This study was performed to investigate the nutrition knowledge, dietary attitudes, and dietary behaviors among high school students by gender. The subjects were 275 students (127 male, 148 female) in Incheon metropolitan area. Self-administered questionnaires consisted of general characteristics and anthropometric data, nutrition knowledge, dietary attitudes, and dietary behaviors. The average score of nutrition knowledge was significantly higher in female subjects (9.4) compared to male subjects (8.2) (p<0.01). Male subjects had a higher score for dietary attitudes than female subjects (p<0.001). Frequency of meals was significantly higher in male subjects compared to female subjects (p<0.05). Duration of meal time in male subjects was significantly higher ('5-10 minutes') compared to female subjects (p<0.001). Unbalanced diet was significantly higher in female subjects (66.3%) compared to male subjects (48.9%) (p<0.01). Male subjects showed significantly higher consumption frequency of 'dairy' (p<0.001) and 'beans' (p<0.001) compared to female subjects. For snack consumption, male subjects showed higher consumption frequency of 'nuts' (p<0.001), 'soda' (p<0.05), 'fast foods' (p<0.001), and 'ramyeon' (p<0.01), but lower consumption frequency of 'biscuits and bakery' (p<0.01) compared to female subjects. Therefore, it is necessary to develop a systemic nutrition education program for high school students by gender.
This study investigates the impact of COVID-19 anxiety on dietary lifestyle and the effect of different dietary lifestyle on the intention to use drone food delivery services. A questionnaire survey was conducted among 356 Chinese consumers aware of drone food delivery services. Results show that First, COVID-19 anxiety significantly impacted dietary lifestyle, including health pursuit, safety pursuit, and convenience pursuit. Second, the dietary lifestyle of health pursuit, fashion pursuit, and convenience pursuit positively affected service perceptions, including perceived safety and perceived rapidity, perceived compatibility. The dietary lifestyle of taste pursuit positively associated with safety of drone food delivery service, while the dietary lifestyle of safety pursuit positively related to safety and rapidity of drone food delivery services. Third, the perceptions related to security, rapidity, and compatibility of drone food delivery services enhanced service usage intention. Results show that COVID-19 anxiety was positively associated with dietary lifestyle, influencing consumer attitudes toward drone food delivery services.
In order to globalize Korean foods successfully, it is necessary to understand foreigners' attitudes about ethnic foods and how foreigners perceive Korean foods. It would be valuable to survey the degree of interest from foreigners when purchasing Korean foods. Thus, a survey was performed on the most common tourists in Korea, the Japanese, Chinese and Americans. 313 respondents completed the survey on ethnic foods (16 questions), purchasing intention of Korean foods (3 questions), and socio-demographic conditions (9 questions). Factor analysis and reliability analysis were conducted to identify the indicators of attitudes toward ethnic foods. Correlation analysis was conducted to confirm the relation between attitudes toward ethnic foods and Korean food purchasing intention. From the results of factor analysis, 5 factors emerged from the 13 out of 16 questions; and were labeled new food seekers, ethnic food seekers, familiarity seekers, new taste seekers and challenge seekers. Items were analyzed to determine the differences according to nationality by using the ANOVA, and it showed that Americans have the highest Korean food purchasing intentions. The regression analysis indicated that attitude factors on ethnic foods, new foods and new taste seekers are strongly related to Korean food purchase intentions.
The purpose of this study was to know the perception on acne for the college students to provide basic data for the suitable care of acne. Self-administrated questionnaires were completed by 641 college students. Dietary attitude, food habit, general perceptions on acne, knowledge level on acne, and relationship perception between special food and acne were analyzed. The results were as follows. 1. Self reported health status, smoking, obesity index were significantly different by experience of acne. 2. Dietary attitude and food habits were not significantly different by experience of acne. 3. Acne experienced subjects had acne on their face mostly and responded positively to specialized treatment. Proportions of getting the knowledge on acne were 40.6% from friends, 35.4% from magazine and 21.7% from TV or radio. 4. Proportions of correctly answered for the questions about pregnancy, hair cosmetics, oily food, male hormone, family history, constipation related with acne were less than 50% for acne experienced subjects. 92.5% of acne experienced subjects were answered eating chocolate, nut, and fat were related with breaking out and aggravating of acne. Perceptions on breaking out factors and aggravating factors of acne were not significantly different by gender. 5. More than 70% acne experienced subjects stated that instant foods, oily foods, meats, cookies, nuts were related with developing and aggravating acne. Soybean, Seaweed, fermented fish were recognized as less related with developing and aggravating acne.
Recently, many TV restaurant programs become popular, and TV restaurant programs have a big impact on Korean restaurant consumers. The purpose of this study was to understand the effects of information attributes in Korean TV restaurant review programs food service customer's empathy, attitudes and visit intention. Based on a total of 254 samples obtained from the empirical research, this study reviewed the reliability and fitness of the research model using the Amos program. The hypothesized relationships in the model were tested simultaneously by using structural equation model (SEM). SEM showed that the beneficialness (${\beta}=.187$, p<.01), amusement (${\beta}=.427$, p<.001) and vividness (${\beta}=.243$, p<.01) showed positive significant effects on customer's empathy. Customer's empathy had a positive significant effect on attitudes (${\beta}=.645$, p<.001) and visit intentions (${\beta}=.157$, p<.001). The information attributes of TV restaurant programs and the causal relationship between empathy of consumers were examined. We also verified that empathy positively affects attitudes toward intentions to visit restaurants introduced on TV restaurant programs. Limitations and future research directions are also discussed.
