청주지역의 출장요리 서비스에 대한 이용실태 및 고객만족도 (Use and Customer Satisfaction with Catering Services among Women in Cheongju City)

  • In order to obtain baseline data for quality improvement of the catering services, a survey was carried out to investigate the consumer use and satisfaction with catering services. Subjects were 171 women who had used catering services within a year previously, and were replied to a questionnaire. The results were as follows: With respect to the use of the catering service, most reasons for using the catering service were no time and no cooking skills, and most events using catering services were the first birthday party and 100th day party for baby. The preferred meal cost was 8,000-10,000 won per person. With respect to customer satisfaction, over 60% of the people were satisfied with catering service which they had used ; they were satisfied with service quality and quantity of the dishes provided whereas they showed a little bit dissatisfaction in desserts and seasonal foods. It is recommended that supplying of sufficient desserts, and development of new and various menus according to seasons should be required to improve the consumer satisfaction with catering services.

병원급식의 위탁 운영에 따른 영양서비스 변화에 대한 사례연구 (The Case Study of the Nutrition Services for Patients as a Result of the Changes in Food Services Management)

  • The purpose of this study was to investigate the relationship between changes in the Department of Nutrition and patient satisfaction, following the changes in Food Services Management. Statistical data analyses were completed using the SAS/Win 6.12 program. The results can be summarized as follows. The working environment for dietitians and cooking and meal serving assistants was improved following to a change catering of food service management. The number of dietitians who worked in medical nutritional therapy and food services was increased from one to four, and the number of dietary consultations and meal rounds were increased 2.5-fold and 5-fold, respectively after the change services were implemented. Among the 10 items included in the patient satisfaction questionnaire, "Taste of meals" (p< 0.01) and "Satisfaction of offered menus" (p < 0.01) showed significantly higher scores before the catering. "Kindness of meal sewing assistant" this increase was not statistically significant, showed increased satisfaction after the catering, however.n after the catering, however.

서울·경기지역 외식·조리전공 대학생의 중요 대학서비스에 대한 만족도(IPA) 분석 (The Importance-Performance Analysis (IPA) on the University Services of Students Who Majored in Catering Cooling in Seoul and Gyeonggi Provinces)

  • The purpose of this study is to measure the priority items according to attributes and analyze the differences between the importance and satisfaction rates through the IPA for the university service. The results in the study are as follow: First, from the result of the factorial analysis, 5 factors are included First, the possibilities for development of universities, universities' physical environment, Universities' administrative (employee) services, majors' educational services, and majors' laboratory environment. Second, as the total average value for important attributes of the universities is 3.50 and the average value of satisfaction is 2.91, there were significant differences (p<0.001). Third, in the analytical result of IPA, the 1st quadrant includes faster developments than other universities, departments' characterization, etc. The 2nd quadrant includes the convenience to issue all kinds of certificates, kindness of administrative staffs, etc. The 3rd quadrant includes convenience of the procedure to improve unsatisfactory services, development efforts to benchmark advanced universities, etc. Finally, the 4th quadrant includes heavy investments in education and environment, efforts to reflect students' demands, and needs, etc. Even though the importance of research subjects related to university services for these attributes is high, they are not fully satisfied, and there are plenty of dissatisfied students. Therefore, urgent supplementations to increase students' satisfaction rates are important. Form the results of the study, it has been found that urgent efforts to improve satisfaction rates of university students who major in catering cooking in the university services are essential and special plans to build competitive systems which can provide high-quality services are also necessary.

출장요리서비스 웹 사이트의 구성 및 내용 분석 (Analysis of Information Structure and Contents on the Web Sites for Catering Services)

  • This study examined the structure and contents of the information provided by the web sites, in terms of clarity, business goal, authority, sustainment of operation and responsibility of customer care, as well as menus. The findings from the analysis of 217 web sites selected from 5 major portal sites, are 1) most of catering business over internet are located around Seoul area, 2) almost 80% of the selected sites are administered by professional agents or firms while the remnants by individuals, 3) except menu and price, any additional information is hardly shown, 4) about three quarter of the sites opened after 2001, that is coherent with the trend of the growth of internet users and eating-out, 5) it is strongly required to create healthful cyber space for the customers, 6) a small number of the sites(12.4%) try to manage access from customers, 7) many sites(73.7%) open the channels for feedback from the customers 8) among the types of catering services offered by the sites, home party is the most popular and the kinds of cuisine, Korean, Japanese, and Chinese, are divided into almost same proportion of the sites, 9) the average number of dishes is 33.5, 10) they offer 7 to 8 different dishes of grain, 4 to 6 of meat, 4 to 10 of fishes, 5 to 13 of vegetables, 1 of fruits, and 1 to 3 of dairy products, 11) The majority of price level is ₩15,001 - ₩20,000.

