고구마가루 첨가가 백설기의 품질특성에 미치는 영향 (Effect of Added Sweet Potato Flour on the Quality Characteristics of the Korean Traditional Steamed Rice Cake, Backsulki)

  • 백설기 원료인 쌀가루에 당 및 식이섬유의 함량이 높은 것으로 알려진 고구마가루를 5, 15, 25%(w/w, dry-weight basis) 비율로 첨가하여 원료 및 제품에서 나타나는 이화학적 품질과 제품의 관능특성, 및 저장성을 관찰하였다. 쌀가루에 대한 고구마가루 첨가량이 증가할수록 제품의 수분결합력, 팽윤도가 증가하였으며 외관에 있어서 적색도 및 황색도가 증가한 반면 전체적인 외관은 다소 어두워졌다. DSC(Differential Scanning Calorimeter)에 의한 열적특성의 분석결과 고구마가루의 H는 28.1 J/g으로서 19.1 J/g인 쌀가루에 비해 2배 정도로 높아 호화경향이 낮은 것으로 조사되었다. DSC thermogram에 나타난 전분의 노화도 경향은 고구마가루 첨가량이 증가할수록 감소하여 고구마가루 첨가량에 비례한 제품의 노화억제효과가 확인되었다. 제품의 경도, 응집성, 탄력성, 씹힘성 등은 고구마가루 첨가에 따라 감소하였으며 또한 경도증가율이 낮아져 고구마가루의 노화지연 효과가 확인되었다. 백설기 내의 고구마가루 첨가는 상대적으로 낮은 저장온도에서 제품의 경도증가를 억제하는 경향이 있었다. 그러나 제품의 경도변화의 폭은 저장온도 보다 고구마가루 첨가의 영향을 더 많이 받는 것을 알 수 있었다. 미생물적 특성에 있어서 제품을 실온에서 3일간 저장 시 고구마가루 첨가량에 따라 총 미생물수가 미첨가구에 비해 최고 1/10정도까지 낮게 유지되었다. 제품의 외관과 색을 제외한 전반적 기호특성은 고구마가루 첨가에 따라 향상되었으며 특히 15% 첨가구가 가장 좋은 평가를 받았다.

Effect of Acrylonitrile Content on the Glass Transition Temperature and Melt Index of PVC/SAN Blends

  • PVC and SAN are often mixed to compensate for the disadvantages of each polymer. Miscibility and thermal stability of PVC/SAN blend were investigated in this study by blending SAN polymer having 20, 24, 28, 32 % of acrylonitrile contents. Two polymers were mixed using a melt blending method with a single screw extruder. DSC thermogram was used to evaluate miscibility of the two polymers. SAN having 24 % of acrylonitrile showed the best miscibility with PVC. In order to evaluate degradation behavior, blended polymer was heat treated in DSC furnace and glass transition temperature was measured consecutively. Glass transition temperature increased continuously with annealing time due to degradation and cross-linking of polymer chains. Melt index of blended polymer was always higher than that of PVC.

DPPC Liposome에 미치는 고들빼기 추출물의 DSC 연구 (The Effects of Godulbaegi Extracts on the Fluidity of Phospholipid Liposomes by DSC)

  • Liposomes have been widely employed as biomembrane-mimetic system and drug-delivery system. In these applications, the low stability of liposomes has been the most serious problem. They have relatively short half-lives and easily lysed through interactions with biological components. This study was performed to investigate the effects of godulbaegi extracts on the fludity of phospholipid liposomes. We used dipalmitoyl phosphatidylcholine(DPPC) liposomes which make most stable liposomes among the other phosphatidylcholines. The thermograms of the DPPC liposomal bilayers incorporated with the hexane extract of godulbaegi(Ixeris sonchifolia H.) were obtained, and the enthalpy changes and the sizes of cooperative unit of the transition were calculated. The incorporation of the Ixeris sonchifolia H. into the liposomal bilayers effectively reduced the transition temperature at which the transition from gel state to liquid-crystalline state occurs, broadened the thermogram peaks, and reduced the ratio of van't Hoff to calorimetric enthalpies. These results indicate indicate that the godulbaegi extracts (Ixeris sonchifolia H.) have significant effects on the fluidity of biological membrance.

Studies on thermal and swelling properties of Poly (NIPAM-co-2-HEA) based hydrogels

  • Thermoresponsive hydrogels based on N-Isopropylacrylamide (NIPAM) and 2-Hydroxyethylacrylate (HEA) were prepared by free radical polymerization. The hydrogels were characterized by elemental (CHN) analysis, differential scanning calorimetry (DSC) and thermo gravimetric analysis (TGA). DSC thermogram showed two endothermic transitions which are due to hydration of water present in different environments. One near $0^{\circ}C$ called melting transition of ice and was used to calculate the quantitative determination of the amounts of freezing and non freezing water. The other transition above the ambient temperature was due to the combination of hydrophobic hydration and hydrophilic hydration which changes with the copolymer compositions. Swelling and deswelling studies of the hydrogels were carried out using the aqueous media, salt and urea solutions. The experimental results from swelling studies revealed that copolymers have lower rates of swelling and deswelling than the homopolymer.

  • The objectives of this study were to evaluate the effect of previous heating temperature and holding times on the thermal behavior of pork loin muscle by DSC. Pork loin muscles were heated to achieve the following end-point temperatures: 40$^{\circ}C$, 50$^{\circ}C$, 60$^{\circ}C$, 70$^{\circ}C$, 80$^{\circ}C$ at heating rate = 10$^{\circ}C$/min. The first peak was disappeared when samples were initially heated to 50$^{\circ}C$ for 1 minute. As end-point temperature was raised, major peaks were progressively disappeared and peaks were lost completely at 80$^{\circ}C$. Especially, peaks were completely disappeared at 70$^{\circ}C$ for 10 minute. Increasing of exposure time to elevated temperature also increased denaturation, thereby reducing the area of the thermogram.

