울금 농축액을 첨가한 불고기 소스의 개발 (Development of Bulgogi Sauce Added with Concentrated Curcuma longa L.)

  • 본 연구는 울금 농축액을 첨가한 불고기 소스의 이화학적 특성 및 관능특성에 대하여 연구하였다. 불고기 소스의 울금 농축액의 첨가량이 증가할수록 pH가 높아지는 경향을 나타내었으며 불고기 소스의 울금 농축액의 첨가량이 증가할수록 색도(명도; L, 적색도; a, 황색도; b)도 높아지는 경향을 나타내었다. 울금 농축액 첨가 불고기 소스의 DPPH 라디컬 소거능은 울금 농축액의 첨가비율이 증가할수록 높아지는 경향을 나타내었으나, 총 폴리페놀 함량은 각 시료간 유의적인 차이를 나타내지 않았다. 관능평가에서는 울금 농축액 10% 첨가 소스가 맛 기호도 측면에서 가장 우수했던 반면, 전반적인 기호도 측면에서는 울금 농축액 20% 첨가 소스가 가장 우수하였다. 또한, 울금 농축액 20% 첨가 쇠고기 구이가 관능 기호도 측면에서 가장 우수하였다. 이상으로써, 불고기 소스의 관능적 기호성을 위해서는 울금 농축액 20%를 첨가하는 것이 가장 적합할 것으로 판단된다.

수종의 한약재가 Streptozotocin으로 유발된 고혈당 생쥐에 미치는 영향 (The Effects of Several Herbal Medicine Concentrated Solution on the Hyperglycemic Mice Induced with Streptozotocin)

  • Objective : This study has been carried out to understand the effect of several herbal medicine concentrated solution on the hyperglycemic mice Induced with streptozotocin(STZ). Methods : The 60 mg/kg of STZ injection into mice twice by 24 h interval and then 120 mg/kg of STZ injection again 3 days after the earlier injection. Control group was subjected to natural recovery, however, treated groups were fed 0.2 ml of several herbal medicine-concentrated solution (PA (x2, several herbal medicine-concentrated solution 1 group); PB (x4 several herbal medicine-concentrated solution 2 group) daily for 6 weeks. Result : The weight of PA was higher than that of control, but weight of PB was lower than control. The blood level of control increased continuously, reaching to 350mg/dL after 6 weeks, however, PA and PB showed a fast reduction of blood glucose. In blood glucose tolerance test, PA and PB showed better resistance than control. The GOT level in significantly(p<0.05) decreased in PA and PB compared with control group. The BUN and creatinine levels are significantly(p<0.01) decreased in PA compared with control group. Feeding of several herbal medicine-concentrated solution in a concentration of PA had an efficient effect on regeneration or recovery of Langerhans islet and ${\beta}-cell$ damaged by STZ. More Langerhans islet and high insulin-immunohistochemical resistance were observed in PA compared with control, but they were higher in PB than in PA. The number of Langerhans islet ${\beta}-cell$ and Langerhans islet. Conclusions : The result from the six weeks of observation demonstrates that the several herbal medicine concentrated solution have a positive effect of lowering the level of blood sugar and they increased insulin concentration. They have an effect for recovery of pancreas tissue and recovery of kidney, liver function from a diabetes mellitus.

집중질량과 초기 비틀림각을 갖는 회전블레이드의 진동해석 (Vibration analysis of a pretwisted rotating blade with a concentrated mass)

  • Equations of motions of a pretwisted rotating blade with a concentrated mass in an arbitrary position are derived. The flapwise and chordwise equations are coupled to each other due to the pretwist angle of the blade. As the angular speed, hub radius ratio, pretwist angle and concentrated mass vary, the vibration characteristics of the blade change. It is found that eigenvalue lociveering phenomena occur between two closing loci due to the pretwist angle. The effect of the pretwist angle on the critical angular speed and location of the concentrated mass on the natural frequencies are also investigated.

  • In this paper, a modeling method for the bending vibration analysis of rotating Timoshenko beams with concentrated mass and mass moment of inertia is presented. The shear and rotary inertia effects become critical for the accurate estimation of the natural frequencies and mode shapes as the slenderness ratio decreases. The natural frequencies obtained by using the Timoshenko beam theory are lower than those by using the Euler beam theory. The critical angular speed, which does not exist only with the concentrated mass, exists with the concentrated mass moment of inertia.