단체급식시설의 HACCP 시스템 적용을 위한 Generic HACCP Model 개발 (Development of Generic HACCP Model for Practical Application in Mass Catering Establishments)

  • 현재 우리나라의 급식산업체에서는 급식활동에 대한 위생관리를 철저히 하기 위하여 새로운 위생관리시스템을 모색하고 있으며, 일부 대기업이 운영하고 있는 급식산업체에서는 식품제조업체에서 이미 적용하고 있는 HACCP 시스템을 적용하기 위하여 노력하고 있다. 국내 중소기업이 운영하고 있는 급식장에서는 정보 및 전문가의 부족으로 HACCP Plan을 체계적으로 개발하는데 상당한 부담을 느끼고 있어 정부나 관련기관의 지원이 필요한 실정이며, 정부에서는 현재 급식장에 HACCP을 적용하기 위하여 시범사업을 실시하고 있는 등 이에 따른 노력을 기울이고 있다. 학계에서도 HACCP Plan에 대한 연구보고가 간혹 있어 왔으나 이러한 연구의 대부분이 몇 가지 메뉴에 치우쳐 있어 매일 다양한 수십가지의 메뉴가 제공되고 있는 급식장 전체에 대하여 HACCP을 적용하기 어려워 급식장에서 제공되는 전체 메뉴의 HACCP적용을 위한 통합적인 HACCP Plan이 절실히 필요하였다. 본 연구에서는 단체급식시설에서 HACCP 시스템을 적용하기 위하여 위해분석, 중요관리점의 설정, 관리기준 설정, 중요관리점을 관리하기 위한 모니터링 방법의 설정, 수정조치의 확립, 검증절차의 확립 및 기록유지시스템의 확립과 같은 HACCP 기본적인 7가지 원칙에 의거하여 HACCP Pln이 개발되었으며, 검수에서부터 배식까지 모든 작업단계에서 확인된 많은 위해요소가운데 12개의 위해요소가 중요관리점(CCP)로 설정이 되었고 검수단계에서 운송차량의 배송온도가 유일한 관리점 (CP)로 설정되었다. 급식장에서 일어날 수 있는 위해는 수없이 많으며 본 연구에서 제시한 Generic HACCP Model은 1, 2명의 영양사와 몇 명의 조리사가 작업을 하는 일반적인 급식장의 현실에 맞도록 급식장에서 실제적으로 사용할 수 있도록 비교적 간단하게 계획되어 급식장에서 일어날 수 있는 모든 위해를 통제할 수는 없으므로 각 급식장의 현실에 맞도록 재구성하여 적용하는 것이 필요하다. 무엇보다도 급식장의 조리종사자를 대상으로 작업 위생을 위한 교육ㆍ훈련 프로그램이 선행 또는 병행되어야 HACCP의 효과를 기대할 수 있으며, HACCP 시스템을 성공적으로 급식부문에 도입하기 위해서는 급식장 현실에 맞는 전문적인 교육ㆍ훈련 프로그램의 개발이 필요하다. 또한 급식 경영자의 식품에 대한 안전성 의식 및 HACCP 시스템 실행 의지, 작업장 시설의 개선과 조리기계·기구의 위생 규격 강화와 철저한 유지ㆍ관리, 식재료 입고에서부터 배식까지 절차, 방법, 기준 등의 표준화, 특히 메뉴 레시피의 표준화 등은 HACCP 시스템을 급식장에 성공적으로 도입하기 위하여 필요한 요건들이라 할 수 있다.

