Relationships between Descriptive Sensory Attributes and Physicochemical Analysis of Broiler and Taiwan Native Chicken Breast Meat

  • Unique organoleptic characteristics such as rich flavors and chewy texture contribute to the higher popularity of native chicken in many Asian areas, while the commercial broilers are well-accepted due to their fast-growing and higher yields of meat. Sensory attributes of foods are often used to evaluate food eating quality and serve as references during the selection of foods. In this study, a three-phase descriptive sensory study was conducted to evaluate the sensory attributes of commercial broiler (BR) and Taiwan native chicken (TNC) breast meat, and investigate correlations between these sensory attributes and instrumental measurements. The results showed that for the first bite (phase 1), TNC meat had significantly higher moisture release, hardness, springiness, and cohesiveness than BR meat. After chewing for 10 to 12 bites (phase 2), TNC meat presented significantly higher chewdown hardness and meat particle size, whereas BR meat had significantly higher cohesiveness of mass. After swallowing (phase 3), TNC meat had higher chewiness and oily mouthcoat and lower residual loose particles than BR meat. TNC meat also provided more intense chicken flavors. This study clearly demonstrates that descriptive sensory analysis provides more detailed and more objectively information about the sensory attributes of meats from various chicken breeds. Additionally, sensory textural attributes vary between BR and TNC meat, and are highly correlated to the shear force value and collagen content which influence meat eating qualities greatly. The poultry industry and scientists should be able to recognize the sensory characteristics of different chicken meats more clearly. Accordingly, based on the meat's unique sensory and physicochemical characteristics, future work might address how meat from various breeds could best satisfy consumer needs using various cooking methods.

  • 본 연구는 부산광역시를 대상으로 작성한 500m메시 별 건물용도별 면적 구성에 근거한 유형화에 대한 연구이다. 본 연구에서는 3289개의 유효한 메시를 대상으로 7개 용도군에 대한 데이터 베이스를 구축하였고, 그중 주거용, 상업용, 교육용 공간이 전체 공간의 92.4%를 차지하고 있으며, 용적율 50% 이상인 메시는 325개로 전체의 약 10% 수준이었다. 다양한 변수를 단순화하기 위해 주성분분석을 수행하였고 그 결과를 이용하여 클러스터분석을 수행하여 모든 메시를 5개 유형으로 분류하였다.

  • 최근 소프트웨어의 결함을 탐지할 수 있는 다양한 종류의 동적분석 도구가 점점 더 많이 활용되고 있다. 하지만 업계에서 실제로 발생하는 결함에 대한 조사는 지금까지 거의 없었다. 본 논문에서는 C/C++, 자바 프로그램에서 결함을 찾아내는 툴인 CodeSonar가 찾아낸 결과를 분석하고자 한다. 분석결과 동남권 지역에서 가장 많이 발생하는 결함들을 다양한 방법으로 제시한다.

고무차륜형 AGT 주행장치의 진동피로해석 (Vibration Fatigue for the Bogie frame of the Rubber Wheel AGT)

  • The rubber wheel-type AGT has two major kinds of bogie; one is the bogie type and the other steering one. Both are important vehicular structure to support the whole running vehicle and passenger loads. This paper deals with the static analysis for the two types of bogie frame subjected to combined external forces, as well as independent ones specified in UIC 515-4. Furthermore, the dynamic analysis is performed under vibrational loading conditions so as to compare dynamic characteristics, Numerical results by using commercial packages, I-DEAS and NASTRAN show that maximum stresses do not exceed the yield strength level of material used for both bogies. From an overall viewpoint of strength, the bogie type turns out to be superior to the steering type except for the case of a lateral loading. It is also observed that the steering type shows a characteristics of low frequency behavior during a course of searching for structurally weak areas to be stiffened. The vibrational fatigue analysis for each bogie frame depends on the loading time history conditions which is applied. Time History Central Database List in the NASTRAN package. Subsequent1y, the fatigue life of bogie type is longer than the steering type.

