Studies on the Fat Content and Fatty Acid Composition of the Black-bean-sauce Noodles in the Chinese Restaurants (시중 유통 자장면의 지방함량과 지방산 조성 조사)

  • In this study, we determined lipid content, total fatty acid composition, trans fatty acid(tFA) content, and acid value of twenty black-bean-sauce noodles collected in Seoul city area. Total lipid contents of twenty samples were determined to be 3.33~9.23% on wet base. Total unsaturated fatty acids were from 47.83% to 83.18%(mainly oleic and linoleic acid). Total saturated fatty acids ranged from 16.06% to 51.48%. Besides, tFA contents in total lipid of samples were ranged from 0.38% to 1.39%, equivalent to 20 to 80mg per 100g of black-bean-sauce noodles. Acid values of lipids extracted from samples ranged from 0.56 to 2.88.

Measurement of the proximate components of fresh ginseng (Panax ginseng C.A Meyer) using Near-Infrared Reflectance Spectroscopy (근적외선(NIR) 분광법에 의한 수삼의 성분 측정)

  • The measurement values of proximate composition in fresh ginseng could provide the important information for red ginseng processing. The measurement of them were performed by near-infrared (NIR) spectroscopy. Linear regression model for the predicting of proximate composition was developed and validated. The regression values of moisture, crude starch, crude ash, crude fiber, calcium, and magnesium contents were shown as 0.918, 0.951, 0.897, 0.728, 0.933, and 0.390, respectively. Therefore, the proximate composition of fresh ginseng could be measured by NIR, feasibly.

  • Recently fuel cell is considered to be a new technology that can substitute the ICE(Internal Combustion Engine) as well as overcome environmental issues. In military applications, fuel cell has an unique advantages, which are quietness, namely, stealth. The environmental requirement such as shock and vibration in military application, however, is very severe comparing to civilian demand. Especially, the safety concerning hydrogen storage is the most important problem. Among the candidate methods to store hydrogen, the metal hydride storage is promising method owing to the storage mechanism of chemical absorption of hydrogen to metal hydrides. In this study, the new composition of Ti-Zr type metal hydride(A composition) was suggested and investigated to increase the hydrogen storage capacity. For comparison, the hydrogen charge-discharge properties were investigated with the commercialized Ti-Zr type metal hydride(B composition) using PCT(Pressure-Composition-Temperature) measurement. Also two hydrogen storage cylinders were loaded with each metal hydride and their hydrogen charging and discharging characteristics were investigated. As a result, it was found that the new Ti-Zr type metal hydride has a slightly higher hydrogen storage capacity compared to commercial Ti-Zr type metal hydride.

Difference of Physiochemical Characteristics Between Citrus Bacterial Canker Pathotypes and Identification of Korean Isolates with Repetitive Sequence PCRs

  • The difference of carbon source utilization and fatty acid composition between the pathotypes of Xanthomonas strains, which causing citrus bacterial canker was compared, and the physiochemical characteristics were used to analyze relationship of the strains for the first time. The pattern of several carbon sources utilization and fatty acids composition reliably discriminated the pathotypes of Xanthomonas strains. The dendrogram which was constructed by 95 carbon source utilization profiles differentiated X. axonopodis pv. citri A, $A^*$ and $A^w$ from the other pathotypes. When the dendrogram was drawn by combined analysis of carbon source utilization pattern and fatty acid composition, X. axonopodis pv. aurantifolii B, C and X. axonopodis pv. citrumelo formed a distinct cluster. The difference of carbon source utilization and fatty acid composition could be used effectively for the identification of pathotypes of citrus bacterial canker. The physiochemical characteristics strongly indicated that the strains isolated in Korea belong to X. axonopodis pv. citri A type. The cluster analysis by the band patterns of ERIC-, BOX- and REP-PCR allowed the discrimination of the pathotypes isolated from Korea. However, the rep-PCRs could not differentiate X. axonopodis pv. citri A types from $A^*$ and $A^w$ types. The overall results of metabolic profiles and rep-PCRs strongly indicated that the Korean isolates are X. axonopodis pv. citri A type.

Carcass characteristics, meat quality, sensory palatability and chemical composition of Thai native cattle grazing in lowland and Phu Phan mountain forest

  • Objective: The aim of this study was to assess the effect of Thai native cattle grazing in the lowland or mountain forest on carcass characteristics, meat quality, sensory palatability, and chemical composition. Methods: Twelve male Thai native cattle with an average weight of 110±10 kg are allowed to be grazing in the lowland or Phu Phan mountain forest during the rainy season in northeastern Thailand. Results: The carcass characteristics, meat pH, and meat color were unaffected by treatment (p>0.05). The boiling loss was lower in the cattle grazing on the mountain forest (p = 0.027). The cattle grazing in the mountain forest had increased shear force (p = 0.039), tenderness (p = 0.011), and flavor intensity (p = 0.003). The protein and fat were higher (p<0.001 and p = 0.035, respectively) in cattle grazing in the mountain forest. The different grazing systems of the cattle had no effect (p>0.05) fatty acids in meat, except for capric acid (C10:0) and lauric acid (C12:0), which were higher (p = 0.046 and p = 0.049, respectively) when the cattle were grazing in the mountain forest. The different grazing systems did not influence (p>0.05) the unsaturated fatty acids in meat. Conclusion: Thai native cattle grazing in the Phu Phan mountain forest in the rainy season improves meat quality, sensory evaluation, and chemical composition.

