Mice were fed semi-purified diets containing 0, 2, 10 and 25 ppm(mg/kg) deoxynivalenol over 8 weeks and were assessed for effects on bodyweight gain, serum immunolglobulin levels and surface immunoglobulin bearing lymphocyte ratio. 1. The rate of body-weight gain was significantly reduced (p<0.05) at the 10 and 25 ppm of DON, whereas the mice ingesting the diet containing 2 ppm DON was not. 2. IgA in serum immunolglobulin was significantly increased (P<0.05) at the 10 and 25 ppm of DON, but IgG, IgM were decreased, whereas exposure to 2 ppm DON was not change. 3. Concentration of IgA from Peyer's patch of mice fed DON exhibited increased at 10, 25 ppm. 4. Lymphocytes surface marker studies revealed that IgA, IgG and IgM were 2.2%, 0.4% and 1.5% respectively. These results suggest that dietary exposure to DON alters regulation of IgA production
Objectives: This study was conducted to examine the length of exposure to smartphone and its association with dietary behavior toward snacks, lifestyle, and nutrition knowledge in elementary school students. Methods: Subjects were 372 5th and 6th grade schoolchildren in Cheongju, Korea, and data was collected by a self-administered questionnaire. They were divided into two groups by the time spent using smartphone: moderate (< 2 hours/day) and overexposure (${\geq}2$ hours/day). Data was analyzed using frequency analysis, ${\chi}^2$-test, and independent t-test as well as analysis of covariance when necessary. Results: Approximately half of subjects (41.4%) reported spending ${\geq}2$ hours/day using smartphone. That habit was more frequent among students in the 6th grade, those who received more monthly allowance, and who has a working mother. 63.4% of the subjects reported that they consumed snacks while watching television, using a computer and/or a smartphone and 48.1% said that they consumed snacks while they use a smartphone. Both situations were most prevalent among those with overexposure to smartphone (${\geq}2$ hours/day). We also observed that a higher percentage of subjects from the overexposure group spent more money on snack foods with the preference for ice cream, fast food, and carbonated drinks. Further, those in the overexposure group consumed more ice cream, cookies, and carbonated drinks. In addition, they had less desirable dietary behavior and health-related lifestyle (sleep duration and frequency of regular exercise) compared to those with moderate smartphone usage (< 2 hours/day). However, there was no statistical difference in nutrition knowledge among children with different degrees of smartphone usage. Conclusions: Our results showed that longer smartphone use was associated with less desirable snack preference/consumption and other dietary behavior in elementary school students. Thus interest and positive attitudes towards healthy snacks and diet should be reinforced in nutrition education programs, especially for those who are prone to use smartphones.
Objectives: The study aims to examine the variation over roughly the past 10 years (from 2008 to 2018) in the estimated daily dietary Pb intake (Pb-D) based on the variations of daily intake amount and Pb content in respective food groups. The following factors were considered: (1) variation of estimated value of Pb-D, (2) Pb contents in each food group and (3) the most influential food group for dietary Pb intake. Methods: Estimated values of Pb-D were taken from food consumption by the food groups reported in the Korean National Health and Nutrition Survey and the Pb content of each food group as reported in 19 previous publications. Variation from 2008 to 2018 of Pb intake was calculated from daily intake amount and Pb content in each food group. Results: The survey showed that main Pb intake sources were the food groups 'meats and poultry' and 'fish and shellfish'. These food groups showed gradually increased Pb exposure from 2008 to 2018. Estimated daily Pb intake was 42.18 to 57.68 ㎍/day for men and 30.97 to 42.54 ㎍/day for women. Both men and women showed slightly increased dietary Pb intake from 2008 to 2018. The food groups 'meats and poultry' and 'fish and shellfish' proved the highest Pb intake food groups. Estimated Pb intake from 'meats and poultry' was 8.47 to 12.98 ㎍/day and that of 'fish and shellfish' was 5.63 to 10.10 ㎍/day. Conclusion: Over the past ten years, daily Pb intake has slightly increased in men and women. The food groups 'meats and poultry' and 'fish and shellfish' might be the main variation factors of Pb intake.