PSE돈육 드립의 열안정성에 관한 연구 (Studies on the Thermal Stability of Free Drip Released from PSE Pork Muscle)

  • The objective of this study was to investigate the characteristics on the thermal denaturation of free drip released from pork loin during chilled storage using DSC(differential scanning calorimetry). DSC thermogram of drip released from normal pork(NORD) was characterized by a minor peak and two major peaks with temperature maxima at $61.5^{\circ}C$, $71.7^{\circ}C$ (associated with sarcoplasmic proteins) and $84.3^{\circ}C$ (associated with protein-protein interaction and aggregation). In the denaturation temperature of drip released from PSE pork (PSED), the peak(Tmax) at $59.0^{\circ}C$ was reduced by $2.5^{\circ}C$. When the thermograms were divided into segments correponding to the three peaks, $\Delta$H2 was shown to be reduced by 10% in PSED as compared to NORD. With the decrease in the solubility of sarcoplasmic proteins in PSE muscle, there was a corresponding increase the drip loss during the storage.

Synthesis and Properties of Novel T-type Nonlinear Optical Polyurethane Containing Tricyanovinylthienyl Group with Enhanced Thermal Stability of Dipole Alignment

  • A novel T-type polyurethane 7 containing 1-(2,5-dioxyphenyl)-2-(5-(1,2,2-tricyanovinyl)-2-thienyl)ethenes as NLO chromophores, which constitute part of the polymer backbone, was prepared. Polyurethane 7 is soluble in common organic solvents such as DMF and DMSO. It shows a thermal stability up to $270^{\circ}C$ from TGA thermogram with $T_g$ value obtained from DSC thermogram near $155^{\circ}C$. The second harmonic generation (SHG) coefficient ($d_{33}$) of poled polymer film at 1560 nm fundamental wavelength is $3.56{\times}10^{-9}$ esu. Polymer 7 exhibits a thermal stability even at $5^{\circ}C$ higher than $T_g$, and no significant SHG decay is observed below $160^{\circ}C$, which is acceptable for nonlinear optical device applications.

Tetramethyldisiloxane-1,4-bis(dimethylhydroxysilyl)benzene 공중합체의 합성 및 특성 (Syntheses and Properties of Copolymers of Tetramethyldisiloxane and 1,4-Bis(dimethylhydroxysilyl)benzene)

  • Organocyclosiloxane oligomer[$(R_2SiO)_n$, n=2, 3, 4, 5]와 dimethyldichlorosilane을 Pyridine N-oxide 촉매 존재하에서 개환 반응시켜 linear chlorine terminated siloxane(yields;71.2~86.5%)를 얻었다. $0^{\circ}C$에서 linear chlorine terminated siloxane과 dimethylamine을 반응시켜 amino terminated siloxane oligomer(yields;76.2~85.3%)를 얻은 후 이 화합물들과 1,4-bis(dimethylhydroxysilyl)benzene을 반응시켜 공중합체들(yields;58.0~71.0%)을 합성하였다. 이들 공중합체의 구조는 FT-IR 및 $^1H$-NMR로 확인하였으며, DSC 및 TGA thermogram을 통하여 이들 중합체들의 열적특성을 조사하였다. TGA thermogram으로부터 polymer I (n=2)의 초기분해온도는 $476^{\circ}C$로 가장 낮았고, polymer IV(n=5)가 $485^{\circ}C$로 가장 높았다. n의 수가 증가할수록 열안정성은 다소 우수한 것으로 관찰되었고, DSC thermogram에서 중합체들의 유리전이온도는 polymr IV (n=5)가 $-76^{\circ}C$로 가장 낮았으며, n의 수가 감소할수록 높게 나타났음을 알 수 있었다.

  • 알루미나에 LiBr와 $CaBr_2$를 각각 흡착시켜 용매가 없는 상태에서 여러 가지 염화 알킬과 반응시켜 좋은 수득률로 해당하는 브롬화 생성물을 얻을 수 있었다. 이러한 높은 반응성은 알루미나에 흡착되어 있는 극소량의 물과 브롬화 금속간의 상호작용이 알루미나 상에서 일어날 수 있기 때문이라는 것을 Differential scanning calorimetry (DSC) 열분석 실험과 문헌을 통하여 고찰하였다.

히드록시프로필 키틴의 합성과 액정형성 (Synthesis of Hydroxypropyl Chitin and Its Liquid Crystalline Character)

  • 키틴에 산화프로필렌을 반응시켜 키틴의 수산기에 히드록시프로필기가 치환된 히드록시프로필 키틴(HPCH)을 합성하였다. 여러가지 유기 용매중에서 키틴과 그 유도체의 용해성 시험에서 HPCH가 키틴보다 용해성이 향상되었으며 포름산에서 가장 좋은 용해성을 나타내었다. 포름산을 용매로 HPCH용액을 제조하여 농도를 변화시키면서 편광현미경으로 관찰한 결과 30 wt% 이상의 농도에서 지문형태의 복굴절 현상이 나타났으며, 열분석기(DSC)의 분석에서 열적 특성피크는 관찰되지 않아서 HPCH는 콜레스테릭 구조를 갖는 유방성 액정을 확인할 수 있었다.
