Effect of Inoculation of Aflatoxin and Aspergillus flavus on the kernel Development and Nutrient Composition in field-grown rice (Aflatoxin 및 Aspergillus flavus의 처리가 벼의 성숙 및 쌀의 성분에 미치는 영향)

  • Two Rice cultivars , a high yield variety of Cheongcheong and a Korea native kind of Chucheong were grown in paddy. 1$\mu\textrm{g}$ and 10$\mu\textrm{g}$ of aflatoxin B1 and Aspergillus flavus (106 conidia/ml) were inoculated at milk stage. At harvest, kernels from the inoculated plant showed slightly lower ripening rates and 100-grain weight than did those of controls. The nutrient and fatty acid composition of unpolished rice of inoculated group were similar to those of controls and difference between the control and inoculated group were not significantly different.

Textural Properties of Processed Foods Produced from Newly Developed Non-Glutinous Rice Cultivars

  • This study was undertaken to investigate the producibility of processed foods utilizing 6 newly developed non-glutinous rice cultivars. First, cooked rice, cake, cookies, bread, and slender rice cake sticks were prepared with the newly developed cultivars; then their physicochemical and textural properties were evaluated. The rice samples had similar pasting temperatures and peak times, but different viscosities and other pasting properties. The textural analysis results suggested that 'Chucheong' was appropriate for cooked rice due to its low amylose content; hardness, and springiness; 'Ilphumbyeo' for rice cakes due to its high amylose content, moderate cohesiveness and adhesiveness, and low hardness; 'Ilphumbyeo' for cookies due to its high amount of protein, and low cohesiveness and adhesiveness; 'Ilphumbyeo' for bread due to its high amylose content, moderate hardness, and low consistency; and 'Ilphumbyeo' for the slender rice cake sticks due to its low hardness, moderate breakdown, paste viscosity, and setback.

Effect of Growth Stage and Variety on the Yield and Quality of Whole Crop Rice (생육시기 및 품종이 총체 벼의 수량 및 사료가치에 미치는 영향)

  • This experiment was conducted to determine the effect of growth stage and variety on the yield and quality of whole crop rice (WCR) at National Livestock Research Institute, RDA from 2003 to 2005. Two types of rice ("Chucheong" for food and "Hamasari" for feed) were harvested at six different growth stages (heading, flowering, milk, dough, yellow ripening and fully ripening stage). Crude protein content decreased with progressed maturity at harvest. As growth stage delayed, TDN (total digestible nutrient) content of all rice varieties increased. The average TDN content of two type of rice was about 60% (59.3) which was calculated from ADF(acid detergent fiber) content. The contents of ADF and NDF(neutral detergent fiber) decreased with harvest maturity. The highest DM(dry matter) yield was at the ripening stage (p<0.05) and "Chucheong" gave higher yields than for "Hamasari". In this experiment, the DM yield of all varieties was low. The yield of TDN followed a similar trend to DM yield. According to this results that dough to yellow ripening stage of harvest maturity will be recommendable as proper harvest time for whole crop rice silage.

Antioxidative Effects and Quality Characteristics of the Rice Cultivated by Organic Farming and Ordinary Farming (유기재배 쌀과 일반재배 쌀의 항산화 효과 및 품질 특성)

  • This study was carried out to investigate the physicochemical properties, antioxidant activity, physical properties and sensory evaluation of rice using three different varieties of rice (Odae rice-Chulwon, Chuncheong rice-Yeoju, Hwayoung rice-Sanchung) produced by organic and ordinary farming. Amylose content was higher in Chucheong rice and protein content was higher in Hwayoung rice in comparison to others. However, there was no difference in amylose and protein contents between organically grown and ordinarily grown rice. The electron donating activities and superoxide dismutase (SOD) activities of methanol extracts from organically grown rice were higher than those of ordinarily grown rice. There was no difference in amylographic characteristics between the differently cultured rices. The organically grown rice had a high springness, cohesiveness and was gummy in rheometer evaluation. However, the ordinarily grown rice had a good score for taste in sensory evaluation.

  • In developing dynamic growth model of a crop, it is important to estimate accurate dry matter partition to different parts of crop plants. Two rice varieties, Samkang and Chucheong, were transnplanted with three planting densities of 72. 90 and 120 hills per 3.3㎡ on May 30 and June 15 in 1988 to study the effect of planting density on dry matter partition in rice plants. Total dry wight per square meter of two varieteis in May 30 transplanting were greater than those in June 15 transplanting. Total dry wights were increased as planting density was increased. The response of dry weights of differents parts of rice plants per hill were decreased as the density was increased. Although the difference in dry weights of leaf blade and stem and sheath between two varieties was not great, greater ear weight of Samkang resulted in greater total dry weight than that of Chucheong. Despite of transplant in date and planting density on dry weights, the ratio of dry matter partition to different parts of rice plants at a certain growth stage remained constant. Estimated dry weights of different parts at two stages of growth based on average ratio of dry matter partition over two transplantion dates and planting densities agreed well with those observed.

  • Diseases were surveyed in 5 Rice paddy field areas of Organic paddy field and conventional paddy field. The 3 major diseases, rice leaf blast, bacterial leaf blight and sheath blight in rice were surveyed at duck raising, rice bran and conventional rice paddy field. They were serious in duck raising paddy field, rice bran paddy field more than conventional paddy field. The Ilpum variety were infected seriously more than Chucheong. At the effectivity test of the environment-friendly substance for the rice-seed sterilization, 1000-times diluted brown-rice vinegar showed controlling effect against Bakanae disease, and germination rate also was good. There was no Weeds Control efficacy by cultivating of hairy vetch in rice paddy field. However, extract of hairy vetch Leaf and root repressed the germinating of lettuce seed.

