Changes in Chemical Components of Green Tea Leaves during Blanching and Frying (녹차생엽의 자숙 및 튀김에 의한 화학성분 변화)

  • Changes in chemical components of green tea leaves at different cooking conditions-blanching and frying-were surveyed as a method of utilizing low graded green tea leaves which missed appropriate plucking times. There was no significant difference in protein content during cooking. But contents of chlorophyll, tannin, vitamin C and caffeine were decreased during cooking, contents of chlorophyll and caffeine showed a greater decrease in frying than blanching. Content of total amino acid of green tea leaf was 15.8% and blanching showed bigger diminution of its content in comparision with frying during cooking.

Changes in Nutritive Components by Growth Periods in Spinach Grown Outdoors in Autumn (가을철 노지 재배한 시금치의 성숙 시기에 따른 영양 성분 변화)

  • The purpose of this study was to investigate nutritional component changes (chlorophylls, vitamin C, and minerals) in two Korean spinach cultivars (Cheongrok, Ddangddali) according to different growth periods, as well as differences in the components of three plant parts (leaves, stems, and roots). Chlorophyll, vitamin C, Na, and Hunter‘s color a/b values reached maximum levels in the spinach leaves after 35 days of planting, while these components did not significantly change in the stems and roots during the growth period. Chlorophyll and vitamin C contents were higher in the leaves than in thestems and roots. On the other hand, moisture content was higher in the stems than in the leaves and roots, and Fe content was highest in the roots. The vitamin C content of this fresh harvested spinach was 2.5 times higher compared to the existing data (Food Nutritive Value Table 2005).

Simulation of Quality Changes and Prediction of Shelf-life in Dried Laver Packaged with Plastic Films (플라스틱 필름 포장 김의 품질 변화 simulation과 shelf-life 예측)

  • In order to develop a rapid predicting method of the shelf-life of moisture sensitive foods and establish their proper packaging methods, the qualify changes and shelf-life of dired laver as a model food were studied by the computer simulation. A mathematical model of the relationship between the rate constants of chlorophyll a and water activity was established at $10^{\circ}C,\;25^{\circ}C$ and $40^{\circ}C$. Computer simulation to predict water activity and chlorophyll a was developed by considering the simultaneous influence of storage conditions such as water content of products, storage temperature and relative humidity, packaging materials. Simulated quality changes of dried laver was in good agreement with the experiment data. Chlorophyll a and sensory score decreased as the water activity increased. And correlation coefficient between the sensory scores and the contents of chlorophyll a was very high as 0.991. The critical water activity by sensory evaluation was around 0.55. The shelf-life of dried laver packaged with plastic films could be predicted from the above results in various storage conditions.

  • Changes of chlorophylls and carotenoids and antioxidative characteristics of crude chlorophylls and carotenoids(CCC) of mustard leaf kimchi(MLK) were investigated during the fermentation at 15$^{\circ}C$ for 25 days. At the beginning of fermentation chlorophylls were decreased rapidly, however, all chlorophylls and chlorophyllides were converted to pheophytins and pheophorbides at the final stage of fermentation. Total chlorophyll content remained constantly during the fermentation but 43.7% destruction of carotenoids was observed at 25 days of fermentation. Antioxidative activities of CCC from MLK against autoxidation of linoleic acid were significant(p<0.05) and much higher than those of $\alpha$-tocopherol. Fermentation period did not affect antioxidative activities of CCC of MLK. When the CCC of MLK was added to the autoxidation system of linoleic acid, degradation of total chlorophylls were observed to be slower than that of total carotenoids.

Effects of Elicitors on Seedling Growth, Total Polyphenol and Chlorophyll Content and Antioxidant Activity of Barley (Hordeum vulgare L.)