The objective of this study was to examine the eating habit characteristic and developmental outcomes of young children (ages 24 months through 42 months) as well as their mothers' nutritional attitudes and maternal levels of nutrition knowledge. The study also analyzed relationships among the children's eating habits and developmental outcomes and the mothers' nutritional attitudes and nutrition knowledge levels. The subjects included 164 young children who were enrolled in early childhood education and care settings in Seoul and Gyunggi province. The main results were as follows. There were significant correlations among the young children's eating habits and developmental outcomes, specifically between their attitudes towards meals and fine motor skills, communication, social-emotional aspects, and cognitive areas (p<0.01). In addition, there were significant correlations among the young children's eating habits, the mothers' nutritional attitudes and their nutrition knowledge levels (p<0.01).
The purpose of this study is to analyze the cooker's regnition and real attitude abut standard cost system who are engazing in hotel restaurants in Seoul area. The sample was consisted of 307 cookers(male ; 82.7%, female ; 17.3%_ and the used method in analyzing is surveying method and statistical analysis(SPSS PC Package ; Version 3.0). The results of this study are summarized as follows ; 1. Standard cost system, mass purchase and proper recipe were presented in order to economize on real cost and the purchase and preservation of food were presented as important control factor to econimize cost. 2. Most coolers were recognizing the necessity of standard cost system and they relyed the purpose of standard cost calculation on standard cost control. They also thought standard cost accounting information system as good method to economize cost and they were favorable abut the usage of computer in improving working ability. 3. Most of cookers(80%) wanted to be independant restaurant manager and they were favorable Korean restaurant and Western restaurant. 4. The cookers represented the oder of importance by nutrition, preferance of food, economy in composing cooking menu and by taste, odor, variety, decoration in cooking.

This study was intended to evaluate the weight control program for 18 obese female college students during 9 weeks. The weight control program was composed of periodical counsel for self-control of dietary attitude and exercise with personal/group program. The female college students were average 21.3 years old and average 161.8 cm of height. The subjects were classified into 2 groups based on BMI: overweight group $25\le{BMI}<27$, obese group BMI$\ge$27. The subjects were average 71.56 kg of weight and $27.25 kg/m^2$ of BMI before they joined the program. The prompt of joining was less self-confidence for appearance. After 9 weeks, the overweight group lost their weight about 3.28 kg and also reduced 1.61 percentage of body fat. The obese group also lost their weight about 3.0 kg but reduced only 0.8 percentage of body fat. The serum levels of total cholesterol and LDL-cholesterol dropped significantly (p<0.05) in the overweight group. The $VO_2$ max inclosed 2.71 mL/kg/min in the overweight group. The obese group reduced caloric intakes from $109.2\%\;to\;86.5\%$ of RDA. The scores of dietary attitude such as eating speed, snack frequency, watching TV or reading during the eating were significantly increased (p<0.05) in obese group. These overall results suggest this program would be effective in self-weight control of overweight people. But the obese group assumed negative attitude in self-exercise program. So it is necessary to manage weight control programs, as considering obesity degree of subjects.
The purpose of this study was to evaluate effects of a nutrition education focused on Food Exchange System for the higher grades elementary children. Nutrition education lessons (40 min/lesson, 4 times), '5 major nutrients and functions', '6 food groups', 'daily needed energy and food exchange units', 'good choice of snacks and balanced exercise' were provided to elementary students (5th grade students). This research was based on the data from two groups of elementary school children in the 'education' group (n = 31) and 'non-education' group (n = 31). We assessed the changes in dietary attitude, food habit and nutrition knowledge using questionnaire and nutrient intake using 24hr recall method by nutrition education using the developed pamphlet. After education, there was a significant difference in the dietary attitude score only in attitude of 'balanced meal' (p < 0.001) in the education group compared to the non-education group. In food habit, there were significant positive changes in the type of breakfast and in the priority of choosing snack in the educated group. In nutrition knowledge, there were significant increases in scores of 'function of carbohydrate' (p < 0.05), 'function of fat' (p < 0.01), 'function of vitamin' (p < 0.01), 'foods of carbohydrate' (p < 0.01), and 'foods of vitamin' (p < 0.01) in the educated group. After education, carbohydrate: protein: fat (CPF) ratio was significantly different between the two groups (education group, 59 : 16 : 26 vs. non-education group, 63 : 15 : 23). In evaluation of nutrient intake by Dietary Reference Intakes for Koreans (KDRIs), there were significant positive effects in energy (p < 0.05), thiamin (p < 0.05), riboflavin (p < 0.05), vitamin C (p < 0.05), phosphorus (p < 0.01), Fe (p < 0.01) and zinc (p < 0.01) in the education group compared to the non-education group. In conclusion, the developed 4 times' nutritional education pamphlet focused on individual daily energy requirements and food exchange units using food exchange system for higher grades' elementary student may positively change nutrition knowledge and dietary intakes.
The purpose of this study was to develop an Implicit Association Test to measure students' gender-biased attitude toward Home Economics, a required subject in middle-school and to examine the effects of gender, gender-biased attitude toward Home Economics, and gender egalitarianism on the perception of the subject. A total of 508 male and female middle-school students were surveyed using Qualtrics. The results revealed that the students had a gender-biased attitude of perceiving Home Economics as feminine as a whole, and this tendency was more evident among female than male students. To the contrary, their attitudes toward Home Economics as a subject was generally favorable when asked explicitly using self-administered questions. Among the high school elective classes, students preferred 'fashion' most, followed by 'dietary life', 'technology and home economics', and 'family life culture'. Female students, students with patriarchal attitude, and students who has gender-biased attitude toward Home Economics were more likely to perceive Home Economics as an alienated and less important subject. The generally positive explicit attitude toward Home Economics may be the results the social desirability effect due to the education. However, the home economists should develop a plan to overcome the gender-biased implicit attitude in order for the value of Home Economics as a subject to be fully addressed.
