This study was carried out to examine Koreans preference in mushrooms, their nutritional knowledge of mushrooms as a source of Vitamin D, and five characteristics of six dishes consisting of common dishes and mushroom dishes. The data were collected from 2,777 subjects in various age ranges by means of a survey questionnaire. Variables, such as age, gender, diet quality and the degree of interest in diet were significant factors considered in relation to preference of mushrooms. Adults ate mushrooms because of their healthfulness, but this attibute was not a factor among adolescent students. The level of nutritional knowledge was relatively low and the ratio of "do not know" responses was higher than the ratio of "yes" or "no" . Generally, housewives, elementary school children and those who were healthy, ate floods because of health consciousness, and those who preferred mushrooms had better dietary habits. The characteristics of mushroom dishes, both as main and side dishes, had much more correlation with the factors considered for the subjects than the common dishes and one dish meals, respectively. Dietary altitudes, such as mushroom preference, frequency of mushroom intake and level of nutritional knowledge, were strongly correlated with the characteristics of the six dishes. It has been shown that mushroom dishes were recognized as nutritional, rather than delicious.

Mycoviruses have been found in many fungal species including mushrooms. Double-stranded (ds) RNA genomes were common type in mycoviruses, but single-stranded (ss) RNA mycoviruses were also reported in some fungal species. Sequencing analysis using cDNA cloning experiments revealed that mycoviruses can be classified into several different virus families such as Totiviridae, Hypoviridae, Partitiviridae and Barnaviridae etc. Because the nucleotide sequence data that are available in these days are very limited in a number of mycoviruses, the existence of more diverse viral groups in fungi are currently expected. In this review, we selected four different fungal groups, which were considered as the model systems for mycovirus related studies in both plant pathogenic fungi and edible mushroom species, and discussed about their molecular characteristics of diverse mycoviruses. The plant pathogenic fungi introduced here were Cryphonectria parasitica and Helminthosporium victoriae and the edible mushroom species were Agaricus bisporus and Pleurotus ostreatus.
The supply and demand of mushrooms has increased dramatically as the standard of living has increased and the nutritional and medical value of the mushrooms has been discovered. However, in meeting the demand, the profitability of the mushroom is being reduced. Even though there are many different types of and uses for mushrooms, the overall output production for the last ten years has consistently increased 5.9% per year, and for the last five years('00~'04) 5.2 % per year, and for the last 3 years('02~'04) 2.9% per year- the rate of increase has slowed. Looking at the standard gross income from mushroom production, it has increased 5.2% over the last nine years('95~'03), 1.6% over the last 4 years('00~'03), and 3.2% over the last 3 years('02~'04)-the annual gross income is decreasing. Even though the farmers are producing more mushrooms, the annual gross income is not increasing enough to keep up with the production, and therefore the profitability of mushrooms is decreasing. Since 2002, the constant increase of the output of edible mushrooms such as the Common Mushroom, Oyster Mushroom, King Oyster Mushroom and Winter Mushroom has resulted in a price declines. Before 2004, Korea mainly exported mushrooms, but after 2004 Korea mainly imported mushrooms. The mushroom industry of Korea is nearing the end of the stage of 'supplying domestic demand.' The stages are as follows: demand raised ${\rightarrow}$ supply domestic demand ${\rightarrow}$ export ${\rightarrow}$ country with developed mushroom industry. Therefore, we should have an efficient system to promote the exportation of mushrooms. Not only the exportation of mushroom itself but also the exportation of mushroom spawn, cultivation techniques and processing facilities should be our goal when we formulate the policy.
Common mushroom production per area has been decreased and are up to less than 50% of the 1980 production. To determine the main reasons for the decrement, we performed this study. Two main reasons, which are mushroom disease and the low compost quality because of mechanized compost making, were assessed. In mechanized mushroom farms, nitrogen concentration in compost was lower than recommended and total compost quantity was about 100-150 $kg/3.3m^2$, which was also lower than usual. Our study revealed that higher nitrogen concentration (about 1.5%) in compost gave better production. Also, use of large amount of compost appeared to increase the mushroom production, although more insects and disease problems were observed. The relationships between the presences of microorganisms and occurrence of diseases were assessed by monitoring the microorganism densities near the mushroom farms. Higher number of microorganisms were observed near the mushroom farm area, compared to control region, Daechon beach. Most contaminating molds were found in the circulating fans, tunnel and culture room floor. The bacterial isolates were collected from the air in mushroom culture room and killed with 0.005% Benzalkonium solution, indicating treatment of Benzalkonium are the effective methods to sanitize the mushroom culture room.
Five varieties of mushrooms, including Sae-do, were examined using farm field tests to determine their morphological characteristics and quality by performing harvest flush. Considering the cultivation characteristics of the varieties studied, the parts related to mushroom generation and production showed almost similar characteristics. Overall, the mycelial forces were similar; however, in the evaluation of plantation tests performed by farmers, "saedo" was found to be the strongest and "saehan" was considered to be the weakest. Weights of fruiting bodies were related more for compost status and regimen of use than for breeding, and it was difficult to distinguish between the weights of fruiting bodies of the varieties studied. Regardless of the variety, pileus diameter, pileus thickness, and stem length of Dalseong-gun, Yongin-si, and Boryeong-si decreased as the harvest flush progressed. However, stem thickness tended to increase in the second and third flush compared to that in the first flush, regardless of the variety. However, the Gyeongju-si farms could not identify any trends attributable to varieties and harvest flushes. The pileus size and stem length of the fruiting bodies of varieties from Buyeo farms decreased with the progression of the harvest flush. However, pileus thickness and stem thickness did not show any specific tendency of growth among the varieties studied. The differences in the morphological characteristics of mushroom varieties in each harvest cycle are expected to be caused by differences in the supply of nutrients in the medium, the quality of the compost used, and the cultivation environment rather than the variety.

