduction in 12M compared with 1 M, and the P/C ratio was reduced in old rats. In 1 and 4 monthed rats, AchE activites was higher in H-LAN-0.2 and L-LNA-0.2 and 0.4 group. In accordance with rising of AchE activities was higher in H-LNA-0.2 and L-LNA-0.2 and 0.4 group. In accordance with rising of AchE activities, the PC/PE ratio increasedin those groups. Paricularly in L-LNA, the PC/PE ratio increased as the AchE activites for decline of membrane fluidity with increasing cholesterol and decreasing P/C ratio when rats were old. Also, AchE activity increaed with increasing PC/PE ratio which depended on the dietary LNA/LA ratio within each LNA content. Therefore, it is concluded that the lipid composition of cell membrane influenced the AchE activiteis, which was mediated by aging and the modification of dietary LNA/LA ratio.

Effects of Dietary Garlic Powder on Growth, Feed Utilization and Whole Body Composition Changes in Fingerling Sterlet Sturgeon, Acipenser ruthenus

  • A 12 week growth study was carried out to investigate the supplemental effects of dietary garlic powder (GP) on growth, feed utilization and whole body composition changes of fingerling sterlet sturgeon Acipenser ruthenus (averaging weight, 5.5 g). Following a 24-h fasting, 540 fish were randomly distributed to each of 18 tanks (30 fish/tank) under a semi-recirculation freshwater system. The GP of 0.5% (GP0.5), 1% (GP1), 1.5% (GP1.5), 2% (GP2) and 3% (GP3) was added to the control diet (GP0) containing 43% protein and 16% lipid. After the feeding trial, weight gain (WG) of fish fed GP1.5, GP2 and GP3 were significantly higher (p<0.05) than those of fish fed GP0, GP0.5 and GP1. Feed efficiency and specific growth rate (SGR) showed a similar trend to WG. Protein efficiency ratio of fish fed GP1.5, GP2, and GP3 were significantly higher (p<0.05) than those of fish groups fed the other diets. A significant difference (p<0.05) was found in whole body composition (moisture, crude protein, crude lipid, ash, and fiber) of fish at the end of the experiment. Significantly higher (p<0.05) protein and lipid retention efficiencies (PRE and LRE) were also found in GP1.5, GP2, and GP3 groups. Broken-line regression model analysis and second order polynomial regression model analysis relation on the basis of SGR and WG indicated that the dietary optimal GP level could be greater than 1.77% and 1.79%, but less than 2.95% and 3.18% in fingerling sterlet sturgeon. The present study suggested that dietary GP for fingerling sterlet sturgeon could positively affect growth performance and protein retention.
