커피박 첨가에 의한 새송이버섯 균사체의 생육 및 생리활성 증가 (Enhancement of Growth and Bioactivity of Pleurotus eryngii Mycelia by Spent Coffee Ground)

  • 새송이버섯(Pleurotus eryngii)은 인기 있는 식용버섯 중의 하나로서 항산화, 항암 또는 면역조절 기능 등의 인체에 유익한 생리활성 기능을 지닌다. 본 연구에서는 새송이버섯 균사체 배양 시 커피음료 생산과정으로부터 폐기되는 커피박(spent coffee ground: SCG) 첨가에 의한 균사체의 생장과 기능성의 변화를 조사하였다. 그 결과, SCG(1-10%, w/v) 첨가 시 생장속도가 상당히 증가하는 경향을 나타내었다. 특히 1% SCG 첨가 시 무첨가에 비해 건조중량이 2.5배 증가함으로써 SCG가 탁월한 새송이버섯 균사체의 생장촉진제 기능이 제시되었다. SCG 첨가에 의하여 균사체의 polysaccharide 함량은 변화가 없었으나 polyphenol량 및 항산화능의 증대를 확인할 수 있었다.

커피찌꺼기를 혼합한 시멘트 모르타르의 수화반응 및 강도 특성 (Hydration Reaction and Strength Characteristics of Cement Mortar Mixed with Spent Coffee Ground)

  • 이 연구에서는 매년 대량으로 발생하는 커피찌꺼기를 건설소재로 재활용하기 위해 커피찌꺼기와 커피찌꺼기 애시를 혼입한 시멘트 모르타르의 수화반응성을 검토하고 강도 특성을 조사하였다. 연구 결과, 커피찌꺼기의 소성온도가 높아질수록 유기물의 연소로 인한 질량 손실은 커졌으나 밀도는 증가하는 것으로 나타났다. 또한 커피찌꺼기를 혼입했을 때는 시멘트 수화반응성이 저조하여 압축강도가 현저히 낮아졌다. 반면, 800 ℃에서 소성시킨 커피찌꺼기 애시는 수화반응이 원활하였으며, 압축강도는 OPC 모르타르와 동등한 수준으로 나타났다.

  • The objective of this research paper is to discuss the waste coffee residue disposal and its environmental effects on the environment. As we know, coffee is one of the most demand and swallowed beverages in the world, which leads to large quantities of solid waste. Which can be toxic and a lot of environmental problems occur. In developing countries, there is a lack of proper coffee waste residue management. The coffee beans and residues contain several organic compounds. The wastewater from coffee industry emitted several pollutants (highly concentrated) and it contaminates the soil, ground waters, aquatic life, and also human health. Hence it is essential to treat the coffee waste residues. Mean while, oyster shell waste and its disposal also a big environmental challenge in the coastal regions of southeast Korea. In this paper, we focused the treatment of coffee waste residue with oyster shell waste powder. Primarily, oyster shells are calcinated at higher temperatures and investigated the calcined CaO powder as an anti microbic agent to the bacteria presented in coffee waste residues. We successfully applied calcium oxide from oyster shell waste, as an antimicrobic agent.

커피 로스팅 공정에서 발생되는 향기물질의 유해성 고찰 및 노동자 건강보호 방안 (A Review on the Hazards of Flavoring Chemicals in Coffee Roasting Proces)

  • Objectives: This study was based on the occurrence of a coffee roasting process-related disorder(bronchiolitis obliterans; published by NIOSH in the US) among workers exposed to chemicals called diacetyl in a coffee processing facility. Flavorings added to coffee contain diacetyl and 2,3-pentanedione, all of which are subject to exposure in a number of food manufacturing processes, including coffee roasting, grinding, and packaging. Therefore, this study aims to review the toxicity to workers related to food processing and food additive manufacturing to prevent occupational diseases. Methods: We surveyed the related literature, domestic and international references, and the status of relevant domestic and foreign professional organizations. The present situation of workers was investigated by reviewing literature on the safety and health of workers in the coffee roasting process using domestic and foreign literature and presentations. Expert advisory opinions were reflected, and experts were consulted by participating in domestic and overseas academic conferences. Results: Most of the fragrance materials for coffee were harmful and hazardous substances according to the GHS classification, and research was carried out through a second external consultation. A literature review on the measurement of air pollutant emissions from coffee roasters and the estimation of air pollutant emissions during coffee roasting examined the characteristics of pollutants emitted during coffee roasting. Conclusions: Two chemicals identified as causing bronchiolitis obliterans in the coffee roasting process are believed to explain why the disease is difficult to treat. This information can be used effectively in the future prevention of this disease. Future studies should clearly identify the potential for toxicity of alpha-diketones and the bases of OELs in relation to the occurrence of obstructive bronchiolitis, including measurement of various organic compounds and alpha-diketones from ground coffee, as well as various coffee grinds and coffee bean varieties. In particular, it is necessary to clarify the current understanding of the dose-response relationship between alpha-diketone and lung disease in workers involved in coffee roasting.