  • This study delves into the unique transformation of South Korea's elderly population, distinctively termed 'Nomad Silver'. Characterized by individuals aged 65 and above who actively seek novel experiences and embrace new activities, this demographic shift signifies a departure from traditional perceptions of the elderly. The Nomad Silver cohort, distinguished by their significant economic influence and evolving needs, necessitates a tailored approach to healthcare services. This paper underscores the importance of comprehending both the fundamental biological needs and the personalized desires of the Nomad Silver, aiming to enhance their satisfaction and overall well-being. Hospitals, in response, should innovate their services to resonate with the emotional, psychological, and social facets of this age group. Consequently, the paper proposes a four-pronged strategy for hospitals to adapt: comprehensive healthcare provision, patient-centric service development, senior health education coupled with community engagement, and establishing a generational bridge hub. Furthermore, the paper posits that catering to the Nomad Silver not only promises substantial financial gains for hospitals but also fosters new business opportunities across various sectors.

  • 본 연구는 식당에서 사용하는 외식서빙 로봇의 서비스 절차 및 인터랙션 방식에 중점을 두고 연구한다. 사용자 설문조사,사용자를 관찰하고 고객과 레스토랑 종업원의 인터뷰를 통한 레스토랑 서빙 로봇과 고객의 교류방식을 분석하고 사용자 요구를 파악하기 위해 사용자 여정 지도를 구축한다. 또한 서비스 절차에서 배달 서비스 뿐만 아니라 주문 서비스, 접대 서비스 및 테이블 정리 등을 모두 서비스 로봇이 행하는 것을 의도한다.최종 제안 연구 목적은 기존의 서빙 로봇 GUI을 개선하고 새로운 서비스 청사진을 설계하는 것이다.

유아교육기관에서의 급식관리 실태에 대한 교사 및 학부모의 인식 연구 (The Different View Point of Child Education Center Food Service Program between the Parents and the Teachers)

  • To survey the different view points about food service programs among parents and teachers, 2 types of questionnaires, which consisted of attitude, perception, satisfaction and demand of the food service program in child education centers, were used. The data was collected from 2450 parents and 450 teachers who attended a child education center in 16 provinces, nationwide. SPSS was used for descriptive analysis and ANOVA test and $X^2-test$. The frinding results were as follows. 1. The average serving size of meal (lunch) were 80 meals per day and 167 meals per day at large institutions. Mean cost of snacks was 14,709 won per month and mean costs of lunch were 29,319 won per month. The mean price was not significantly different according to the scale of institution. The numbers of servings of lunch, morning snack and afternoon snack were 5, 3.4 and 3.5 times per week each. $56.4\%$ of the institutions served meals to children in classrooms, but the national/public institutions, which were attending elementary school, served meals in a dining place in the elementary school. 2. Teacher controlled serving portion size of snacks $(79.6\%)$ and lunch $(88.8\%)\;and\;30.1\%$ of teacher did not allow leaving lunch food. The ratio of knowing about preserved meals of the teacher who worked at a small institution was significantly higher than the teacher who worked at large institutions (p<0.01). 3. Between parents and teachers, several different view points about school lunch programs were detected. Most parents and teachers wanted that the school lunch to be fully cooked and served at the child education institution itself, but $12.2\%$ of parents and $14.4\%$ of teachers wanted a catering service. The teachers group preferred 'lunch box from home' and 'home partially prepared lunch' as an ideal meal serving type than the parent groups (p<0.01). And there were significantly different view points about price factors in school meals, teachers group highly answered that operating expenses must be added in meal prices. 4. The teacher groups' priorities of education activities during meal time were a significantly lower score than parents group in overall education activities. Teacher and parent groups pointed out that individual sanitation activities were most important of the education activities during meal time, but promoting good eating habits was the lowest score in both groups. 5. 'Improving taste and food quality' was most urgent in food service at child education centers, but there were significantly different view points between parent groups $(64.5\%)$ and teacher groups $(43.8\%)\;(p<0.05)$. They answered at a lower percent in 'employee qualified person' and 'cost control' point to improve food service, but there were also different opinions between the two groups (p<0.01). 6. As to the matter of the advantages and disadvantages of catering services, two group answered that the advantages of a catering service were 'convenience' and 'to solve facilities and labor problems', disadvantages were 'lower in food freshness' and 'sanitation problems'. There were also several different view pionts in catering services, the parents groups were more anxious about food sanitation than teachers. This study found several different view points about school food services among parents and teachers. To improve food services at child education institutions, there is a need to adjust the differences between the two groups through interactive communication channels and education and to employ dietitians as taking charge of adjusting roles between the two groups.