Preparation and Electric Properties of PbTiO$_3$Thin Films by Low-pressure Thermal Plasma Deposition

  • PbTiO$_3$ thin films were prepared by low-pressure thermal plasma deposition on (100)Pt/(100)MgO substrates. Mist of source material in which metal alkoxides are dissolved in 2-methoxyethanol was introduced into plasma through heating furnace and deposited onto substrates at $600^{\circ}C$. As-deposited PbTiO$_3$/Pt/MgO thin film prepared at 1.33$\times$10$^4$ Pa was grown epitaxially, but was consisted of many rectangular shaped grains, with many grain boundaries and it was impossible to measure electric properties. As-deposited film prepared at 1.00$\times$10$^4$ Pa showed weak peaks of X-ray diffraction and the film was not grown epitaxially. On the other hand, the film after annealed at $700^{\circ}C$ showed strong diffraction peaks and epitaxial growth was also observed. For annealed film, moreover, no clear grain boundaries were observed. The value of ${\varepsilon}_r$, tan${\delta}$, Pr and Ec of annealed film were 160, 3.2%, 10.4${\mu}$C.cm$^-2$ and 51.2kV.cm$^-1$, respectively. Since the composition, Pb/Ti, measured by EDS attaching to SEM changed point by point, the distribution of composition in annealed film was investigated and found out several relations between composition and electric properties. At stoichiometric composition, Pr and Ec showed the lowest value and they gradually became large as composition deviated from stoichiometric one. Moreover, the value of ${\varepsilon}_r$ became gradually large as the ratio of Ti became high.

Effects of Amino Acid Composition and Average Hydrophobicity of Soybean Peptides on the Concentration of Serum Cholesterol in Rats (대두 펩타이드의 아미노산 조성 및 평균소수도가 흰쥐의 혈청 콜레스레롤 농도에 미치는 영향)

  • Effects of amino acid composition and average hydrophobicity of soybean peptides on serum cholesterol in rats were investigated. Soybean protein(ISP), casein(SCN), their peptic hydrolyzates fractionated by acid precipitations(SHT, SH8, SH6, SH4, CHT), and amino acid mixtures of the same composition as the proteins(SAA, CAA) were prepared to feed to rats. The amino acid composition of the peptides was analyzed by HPLC and the concentration of serum cholesterol in the rats was measured. By data analysis, it was found that there was no relationship between ratio of Lys/Arg or molar ratio of hydrophobic amino acids and serum cholesterol level. And also there was no relationship between the concentration and average hydrophobicity calculated by the method of Tanford, Manavalan, for Meirovitch, only except by the method of Krigbaum(r=-0.736); the higher the average hydrophobicity of Krigbaum was, the lower the concentration of serum cholestrol became.

Effect of CCC Composition on Burning Characteristic for 120mm Kinetic Energy Ammunition (120미리 운동에너지탄용 소진탄피 조성이 연소 특성에 미치는 영향)

  • The burning rates of combustible cartridge cases(CCCs) of 120mm kinetic energy ammunition were measured by CBT(Closed Bomb Tester). The burning coefficient was 1.4 for CCC fabricated by Post Impregnation(PI) process, and 1.0 for that by Beater Additive(BA) process. The BA process CCC showed the fixed burning coefficient of 1.0 in spite of changing the composition of CCC. As the Korean Future Main Battle Tank is requiring the high penetration performance compared with that of KlAl tank ammunition(K276), CCC was designed to have higher impetus composition than that of K276 composition(525J/g). The optimum impetus was 600J/g when considering the increases of pressure and muzzle velocity with increasing impetus. When impetus of CCC by changing the composition increased from 525J/g to 600J/g, the muzzle velocity of 12m/s at pressure increase of 3500psi increased in case of using SCDB propellant.

Stress Corrosion Cracking of High Strength Al-Zn-Mg-Cu Aluminum Alloy with Different Compositions (고강도 Al-Zn-Mg-Cu 합금에서 조성에 따른 응력부식균열 특성)

  • High strength 7xxx series Al-Zn-Mg alloy have been investigated for using light weight automotive parts especially for bump back beam. The composition of commercial 7xxx aluminum has the Zn/Mg ratio about 3 and Cu over 2 wt%, but this composition isn't adequate for appling to automotive bump back beam due to its high resistance to extrusion and bad weldability. In this study the Zn/Mg ratio was increased for better extrusion and Cu content was reduced for better welding. With this new composition we investigated the effect of composition on the resistivity against stress corrosion cracking. As the Zn/Mg ratio is increased fracture energy obtained by slow strain rate test was decreased, which means degradation of SCC resistance. While the fracture energy was increased with Cu contents although it is below 1%, which means improvement of SCC resistance. These effects of composition change on the SCC resistivity were identified by observing the fracture surface and crack propagation.

The Effect of Gender Composition of Research Teams on Individual Researchers' Performance in China

  • This article explores the relationship between the gender composition of scientific research teams and scientists' individual performance. The gender composition of research teams is an important feature of workplace settings and influences the way people interact and communicate; however, previous research has not directly examined its relationship with scientists' individual performance. Drawing on data collected on university faculties in China in 2016, this article tests several hypotheses about individual's performance in teams with different gender compositions. The results show that team gender composition has a clear gendered effect on scientists' individual performance. The effects of tokenism for women in men-majority teams is proven, but men in women-majority teams appear to be unaffected by tokenism. Moreover, the theories claiming that homogenous teams are more conducive to better individual performance than mixed teams are supported for men but not for women. The findings of this research suggest that recruiting more women into the scientific workforce may improve their performance and thereby help diminish the gender gap in performance. It also indicates that the Chinese preferential policies towards women in science formulated in recent years have had positive impacts. However, considering that more than half of the researchers in the survey are working in men-majority teams, the task of narrowing the gender gap in performance remains a challenge. Further work is needed to explore the tensions and benefits of working with the opposite gender.
