  • The aims of this study were to estimate daily intake of macrominerals from beverages, liquid teas, and liquid coffees and to evaluate their potential health risks for Korean children and adolescents (1-to 19 years old). Assessment of dietary intake was conducted using the actual level of sodium, calcium, phosphorus, potassium, and magnesium in non-alcoholic beverages and (207 beverages, 19 liquid teas, and 24 liquid coffees) the food consumption amount drawn from "The Fourth Korea National Health and Nutrition Examination Survey (2007-2009)". To estimate the dietary intake of non-alcoholic beverages, 6,082 children and adolescents (Scenario I) were compared with 1,704 non-alcoholic beverage consumption subjects among them (Scenario II). Calculation of the estimated daily intake of macrominerals was based on point estimates and probabilistic estimates. The values of probabilistic macromineral intake, which is a Monte-Carlo approach considering probabilistic density functions of variables, were presented using the probabilistic model. The level of safety for macrominerals was evaluated by comparison with population nutrient intake goal (Goal, 2.0 g/day) for sodium, tolerable upper intake level (UL) for calcium (2,500 mg/day) and phosphorus (3,000-3,500 mg/day) set by the Korean Nutrition Society (Dietary Reference Intakes for Koreans, KDRI). For total children and adolescents (Scenario I), mean daily intake of sodium, calcium, phosphorus, potassium, and magnesium estimated by probabilistic estimates using Monte Carlo simulation was, respectively, 7.93, 10.92, 6.73, 23.41, and 1.11, and 95th percentile daily intake of those was, respectively, 28.02, 44.86, 27.43, 98.14, and 3.87 mg/day. For consumers-only (Scenario II), mean daily intake of sodium, calcium, phosphorus, potassium, and magnesium estimated by probabilistic estimates using Monte Carlo simulation was, respectively, 19.10, 25.77, 15.83, 56.56, and 2.86 mg/day, and 95th percentile daily intake of those was, respectively, 62.67, 101.95, 62.09, 227.92, and 8.67 mg/day. For Scenarios I II, sodium, calcium, and phosphorus did not have a mean an 95th percentile intake that met or exceeded the 5% of Goal and UL.

  • As the severity of environmental pollution increases, the foodstuffs are contaminated more the ever. There are 40 kinds of heavy metals that we are able to consume through the heavy metal contaminated-foodstuffs. Arsenic, lead, cadmium, and chromium out or them have been know to be a potential cause for a alzheimers disease, kidney diseases, and cancer. However, research data on the daily intakes of such heavy metals are limited. This study was performed to evaluate the daily intakes of nutrients and the dietary heavy metals of the college women living in Choongchung-NamDo Area, where had been reported to have high contents of heavy metals for the seafoods. We also investigated the blood levels of the heavy metals. The mean age, height, weight, BMI and percent ideal body weight(PIBW) of the subjects were 20$\pm$1.0yr, 158.4$\pm$0.7cm, 55.1$\pm$1.4kg, 22.4$\pm$.04, and 103.3$\pm$2.5 %, resp-ectivly. The mean of daily energy intake was 1,717.03$\pm$55.99kacl/day(86% of RDA for women). The ratio to energy from carbohydrate, fat and protein was 60: 24: 16. Daily intakes of Vit A, Vit B$_2$, CA, and Fe were under the RDA for those nutrients. The mean adequate ratio of the subjects was 0.92 . The daily intakes of heavy metal, such as As, Pb, Co, Cr and Mn , were 1.80$\pm$0.27mg, 75.21$\pm$4.12$\mu\textrm{g}$, 21.12$\pm$12.34$\mu\textrm{g}$, 60.07$\pm$6.24$\mu\textrm{g}$ and 6.23 $\pm$0.12mg respectively. the blood levels of As, Pb, Co, Cr and Mn were 16.10$\pm$2.10$\mu\textrm{g}$/dl, 4.32$\pm$0.58$\mu\textrm{g}$/dl, 0.02$\pm$0.01$\mu\textrm{g}$/dl, 4.23$\pm$0.41$\mu\textrm{g}$/dl, and 4.40$\pm$0.21$\mu\textrm{g}$/dl, respectively. In conclusion, daily intake of heavy metals for the college women living in Choongchung-NamDo area was lower than that of WHOs re-commendation, however, the blood levels of each heavy metals were higher than those of Japanese, american, and italian, There were no correlations between the dietary intakes and blood levels of each heavy metals. • This study was conducted to asses the $\omega$-3 fatty acid intake levels and to evaluate the relationship between the levels of $\omega$-3 fatty acids in plasma and erythrocyte membrane and the dietary intake of these fatty acids over the period of two months in 56 young Korean females. Dietary survey was conducted to obtain 7-day weiged records and six 24-hour recalls. Fasting blood sample was collected from each subject after the dietary survey period. Mean daily intakes of energy, fat, and cholesterol were 1,569㎉, 41.8g, and 217mg, respectively. Fat suppled 24% of total energy intake. Mean daily intake levels of eicosapentaenoic acid(EPA), docosahexaenoic acid(DHA), and total $\omega$-3 fatty acids were 0.04g, 0.06g, and 0.48g, respectively. Plasma cholesterol levels of most of the subjects were within normal range, and there was no significant correlation between plasma cholesterol levels and intake levels of any specific fatty acid. Levels of EPA, DHA, EPA+DHA in plasma and erythrocyte membrane, but not the levels of $\alpha$-linolenic acid(LNA), were significantly correlated with dietary in take of respective fatty acids. Such a correlation, however, was not observed in a previous study where dietary intake was assessed for 3 days. The results of this study show that dietary intakes of $\omega$-3 fatty acids are low in the subject and that about two-month period is required to assess dietary intake levels of $\omega$-3 fatty acids with a reasonable accuracy.