BACKGROUND/OBJECTIVES: The long-term health impacts of dietary sugar have begun to be reported. The committee on the 2020 Dietary Reference Intakes for Koreans for sugar intended to update the scientific evidence on the association of added sugar intake with health outcomes, including mortality. This study evaluated the evidence on the association of dietary sugar with the all-cause and cardiovascular disease mortality from cohort studies. SUBJECTS/METHODS: The PubMed and ScienceDirect databases were searched until July 2021. The search terms were based on multiple combinations of keywords, such as added sugar, beverage, and mortality, included in the title or abstract. Two authors independently assessed the eligibility criteria of study selection and extracted the information from each selected article for this systematic review. RESULTS: The literature search identified 276 articles. Seventeen cohort studies met the inclusion criteria and were included in this systematic review. This study extracted information on the cohort and participants, dietary assessment methods, exposure and its comparison groups, health outcomes, and risk measures. Five articles reported added sugar intake, and 15 articles reported the food sources of the added sugar in the association with mortality. Increased mortality was observed in higher added sugar intake and a lower intake of less than 5% of energy, while higher discrepancies between gender, age groups, and countries were noted. In addition, nutritious sugary foods and beverages did not increase mortality. CONCLUSIONS: A 'U' or 'J' shaped relationship between the added sugar intake and mortality was estimated. The observed discrepancy indicated the need for more evidence to establish the dose-response relationship for Koreans.
Objectives: Screen time refers to the time spent using screen media, such as televisions, smartphones, computers, or tablets. Excessive exposure to screen media has been reported to negatively impact young children's health and development, including overweight, short sleep duration, and language delays. This study examined the association of screen time and mealtime media use with dietary behaviors among preschool children. Methods: A cross-sectional survey was conducted on parents of children aged three to five years using the online questionnaires of the Nutrition Quotient for Preschoolers (NQ-P) and the Dietary Screening Test (DST). Data from 261 children's parents were analyzed. Results: Of the 261 children, 96.9% used screen media, 55.6% used screen media for two hours or more daily, and 30.7% were exposed to screen media during meals. The NQ-P scores were significantly lower in the children with longer screen time and mealtime media use. Children who used screen media for two hours or more and those exposed to screen media during meals consumed kimchi less frequently and confectionery and sugar-sweetened beverages more frequently than children who used less than two hours and were not exposed to screen media during meals. In addition, they were more likely to be picky about food, refuse to eat, and less likely to feed themselves than children with shorter screen time and no mealtime media use. Conclusions: This study reported an association between unhealthy dietary behaviors, feeding difficulties, and screen time and mealtime media use among preschool children. Further research should explore effective strategies for reducing children's screen time.
Objectives: N-Nitrosodimethylamine (NDMA) is classified as a probable human carcinogen by the United States Environmental Protection Agency (US EPA) and is formed during the chlorination of municipal drinking water. In this study, selected nitrosamines were measured in chlorinated drinking water collected from Chuncheon, Kangwon-do, Republic of Korea, and a risk assessment for NDMA was conducted. Methods: Twelve water samples were collected from 2 treatment plants and 10 household taps. Samples were analyzed for 6 nitrosamines via solid-phase extraction cleanup followed by conversion to dansyl derivatives and high-performance liquid chromatography-fluorescence detection (HPLC-FLD). Considering the dietary patterns of Korean people and the concentration change of NDMA by boiling, a carcinogenic risk assessment from ingestion exposure was conducted following the US EPA guidelines. Results: NDMA concentrations ranged between 26.1 and 112.0 ng/L. NDMA in water was found to be thermally stable, and thus its concentration at the end of boiling was greater than before thermal treatment owing to the decrease in water volume. The estimated excess lifetime carcinogenic risk exceeded the regulatory baseline risk of $10^{-5}$. Conclusions: This result suggests that more extensive studies need to be conducted on nitrosamine concentration distributions over the country and the source of relatively high nitrosamine concentrations.
