노인의 식생활 및 영양섭취상태에 관한 연구 (A Study on Meal Management and Nutrient Intake of the Elderly)

  • 울산지역의 65세 이상 노인 357명 을 대상으로 1995년 7월 5일부터 8월 13일까지 직접면접을 통해 식생활과 영양섭취상태를 조사하였고 이에 대한 관련성을 연구하였다. 대상자의 가족수는 3~5명, 생활비는 91~150만원, 용돈은 1~5만원이 가장 많았으며 건강이 좋지 않은 경우가 가장 많았다. 우울증에 해당하는 노인은 남자 19.3%, 여자 27.6%로 나타났다. 그리고 불안점수가 24점 이상인 경우는 남자가 28.1%, 여자가 32.5%로 나타났다. 식사가 규칙적인 경우, 균형식을 하는 경우, 평상시 즐거운 식사를 하는 경우가 많았으며 혼자 식사하는 경우는 적었다. 점심식사의 경우 주로 친구들과 함께하고 있으며 경로당에서 식사하는 경우가 많았다. 노인급식소가 있는 것을 남자가 59.6%, 여자가 42.8% 정도가 알고 있었고, 식사를 해 본 경험이 있는 경우는 식사의 만족정도는 남자는 '보통이다'가 41.3%, 여자는 '높다'가 41.9%이었다. 노인의 열량, 단백질, 비타민 A, 비타민 $B_2,$ 비타민 C는 권장량에 미달되었고, 칼슘의 섭취량은 여자의 경우 권장량에 미달되었고, 그밖의 영양소들은 권장량 이상을 섭취하였다. 가족수, 생활비, 용돈, 건강상태는 영양섭취상태와 양의 상관관계를 나타냈다. 우울과 불안은 영양섭취상태와 음의 상관관계를 나타냈다. 식사의 규칙성, 즐거운 식사와 영양섭취상태는 양의 상관관계를 보였으며 편식과 혼자식사는 음의 상관관계를 보였다. 이와 같은 결과로 다음과 같은 제언을 하고자 한다. 노인의 일반적 특성 뿐만 아니라 우울, 불안상태와 식생활 관리에 따라 영양 섭취량에 영향을 미치므로 정신적인 안정과 식생활 환경을 개선하도록 하여야 한다. 그리고 즐거운 식사가 되도록 함께 식사할 수 있는 환경을 만들어 가정은 물론 지역사회에서 관심과 노력을 갖고 영양적 위험이 있는 노인을 위한 무료 혹은 저렴한 식당이나 경로당 등의 식생활 환경을 시급히 개선해 나가야 할 것이다. 또한 질병이 있는 노인이 많으므로 노인을 위한 영양교육 및 상담 프로그램을 개발하여 실시하여야 할 것이다.

조피볼락 육석용 배합사료와 시판사료의 사육효과 비교 (Evaluation of Experimental Formulated Diets and Commercial Diets for Growing Korean Rockfish (Sebastes schlegeli))