학교 급식종사자를 대상으로 한 위험성평가의 실효성에 관한 연구 (A Study on the Effectiveness of Risk Assessment for School Food Service Workers)

  • 2017년부터 학교 급식업무에 대한 산업안전보건법이 전면 적용되고 그에 따라 2019년부터 위험성평가가 시행되었으나 타 업종에 비해 도입이 늦고 비전문가인 영양(교)사에 의해 평가되고 있어 제도 정착의 한계가 있었다. 서울시교육청 산하 모든 학교에서는 고용노동부의 학교 급식업무의 산업안전보건법 및 고용노동부 고시에 따라 매년 안전보건공단에서 제공하는 위험성평가 지원 시스템의 KRAS 기법을 적용하고 있다. 이렇듯 법적 규제에 따라 위험성평가를 적용하고 있으나 위험의 빈도와 강도 기준이 정성적이고 주관적이어서 평가자에 따라 다른 결과를 도출하여 위험성평가의 실효성이 의문시되었으나 지금까지 학교 급식업무에 대한 위험성평가와 관련된 연구는 없었다. 본 연구에서는 급식종사자의 재해통계를 바탕으로 위험의 빈도와 강도 기준을 정량적이고 객관적으로 제시하고 급식업무 중 일부 작업에 대해 새로운 산정기준을 적용하여 위험성평가를 실시하고 기존 위험성평가 결과와 비교하였다. 그 결과 위험도가 높아지고 그에 따른 개선방안이 구체적으로 제시되어 실효성 제고가 확인되었으므로 급식업무 전체에 대해 시범평가를 확대하고 타당성을 확인하여 모든 학교에 확대 적용함으로써 위험성평가의 실효성과 작동성 제고에 기여하기를 기대한다.

국내 급식위생관리의 현황고찰 및 발전방안 (Evaluation of the Management of Sanitation in Food Service Establishments in Korea and Strategies for Future Improvement)

  • 우리 나라의 학교급식, 병원급식, 및 위탁급식 등에서 위생관리의 수준을 알아보고 앞으로의 개선 및 발전 방안을 논의하였다. 앞으로 발전을 위한 10가지 방안으로서 이들 집단급식에서 (1)인력과 전문성 보강, (2) 건물과 시설의 전용화, (3)조리장 시설 설비의 보강, (4)주 ·부재료 공급 방법의 개선 및 품질관리, (5) 정확한 기계 ·설비류의 생산과 구비, (6)검사 장비와 설비의 보강, (7)개인위생관리의 여건 강화, (8)다양한 위생교육 및 훈련, (9)수입개방에 대한 능동적 대처, (10)관련 연구 및 background data의 축적 강화 등이 이루어져야 할 것으로 도출되었다. 식품 재료를 생산하여 먹기까지에는 여러 가지 단계를 거친다. 그 중에서 조리는 먹기 직전의 단계이다. 영양적으로 우수하고 위생적으로 안전한 재료를 취득하였다 하더라도 이 과정에서 취급이 잘못되면 대규모의 건강 위해를 야기할 수 있다 또 비록 재료가 안전하지 못하였다 하더라도 이 과정에서의 위생관리를 철저히 함으로써 그 위해를 상당히 줄일 수도 있다. 바로 이러한 측면에서 우리는 집단급식 시설의 위생관리가 얼마나 중요한 가를 다시 강조하지 않을 수 없다. 음식물에 의한 위해를 예방하고 위해 요소를 사전에 차단하기 위한 노력의 일환으로 세계적으로 식품위해요소중점관리기준(HACCP)의 도입이 활발하다. 우리 나라에서는 이를 식품제조 ·가공업소에 먼저 도입하였으나 급식 시설에서 시급히 적용하여 건강 위해를 최소화하여야 할 것으로 본다.