Effects of dietary fermented spent coffee ground on nutrient digestibility and nitrogen utilization in sheep

  • Objective: The objective of the study was to determine the effect of fermented spent coffee ground (FSCG) on nutrient digestibility and nitrogen utilization in sheep. Methods: Fermentation of spent coffee ground (SCG) was conducted using Lactobacillus plantrum. Fermentation was performed at moisture content of 70% and temperature of $39^{\circ}C$ with anaerobic air tension for 48 h. Four adult rams (initial body weight = $56.8{\pm}0.4kg$) were housed in a respiration-metabolism chamber and the treatments were: i) control (Basal diet; 0% SCG or FSCG), ii) 10% level of SCG, iii) 10% level of FSCG, and iv) 20% level of FSCG in $4{\times}4$ Latin square design. Each dietary experiment period lasted for 18-d with a 14-d of adaptation period and a 4-d of sample collection period. Results: In SCG fermentation experimental result, acid detergent insoluble nitrogen (ADIN) concentration of FSCG (64.5% of total N) was lower than that of non-fermented SCG (78.8% of total N). Digestibility of dry matter and organic matter was similar among treatment groups. Although crude protein (CP) digestibility of the control was greater than FSCG groups (p<0.05), the 10% FSCG group showed greater CP digestibility and nitrogen retention than non-fermented 10% SCG group (p<0.05). Body weight gain and average daily gain were linearly decreased with increasing FSCG feeding level (p<0.05). When the feeding level of FSCG was increased, water intake was linearly increased (p<0.05). With an increasing FSCG level, dry matter intake did not differ among groups, although the gain to feed ratio tended to decrease with increasing level of FSCG (p<0.10). Conclusion: Microbial fermentation of SCG can improve protein digestibility, thereby increasing CP digestibility and nitrogen utilization in sheep. Fermentation using microorganisms in feed ingredients with low digestibility could have a positive effect on improving the quality of raw feed.

원두커피 부산물 첨가에 따른 밀싹의 성장과 엽록소 성분의 변화 (Effect of Coffee Grounds' Residue on the Growth and Chlorophyll Content of Korean Wheat Sprout)

  • Wheat sprout (Triticum aestivum) shows excellent nutritional and health effects due to the contents in amino acids, minerals, and other nutrients rich in chlorophyll and vitamins. In this study, spent coffee grounds were used to cultivate the wheat sprout for 12 day. An amount of 0%, 20%, 40%, 60%, 80%, and 100% (w/w, based on commercial sterile soil media) spent coffee grounds were used under the same conditions. Total length and weight of wheat sprout, aboveand below-ground length and weight, and the chloropyll contents were compared. Soil media were analyzed before and after wheat cultivation, showing that 40% and 60% (w/w) coffee media promoted wheat growth in view of length and weight. Chlorophyll contents in each group showed almost constant values, while 100% (w/w) coffee media led to a slight decrease. In conclusion, spent coffee grounds stimulated wheat growth, showing nearly stable contents of chlorophyll.