The biological efficiencies of promising Pleurotus spp. were evaluated. Pleurotus ostreatus, Pleurotus tuberregium, and Pleurotus sajor-cajuwere investigated at temperatures of 22℃, 20℃, and 18℃ to determine their ability to adapt to temperatures that are likely to be found in subtropical regions. The experiment was conducted using a substrate comprising Popular sawdust 60% + cotton seed 20% + beet pulp 20% under a relative humidity of 65%. The results indicated that there were significant differences in terms of biological efficiency between the species: P. tuber regium 128.84% at 22℃, P. ostreatus 108.41% at 22℃, and P. sajor-caju is 80% at 20℃. The common temperatures at which all species showed the highest biological efficiencies were 22℃ and 20℃. Therefore, the production of the evaluated species was equal to or surpassed biological efficiencies reported in tropical environments, thereby demonstrating a potential opportunity to adapt to tropical environments without compromising quality standards.
We attempted to isolate the bacterial strains from the fruiting bodies of Agaricus brazilensis and determined their effects on browning and distortions of mushrooms. No bacterial strains were isolated when the middle of browning regions of A. brazilensis were used. Total 125 bacterial strains were obtained from the surface of browning regions and classified into 17 different genera and 29 species by using MIDI methods. Most common genus were Pseudomonas (26), Yersinia (29), and Cedecea (29). High lytic activity were detected when Pseudomonas strains were tested, while relatively low lytic activity were observed with both Yersinia and Cedecea strains. Therefore, we believed the distortion of mushroom could be the result of bacterial infections. Also, the development of brownish color was detected in large number of A. brazilensis strains only by incubation at 4C, suggesting no specific correlation between bacterial strains and brownish color development. Also, it is considered that the development of brownish color can be the normal changes of A. brazilensis.

This study was analyzed by HPLC that the changing sugar contents according to the strains of Agaricus bisporus and cultivation temperature. All strains showed that high total amino acid content in $19^{\circ}C$. 103 strain have been identified as the lowest total amino acids and amino acids content compare to the other strains. The amino acid 'cysteine' content is the highest, followed by phenylalanine, glutamic acid, lysine, proline, histidine. This big difference is estimated because in the strains of A. bisporus and cultivated temperature.
Flammulina velutipes is a popular edible basidiomycete mushroom found in East Asia and is commonly known as winter mushroom. Mushroom development showing dramatic morphological changes by different environmental factors is scientifically and commercially interesting. To create a genetic database and isolate genes regulated during mushroom development, cDNA libraries were constructed from three developmental stages of mycelium, primordium, and fruit body in F. velutipes. We generated a total of 5,431 expressed sequence tags (ESTs) from randomly selected clones from the three cDNA libraries. Of these, 3,332 different unique genes (unigenes) were consistent with 2,442 (73%) singlets and 890 (27%) contigs. This corresponds to a redundancy of 39%. Using a homology search in the gene ontology database, the EST unigenes were classified into the three categories of molecular function (28%), biological process (29%), and cellular component (6%). Comparative analysis found great variations in the unigene expression pattern among the three different unigene sets generated from the cDNA libraries of mycelium, primordium, and fruit body. The 19-34% of total unigenes were unique to each unigene set and only 3% were shared among all three unigene sets. The unique and common representation in F. velutipes unigenes from the three different cDNA libraries suggests great differential gene expression profiles during the different developmental stages of F. velutipes mushroom.
In coculturing with strains of Trichoderma and oyster mushroom, we could detect the difference in the resistance of oyster mushroom against Trichoderma with the phenomena of barrage reaction, overgrowth and lysis. We selected the isolates ASI 2183, ASI2504 and ASI 2477 as varieties that showed the resistance. The isolates ASI 2240, ASI 2479 and ASI 2181 were the best in their resistance against Trichoderma in the method using culture filtrate. In common, the isolates ASI 2479 and ASI 2240 were selected in both methods. In post-inoculation method, the isolates ASI 2479, ASI 2333 and ASI 2181 were selected and ASI 2302 was susceptible. For the same isolate of Trichoderma, the resistance varied depending on the isolates of oyster mushroom used in the experiments. Because we could detect the interactions between Trichoderma and oyster mushroom, it is possible to detect the level of the resistance that differs in the varieties. However, there were the cases of detecting the level of the resistance in repetitions with the same isolate, which may be caused by the vitality of isolates of Trichoderma and oyster mushroom. It is efficient to test the resistance with the resistant isolate of Pleurotus salmoneostramine and the susceptible isolate of ASI 2302.
