1. As the low standard of living of the people who live in both the model and compared villages, is almose similar to each other, the state of their food intaking has nearly the same degree. 2. The villagers of the two kinds of village mentioned above do not cast off their traditional eating habits getting an energy from rice and vegetarian diet. They, however, have been so much interested in the problem of birth control that they have a few children in less than four-year-old. We have to go on the problems of driving a reasonable family plan, and replacing the traditional food life by taking a fatty food. 3. Their pool life forces them to have an over work for supporting their family. Even though they take much Fe from grains and vegetables day after day, Fe does not give a great influence on making Hb (Erythrocyte) in a body. Accordingly most of them have developed symptoms of anemia. This research, comparing with the research results of Ewha University and Seoul Medical College shows much lack of Hb. So it is need for them to take a large quantity of animal protain and make a healthful habit by reforming their food life.

The functional food components from various Basidiomycota were investigated to improve human intestinal microflora, especially associated with obesity. EtOH extract from Gyrophora esculenta fruit body and Coriolus versicolor judae mycelia showed antimicrobial activities on Eubacterium limosum, Clostridium perfrigens, Clostridium paraputrificum, Clostridium difficile and Clostridium ramosum, and on Bacteroides fragilis, respectively. Although the 80% EtOH extract from G. esculenta fruit body and hot-water extract from C. versicolor judae mycelia did not reduce weight of the rats in the high fat diet, these extracts showed stability at high temperatures and at wide pH ranges. In the rat group of feeding 80% EtOH extract from G. esculanta fruit body, Bifidobacterium spp. were increased and Clostridium spp. and Eubacterium spp. were decreased compared to the high fat feeding group. Also sensory evaluation was carried out for the development of prototype drink product. These results demonstrated the possibilities of C. versicolor judae and G. esculenta as a functional food components to control intestinal microbial flora.
The purpose of this study was to investigate the awareness and practice on well-being life and well-being related behaviors, and the various factors affecting well-being related behaviors such as purchasing food materials, food habits, eating out and daily routine activities. A survey was conducted by questionnaire and on a 5-point Likert scale. The subjects of this study were composed of 221 students and their 102 parents who were over 40 years residing in the Ulsan area. The results of this study are summarized as follows: Almost half of the subjects (47.4%) responded that they have good health conditions; to keep a good health condition, 41.2% of the subjects were exercising regularly and 20.4% of them kept diet control. In regard to the meaning of well-being, 66.6% of the subjects thought it is the lifestyle for physical and mental richness (children: 70.6%, parents: 57.8%). 30.3% of the subjects answered that the most important part of well-being was food related. The importance order was mental richness, food related things, physical health for children, and for the parents, it was food related things, physical health, mental richness. Most of population (45.8%) answered that they have a willingness for the pursuit of a well-being life. Among the well-being related behaviors, 69.7% of subjects have purchased items (children: 61.5%, parents: 87.3%). 37.2% of the subjects have acquired information from TV. The average well-being practice score was $61.01{\pm}10.36$. Children's scores were significantly lower than the parent's scores (p < 0.001). And the average practice score of 'purchasing food materials,' 'eating out,' 'food habits,' 'daily routine activities' were $15.3{\pm}3.3,\;15.5{\pm}3.1,\;16.8{\pm}3.3$ and $13.4{\pm}3.5$, respectively. Among five types of purchasing food materials, 'purchasing domestic agricultural food' was greatest ($3.64{\pm}0.91$) and 'purchasing of organic or low agricultural chemical food products' was lowest ($3.15{\pm}0.91$). In regard to food habits, 'eating rice and bread made of mixed grains' was greatest ($3.46{\pm}1.12$) and 'eating uncooked food or zen food' was lowest ($2.46{\pm}0.99$). The practice scores were significantly affected by gender (p < 0.05), monthly income (p < 0.01), educational level (p < 0.01), presence of disease (p < 0.05), subjective health condition (p < 0.05), well-being awareness (p < 0.001) and concern with well-being (p < 0.001). Well-being awareness scores and well-being practice scores are related positively. Therefore various programs in well-being education should be necessary in order to boost the authentic perceptions of well-being and well-being oriented behaviors in any socioeconomic situation, such as different generations; industrial companies producing well-being goods for consumer's needs and satisfaction; and government and local community create various conditions for well-being oriented behavior.