  • The effects of supplementing Gamba grass (Andropogon gayanus) with varying levels of hay from cassava (Manihot esculenta Crantz) and dried cassava root chip on growth and diet digestibility were studied using local male goats with an average initial body weight of 14.0 kg. Thirty-two animals were allocated to a completely randomized $2{\times}2$ factorial design with eight animals per treatment. The factors were two levels of cassava hay (25% and 35% of an expected dry matter (DM) intake of 3% of body weight) and cassava root chips (0 or 1% of body weight) on an individual basis with grass offered ad libitum. Another four animals were assigned to a $4{\times}4$ Latin square design to study digestibility, and were given the same four diets as in the growth experiment. Total DM intake was significantly higher in the group fed diets with cassava hay and root while the DM intake of Gamba grass was not significantly different between treatments. The supplementation with cassava hay and root increased the apparent digestibility of DM, organic matter and N and resulted in a higher N-retention. The apparent digestibility of neutral detergent fibre and acid detergent fiber was not affected significantly. The average daily gain of animals fed diets supplemented with both cassava hay and root was significantly higher than for the animals supplemented with cassava hay alone. The highest daily gain recorded was 70 g/day. In conclusion, supplementing a basal diet of Gamba grass with cassava hay and root chips improved DM intake, digestibility, N-retention and weight gain. In order to minimize the waste of cassava hay, the inclusion level of cassava hay can be recommended to be 25% of expected DM intake, which would give acceptable intake and growth performance when cassava root is included in the diet.

  • This study was conducted to investigate the status of calcium intake and serum calcium level in perimenopausal women. The age distribution of the subjects was 49-55 years. Daily nutrient intake and dietary sources of calcium were analyzed by a convenient method and a food frequency questionnaire. At the same time, fasting blood samples were collected and serum calcium concentration was measured. The BMD of subjects was measured by Dual Energy X-ray Absorptiometry (DEXA). Fifty percent of the subjects under 50 years of age ($\leq$49 yr group) and 66.9% of the subjects from 50 years and up ($\geq$50 yr group) were classified as osteopenia or osteoporosis. Intake of energy (p<0.001), protein (p<0.05), fat (p<0.05), calcium (p<0.01) was significantly different between $\leq$49 yr group and $\geq$50 yr group. Mean daily intake of calcium was much lower than the Korean RDA : 94.9% in $\leq$49 yr group and 87.4% in $\geq$50 yr group. The average concentration of total calcium in serum was within the normal range in $\leq$49 yr group. Serum calcium concentrations were significantly (p<0.05) different between $\leq$49 yr group and $\geq$50 yr group. It was noteworthy that serum calcium concentration was positively related to the intake of protein, fat and calcium. Lettuce, sea mustard, bean-curd, anchovy, radish and perilla leaf was included among the major sources of dietary calcium. Further investigation is necessary to make sure of the relations between BMD and serum calcium level and calcium intake.

  • This study aimed to determine the fluoride intakes in 120 preschool children aged 3 to 6 residing in Jumunjin (community water fluoridation area) and Gangneung (non-fluoridation area). The parents were asked to collect 24-hour urine samples and to duplicate the samples of all the diets that their children ingested in the day of urine collection. The acid-diffusible fluoride in the food and non-carbonate beverages were isolated by the acid-diffusion technique and then measured with a fluoride electrode. The fluoride in carbonate beverages, drinking waters and urine samples were measured directly with a fluoride electrode. The geometric mean (geometric standard deviation) of daily fluoride intakes from all kinds of diet was 5.99 (2.27) $\mu$g/kg/day in the children in Gangneung and that of the children in Jumunjin was 18.36 (2.69). The amount of fluoride intake by food and drinking water in fluoridation area were significantly larger than that in non-fluoridation area but the statistical difference of fluoride intake by beverages between two areas was not observed. The GMs (GSDs) of daily fluoride excretion by urine of children in non-fluoridation area and in fluoridation area were 8.39 (1.73) and 18.62 (1.77) $\mu$g/kg/day, respectively. The correlation between fluoride intake from diet excluding beverage and urinary excretion was statistically significant. It is concluded that the amount of fluoride intake of children living in fluoridation area did not exceed the upper intake level to avoid the risk of dental fluorosis (2.2 mg/day in 4- to 8-year-olds) and urinary excretion of fluoride was good indicator of fluoride intake from diets.