  • This study is focused on the evaluation of growth parameters, total polyphenol content (TPC), chlorophyll content as well as the DPPH (1,1-diphenyl-2-picryhydrazyl) free radical scavenging activity of young barley seedling (YBS) affected by elicitation. Salicylic acid (SA), methyl jasmonate (MJ), amino acid liquid fertilizer (ALF) and microbial metabolism activator (MMA) were used. Elicitation was conducted for two times and various concentrations were used in this study. The result revealed that, MJ 1 ml/L treated-YBS gave the longest seedling length of 1.33 cm, followed by the ones treated with SA 1.38 mg/L and ALF 2 ml/L, respectively. ALF 3 ml/L treatment gave the highest fresh weight of 10 seedlings, followed by MJ 5 ml/L and SA 13.8 mg/L treatment with 1.56 g, 1.55 g and 1.53 g respectively. SA 138.12 mg/L elicitor treated-YBS gave the highest Chl a, Chl b content of $8.57{\mu}g/mg$ and $3.83{\mu}g/mg$, respectively while the highest carotenoid content was found in MJ ml/L treatment with $1.62{\mu}g/mg$. Among elicitor treated-YBS, SA showed better TPC. The highest TPC was found in SA 1.38 mg/L treatment with 18.82 mg/g TAE. Likewise, SA 1.38 mg/L showed the highest DPPH free radical scavenging activity among all the treatments. However, the lowest TPC was found in ALF 1ml/L treated-YBS with 9.46 mg/g TAE, which was even lower than the control (14.31 mg/g TAE).

Antioxidation Activities of Bottled Mustard Leaf Kimchi during Fermentation (병포장 갓김치의 항산화 효과에 대한 연구)

  • Mustard Leaf Kimchi (MLK) is a traditional fermented Korean vegetable food. This study was conducted to investigate the effects of part vacuum treatment on MLK packed in a glass bottle during fermentation. There have been a few previous studies that examined the chemical and microbial changes during MLK fermentation. However, the major object of this study was to investigate the antioxidative activities of vacuum treated MLK. In this study, the antioxidative activity of vacuum treated mustard leaf Kimchi (VM) and control mustard leaf Kimchi (CM) were examined. VM and CM were fermented at $5^{\circ}C$ for 8 weeks. A model system was designed to evaluate the antioxidative activity of crude chlorophylls and carotenoids (CCC) extracts from Mustard leaf Kimchi. The oxidative reaction of the linoleic acid mixture system at $30^{\circ}C$ in the dark was quantified determining the peroxide value and conjugated dienoic acid content. The effect of the CCC extracts on lipid peroxidation in a rat liver homogenate was examined. Formation of lipid peroxides was estimated by the TBA value, and the CCC extracts were found to inhibit the TBA value. Chlorophyll a and b, and carotenoids, Which are the major components in the CCC extracts of Kimchi were isolated on a DEAE-sepharose CL-6B and Sepharose CL-6B column and TLC. The effects of chlorophyll a and b, caroteins on linoleic acid autoxidation were measured by determining the peroxide value. In addition, their effects on free radical scavenging were investigated by DPPH. In this assay, chlorophyll a showed the greatest antioxidative activity followed by chlorophyll b, and carotenoids. MLK contains a sufficient content of chlorophyll a and b, and carotenoid which have strong antioxidative activities.

  • To evaluate the chemical characteristics of organic Korean cabbages, the content of moisture, crude protein, crude lipid, crude ash, dietary fiber, mineral, vitamin C, free sugar, organic acid, chlorophyll and carotenoid were analyzed in organic and nonorganic cabbages. The levels of crude protein, crude lipid, crude ash, soluble dietary fiber, insoluble dietary fiber, minerals(Ca, P, Ee, Mg, S, Zn), ascorbic acid, dehydroascorbic acid, fructose, glucose, sucrose, chlorophyll a, chlorophyll b and carotenoid in organic cabbages were higher than those in nonorganic cabbages. However, the content of moisture, malic acid, citric acid, potassium in organic cabbages were lower than those in nonorganic cabbages.