  • 실용적인 사료의 효과를 검토하기 위해 단백질함량이 $41\~45\%$인 4종류의 실험사료를 dry pellet 형태로 제조하였다. 단백질원으로 어분을 $58\%$ 첨가한 사료를 대조구(사료 1)로 하고, 대조구의 어분을 육분, 콘글루텐 밀, 대두박 및 혈분으로 각각 다른 비율로 대체하여 어분 함량을 $40\%$ 전후로 감소시킨 실험사료들(사료 $2\~4$)을 설계하여 시판되고 있는 해산어용 배합사료 A, B, C (단백질 함량 : $51\~53\%$) 및 양어가들이 선호하는 RMP 사료(넙치용 분말사료와 냉동 메가리를 1 : 1의 비율로 혼합한 moist pellet, 단백질 함량 : $58\%$)와 그 효과를 사육 실험을 통해 비교하였다. 평균체중 125 g의 조피볼락을 선별하여 실험사료마다 2반복으로 15주간 사육실험한 결과, 최종 평균체중, 증체율, 사료효율, 일일사료섭취율, 일일단백질섭취율, 단백질효율 및 간 중량지수가 RMP 구를 제외한 실험사료와 상품사료를 급여한 실험구들은 대조구와 통계적인 차이는 없었다(P>0.05). RMP 섭취구의 증체율이 대조구와는 유의한 차이가 없었지만, 실험사료(사료 $2\~4$)와 상품사료(사료 $A\~C$)보다 유의적으로 높은 값을 보였다(P<0.05). 또한, 단백질효율은 RMP 구가 가장 높았고, 상품사료 B가 가장 낮은 값을 보였다. 대조사료에서 1 kg의 어체를 증체시키는데 소요되는 사료비용을 100으로 환산하였을 때, 사료 3 급여구는 92, 사료 4 급여구는 79로 나타나, 대조구보다 $10\~20\%$ 정도의 사료비가 절감되었고, RMP 사료 급여구는 대조구보다 $27\%$의 사료비가 더 소요되는 것으로 나타났다. 실험 종료시 간과 근육의 수분, 단백질, 지질 및 회분 함량은 모든 실험구간에 유의차는 없었다(P>0.05).

세계 고구마 재배현황 및 대량생산의 선결과제 (Current status on global sweetpotato cultivation and its prior tasks of mass production)

  • 고구마는 21세기 인류가 당면한 식량, 에너지, 환경, 보건문제 등을 해결하는 21세기 구원투수로 등장하고 있다. 고구마는 식량자원 뿐만 아니라 바이오에탄올, 기능성 사료, 항산화물질 등 고부가가치소재를 생산하는 생체반응기로 평가된다. 미국 공익과학단체(The nonprofit Center for Science in the Public Interest, CSPI)는 고구마가 저분자항산화물질, 식이섬유, 칼륨 등을 고함유하고 있는 고구마를 몸에 좋은 10대 슈퍼식품 가운데 하나로 선정하였다. 미국 농무부는 고구마를 전분작물 가운데 식량수급에 영향을 최소화하는 척박한 토양에 가장 적합한 바이오에너지작물로 평가하였다. UN 식량농업기구는 2050년에 세계인구가 97억 명이 될 것이며 지금 추세로 식량을 사용하면 2050년에는 지금의 1.7배의 식량이 필요하다고 전망했다. 어떻게 미래 식량위기를 극복할 것인가? 이러한 측면에서 척박한 토양에서도 어느 정도 수량을 보장하는 고구마가 지구가 당면한 제반 문제를 해결할 수 있을 것으로 기대된다. 본 논문에서는 세계 고구마 유전자원과 생산현황을 살펴보고, 글로벌 식량자원 및 고부가가치 바이오소재 측면에서 새로운 고구마의 북방로드 개척 및 상업적 대량재배를 위한 선결과제를 기술하고자 한다.

Identification of Functional and In silico Positional Differentially Expressed Genes in the Livers of High- and Low-marbled Hanwoo Steers

  • This study identified hepatic differentially expressed genes (DEGs) affecting the marbling of muscle. Most dietary nutrients bypass the liver and produce plasma lipoproteins. These plasma lipoproteins transport free fatty acids to the target tissue, adipose tissue and muscle. We examined hepatic genes differentially expressed in a differential-display reverse transcription-polymerase chain reaction (ddRT-PCR) analysis comparing high- and low-marbled Hanwoo steers. Using 60 arbitrary primers, we found 13 candidate genes that were upregulated and five candidate genes that were downregulated in the livers of high-marbled Hanwoo steers compared to low-marbled individuals. A BLAST search for the 18 DEGs revealed that 14 were well characterized, while four were not annotated. We examined four DEGs: ATP synthase F0, complement component CD, insulin-like growth factor binding protein-3 (IGFBP3) and phosphatidylethanolamine binding protein (PEBP). Of these, only two genes (complement component CD and IGFBP3) were differentially expressed at p<0.05 between the livers of high- and low-marbled individuals. The mean mRNA levels of the PEBP and ATP synthase F0 genes did not differ significantly between the livers of high- and low-marbled individuals. Moreover, these DEGs showed very high inter-individual variation in expression. These informative DEGs were assigned to the bovine chromosome in a BLAST search of MS marker subsets and the bovine genome sequence. Genes related to energy metabolism (ATP synthase F0, ketohexokinase, electron-transfer flavoprotein-ubiquinone oxidoreductase and NADH hydrogenase) were assigned to BTA 1, 11, 17, and 22, respectively. Syntaxin, IGFBP3, decorin, the bax inhibitor gene and the PEBP gene were assigned to BTA 3, 4, 5, 5, and 17, respectively. In this study, the in silico physical maps provided information on the specific location of candidate genes associated with economic traits in cattle.