Nonlinear vibrations of axially moving beams with multiple concentrated masses Part I: primary resonance

  • Transverse vibrations of axially moving beams with multiple concentrated masses have been investigated. It is assumed that the beam is of Euler-Bernoulli type, and both ends of it have simply supports. Concentrated masses are equally distributed on the beam. This system is formulated mathematically and then sought to find out approximately solutions of the problem. Method of multiple scales has been used. It is assumed that axial velocity of the beam is harmonically varying around a mean-constant velocity. In case of primary resonance, an analytical solution is derived. Then, the effects of both magnitude and number of the concentrated masses on nonlinear vibrations are investigated numerically in detail.

  • Digital signal processor (DSP) and field programmable gate array (FPGA) based concentrated control systems are designed for implementing CPS-SPWM strategies. The self-defined universal asynchronous receiver/transmitter (UART) protocol is used for communication between a master controller and an individual module controller via high speed links. Aimed at undesired pulse competition, this paper analyzes its generation mechanism and presents a new method for eliminating competition pulses with no time delay. Finally, the proposed concentrated controller is applied to a 10kV/10MVar distribution static synchronous compensator (DSTATCOM) industrial prototype. Experimental results show the accuracy and reliability of the concentrated controller, and verify the superiority of the proposed elimination method for competition pulses.

Inner Evaporative Cooling Wind Power Generator with Non-overlapping Concentrated Windings

  • As the space of the wind power generator stator end is limited, it is difficult for us to place the inner evaporative cooling system in it. We use the non-overlapping concentrated windings scheme to solve the placing and cooling problem. The characteristic of a 5MW direct-driven permanent magnet generator with non-overlapping concentrated windings were analyzed under no-load, rating-load and short-circuit by (Finite Element Method) FEM for verification of design. We studied the connection methods of the stator windings and designed the end connection member. The heat dissipation of the stator end was simulated by FEM, the result showed that the end cooling could satisfy the wind generator operation needs. These results show that the direct-driven permanent magnet wind power generators with non-overlapping concentrated windings and inner evaporative cooling system can solve the cooling problem of wind power generator, and obtain good performance at the same time.

  • This paper presents the modeling and impact analysis for a rotating cantilever beam having a concentrated mass. The concentrated mass takes an impact force during the rotating motion and the transient response of the beam induced by the impact is calculated by applying the Rayleigh-Ritz assumed mode method. The stiffness variation effect caused by the rotating motion is considered in this modeling. The effects of the concentrated mass size, impact position and the angular velocity of the beam on the transient responses are investigated through numerical studies.

Influence of Ice Recrystallization on Rheological Characteristics of Ice Slurries and Physicochemical Properties of Concentrated Milk

  • Freeze concentration of milk was carried out through the controlled recrystallization of ice in a multi-stage freeze concentrator. Rheological characteristics of ice slurries were analyzed to determine efficient concentration levels for the freeze concentration process. It was determined that efficient concentration level was 17% of total solids in the first and 27% in the second stage. Physicochemical properties were compared between freeze concentrated and evaporated milk. Freeze concentrated milk was more similar in color appearance to control milk than was evaporated milk. pH significantly decreased in evaporated milk than in freeze concentrated milk. pH of freeze concentrated milk resulted in similar value to control. These results indicated the advantages of freeze concentration as a non-thermal milk processing technology in terms of physicochemical properties. Consequently, we investigated the influence of ice recrystallization on the rheological characteristics of ice slurries and physicochemical properties of freeze concentrated milk.

농축 블루베리 퓌레 열처리 시 pH 조절제의 품질 저하 억제 효과 (Quality Deterioration Suppressing Effects of pH Regulators during Heat Treatment of Concentrated Blueberry Puree)

  • Purpose: In this study, we aimed to minimize quality degradation of concentrated blueberry puree by thermal treatment at $90^{\circ}C$ for 5 min, with citric acid (CA) and acidic sodium metaphosphate (ASM) as pH modifiers. Methods: The color values, redness a, anthocyanin contents, DPPH radical scavenging, elastase inhibition and tyrosinase inhibition activities were evaluated for quality parameters of concentrated blueberry puree. Results: The highest values of color value, redness a, anthocyanin contents, DPPH radical scavenging, elastase inhibition and tyrosinase inhibition activities were 1% CA+0.5% ASM followed by 1% CA and control. The quality parameters of concentrated blueberry puree were significantly different between control and 1% CA+0.5% ASM treatment (p<0.05). Conclusion: During thermal treatment, quality degradation of concentrated blueberry puree was reduced by 1% CA+0.5% ASM treatment, which is expected for new acidulants.
