This experiment was conducted to make eatable fruit of oriental melon with peel, we covered oriental melon fruit with pear, apple and grape paper bag. Temperature inside paper bags was lower than air temperature in daytime but reversed in night. Relative humidity inside paper bags was higher than outside humidity in daytime but reversed in night. Covering with paper bags seemed to make fruit length shorter, fruit width narrower, flesh thickness thinner and fruit weight heavier but no difference was found among treatments. Soluble solid contents of flesh and placenta seemed lower with covering with paper bags but also difference did not find among treatments. Increasing of soluble solid contents of fruits was observed at 5 days after removing paper bags but not immediately at removing paper bags. Fruit hardness and chromaticity were dropped by covering paper bags. Decrease of fruit hardness by covering paper bags made more eatable with peel but more study have to be taken to improve chromaticity and soluble solid of fruits.
This study was conducted to develop a new drying method far reducing the drying cost and time and to investigate the drying characteristics of oak mushroom. A far infrared dryer of down draft air flow type used for this experiment can control the drying parameters, such as far infrared heater temperature and aeration velocity. The far infrared drying tests were performed at aeration velocities of 0.3 and 0.6m/s under the temperature of 90 and 100$^{\circ}C$ in for infrared heater, respectively. The results were compared and analyzed with those of an heated air drying method used as a control in terms of properties representing the drying characteristics. such as shrinkage rate, color, energy consumption amino acid components, drying rate and moisture ratio. The results obtained from this research can be summarized as follows. 1. The drying rate of far infrared drying was faster than that of heated air drying. With high temperature of far infrared heater and slow aeration velocity, the far infrared drying of down draft air flow type was superior to the heated air drying. 2. Most of far infrared drying conditions required less energy consumption than heated air drying. 3. The shrinkage rates of heated air drying and far infrared drying were decreased by 17.0% and 18.2∼19.8%, respectively. 4. The difference of color on oak mushroom surface before and after drying can be represented as $\Delta$E. $\Delta$E values of far infrared drying and heated air drying were 2.39∼4.55 and 6.77, respectively. 5. The amounts of free amino acids were higher in the far infrared than in the heated air drying. In addition the amounts of Gln and Glu generally were increased and those of Ala, Leu, and Val were decreased in order.
Summer stress is one of the serious problems on cool-season grass at the soccer fields in Korea during heavy rainy season. This study was conducted to intestigate the effect of shade net with regard to its percent (0, 50, 75), color (black, green), height (0 cm, 30 cm) and time (7 hr, 24 hr) on turf canopy temperature, light intensity, leaf color, turf performance, clipping yield and root dry weight of cool-season turfgrass. Turf canopy temperature was 6~13$^{\circ}C$ under black and green shade net when temperature was over 4$0^{\circ}C$. Light intensity was also decreased from 40 to 94% under black and green shade net compared to control. Black shade net was more effective than green net in reduction of temperature and light intensity. Green shade net was found to be better for photosynthesis of cool-season grass. Leaf color, turf performance, clipping yield, and root dry weight were better and increased under 50% and 75% shade net. 50% black shade net with 30cm height and 7 hr treatment showed the best turf performance. It can be concluded that 50% and 75% green shade net can be used fur reducing summer stress on cool-season grass after soccer marches during heavy rain season. The shade net decreased the turf canopy temperature and reduced heating damage of cool-season turfgrass.