전라도 장수지역에 거주하는 여자노인의 동거유형에 따른 생화학적 지표 및 영양섭취상태에 관한 연구 (A Study on the Blood Health Status and Nutrient Intake in Elderly Women Dwelling in Longevity Region in Jeonla Province according to Family Arrangement)

  • The purpose of this study was to compare the degree nutrient intake, health status and other characteristics of females aged 65 years and over in a longevity area according to family arrangement. For analysis, 585 female elderly were recruited from the Kugoksoondam area (Kurye, Goksung, Soonchang and Damyang counties), known as the longevity-belt region in Jeonla province, Korea. The subjects were categorized into three groups according to family arrangement (living alone, living with spouse only and living with family). Demographic characteristics were collected, as well as information on physical measurements, blood tests for biochemical indicators, health status and health-related life style, dietary behavior, favorite food groups, consumption frequency of food groups, nutrient intake and mini nutrition assessment. In the group living with their spouse only, the highest education, physical activity, diverse food intake, frequency of eating meats and fish, energy and nutrients intake, and score on the mininutrient status assessment (MNA) were found to be significantly favorable factors. Taken together, these results demonstrated that the group living with their spouse only had relatively superior nutrient intake and the quality of diet. In contrast, the group living alone showed the lowest self-rated economic status, diversity of food intake, and physical activity, with the highest frequency of drinking, smoking and regular exercise for almost everyday compared with the other groups. On the other hand, those living with family demonstrated the lowest intake of supplements or functional foods, and levels of hemoglobin hematocrit MCH, but the highest HBA1c and blood sugar. Therefore, the group living with family was assumed to be at risk of anemia and diabetes. These results could be useful to plan effective strategies to increase the health-life expectancy of Korean elderly people living in rural areas, according to family arrangement.

Supplemental Enzymes, Yeast Culture and Effective Micro-organism Cultureto Enhance the Performance of Rabbits Fed Diets Containing High Levels of Rice Bran

  • An experiment was carried out to study the effects of exogenous enzymes (cellulases and proteases), yeast culture and effective micro-organism (EM) culture on feed digestibility and the performance of rabbits fed rice bran rich diets over a period of ten weeks. Twenty four, 8 to 9 weeks old male and female New Zealand White rabbits were allotted to 4 dietary treatments; a basal (control) feed containing 43% rice bran, basal feed supplemented with either enzymes, yeast culture or EM. Individual feed intake, body weight gain, nutrient digestibility, carcass characteristics and feed cost were studied. Sex of the rabbits had no significant (p<0.05) influence on the parameters studied. The control group showed the lowest daily feed intake (104.8 g), body weight gain (12.8 g) and the highest feed/gain ratio (8.20 g/g). The highest daily feed intake (114.3 g), body weight gain (20.42 g) and the lowest feed/gain ratio (5.60) were observed with enzymes. Compared to the control, yeast significantly (p<0.05) improved the feed intake, body weight gain and feed/gain ratio by 4.9, 34.4 and 22.0%, respectively, while EM improved (p<0.05) them by 4.0, 32.6 and 21.6%, respectively. All the additives improved (p<0.05) the digestibility of dry matter, crude protein, crude fiber and energy by 4.9-8.7, 3.6-10.7, 5.9-8.3 and 4.3-6.4%, respectively. Higher weights of pancreas (by 38.5-56.4%) and caecum (by 13.1-26.8%, compared to the control) were recorded with all additives but liver weight was increased only by yeast (24.5%) and enzymes (26.7%). Significantly (p<0.05) higher carcass recovery percentages were observed with enzymes (60.55), yeast (60.47) and EM (56.60) as compared to the control (48.52). Enzymes, yeast and EM reduced (p<0.05) the feed cost per kg live weight by 23.8, 15.9 and 15.5%, respectively. Results revealed that enzymes, yeast culture and EM can be used to improve the feeding value of agro-industrial by-products for rabbits in Sri Lanka and thereby to reduce the feed cost. Under the present feeding system, enzyme supplement was the best.

