Development of a Carbohydrate-based Fat Replacement for Use in Bread Making (제빵용 지방 대체제 개발)

  • This study was conducted to develope carbohydrate-based fat replacement for use in the preparation of non-(trans) fatty acid and low-caloric bread. Characteristics such as leavening height of batter, pH, titratable acidity, specific volume, sensory evaluation, shelf life and texture change of bread made using 11 types of carbohydrate-based fat replacements were measured. The 11 carbohydrate-based fat replacers (No. $1{\sim}11$) were prepared using maltodextrin as a base, and different ratios of calcium sulfate, ascorbic acid, sodium stearoyl lactylate and methyl cellulose. The pH was lowered and the total titratable acidity was increased after four hours of fermentation in the control and the samples of dough that contained the fat replacement. In addition, the leavening height of the control was 5.0cm (maximum) after two hours of fermentation and 4.6 cm after four hours of fermentation, which was similar to the heights observed when No.$9{\sim}11$ were evaluated. When the specific volume of the bread was evaluated, the 3% of fat replacement No. 10 produced the best results. When taste was evaluated, there was no significant difference between the control and the bread produced using 1% No. 10, however, there was a significant difference between the control and all samples that contained 2% or more of the fat replacement. Furthermore, the addition of a greater concentration of the fat replacer resulted in a greater moisture. However, there were no significant differences in the color of the control and any of the samples. Additionally, measurement of the firmness of the bread during four days of storage at $25^{\circ}C$ revealed that it decreased as the concentration of fat replacer increased. In addition, the sample that contained 3% of sample No. 10 showed a firmness of 18kgf after three days of storage, while the control showed a firmness of 18kg after two days, which indicates that the degradation of the bread that contained the fat replacer was delayed by one day. The bread made using fat replacers was found to have a better taste, flavor, color, texture and firmness than the control, and the best results were observed in response to the addition of 3% of replacement No. 10. The results of this study will be useful in the production of non-(trans) fatty acid, low caloric bread.

The Study on the Ion Water Characteristics of Raw Water in the Domestic Natural Mineral Water (국내 유통 중인 먹는샘물 원수의 이온류 수질 특성에 관한 연구)

  • The goal of this study is to provide basic data to establish a foundation for the provision of safe drinkable water. The raw water of natural mineral water was analyzed to determine the quantities of anions (F-, Cl-, NO3-N-, and SO42- ) and cations (Ca2+, K+, Mg2+, and Na+) during the former and latter half of 2016. Analysis of the current quality of the raw water of natural mineral water among domestic manufacturers showed average anions contents of 0.46mg/L of fluorine, 8mg/L of chlorine ion, 1.5mg/L of nitrate nitrogen, and 12mg/L of sulfate ion. While the fluorine content was greater than the water quality criterion of 2.0mg/L at four points, the fluorine level was overall stable. The average cations contents included 21.3mg/L of calcium, 1.0mg/L of potassium, 3.4mg/L of magnesium, and 9.6mg/L of sodium. The chemical characteristics were compared among the major ions, and the results are presented in a piper diagram. The content ratio of cations was in the order of Ca2+> Na+>Mg2+>K+, whereas that of anions was in the order of SO42->Cl->NO3-N->F-. While the cations were slightly scattered, the anions were generally concentrated except for at a few points. The Ca-Na-HCO3 type was dominant overall in water sources from diorite, gneiss, and granite, while the Na-Mg-Ca-HCO3-Cl type was dominant in basalt sources. Mineral water manufacturers source their water under various conditions, including in-hole casing, excavation depth, and contact state of bedrock; even within the same rocky area, some differences in the water quality type can occur. When the depth of the water source was taken into account, the mean anions contents of F-, Cl-, NO3-N-, and SO42- were similar, with no significant differences according to depth. Of the cations, K+ and Na+ showed no significant differences across all the tubular wells, whereas Ca2+ and Mg2+ decreased in content with depth.

Influences of Slag Replacement on the Properties of Shotcrete Using a Slurry-Type Set Accelerator (슬래그 혼입량이 슬러리형 급결제를 활용한 숏크리트 몰탈의 물성에 미치는 영향)

  • The set accelerator used for shotcrete at high pH environment often causes the dusting problem in practice. In this research, a slurry-type set accelerator was developed to avoid this problem and its effectiveness was investigated by applying it to shotcrete mortars. Set time, stiffening, compressive strength, and chloride ion penetration resistance were examined with different amounts of slag, used as partial replacement of cement. According to the experimental results, it was found that the earlier responses such as set time, stiffening, and 1-day compressive strength were probably affected by the amount of ettringite, formulated by the hydration between C12A7 and calcium sulfate polymorphs present in blast furnace slag. Whereas, it is believed that the result of compressive strength after 3 days was attributed to the hydration of tricalcium silicates. As for the results of a chloride ion penetration test, the partial replacement of cement with slag significantly reduced the total charge passed through the shotcrete mortar.