커피박 퇴비와 벨벳콩을 이용한 호박의 고구마 뿌리혹선충 방제효과 (Control Effect of Coffee Ground Compost and Velvet bean Against Root-Knot Nematode, Meloidogyne incognita in Pumpkin)

  • 본 연구는 커피박 퇴비와 벨벳콩 식물체 분말 처리에 따른 고구마뿌리혹선충 살충효과를 평가하였다. 커피박 퇴비와 벨벳콩 식물체 분말 처리중, 1% 벨벳콩 식물체 분말 처리가 뿌리혹선충의 살충율이 83.2%로 가장 높게 나타났다. 또한 실내에서 호피무늬 벨벳콩 추출물 농도별로 처리한 시간의 경과에 따라 뿌리혹선충 유충의 치사율이 증가하였다. 호피무늬 벨벳콩 추출물 처리 24시간 후, 1.2%와 2.4% 농도에서 뿌리혹선충 유충의 치사율이 가장 높게 나타났다. 커피박 퇴비와 벨벳콩 식물체 분말 처리가 호박유묘의 생육에 미치는 영향을 조사하였더니 20% 커피박 퇴비 처리구는 호박 유묘의 생육을 억제하였으나 1% 호피무늬 벨벳콩 분말 처리구가 호박 유묘의 생육촉진효과가 가장 뛰어났다. 하지만 유기성 자원인 벨벳콩과 커피박 퇴비를 이용하여 유기농 호박 재배토양에서 발생하는 고구마뿌리혹선충을 효과적으로 방제하기 위한 재료로 사용하기 위해서는 처리농도와 방법에 대한 추가적인 연구가 필요할 것으로 생각한다.

커피찌꺼기 퇴비화 과정의 물리, 화학 및 생물학적 변화 (Changes in Physical, Chemical, and Biological Traits During Composting of Spent Coffee Grounds)

  • BACKGROUND: Spent coffee grounds are the most valuable resource for agriculture and industry. However, it is almost thrown untreated into landfills or incineration. Composting is an efficient process for converting spent coffee to fertilizer. METHODS AND RESULTS: Composting was conducted in the compost pile (40 ㎥) equipped with a forced aeration system. Physical and chemical properties containing temperature, pH, electrical conductivity, and moisture were measured through the composting period. Moreover, biological changes were examined for the composting phase using Illumina Miseq sequencing of the 16S rRNA gene. We found 7-14 phyla comprising 250-716 species from a variety phase of compost. During the composting period, Firmicutes were dominated, followed by Actinobacteria and Proteobacteria. CONCLUSION: The result indicated that the use of spent coffee improved the quality of organic fertilizer and changed the microbial communities, unique to the thermal composting stage, which could enhance the composting process. These findings suggest that spent coffee composted material can provide a significant amount of nutrients, thereby supporting plant growth.

Identification of Coffee Fragrances Using Needle Trap Device-Gas Chromatograph/Mass Spectrometry (NTD-GC/MS)

  • A fast and simple sampling and sample preparation device, (NTD) has been developed and applied to sample and analyze volatile components from ground coffee beans. Coffee fragrances and other volatile organic compounds (VOCs) were sampled by the NTD and then analyzed by gas chromatograph-mass spectrometry (GC/MS). Divinylbenzene (DVB) particles (80/100 mesh size) were the sorbent bed of the NTD. More than 150 volatile components were first identified based on the database of the mass library and then finally 30 fragrances including caffeine were further confirmed by comparing experimental retention indices (i.e. Kovat index) with literature retention indices. Total sampling time was 10 minutes and no extra solvent extraction and/or reconstitution step need. Straight n-alkanes (C6-C20) were used as retention index probes for the calculation of experimental retention indices. In addition, this report suggests that an empty needle can be an alternative platform for analyzing polymers by pyrolysis-GC/MS.

담배가루이에 대한 곤충병원성 곰팡이 선발 및 커피박 배지에서의 배양 특성 (Selection of Entomopathogenic Fungi Against Bemisia tabaci and Culture Characterization on Spent Coffee Grounds Medium)

  • The silverleaf whitefly, Bemisia tabaci, is a major pest distributing worldwide damaging over 900 host plant species, and is highly resistant to chemical pesti- cides. Due to the high pesticide resistance of whitefly, there is a need for alternatives to chemical control. Entomopathogenic fungi are candidates for biological pesticide that can overcome the resistance problem of chemical pesticide. Therefore, in this study, we tested pathogenicity of the entomopathogenic fungi to select high insec- ticidal activity against whitefly. As a result, IPBL-C (Cordyceps fumosorosea) and IPBL-F (Metarhizium pinghaense) isolates showed high insecticidal activity against whitefly. Additionally, as a result of culturing the selected isolates on spent coffee grounds medium, the conidia of IPBL-F produced on coffee grounds medium showed five times higher heat stability after heat treatment at 45℃ for one hour than conidia produced on PDA medium.