육가공품에 사용되는 아질산염의 사용기준, 대사, 섭취량과 안전성에 대한 조사 연구 (Studies on the Regulation for Use, Metabolism, Intake, and Safety of Sodium Nitrite in Meat Products)

  • During the 1970s, concern arose that cured meats contained high levels of residual nitrite and preformed nitrosamines. Therefore, the search for alternatives and alternative approaches to the use of nitrite have been still continued, however no complete alternative for nitrite has yet been identified. Recently, it was publicized in Korea that nitrite-containing meat products would be detrimental to health, about which consumers have been seriously concerned. Therefore, this study was carried out to inform the consumer of the safety status of nitrite and thereby to lead proper consumption of meat products. For assessing the safety of nitrite, data regarding the regulation for use, metabolism in human body, and dietary intake amounts of nitrite were collected and analyzed. The mean intake level of nitrite for Korean per capita was recently reported to be not more than 1% of ADI set by JECFA. On the contrary, a calculation indicated that the daily nitrite intake per capita from saliva by ingestion of vegetables in Korea would be about 300-fold higher than that from cured meats. In consideration of the low consumption amount of meat products per capita of Korean, that is, at least one fifth, compared to European and American, there is no particular reason to concern about the impairment of health by nitrite intake from meat products for Korean. However, any effort for the reduction of residual nitrite content in cured meats should be given with an idea to minimize the intake of nitrite even from the minor source.

Evaluation of barley to replace milk by-product in weaning pig's diet

  • The supplementation level of barley was limited because of high contents of fiber in monogastric animals. Barley contained high soluble fiber, thus it could prevent to diarrhea of weaning pigs. Moreover, as the barley break down by enzymes, free sugars come out from the barley, which could be used as an energy source in weaning pigs and replace milk by-products in weaning pig's diet. Therefore, present study was conducted to investigate the influence of barley to replace milk by-product in weaning pig's diet on growth performance, blood profile, nutrient digestibility, diarrhea incidence, and economic analysis in weaning pigs. A total of 112 crossbred ($[Yorkshire{\times}Landrace]{\times}Duroc$, weaned at 28 days of age) piglets were allotted to 4 treatments in a randomized complete block (RCB) design. Each treatment has 7 replications with 4 pigs per pen. Pigs were fed each treatment diet which containing different levels of barley (0%, 10%, 20%, and 30%) at the expense of whey powder and lactose. Three phase feeding programs were used for 6 weeks of growth trial (phase 1: 0-2 weeks; phase 2: 3-4 weeks; phase 3: 5-6 weeks). During 0-2 week, body weight (BW), average daily gain (ADG) and G:F ratio were decreased as barley level increased in the diet (linear response, p < 0.01). In blood profile, blood urea nitrogen was decreased as the barley level increased in the diet (linear, p < 0.01). However, no significant differences were observed in blood glucose level. In nutrient digestibility, crude fat digestibility was linearly increased as barley increased (linear, p < 0.01). The incidence of diarrhea was improved as increasing barley contents in all phases (linear, p < 0.01). These results demonstrated that supplementation of barley to replace milk by-product influenced negatively on growth performance during 0-2 week. However, the incidence of diarrhea and later growth performance from 3 week postweaning were improved as dietary barley level increased.