We investigated the effects of storage temperature and packaging treatment on the freshness of high-quality 'Fuji' apples to improve consumer confidence in the maintenance of high fruit quality during distribution. A 0.35 mm-deep PET tray form-sealed with a 0.05 mm LDPE film lid was developed and tested with the aim of optimizing gas composition within the package headspace to utilize potential modified atmosphere (MA) storage to maintain the freshness of apples. Weight loss, color difference, firmness, respiration rate, gas concentrations in packages, acidity, solid soluble content, and fruit decay rate were measured during storage at $5^{\circ}C$ and $25^{\circ}C$. The results showed that respiration rate, weight loss, color difference, and firmness were lower and overall quality better during storage at $5^{\circ}C$ compared with $25^{\circ}C$. Also, the fruits packed in the functional tray form showed a low level of quality changes compared with the control (no packaging). The accumulated gasconcentrations in the headspace of the packages decreased from 21% to 12% $O_2$ and increased from 0% to 5% $CO_2$ (v/v) on day 7, and after remained at those levels thereafter. Soluble solid contents and total acidities of the packaged fruits were in the range of $11\;-\;14^{\circ}Brix$ and 0.2 0.3% during storage. Decay rates in the control and packaged fruits were more than 20% and less than 10% at 3 weeks, respectively. Based on the standard acceptable level (less than 10%) of total weight loss, it could be estimated that the shelf life of top-quality fruits packed in functional trays was 3 weeks at $5^{\circ}C$ and 16 weeks at $25^{\circ}C$, whereas the shelf life of the control fruit was 1 week and 12 weeks, respectively. For the top-quality fruit "Fuji" apples, the best results were obtained with a functional tray form for packaging treatment and a storage temperature of $5^{\circ}C$.
The purpose of this study was to evaluate appropriate concentrations of Houttuynia cordata Thunb. powder, which has various functions, to dried wheat flour noodles. The viscosity of the composite flour and cooking quality of the noodle samples were measured, and sensory evaluations were conducted in this study. When measured by the amylograph, the composite flour had lower viscosity in the gelatinization points, maximum viscosity, and viscosity at a temperature of $95^{\circ}C$ than those of control. However, the gap between the maximum viscosity and viscosity after 15 minutes at a temperature of $95^{\circ}C$ was not great among all of the samples. While cooked noodles containing H. cordata Thunb. powder had lower weight and lower volume than those of control, the weight of two cooked noodle samples with 0.5% and 1.5% of H. cordata Thunb. powder was insignificantly different. Cooked noodles had higher concentrations of H. cordata Thunb. powder; therefore, the L value of cooked noodles decreased, while a and b color values of the noodles increased. Color, flavor, taste, and overall acceptability of the samples with H. cordata Thunb. powder were lower than those of wheat flour noodles via sensory evaluation. In the overall acceptability, however, samples with 0.5% and 1.5% of H. cordata Thunb. powder were insignificantly different from control. As a result, it was finally suggested that optimum level of the H. cordata Thunb. powder in the product was below 0.5%.
Drying characteristics of squids under two dry conditions were investigated using far infrared and heated air. Dry temperatures of 40, 50 and $60^{\circ}C$ with air speed of 0.6, 0.8 and 1.2 m/s were used for evaluating far infrared squid drying. Heated air squid drying at 40 and $50^{\circ}C$ with air speed of 0.8 m/s was used as a control treatment. The two drying were evaluated in terms of drying rate, color, TBA value, aerobic bacteria, cutting shear, penetration strength, and energy consumption. The drying rate of far infrared drying was relatively faster than that of heated air drying. The drying time of far infrared drying was reduced as the drying temperature increased. The color difference of far infrared dried squids was from 18.81 to 22.85, and heated air dried squid had the color different from 23.94 to 24.09. Far infrared dried squid had relatively smaller TBA values that indicate a level of rancidity. The aerobic bacteria of heated air dried squid increased from $970{\times}10^3$ to $40,000{\times}10^3$ CFU/g before and after drying, respectively. Far infrared dried squid had relatively smaller increase (from $970{\times}10^3$ to $40,000{\times}10^3$ CFU/g). The cutting shear and penetration strength for far infrared dried squids was relatively lower. In addition, far infrared squid drying consumed relatively less energy compared to heated air drying.