Study on the Physico-chemical Properties of Rice Grains Harvested from Different Regions (재배환경이 다른 쌀의 이화적적 특성에 관한 연구)

  • Rough rice samples of four rice varieties were collected from twenty five locations through the country just after 1986 rice growing season. Various characteristics related to rice grain quality were observed to clarify the degree of locational variation of physico-chemical properties, and cooking and eating quality of rice grains. Grain weight, grain shape, degree of translucency and chalkiness of rice grain, amylogram properties of rice flour, water uptake during cooking, and cooked rice appearance were different between varieties tested. High degree of locational variation were found in following characteristics, degree of translucency and chalkiness of rice grain, water uptake during cooking, cooked rice appearance and amylogram properties. Eating quality of cooked rice indicated by sensory score showed different tendency of locational variation between rice varie-ties tested, and locations produced rice grains showing better eating quality were not coinside with among varieties tested. Grain weight, degree of translucency and chalkiness of rice grain, and cooked rice appearance of rice samples showing better eating quality were quite different to rice grains showing poor eating quality. Rice having better eating quality of a japonica variety, Chucheong, showed higher value of peak and final viscosity, viscosity after cooling, consistency and set back on amylograph compared with those of poor eating quality rices, and break down value of better rice was lower than that of poor rice. However, a Tongil type variety, Taebaek, did not show any consistent difference between better and poor rices. Rice samples from six locations in Chucheong and four locations in Taebaek showed special properties on amylogram compared with other rices collected in this study.

Climate-Smart Agriculture(CSA)-Based Assessment of a Local Rice Cultivation in Hwaseong-city, Gyeonggi-do (경기도 화성시 벼 재배지의 기후스마트 농업 기반의 평가)

  • BACKGROUND: Climate-smart agriculture (CSA) has been proposed for sustainable agriculture and food security in an agricultural ecosystem disturbed by climate change. However, scientific approaches to local agricultural ecosystems to realize CSA are rare. This study attempted to evaluate the weather condition, rice production, and greenhouse gas emissions from the rice cultivation in Hwaseong-si, Gyeonggi-do to fulfill CSA of the rice cultivation. METHODS AND RESULTS: Over the past 3 years (2017~2019), Chucheong rice cultivar yield and methane emissions were analyzed from the rice field plot (37°13'15"N, 127° 02'22"E) in the Gyeonggi-do Agricultural Research and Extension Services located in Gisan-dong, Hwaseong-si, Gyeonggi-do. Methane samples were collected from three automated closed chambers installed in the plot. The weather data measured through automatic weather station located in near the plot were analyzed. CONCLUSION(S): The rice productivity was found to vary with weather environment in the agricultural ecosystem. And methane emissions are high in a favorable weather condition for rice growth. Therefore, it is necessary to minimize the trade-off between the greenhouse gas emission target for climate change mitigation and productivity improvement for CSA in a local rice cultivation.

Composition, Water-Holding Capacity and Effect on Starch Retrogradation of Rice Bran Dietary Fiber (미강 식이섬유의 조성과 보수력 및 전분노화에 미치는 영향)

  • Dietary fiber contents in brans of the two representative Korean rice varieties, Chucheong and Sucheon were measured by the AOAC method, and the composition of total dietary fiber (TDF) was analyzed with the acid detergent fiber (ADF) procedure. Rice bran contained more than 25% of TDF, most of which was insoluble dietary fiber. Hemicellulose was shown to be the major constituent and rice bran dietary fiber contained distinctive amounts of cellulose and uronic acid. Consecutive acidalkaline treatment of rice bran considerably increased soluble dietary fiber (SDF) content and water-holding capacity (WHC). WHC of wheat flour-rice bran dietary fiber mixture increased with the proportion of rice bran dietary fiber. Analysis of the differential scanning calorimetry thermograms revealed that rice bran dietary fiber effectively retarded retrogradation of wheat starch.

Fast systemic evaluation of amylose and protein contents in collected rice landraces germplasm using near-infrared reflectance spectroscopy(NIRS)

  • This study was conducted to characterize the amylose and protein contents of 4,948 rice landrace germplasm using the NIRS model developed in the previous study. The amylose contents estimated by NIRS in the standard rice were Sinseonchal (6.881%) 4.994%, Chucheong (19.731%) 18.633%, Goami (23.246%) 20.548%. Protein contents were Sinseonchal (6.890%) 6.824%, Chucheong (6.350%) 6.869%, Goami (6.777%) 7.839%. The NIRS analysis showed that 1.1-2.7%point lower in amylose and 0.4-0.6%point higher in protein than standard contents. The average amylose content of the germplasm was 20.39% with a range of 3.97-37.13%. The average protein content was 8.17% with a range of 5.20-17.45%. Amylose contents with a range of 20.06-27.02% represented 62.20% of the germplasm. Protein contents with a range of 6.78-9.75% represented 81.60% of the germplasm. Korean landrace comprised 24.9% among the 4,948 germplasm collected from 41 countries. A specific range of amylose contents showed in Korea 16.58-20.06%, in Japan 20.06-23.25%, in North Korea 23.25-27.02% and in China 27.02-37.13%. Protein contents exhibited 5.20-17.45% evenly in the whole landraces, whereas Chinese landrace particularly observed with 6.78-8.27% and 9.75-17.45%. Fifty resources were selected with low and high amylose ranging from 3.97-6.66% to 30.41-37.13% respectively. Similarly fifty resources were selected with low and high protein ranging from 5.20-6.09% to 13.21-17.45% respectively. Landraces with higher protein should be adapted to practical utilization of food sources.