Oil supplementation improved growth and diet digestibility in goats and sheep fed fattening diet

  • Objective: This study evaluated the growth, digestibility and rumen fermentation between goats and sheep fed a fattening diet fortified with linseed oil. Methods: Twelve 3 to 4 months old male goats and sheep were randomly allocated into two dietary treatment groups in a $2(species){\times}2$ (oil levels) factorial experiment. The treatments were: i) goats fed basal diet, ii) goats fed oil-supplemented diet, iii) sheep fed basal diet, and iv) sheep fed oil-supplemented diet. Each treatment group consisted of six animals. Animals in the basal diet group were fed with 30% alfalfa hay and 70% concentrates at a rate equivalent to 4% of their body weight. For the oil treatment group, linseed oil was added at 4% level (w:w) to the concentrate portion of the basal diet. Growth performance of the animals was determined fortnightly. Digestibility study was conducted during the final week of the feeding trial before the animals were slaughtered to obtain rumen fluid for rumen fermentation characteristics study. Results: Sheep had higher (p<0.01) average daily weight gain (ADG) and better feed conversion ratio (FCR) than goats. Oil supplementation did not affect rumen fermentation in both species and improved ADG by about 29% and FCR by about 18% in both goats and sheep. The above enhancement is consistent with the higher dry matter and energy digestibility (p<0.05), as well as organic matter and neutral detergent fiber digestibility (p<0.01) in animals fed oil- supplemented diet. Sheep had higher total volatile fatty acid production and acetic acid proportion compared to goat. Conclusion: The findings of this study suggested that sheep performed better than goats when fed a fattening diet and oil supplementation at the inclusion rate of 4% provides a viable option to significantly enhance growth performance and FCR in fattening sheep and goats.

The effects of synbiotics-glyconutrients on growth performance, nutrient digestibility, gas emission, meat quality, and fatty acid profile of finishing pigs

  • Glyconutrients help in the body's cell communication. Glyconutrients and synbiotics are promising options for improving immune function. Therefore, we hypothesized that combining synbiotics and glyconutrients will enhance pig nutrient utilization. 150 pigs (Landrace × Yorkshire × Duroc), initially weighing 58.85 ± 3.30 kg of live body weight (BW) were utilized to determine the effects of synbiotics-glyconutrients (SGN) on the pigs' performance, feed efficiency, gas emission, pork traits, and composition of fatty acids. The pigs were matched by BW and sex and chosen at random to 1 of 3 diet treatments: control = Basal diet; TRT1 = Basal diet + SGN 0.15%; TRT2 = Basal diet + SGN 0.30%%. The trials were conducted in two phases (weeks 1-5 and weeks 5-10). The average daily gain was increased in pigs fed a basal diet with SGN (p = 0.036) in weeks 5-10. However, the apparent total tract digestibility of dry matter, nitrogen, and gross energy did not differ among the treatments (p > 0.05). Dietary treatments had no effect on NH3, H2S, methyl mercaptans, acetic acids, and CO2 emissions (p > 0.05). Improvement in drip loss on day 7 (p = 0.053) and tendency in the cooking loss were observed (p = 0.070) in a group fed basal diets and SGN at 0.30% inclusion level. The group supplemented with 0.30% of SGN had higher levels of palmitoleic acid (C16:1), margaric acid (C17:0), omega-3 fatty acid, omega-6 fatty acid, and ω-6: ω-3 ratio (p = 0.034, 0.020, 0.025, 0.007, and 0.003, respectively) in the fat of finishing pigs. Furthermore, group supplemented with 0.30% of SGN improved margaric acid (C17:0), linoleic acid (C18:2n6c), arachidic acid (C20:0), omega 6 fatty acid, omega-6 to omega-3 ratio, unsaturated fatty acid, and monounsaturated fatty acid (p = 0.037, 0.05, 0.0142, 0.036, 0.033, 0.020, and 0.045, respectively) in the lean tissues of finishing pigs compared to pigs fed with the control diets. In conclusion, the combination of probiotics, prebiotics, and glyconutrients led to higher average daily gain, improved the quality of pork, and more favorable fatty acid composition. Therefore, these results contributed to a better understanding of the potential of SGN combinations as a feed additive for pigs.
