The Physicochemical Characteristics of Silk-tofu Added with Medicinal Herb Powder (약초 첨가 비단두부의 이화학적 특성 변화)

  • The effect of medicinal herb powder addition on the physicochemical characteristics of silk-tofu was investigated. Moisture content of silk-tofu decreased during the storage. The pH value of silk-tofu decreased a little until 2 days' storage, and then increased rapidly. The chromaticity of L value decreased for all silk-tofu during the storage. The a value increased a little at initial storage, and then tended to decrease, while b values increased significantly during storage. The contents of free amino acid were 4 times higher in silk-tofu than those in market tofu. Hardness, gumminess and chewiness of all silk-tofu increased rapidly during storage. Cohesiveness values decreased a little at initial storage, and then kept to increase upon storage. Generally, the total plate counts of bacteria of all silk-tofu increased during storage, and those of silk tofu with added medicinal herb powder were shown to be significantly lower than those in control. In sensory evaluation, color, structure, softness and overall acceptability of silk tofu with added dangui powder(dang-T) and control(con-T) were about to be high, and nutty taste and flavor of control silk-tofu was the highest in score.

Effect of Dietary Inclusion of Medicinal Herb Extract Mix in a Poultry Ration on the Physico-chemical Quality and Oxidative Stability of Eggs

  • A mixture of three dietary medicinal herb extracts (MHE, mulberry leaf:Japanese honeysuckle:goldthread = 48.5: 48.5:3.0) was prepared as an additive of hen's feed. One hundred-eight, 28-wk-old Lohmann Brown hens were assigned randomly with three levels of MHE in the diet (0, 0.3, and 1%). Hens were fed for 6 wks and eggs were collected in the 6th week, and stored at $4^{\circ}C$ for 14 days to investigate the effect of MHE on the quality and oxidative stability of eggs. Internal quality of the egg including weight, shell color, albumen height, yolk color, shell weight, shell thickness, and Haugh units was not different among the dietary treatments. The oxidation stability of raw and cooked egg was determined by 2-thiobarbituric acid reactive substances (TBARS) value, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity and 2,2'-azinobis(3-ethylbenzonthianoline-6-sulfonic acid) ($ABTS^{+}$) radical reducing ability. Results indicated that TBARS value at day 0 and $ABTS^{+}$ radical reducing ability of eggs from hens fed MHE were higher than from the control group. However, DPPH radical scavenging activity showed no difference in both raw and cooked samples. Results of the present study indicate that dietary MHE may slightly enhance the oxidative stability of eggs.

Effects of Supplemental Medicinal Hem Mixture, Laver Powder and Paprika Powder in Extruded Pellet on Growth and Feed Utilization of Juvenile Olive Flounder, Paralichthys olivaceus (부상 배합사료에 한약재 혼합물, 김 분말 및 파프리카 첨가가 넙치 치어의 성장 및 사료 이용성에 미치는 영향)

  • This study was conducted to investigate the effects of supplemental medicinal herb mixture, laver powder and paprika powder in extruded pellet (EP) on growth and feed utilization of juvenile olive flounder. Triplicate groups of fish (average body weight of 19.6 g) were fed four experimental EPs containing 0.2% medicinal herb mixture (MHM), 1% laver powder (LP), 1% paprika powder (PP) and without supplementation (CON) for 9 weeks. Weight gain, daily feed intake, hepatosomatic index and condition factor were not influenced by dietary additives. Peed efficiency and protein efficiency ratio of flounder fed the diet containing laver powder were significantly higher than those of fish fed the medicinal herb mixture and paprika powder (P<0.05), but not significantly different from control group. The results of this study suggest that all tested additives in the dietary formulation did not affect growth and feed utilization of olive flounder.