  • BACKGROUND/OBJECTIVES: The commercial foodservice industry in Korea has shown rapid growth recently. This study examined Korean adults' consumption of commercially-prepared meals based on where the food was prepared. SUBJECTS/METHODS: Data from a 24-hour dietary recall of the 2001 and 2011 Korea National Health and Nutrition Examination Surveys were analyzed. A total of 10,539 subjects (n = 6,152 in 2001; n = 4,387 in 2011) aged 19-64 years were included for analysis. Commercially-prepared meals were classified into four food source groups based on where the food was prepared: Korean restaurants, Chinese/Western/Japanese restaurants, fast-food restaurants, and retail stores. Subjects' energy intake, including the amount and proportion of calories, was examined for each food source. The analysis was also conducted by gender for age-stratified groups: 19-29, 30-49, and 50-64 years old. RESULTS: Korean adults' energy intake from commercially-prepared meals increased in the amount of calories (551 kcal to 635 kcal, P < 0.01), but not in the proportion of daily calories (27% to 28%) from 2001 to 2011. The most frequent food source of commercially-prepared meals was Korean restaurants in both years. The amount and proportion of calories from retail stores increased from 83 kcal to 143 kcal (P < 0.001) and from 4% to 7% (P < 0.001), respectively, during the same period. Males aged 30-49 years (34%) and females aged 19-29 years (35%) consumed the highest proportion of daily calories from commercially-prepared meals in 2011. CONCLUSIONS: Korean adults consumed about one-fourth of their energy intake from commercially-prepared meals. In particular, males aged 30-49 years and females aged 19-29 years consumed more than one-third of their energy intake from commercially-prepared meals. Korean restaurants played a significant role in Korean adults' energy intake. Retail stores increased influence on Korean adults' energy intake. These results could be useful for developing health promotion policies and programs.

  • This study was an attempt to compare the energy, nutrient intake, blood lipids, and body fat distribution of diabetics with those of normal control subjects. Daily energy and nutrient intake were measured by convenient method. The following anthropometric measurements were made on all participants : weight, height, and waist and hip circumference. We matched 31 pairs with diabetics and nondiabetic control subjects by sex, age, body weight and height, and made comparisons between two groups to observe the effect of diabetes in lipid profiles. Aslo the effect of exercise in diabetes was investigated. The results obtained were as follows : 1.The average of daily energy intake of diabetics was 1, 927 kcal and that of nondiabetics was 2, 159 kcal. Percentage of energy in diabetics is that carbohydrate : protein : fat = 69:13:18 2. When diabetics were divided into obese and nonobese group according to RBW, 33% of diabetics were obese and energy intake was not significantly different between the two groups, but VLDL - cholesterol concentration was significantly higher in the obese group. 3. Energy intake, BMI, RBW and total cholesterol level of upper obesity group were significantly higher than those of lower body obesity group in male diabetic subjects. 4. When matching 31 pairs of diabetics and nondiabetics according to sex, age, body weight and height triglyceride concentration and WHR of diabetics were measured to be significantly higher than those of nondiabetics. 5. Although energy intake was not significantly different between exercise and nonexercise groups, triglyceride, blood glucose, RBW, BMI were significantly lower in the exercise and nonexercise groups, triglyceride, blood glucose, RBW, BMI were significantly lower in the exercise group than the nonexercis group in diabetics. 6. BMI and RBW were not correlated with cholesterol or triglyceride, but WHR correlated significantly with both cholesterol and triglyceride. In conclusion, diabetics had higher triglyceride concentration and WHR than nondiabetics. WHR may be better than BMI or RBW for predicting alteration in lipid profile and exercise seems beneficial for controlling blood glucose and lipids in diabetics.

  • Objectives: This study was conducted to examine the relationship between white rice and Kimchi intakes and the risk of metabolic syndrome (Mets) in Korean adults. Methods: Dietary intake and health data of 8289 subjects aged 19 years and over from the 2013-2015 Korea National Health and Nutrition Examination Survey (KNHANES) were used. Daily total intake of white rice and Kimchi was assessed by 24-hour recall data. Multivariate logistic regression analysis was used to estimate the risk of Mets according to the daily intake of white rice and Kimchi. Results: The highest intake of white rice and Kimchi was associated with a higher risk of metabolic syndrome (Q1 vs Q5, multivariable adjusted OR=1.45, 95% CI: 1.03-2.03) in women. In addition, a significantly increased risk of elevated blood pressure (multivariable adjusted P for trend 0.0459) was associated with a higher intake of white rice and Kimchi in women. There was no significant trend in the risk of metabolic syndrome according to the intake of white rice and Kimchi in men. Conclusions: A higher intake of white rice and Kimchi was only associated with an increased risk of metabolic syndrome in women indicating it is necessary to consume more various food groups beside white rice and Kimchi, especially in women.