Physicochemical Quality Characteristics of Several Chinese Cabbage (Brassica pekinensis RuPR) Cultivars (몇가지 배추 품종의 이화학적 품질 특성)

  • Four different Chinese cabbage cultivars were compared for their physicochemical quality characteristics including crude fiber, chlorophyll, firmness, hardness, sugar, and flavor at different parts of the cabbages. No significant difference in crude fiber content was observed among cultivars. Chlorophyll content in midrib was not significantly different among cultivars, however Chlorophyll content in leaf of 'Golden House' and 'Golden Spring' were greater than that of 'Alpine Summer' Firmness was the highest in 'Golden House' and 'Golden Spring' but hardness was not significantly different among cultivars. Sugar content was higher in midrib than in leaf. 'Golden Spring' a showed the highest sugar content in midrib. Glucose content was higher than the fructose content in leaf, but was opposite in midrib. Sensory evaluation showed that 'Golden House' and 'Golden Spring' were the best in yellowness, and 'Golden House' and 'Alpine Summer' were the best for their taste and aroma in midrib, however, no significant difference in texture was observed among cultivars.

Analysis on on the Leaf Growth and Changes of Photosynthetic Characterization by Leaf Position in 'Changhowon Hwangdo' Peach (복숭아 '장호원황도'의 엽위별 잎 발달과 광합성능의 변화에 대한 분석)

  • To investigate factors determining peach fruit quality, chlorophyll content by leaf positions, chlorophyll content of foliated leaf, change of leaf area, and photosynthetic capacity were monitored. Photosynthetic rate in response to radiation intensity and $CO_2$ concentration, and change of sucrose content after shading treatment also were investigated. Chlorophyll content was similar in $5-12^{th}$ leaves after 10 days of foliation, while young $13-16^{th}$ leaves showed lower chlorophyll contents. Chlorophyll content was 2.56 ${\mu}g/cm^2$ on May $28^{th}$, just after foliation, and rapidly increased up to 6.35 ${\mu}g/cm^2$ on June $12^{th}$. After this point, chlorophyll content gradually increased during two months showing the highest value of 9.03 ${\mu}g/cm^2$ on August $14^{th}$. Leaf area was 27.1 $cm^2$ just after foliation and 37.7 $cm^2$ on $10^{th}$ day of foliation increasing 10.6 $cm^2$ during 10 days. Leaf area slowly increased by 3.9 $cm^2$ during next one month. Photosynthetic capacity increased rapidly until the $30^{th}$ day of foliation showing the highest capacity of 13.8 ${\mu}mol/m^{-2}/sec^{-1}$. After this point, photosynthetic capacity decreased sharply. Photosynthetic rate in response to radiation intensity increased rapidly until the PPFD reached to 600 ${\mu}mol/m^{-2}/sec^{-1}$ and increased gradually from 600 ${\mu}mol/m^{-2}/sec^{-1}$ to 1200 ${\mu}mol/m^{-2}/sec^{-1}$ of PPFD and stayed stable beyond this point. Photosynthetic rate in response to $CO_2$ concentration increased until 600 ppm of $CO_2$. At higher $CO_2$ concentration, photosynthetic rate stayed stable or decreased. Sucrose content in leaves was not significantly different between control and shading group until one hour of shading treatment while decreased in shading group after two hours of treatment.

  • To select the superior clones of Populus alba ${\times}$ Populus glandulosa $F_1$, growth and some growth-related physiological characters were examined for thirteen, one-year-old and fifteen, two-year-old clones, respectively at the Seoul National University nursery in Suweon, Clonal differences in growth (total dry weight per tree), leaf area per tree and leaf chlorophyll content per tree at tow-year-old plots were highly significant at the 1% level, but not at one-year-old plots, Highly significant correlation was found between leaf area per tree and total dry weigh per tree (r=0.865), between leaf chlorophyll content per tree and total dry weight per tree (r=0.888), and between photosynthetic ability per tree and total dry weight per tree (r=0.745). The photosynthetic ability and leaf chlorophyll content per unit leaf area of one-year-old plant increased with increasing leaf order number from top. reached maximum value in the twenty-eithth and thirty-third leaves, respectively, and then decreased gradually from those leaved to base, Clones 68-1-54, 66-26-55 and 65-22-11 showed test growth based on leaf area per tree, leaf chlorophyll content per unit leaf area and photosynthetic ability of leaf tissue per unit area. Growth yield of populus alba ${\times}$ P. glandulosa $F_1$ clones could be estimated from either leaf area per tree of leaf chlorophyll content per tree. Therefore, measurements of leaf area and leaf chlorophyll content appear useful to select superior populus clones early growth.