Obesity is an excessive increased state of total body fat, and diabetes is a disease lack or defect of insulin which controls blood sugar. The reason of obesity and diabetes are history, lack of exercise, overeating, stress and so forth. The principle of dietary modification in the obesity and diabetes are controling total calorie control, and taking orderly meals, and restricting high calorie food. General exercise guidance will recommend to take precedence over the medical diagnosis, case history test before the exercise begins, and the beginning of exercise. It start with light excercise, and gradually enhance intensity The fundamental and effective cure of obesity and diabetes is aerobic exercise (as jogging, swimming, playing tennis, aerobic dancing). It is reasonable for exercise intensity to be 60~80$\%$ HRmax(50~70$\%$$Vo_2$ max) and for the duration to be 15~60minutes a day and frequency to be 3~6 times a week. Especially the exercise intensity may be changeable according to the, pattern of diabetes. The snack that contains carbohydrate during exercise will discontinue the exercise when insulin activity is reached on high peak, and it is a proper way taking 15~20g's carbohydrate contained food against possibility of the low blood sugar occurance after exercise, At last, it is much effective the exercise therapy is combined with the diet therapy for best diabetes treatment.
Background: To reduce use of main feed ingredient like corn, soy bean meal (SBM) and wheat, alternative ingredients has been studied like copra meal (CM). Production amount of CM which has been high makes CM to be an alternative feed stuff. However, low digestibility on AA and low energy content by high fiber content can be an obstacle for using CM. This experiment was conducted to evaluate the effects of CM supplementation with ${\beta}$-mannanase on growth performance, blood profile, nutrient digestibility, pork quality and economic analysis in growing-finishing pigs. Methods: A total of 100 growing pigs ([Yorkshire ${\times}$ Landrace] ${\times}$ Duroc) averaging $31.22{\pm}2.04kg$ body weight were allotted to 5 different treatments by weight and sex in a randomized complete block (RCB) design in 5 replicate with 4 pigs per pen. Treatments were 1) Control (corn-SBM based diet + 0.1% of ${\beta}$-mannanase (800 IU)), 2) CM10 (10% copra meal + 0.1% ${\beta}$-mannanase (800 IU)), 3) CM15 (15% copra meal + 0.1% ${\beta}$-mannanase (800 IU)), 4) CM20 (20% copra meal + 0.1% ${\beta}$-mannanase (800 IU)) and 5) CM25 (25% copra meal + 0.1% ${\beta}$-mannanase (800 IU)). Four phase feeding program was used: growing I (week 1-3), growing II (week 4-6), finishing I (week 7-9) and finishing II (week 10-12). Results: In growth performance, there was no significant difference among treatments during whole experimental period. In growingI phase, G:F ratio tended to increase when CM was increased (P = 0.05), but ADG and ADFI tended to decrease in finishingII phase (linear, P = 0.08). Also, increasing CM reduced ADG (linear, P = 0.02) and feed efficiency (linear, P = 0.08) during the whole finishing period. In blood profiles, BUN was linearly increased as CM increased (linear, P = 0.02) at growingII period. In digestibility trial, there was no significant difference in dry matter, crude fat, crude ash and nitrogen digestibility. However, crude protein digestibility was decreased linearly (linear, P = 0.02). In economic analysis, feed cost per weight gain and total feed cost per pig were reduced in overall period when CM was provided by 25% (linear, P = 0.02). Conclusion: CM with 0.1% of ${\beta}$-mannanase (800 IU) could be supplemented instead of corn and SBM up to 25% without detrimental effects on growth performance and pork quality of growing-finishing pigs.
Oxidative stress is believed to play an important role in the development of vascular complications associated with diabetes mellitus. We examined the antioxidative effect of sesamin and sesamolin on the preventing the development of insulin dependent diabetes mellitus using streptozotocin-induced Spraque Dawley diabetic rats. From 48 hours after injection of streptozotocin (60 mg/kg body weight), a portion of diabetic rats were fed with 0.2% sesamin and sesamolin containing diet for 3 weeks. There were significant differences of blood glucose and kidney weight between diabetic ports and control. Sesamin and sesamolin increased glutathione-S-transferase activity in kidney. The concentration of the thiobarbituric acid-reactive substances in the serum, liver, and kidney of diabetic rats administered sesamin and sesamolin decreased significantly as compared with that of the non-treated diabetic group. Dietary sesamin and sesamolin suppressed the oxidative stress in the diabetic rats. These results demonstrated that sesamin and sesamolin are potential and effective antioxidants that can protect the complications associated with diabetes.
This experiment was carried out to investigate the effect of dietary supplementation of complex probiotics and enzyme on air quality in finishing pig building and the performance of finishing pigs. A total 117 crossbred $[(Landrace{\times}Yorkshire){\times}Duroc]$ pigs were randomly arranged into nine groups and assigned to three treatments. Pigs were fed a basal diet supplemented with 0, 0.1% level of probiotics and 0.1% level of complex probiotics and enzyme until the market weight for 42 days of the experimental period. Ammonia and hydrogen sulfide concentrations in the finishing pig building were significantly (p<0.05) decreased by dietary supplementation of complex probiotics and enzyme compared with those of control, however, indoor carbon dioxide concentration was not affected by dietary supplementation of probiotics or complex probiotics and enzyme. Average daily feed intake and feed conversion ratio were significantly improved (p<0.05) with dietary supplementation of 0.1% complex probiotics and enzyme; however, average daily gain was not affected by dietary supplementation of probiotics or complex probiotics and enzyme. In conclusion, the results obtained from this experiment suggest that the dietary supplementation of complex probiotics and enzyme for finishing pigs may improve air quality in the finishing pig building and the performance.