국가바람지도와 상용 단지설계 프로그램을 활용한 국내 해상풍력단지 공급가능 잠재량 산정 (Evaluation of Implementation Potential of Offshore Wind Farm Capacity in Korea Using National Wind Map and Commercial Wind Farm Design Tool)

  • Commercial wind farm design tools and the national wind map are used to determine the implementation potential of offshore wind power in Korea in this study. For this, the territorial waters of Korea were divided into nine analysis regions and a commercial CFD code was used to obtain wind resource maps at 100m A.S.L. which is the hub height of a 5MW wind turbine used in this study. With the wind resource obtained, factors including water depth, distance from substations, minimum and maximum capacity of a wind farm, distance between turbines and wind farms were considered to determine wind power potential. Also, the conservation areas, military zones, ports, fishing grounds, etc. were considered and excluded. As the result, a total capacity of 6,720 MW was found to be the implementation potential and this corresponds to $3.38MW/km^2$ in API. Also if the distance from the substation is not considered, the potential increased to be 10,040 MW. This offshore wind farm potential is considered enough to satisfy the target of wind farm capacities in the 7th national plan for electricity demand and supply.

국내외 드론산업 동향 분석을 통한 공공분야에서의 드론 활용방안에 대한 연구 (A Study on Utilization of Drone for Public Sector by Analysis of Drone Industry)

  • The drone is an unmanned aerial vehicle which has no human pilot. Drones can be classified into military drones, commercial drones, and personal drones by usage. Also, drones can be classified from large-sized to nano-sized drone by size and autonomous, remote controlled drone by control type. Especially, military drones can be classified into low-altitude drones, medium-altitude, and high-altitude drones by altitude. Recently, the drone industry is one of the fast growing industries in the world. As drone technologies have become more advanced and cost-effective, Korean government has set its goal to become a top-level country in drone business. However, the government's strict regulation for drone operations is one of the biggest hurdles for the development of the related technologies in Korea and other countries. For example, critical problems for drone delivery can be classified into technical issues and institutional issues. Technical issues include durability, conditional awareness, grasp and release mechanisms, collision avoidance systems, drone operating system. Institutional issues include pilot and operator licensing, privacy rules, noise guidelines, security rules, education for drone police. This study analyzes the trends of the drone industry from the viewpoint of technology and regulation. Also, we define the business areas of drone utilization. Especially, the drone business types or models for public sector are proposed. Drone services or functions promoting public interests need to be aligned with the business reference model of Korean government. To define ten types of drone uses for public sector, we combine the business types of government with the future uses of drones that are proposed by futurists and business analysts. Future uses of drones can be divided into three sectors or services. First, drone services for public or military sectors include early warning systems, emergency services, news reporting, police drones, library drones, healthcare drones, travel drones. Second, drone services for commercial or industrial services include parcel delivery drones, gaming drones, sporting drones, farming and agriculture drones, ranching drones, robotic arm drones. Third, drone services for household sector include smart home drones.

상용품 기반 SI 무기체계의 효과적 ILS 개발 및 후속군수지원 방안 (A Study on the ILS Development & PLS Method for SI Weapon System based Commercial Items)

  • 최근의 무기체계 개발은 4차 산업 혁명과 연계하여 민간 상용기술의 우위 분야를 적극적으로 접목시켜 개별 상용 시스템들을 통합(SI) 개발하는 추세이다. 그러나, 이러한 상용품 기반 무기체계의 경우 소요 제안요청서(RFP)에 기술교범국방규격서를 적용한 기술교범 개발, 군직 야전정비용 지원장비, 전자식 기술교범(IETM), 전자식 교보재(CBT) 개발과 무기체계 RAM 목표값 및 국방규격품 수준의 군수지원분석(LSA) 등 전 분야에 걸친 ILS 요소개발이 요청되어 개발업체의 제안 범위의 현실성이 떨어지고 이와 연계된 개발을 소요 대비 과도하게 진행하고 있는 실정이다. 상용품 기반 SI 무기체계는 외주정비 시행의 기본 틀에서 소요군에 반드시 필요한 핵심요소로 한정시킨 ILS 개발과 PLS 방향 설정에 역점을 둔 소요요청서(RFP)와 계약 방식이 적용되어야 군과 개발업체 상호 보완 및 효과적인 운영유지를 위한 종합군수지원을 완성할 수 있을 것이다. 따라서 현 무기체계 운용실태 확인을 통해 상용품 기반 무기체계의 군수지원은 외주화를 기본 정책으로 선정하여 합리적 의사결정 과정을 통해 운영유지에 중점을 둔 개발 필요 요소를 결정하고 결정된 핵심요소에 대한 개발방안을 RFP에 적용하는 방안과 PLS를 위한 방안에 대해 본 논문에 제시하였다.