A Study on the Nutritional Characteristics of Ostrich Extracts Added with Medicinal Herbs (한방재료를 첨가한 타조 추출액의 영양학적 특성에 관한 연구)

  • This study was undertaken to analyze chemical composition, macro- and micro-mineral contents of ostrich bone with flesh meat (BF), ostrich bone with flesh meat with herb medicine (BFll) and ostrich bone with internal organs (BI). Crude fat of the BFH was lower, but crude protein and crude ash of the BFH were significantly higher than those of the BF and the BI. Among the minerals, Ca, p, Mg, Fe, Cu, Zn content of the BFH were significantly higher than the content in the BF and the BI. The minerals, Pb, Cd and As were not detected in ostrich and herb medicine extracts. From the sensory test of ostrich and herb medicine, the preferences were in the fellowing order; ostrich bone with flesh meat with herb medicine (BFH), ostrich bone with flesh meat (BF), and ostrich bone with internal organs (BI) in extracts.

  • The purpose of this study was to provide basic data for the development of medicinal herbs, which are useful for the treatment of chronic diseases and physical characteristics of the elderly. A total of 151 adult women aged 65 years or older currently living in Daejeon were enrolled. The contents of this study were parents' health status, recognition of the necessity for a dietary therapy, awareness of medicinal herbs, requirements for medicinal herbs, physician of medicinal herbs and obstacles to medicinal herbs. Based on these results, the differences in the perception of medicinal herbs according to the dietary needs group as well as differences in the perception of medicinal herbs according to medicinal herbicidal groups were analyzed. Of the 151 subjects, 90.7% were married, and 44.4% of them were aged between 40 and 49. Most of the patients were aged in their 70s (68.9%), and 79.5% of had chronic illnesses such as high blood pressure, hyperlipidemia, arteriosclerosis, and heart disease. It is recognized that dietary therapy is necessary for the treatment of diseases, and awareness of medicinal herbs is low but necessary. As for the requirements for medicinal herbs, the most favored was 'porridge for the prevention and treatment of diseases', and 72.2% of medicinal herbs were physicians. However, problems cited were availabitity of ingredients, cooking technique, price of ingredients, and others. In addition, both groups requiring dietary therapy and having high awareness of medicinal herbs felt that medicinal herbs would be helpful in treating diseases. Therefore, it is necessary to provide a simple medicinal herb recipe for each disease and to develop anti cooked medicinal herbs.

Effect of Dietary Medicinal Herb Extract Mix and Antibiotics (Albac G150) on the Oxidative Stability of Chicken Meat (금은화, 황련, 상엽 추출물 혼합물과 항생제(Albac G150) 급여가 계육의 산화 안전성에 미치는 영향)

  • This study was evaluated the oxidative stability of the breast and leg meat from chicken fed extract of medicinal herb mix (Lonicera japonica Thunberg : Morus alba L. : Coptis chinensis = 48.5 : 48.5 : 3.0%) and antibiotics (Albac G150). Ross chickens were divided into three treatments: basal diet (control), basal diet with antibiotics (0.05%) and basal diet with extract of medicinal herb mix (0.3%). They were fed the experimental diets for 35 days and slaughtered. After that, the breast and leg meat samples were stored at $4^{\circ}C$ for 10 days. Total phenol content of breast meat in Ross chicken fed extract of medicinal herb mix was higher than that of antibiotics treatment and control during storage. DPPH radical scavenging activity was the highest in leg meat of Ross chicken fed extract of medicinal herb mix at 0 day. $ABTS^+$ reduction activity was higher in chicken meat fed extract of medicinal herb mix than antibiotics treatment and control. This results showed that the diet with extract of mixed medicinal herb was more effective in oxidative stability of chicken meat than basal diet and diet with antibiotics.

Development of Functional Beverages using Distilled Extract of Korean Medicinal Herb (약용식물의 증류 추출물을 이용한 기능성 음료 개발에 관한 연구)