Effect of Gypsum Application on Reducing Methane (CH4) Emission in a Reclaimed Coastal Paddy Soil (간척지 논 토양 개량제로서 석고처리가 메탄 배출량 저감에 미치는 영향)

  • BACKGROUND: Gypsum($CaSO_4{\cdot}2H_2O$) is known as an ideal amendment to improve soil quality of the reclaimed coastal land. Since gypsum has very high concentration of electron acceptor like ${SO_4}^{2-}$, its application might be effective on reducing $CH_4$ emission during rice cultivation, but its effect has not been studied well. METHODS AND RESULTS: The effect of gypsum on $CH_4$ emission and rice growth characteristics was studied by pot test, which was packed by reclaimed paddy soils collected from Galsa, Hadong, Gyeongnam province. Chemical-grade gypsum was applied in two soils having EC 2.25 and 9.48 dS/m at rates of 0, 0.5, 1.0 and 2.0%(wt/wt). $CH_4$ emission was characterized a week interval by closed chamber method during rice cultivation. $CH_4$ emission rate was significantly decreased with increasing salt accumulation and gypsum application levels. With increasing gypsum application, dissolved ${SO_4}^{2-}$ concentration in the leachate water was significantly increased, which might have suppressed $CH_4$ production in soil. Total $CH_4$ flux was dramatically decreased with increasing gypsum application. In contrast, rice yield was increased with increasing gypsum application and then achieved maximum productivity at 1.0% gypsum application in two soils. CONCLUSION(s): Gypsum is a very good soil amendment to suppress $CH_4$ emission in reclaimed coastal paddy soils, and improve rice productivity and soil properties. The optimum application level of gypsum is assumed at ca. 1% to improve soil productivity with reducing effectively $CH_4$ emission during rice cultivation.

Ionic composition comparison of atmospheric aerosols at coastal and mountainous sites of jeju island (제주도 해안과 산간 지역 대기 에어러솔의 이온조성 비교)

  • The ionic compositions of atmospheric aerosols were investigated and characterized in coastal and mountainous sites of Jeju Island, which were Gosan and Mt. Halla-1100 sites respectively. It was found that the concentrations of nss-$SO_4^{2-}$ (non-sea salt sulfate) and $NH_4^+$ at two measurement sites were almost similar and they showed high concentrations in June at the same time. The concentration of soil-originated nss-$Ca^{2+}$ (non-sea salt calcium) was generally associated with that of anthropogenic $NO_3^-$ and its concentration was increased during spring season. From the comparison of time-series variation and regression analysis of ionic species between two measurement sites, TSP (total suspended particulate) in Gosan site was directly influenced by sea salt particles and the concentration levels of nss-$SO_4^{2-}$, $NH_4^+$, nss-$Ca^{2+}$, $K^+$, and $NO_3^-$ were mainly related with long-range transported air pollutants rather than local pollution sources.

Mineral Carbonation of Serpentinite: Extraction, pH swing, and Carbonation (사문암(Serpentinite)을 이용한 광물탄산화: Mg 추출과 pH swing 및 탄산화)

  • Mineral carbonation by indirect method has been studied by serpentinite as cation source. Through the carbonation of $CO_2$ and alkaline earth ions (calcium and magnesium) from serpentinite, the pure carbonates including $MgCO_3$ and $CaCO_3$ were synthesized. The extraction solvent used to extract magnesium (Mg) was ammonium sulfate ($(NH_4)_2SO_4$), and the investigated experimental factors were the concentration of $(NH_4)_2SO_4$, reaction temperature, and ratio of serpentinite to the extraction solvent. From this study, the Mg extraction efficiency of approximately 80 wt% was obtained under the conditions of 2 M $(NH_4)_2SO_4$, $300^{\circ}C$, and a ratio of 5 g of serpentinite/75 mL of extraction solvent. The Mg extraction efficiency was proportional to the concentration and reaction temperature. $NH_3$ produced from the Mg extraction of serpentinite was used as a pH swing agent for carbonation to increase the pH value. About 1.78 M of $NH_3$ as the form of $NH_4{^+}$ was recovered after Mg extraction from serpentinite. And, the main step in Mg extraction process of serpentinite was estimated by geochemical modeling.

  • The medical use of Acer mono MAX. and Betula costata T. sap has had the long history in Korea. So the mineral and sugar contents of these sap gathered in Mt. Jiri area at spring were analyzed to investigate the scientific base of folk remedies by using ion liquid chromatography and high performance liquid chromatography. The values of chlorine and sulfate in Acer mono MAX. were 11.5 mg/l and 176.7 mg/l, and in Betula costata T. 26.5 mg/l and 162.4 mg/l, respectively. The values of potassium, sodium, calcium and magnesium in Acer mono MAX. were 67.9 mg/l, 5.6 mg/l, 73.8 mg/l and 4.5 mg/l, and in Betula costata T. were 152.1 mg/l, 9.7 mg/l, 39.2 mg/l and 5.7 mg/l, respectively. The values of copper, zinc and manganese in Acer mono MAX. were 0.057 mg/l, 0.483 mg/l and 5.071 mg/l, and copper, zinc, mangances and iron in Betula costata T. were 0.038 mg/l, 1.584 mg/l, 4.354 mg/l and 2.511 mg/l, respectively. The values of sucrose in Acer mono MAX. were 27.29 mg/l, glucose and fructose in Betula costata T. were 0.97 g/l and 3.05 g/l, respectively.