도시 지표면 온도분포 특성 및 열섬완화방안 (A Study on the Distribution Characteristic of Urban Surface Temperature and Urban Heat Island Effects)

  • The purpose of this research was to three-criteria landuse-pattern, developing density, NDVI which were related to the heat island and find the distribution characteristic of urban surface temperature and urban heat island effects. The results of this study were as follows. According to the analysis of surface temperatures, the first grade was the outside-city like a mountain and its temperature was less than $12.18^{\circ}C$. The fifth grade was the downtown industrial area and its temperature was more than $23.54^{\circ}C$. It means Daegu-Metropolitan-City has the serious heat-island effect. the results of landuse pattern analysis, in case of fifth and forth grade, city area was occupied over 90% with residential, commercial and industrial areas, but in case of third grade, openspace was occupied over 70%. The results of developing density analysis, the temperature had high correlation with building ratio, road ratio, vegetation ratio and etc. To plan for the decrease of heat island effect needed the extension of green space, decrease of paving, but there was a limit to get the objective method for grade classification because of lacking in the basic data, the research of criteria will be accomplished continuously.

벌크 시멘트 트레일러의 정동적 유한요소해석 (Static and Dynamic Finite Element Analyses of a Bulk-Cement Trailer)

  • 본 논문에서는 하부 프레임 구조가 보다 단순해진 분말류 운송차량인 벌크시멘트 트레일러의 정동적 특성을 유한요소해석을 통하여 분석하였다. 이를 위하여 벌크시멘트 트레일러가 받는 하중의 대부분을 지지하는 섀시 프레임과 탱크부분을 상용 유한요소해석 소프트웨어인 ANSYS를 이용하여 삼차원 상세 유한요소모델링을 수행하였다. 자유진동해석을 통하여 차체의 동적특성을 이해하는데 필수적인 벌크시멘트 트레일러 몸통의 고유진동수와 진동모드를 분석하였다. 또한, 정적인 응력해석을 통하여 트레일러의 취약부위를 찾은 후 다구찌 실험계획법을 적용하여 경량화를 시키면서도 취약부위의 강도를 높일 수 있는 방안을 제시하였다.

도시 재생 디자인 선호 요소 분석 -봉산마을 도시재생 현황을 중심으로- (Analysis on Preferred Elements of Urban Regeneration Design -Focusing on the Case of Bongsan Village-)

  • 도시 재생 사업은 낙후된 상업지역이나 주거지역을 대상으로 경제를 활성화하고 주거 지역의 생활의 개선을 통해서 도시의 공동체를 유지하는 활동이다. 본 연구를 통해서 다양한 국내 및 해외의 도시재생의 성공 사례 및 부산영도 봉산마을 내 도시 재생 관련 설문 내용을 수집하고 분석하였다. 분석에 따른 각 사례별 주요 키워드를 도출하여 이를 그룹화하고 상위 키워드를 작성하였다. 13개의 상위 키워드를 리커트의 5점 척도를 활용하여 평가하였으며, 최종 선정된 10개의 키워드를 대상으로 AHP를 진행하였다. AHP 분석 결과 "공간 및 물리적 속성"에 대한 선호도는 "공공성", "지속 가능성", "정체성" 순으로, "컨텐츠 및 시스템 속성"의 선호도는 "주민 참여", "편의성", "지역성", "지자체 참여" 순으로 도출되었다. 본 연구를 통해서 도출된 도시재생 키워드의 선호도 분석을 통해 향후 보다 더 활성화되는 다양한 도시재생 사업과 관련하여 도시재생 디자인을 수립하기 위한 디자인 가이드라인으로의 역할의 제시가 필요하다.