  • The primary objective of this study was to determine the effects of a water-distilled extract with 15 kinds of Korean medicinal herb on antioxidant activity, antimicrobial activity against Helicobacter pylori, and lipid metabolism. The water-distilled extract (WE) and fermenting water-distilled extract (FE) of medicinal herbs were utilized in order to make functional beverages. The EDA (electron donating activity), SOD-like ability, and RAE (relative antioxidant efficacy) of WE averaged 24.47, 50.35, and 1.57%, respectively, but the EDA, SOD-like ability, and RAE of FE was retardeded by 12.01, 35.72, and 1.55%, respectively. The antimicrobial activity against Helicobacter pylori of WE averaged 12.84 mm as a diametric clear zone, and was significantly (p<0.05) higher than those measured in the WE and control. Serum triglyceride contents, total serum cholesterol contents, and serum LDL-cholesterol contents of the WE group were significantly (p<0.05) lower than those of the control group. The liver total-cholesterol contents and liver triglycerides of WE group were significantly (p<0.05) lower than those of the control group. The plasma TBARS value of the WE group was significantly (p<0.05) lower than that of the control group. The sensory evaluation, taste, and smell of FE were more desirable than those of WE, but the color of WE was more desirable. According to the above results, the water distilled extracts (WE) of 15 kinds of medicinal herb are supposed to be effective with regard to antioxidant activity and lipid metabolism, but the antimicrobial activity against Helicobacter pylori was increased as the result of fermentation.

  • Many plants and animal have long been known to have medicinal effects and therefore have been used as medicines. There are many substances that show various pharmacologic efficacy such as anti-tumor efficacy, anti-inflammatory efficacy, cholesterol-lowering efficacy, anti-coagulant of blood efficacy and anti-bacterial efficacy. I summarized the recent advances in research on physiologically functional foods. The pharmacological efficacy of dietary fiber, chitin & chitosan, DHA(docosahexaenoic acid), mushroom, alginic acid and herbs have selected as topices for discussion. I was examining the anti-coagulant activity of herbs, I discovered that Eugenia caryophyllata T. (clove) had a relatively high anti-coagulant activity.

The Effect of Medicinal Herb Extract on Antimicrobial Activity against Helicobacter pylori and Antioxidant Activity (약용식물 추출물의 Helicobacter pylori에 대한 항균 활성과 항산화 활성에 미치는 효과)

  • This study was designed to investigate the effect of medicinal herb extract on the antioxidant and antimicrobial activities against Helicobacter pylori, which is known as a ulcerogenic pathogen. The concentration of total phenolic compound of Scutellaria baicalensis(13.14%) was highest among water extracts and that of Ulmus parvifolia(15.12%) was highest among the ethanol extracts. The antioxidant activity of the water extract of Scutellaria baicalensis and of the ethanol extract of Ulmus parvifolia were 91.00% and 65.03%, respectively, in DPPH assay. The antioxidant activity of the water extract of Scutellaria baicalensis and of the ethanol extract of Ulmus parvifolia were 32.90% and 27.70%, respectively, in SOD assay. The antioxidant activity of the water extract of Ulmus parvifolia and of the ethanol extract of Glycyrrhiza uralensis Fischer was 2.15 and 2.17, respectively, in TBARS assay. In disc method, Scutellaria baicalensis showed the highest anti-microbial activity against H. pylori, followed by Glycyrrhiza uralensis Fischer among the water extracts and Glycyrrhiza uralensis Fischer showed the highest anti-microbial activity followed by Radix puerariae among ethanol extract.

  • This experiment was planned to develop a functional supplements by food resources to prevent and lessen the bad effects caused by the environmental pollution such as bad food, air, water and heavy metals exposed to people these days. As for Its primary stage, the nutrient profile and sensory characteristics of the duck-extract were evaluated in this study. The duck-extract was formulated by the mixture of bone and internal organs of ducks and 6 medicinal herbs which were able to be used as foods and known to help the excretion and the repression of the poison inside the body for a long time. As we compared the six medicinal herbs mentioned above to the vegetable herbs, the nutrient profile of the medicinal herbs were superior to the vegetable herbs. The duck-extract was composed of protein 49.92%, carbohydrate 37.02%, dietary fiber 20.99%, lipid 7.60% and ash 5.46%. The ratio of Ca to P was 1 : 1.4, which was a suitable ratio for absorption, the contents of Na and K were low and those of micro-elements such as Fe, Mn, Zn and Cu high compared to other meat extracts. The essential amino acids accounted for 30.91% of total amino acids. The result of sensory evaluation was better in overall preferences than the ones which are already in the market. From these results, the nutrient profile of the duck-extract was estimated to be able to supply enough nutrients to the people whose nutritional balance was destroyed these days. This study also showed the effective way of using duck-extract and its application to the oriental medicine.