In recent years a concern of excessive intakes of vitamins and minerals from various sources is increasing, since there has been a marked increase in production and consumption of vitamin and mineral supplements and fortified foods. The purpose of this study was to assess the maximum exposure of vitamins and minerals from various sources including diet, fortified foods, and health functional foods among Koreans. As a result, the highest exposure group of most vitamins and minerals from diet was adults (30 - 49 years of age) according to 2001 Korean National Nutrition and Health Survey Report. Maximum dietary intakes of vitamin A, $B_1,\;B_2$, C, nicotinamide, calcium, phosphorus and iron were 0.5 - 7 times of the RDA for Koreans, 7th ed. Maximum intakes of vitamins and minerals from fortified foods by adults (20 - 59 years of age) were 8 - 760% of the Korean RDA. In addition, maximum exposure of vitamins and minerals from vitamin mineral health functional foods by middle aged people was 35 - 140% of the upper limits (UL: DRI for Koreans). As a consequence, maximum combined intakes of vitamin $B_6$, vitamin C, calcium, iron and zinc from the above sources including diet, fortified foods and vitamin mineral health functional foods were greater than the UL. These results would be applied for determining the safe upper limits of vitamin and mineral of health functional foods.
본 연구에서는 우리나라 소비자를 대상으로 우리나라에서 재배된 과채류 섭취를 통한 neonicotinoid계 농약의 노출량을 확률적 접근법을 이용하여 평가하였다. 농약 잔류량을 2009년에 수행된 과채류 중 neonicotinoid계 농약 5종(acetamiprid, clothianidin, imidacloprid, thiacloprid, thiamethoxam)에 대한 모니터링 자료를 이용하였다. Neonicotinoid계 농약의 총 노출량을 개별 과채류별로 구분하여 확률적 평가를 실시한 결과 neonicotinoid계 농약 5종의 총 노출량의 극단값은 0.087~0.236 ${\mu}g$/kg/day의 범위를 보였다. 확정론적 접근법의 결과와 비교했을 때 총 노출량의 평균치는 거의 유사하게 나타났으며, 노출량의 $95^{th}$ percentile값에 서는 확률적 접근법의 결과가 확정론적 접근법의 결과에 비해 38.8 ~ 62.0%의 수준으로 낮게 나타났다. 총 노출량에 대한 민감도 분석을 실시한 결과, acetamiprid의 총 노출량은 딸기 섭취를 통한 노출량에 크게 영향을 받으며, 특히 딸기의 섭취량 보다는 딸기 중 acetamiprid 잔류량 수준에 더 크게 영향을 받는 것으로 나타났다. 이는 thiacloprid를 제외한 나머지 3종의 neonicotinoid계 농약에서 유사한 경향을 보였다.
인체의 중금속 노출은 식품이 대부분을 차지하고 있어 세계 어느나라나 인체건강의 유지라는 측면에서 깊은 관심을 쏟고 있다. 본 연구에서는 국내산 식품의 중금속 함량과 식이섭취량에 관련된 연구결과를 총정리하였으며 외국자료와 비교함으로써 중금속의 위해성을 평가하였다. 식품군별(해산어류, 연안패류, 담수어류, 곡류)로 비소, 카드뮴, 수은, 납의 4가지 금속원소의 함량에 대한 연차적 변화추세를 분석한 결과 1970년대보다는 1980년대, 그리고 1990년대로 올수록 중금속의 평균농도는 감소하는 것으로 나타났다. 중금속의 국내기준과 비교하였을 때 평균치로는 기준을 초과하는 경우가 없었으나 최고치로는 기준을 초과하는 경우가 드물게 발견되었다. 한국인에 의한 중금속의 식이섭취량 데이터를 요약하면 1980년대보다는 1990년대에 감소하는 경향이 있었다. 중금속 중 As, Hg의 평균섭취량은 PTWI의 6∼8%, Cd, Pb은 50∼80%수준으로 모두 허용량을 밑돌고 있으나 특정식품을 많이 먹는 극단소비량으로 계산한다면 PTWI를 초과할 수 있으므로 심도있는 평가가 요구된다. 한국인에 의한 Cd, Hg, Pb의 식이섭취량은 여러 국가에 대한 GEMS/Food 데이터와 비교시 중위권에 속하는 것으로 나타났다. 식품 중에서 수산물은 Hg, Cd 및 As의 오염이, 일반식품은 Pb의 오염이 우려되고 있으므로 이들 중금속에 대한 법적기준을 설정하여 중금속에 의한 오염 진행상황을 감시해야 될 것이다. 나아가 모든 급원(음식물, 공기, 불, 직업적 노출)으로부터 중금속의 총 노출량을 평가하고 식생활에서의 위해요소를 확인함으로써 식량자원의 안전성을 확보할 수 있게 되기를 바란다.