Effects of Sotosaja hwan on Blood Glucose, Hyperlipidemia, Polyol Pathway and Antioxidative Mechanism in ob/ob Mouse Diabetes is a disease in which the body does not produce or properly use insulin. Etiological studies of diabetes and its complications showed that oxidative stress might play a major role. Therefore, many efforts have been tried to regulate free oxygen radicals for treating diabetes and its complications. Sotosaja-hwan has been known to be effective for the antiaging and composed of four crude herbs. In male ob/ob mouse in severe obesity, hyperinsulinemia and hyperlipidemia, which are features of NIDDM, the hyperglycemic activites and mechanisms of Sotosaja-hwan were examined. Mice were grouped and treated for 5 weeks as follows. Both the lean (C57/BL6J black mice) and diabetic (ob/ob mice) control groups received standard chow. The experimental groups were fed with a diet of chow supplemented with 30 and 90 mg Sotosaja-hwan per 1 kg of body weight for 14 days. The effects of Sotosaja-hwan extract on the ob/ob mice were observed by measuring the serum levels of glucose, insulin, lipid components, and the kidney levels of superoxide anion radical $({\cdot}O_2)$, MDA+HAE, GSH/GSSG ratio, and also the enzyme activities involved in polyol pathway. Sotosaja-hwan lowered the levels of serum glucose and insulin in a dose dependent manner. Total cholesterol, triglyceride and free fatty acid levels were decreased, while the HDL-cholesterol level was increased, in Sotosaja-hwan treated groups. Renal aldose reductase and sorbitol dehydrogenase activities were increased in the ob/ob mice, whereas those were inhibited in the Sotosaja-hwan-administered groups. Sotosaja-hwan inhibited the generation of ${\cdot}O_2$ in the kidney. Finally, MDA+HAE levels was increased and GSH/GSSG ratio was decreased in the ob/ob mice, whereas those were improved in the Sotosaja-hwan-administered groups. Sotosaja-hwan showed the antidiabetic and anti hyperlipidemic activities by regulating the activities of polyol pathway enzymes, scavenging reactive oxygen species and reducing the MDA+HAE levels in the ob/ob mice.

Two experiments were conducted to investigate the effect of feeding Monascus Purpures(MP) on the growth performance of broiler chicks and egg qualify in laying hens. In Expt 1, MP were supplemented with 0. 0.5, 1.0, 2.0, 4.0% in basal diets. Weight gain, feed intake, feed conversion were examined for five weeks and blood cholesterol, protein were measured at the end of experiment. In Expt 2, diets supplemented with 0, 0.5, 1.0, 2.0, 3.0% MP were fed for two weeks. Egg qualify and yolk cholesterol were weekly measured. In Expt 1, Basal diets containing CP 21.5, 19%, ME 3,100, 3,200 kcal/kg were fed ad libitum for starting and finsihing period, repectively. In Expt 2, hens diet contained CP 16%, ME 2,800 kca1/kg and fed for two weeks. In Expt 1, weight gain of birds fed 2.0% MP was maximized at five weeks of age. Feed efficiency was not statistically different, but tended to improve in 1.0, 2.0% MP supplemental groups compared with control. Total serum cholesterol tended to be lower in 2.0% MP supplemental group but was not statistically different. In Expt 2, albumen height and Haugh unit of birds fed 1.0 and 2.0% MP were higher than other treatments, but was not statistically different. Yolk cholesterol of hens fed MP diets showed no significance.

The purpose of this study was to investigate the possibility of Meles meles oil as an functional resource. To assess the effects of Meles meles oil in 25 non-insulin dependent diabetes mellitus (DM) persons, we examined changes of fat intake level, hematological and chemical variables, serum DM indices and lipid contents during the Meles meles oil supplementation. Polyunsaturated fatty acid and $\omega$3 fatty acid intake were significantly increased by Meles meles oil intakes. The levels of LDL-cholesterol and triglyceride were significantly decreased while HDL-cholesterol was significantly increased. Iron status improved during Meles meles oil intakes. These results show that modest dose of Meles meles oil supplementation can decrease serum triglyceride, cholesterol level without any changes in blood glucose level in NIDDM patients. These results indicated that Meles meles oil diet is effective therapeutic regimen for the control of metabolic derangements in diabetes mellitus. Also, these results imply that Meles meles oil can be used as possible food resources and functional food materials. However, large amounts of Meles meles oil should be used cautiously in NIDDM patients.