The effect of baking on the consumer perception and sensory characteristics was investigated using a model system of cookies incorporated with strawberry powder as a value-added food ingredient. Strawberry powder was incorporated into cookie dough at 4 levels (0%, 2%, 4%, and 6%, w/w) by replacing equivalent amount of wheat flour of the cookie dough. After aging and sheeting, cookies were baked at $170^{\circ}C$ for 15 min in an oven. The baked cookies were cooled to room temperature for 1 h and packed in airtight bags prior to all measurements. In terms of color, control received the most favorable mean score, which is significantly higher than others (p<0.05) followed by the 4% sample. The consumer preference on taste and aftertaste was not significantly affected by the amount of strawberry powder incorporated in the formulation (p>0.05). Samples with 4% strawberry powder received the highest mean flavor score of 6.28 which is significantly higher than that of 6% sample (p<0.05). In overall, substitution of 4% strawberry powder in the formulation would result in the most favorable strawberry cookies by the consumers with taking advantages of health benefits of strawberry. Correlation analysis indicated that strawberry powder concentration was significantly correlated positively with sensory color and hardness and negatively correlated with consumers' overall acceptability (p<0.05). Consumers' aftertaste was significantly correlated with overall acceptability which was negatively correlated with sensory hardness (p<0.05). Sensory hardness was highly correlated with sensory color attribute (p<0.05).
'Sunjung', a new variety of golden oyster mushroom was bred in Mushroom Research Institute, Gyeonggido Agricultural Research & Extension Services in 2006. This oyster mushroom was selected one which mate with monokaryon collected from KME20064 and KME20066. The optimum temperature for the mycelial growth was about 26 ~$28^{\circ}C$ and that for the primordia and growth of fruitbody was about $18{\sim}23^{\circ}C$. Compared to the control which took 25 days of incubation period, Sunjung required 21~22days. It grew primordia after developed a lump of mycelium. In the characteristics of fruit body, pileus was infundibuliform of yellow-color and stripe was slender/long shape of white color. The yield was 112.9g/850cc bottle and 275.5g/2kg P.P bag.

Powders prepared from three different varieties Korean Ginsengs(white, red and black) are readily available ingredients and are consumed daily by many Korean as a functional food material. These variants of Ginsengs are known to exert a variety of physiological effects. Therefore, in this study, we assessed the physiochemical characteristics of Korean Ginseng Dasik prepared with different 3 types of Ginseng powder. We conducted a sensory evaluation analysis, and assessed the mechanical characteristics, Hunter's color values, and general compositions of 3 types of Korean Ginseng Dasik stored at room temperature(20$^{\circ}C$). The results of our sensory evaluation showed that there were significant differences in the color, taste and overall quality of the samples(p<0.05), but there were no significant differences in odor or texture. With regard to the mechanical properties of the samples, we noted significant differences in he Hardness, Cohesiveness, Gumminess and Chewiness of the samples(p<0.05), but no differences in springiness were detected. The luminance of the black Ginseng Dasik was significantly less than that of the red, white, and control samples(p<0.05), We noted significant differences in Hunter's b values, but no significant differences in Hunter's a values among the samples were detected. No significant differences in the general compositions of the samples were noted. In conclusion, red Ginseng Dasik among the samples evaluated herein, has the most commercial value.
This study was conducted to investigate the effect of the addition of dandelion on color, texture, and antioxidant activity in Jeolpyon. Jeolpyon was prepared with varying amounts of dandelion ranging up to 20%. They were stored for 3 days at room temperature, and the color and texture were analyzed at different time intervals. L and a values decreased with increasing dandelion concentration while b values increased with increasing dandelion concentration in Jeolpyon. From texture analysis by Rheometer, the hardness and chewiness seem to be affected dramatically by the addition of dandelion in Jeolpyon. During storage, the control Jeolpyon without dandelion displayed greater than two fold increase in hardness, chewiness and brittleness, while the Jeolpyon with added dandelion had only slight increase during storage. The addition of dandelion in Jeolpyon also increased antioxidant activities such as DPPH radical scavenging activity, ABTS radical scavenging activity and reducing power. The antioxidant activities increased linearly with increasing dandelion concentration in Jeolpyon. The increase of antioxidant activities in Jeolpyon with the addition of dandelion may be attributed to the polyphenols in dandelion since the amount of total polyphenols increased with increasing amounts of dandelion in Jeolpyon. In sensory evaluation, the panels of twenties, thirties, and forties gave high scores to Jeolpyon with dandelion containing 10% 15%, and 20%, respectively in overall evaluation.