Discrimination of the drinking water taste by potentiometric electronic tongue and multivariate analysis (전자혀 및 다변량 분석법을 활용한 먹는물의 구별 방법)

  • Organoleptic parameters such as color, odor, and flavor influence consumer perception of drinking water quality. This study aims to evaluate the taste of the selected bottled and tap water samples using an electronic tongue (E-tongue) instead of a sensory test. Bottled and tap water's mineral components are related to the overall preference for water taste. Contrary to the sensory test, the potentiometric E-tongue method presented in this study distinguishes taste by measuring the mineral components in water, and the data obtained can be statistically analyzed. Eleven bottled water products from various brands and one tap water from I city in Korea were evaluated. The E-tongue data were statistically analyzed using multivariate statistical tools such as hierarchical clustering analysis (HCA), principal component analysis (PCA), and partial least squares discriminant analysis (PLS-DA). The results show that the E-tongue method can clearly distinguish taste discrimination in drinking water differing in water quality based on the ion-related water quality parameters. The water quality parameters that affect taste discrimination were found to be total dissolved solids (TDS), sodium (Na+), calcium (Ca2+), magnesium (Mg2+), sulfate (SO42-), chloride (Cl-), potassium (K+) and pH. The distance calculation of HCA was used to quantify the differences between 12 different types of drinking water. The proposed E-tongue method is a practical tool to quantitatively evaluate the differences between samples in water quality items related to the ionic components. It can be helpful in quality control of drinking water.

Effects of Addition of Three Different Chemicals to Litter on Broiler Performance, Ammonia and Carbon Dioxide Production in Poultry Houses (세 가지 서로 다른 화학제재를 깔짚에 첨가시 육계 생산성, 계사내 암모니아와 이산화탄소 가스 발생에 미치는 영향)

  • The objectives of this study were to investigate the effect of applying three different chemical additives to the litter (rice hull) on broiler performance, ammonia and carbon dioxide gas reduction in a poultry house at 6 weeks. A total of 96 broiler chicks (6 treatments$\times$4 replicates$\times$4 birds) were fed the experimental diets for 6 weeks. The chemical additives were applies as a top dressing to the litter at a rate of 200 g ferrous sulfate $(FeSO_4)$, 200 g aluminum chloride $(AlCl_3)$ + 50 g calcium carbonate $(CaCO_3)$ and 20 g potassium permanganate $(KMnO_4)$ per kg litter, while the control group did not have the three different chemicals added to the litter. There were no significant differences in broiler performance between the three chemical additives and control group. $FeSO_4\;and\;AlCl_3\;+\;CaCO_3$ treatment reduced ammonia production from the litter at 6 weeks by as much as 91 and $53\%$, respectively (P<0.05). $KMnO_4$ treatment decreased ammonia production at 6 weeks up to $69\%$ compared to the controls (P<0.05). Poultry litter amended with $AlCl_3\;+\;CaCO_3\;and\;KMnO_4$ also caused a decrease (P<0.01) in carbon dioxide productions at 6 weeks (59 and $65\%$, respectively). In conclusion, although broiler performance was not affected by the three chemical additives and control group, these results indicate that $FeSO_4,\;AlCl_3\;+\;CaCO_3\;and\;KMnO_4$ application to litter in a poultry house resulted in a significant reduction in atmospheric ammonia and carbon dioxide gas.

  • In order to obtain basic information on the production of single cell protein from petroleum, more than 400 yeast strains were isolated from various soil samples in Korea utilizing petroleum hydrocarbon as the sole carbon source. A yeast strain showing the highest cell yield among the isolated strains was selected and identified. The optimal culture condition was searched in the flasks shaken throughout the procedure. And the growing characteristics for the selected yeast strain and chemical analysis of the yeast cell component were carried out. The results obtained were as follows: 1. The selected yeast strain was identified as Candida curvata and we named it Candida curvata-SNU 70. 2. The composition of the medium proposed for the present yeast strain is: Light Gas Oil 30ml, Urea 400mg, Ammonium sulfate 100mg, Potasium phosphate (monobasic) 670mg, Sodium phosphate (dibasic) 330mg, Magnesium sulfate 500mg, Calcium carbonate 3g, Yeast extract 50mg, Tween 20 0.05ml, Tap water 1,000ml. 3. Other culture conditions employed for the yeast were pH 5.5-7.0, temp. $30^{\circ}C$ under an affluent aerobic state. 4. Addition of light gas oil in portions to the culture media as the growth proceeded was more effective, especially in the cultivation on the higher oil concentration media. 5. Studies on the propagation of the yeast cells in the light gas oil medium revealed that the yeast has the lag phase lasted 16 hours and the logarithmic growth phase covered 16 to 28 hours. The specific growth rate was about $0.22\;hr^{-1}$ and doubling time was 3.2 hrs. during the logarithmic growth phase. 6. Under the cultural condition employed, the cell yield against the amount of light gas oil (wt%) was 16.1% and the protein content of the dried yeast cells was 48.4%.
