To utilize canned oyster processing waste water effectively, this study was carried out to prepare instant powdered soup using the waste water (IPSW), Instant powdered souu from oyster hot-water extracts (IPSE) was prepared by mixing hot-water extracts powder (15 g) with table salt (5 g), cream powder (19 g), milk replacer (12 g), wheat flour (20 g), corn flour (15 g), starch (5 g), glucose (7.5 g) and onion powder (1.5 g). In preparing IPSW, mixed powder from wash water and boiling liquid waste, instead of powder from hot-water extracts and table salt, was added (powder from boiling liquid waste: powder from wash water= 12: 8) and other additives were added in proportion to those in the IPSE, The IPSW consists mainly of carbohydrates (about $72\%$). It was not different from the IPSE. The volatile basic nitrogen, viable cell counts, coliform group of the IPSW contains 33.4 mg/100g, $2.2\times10^4CFU/g$, <180 MPN/100g, respectively, and its water activity has 0.257. So it was a hygienically safe and conservable instant food. The main fatty acids of IPSW were 16: 0 and 18: 1n-9. Its chemical score of protein was $61.4\%$ and its main inorganic matter was iron. According to a sensual evaluation, in contrast to the IPSE, the IPSW had a bit lower aroma but better taste, It was concluded from the above chemical and sensory evaluation that even the boiling liquid waste which had been mostly abandoned because of its high table salt content can be used as a good material for instant powdered soup if it's powdered and mixed adequately with powder from wash water, and its table salt content is properly adjusted.

The adolescent period, during which physical, spiritual, and physiological growth and development occurs, is important for the development of healthy dietary habits. Particularly, eating a regular breakfast improves eating habits and school life in adolescents but few studies have investigated the effects of eating breakfast on these outcomes. Therefore, this research was performed to investigate the effects of eating a regular breakfast provided by the 'Breakfast Club Program' on eating behaviors and school life. A total of 315 high school students were recruited for the program from 10 high schools in nine districts among 25 districts in Seoul during August to December of 2013. The average age was $17.8{\pm}0.8$ years and 38.1% of students were females. Based on 315 subjects, 38.3%, 35.7%, and 17.1% increased their intakes of breakfast (P=0.001), fruit (P=0.033), and milk (P<0.001) up to 5~7 times per week, respectively. The intake frequency of fruit (P<0.001) and eating breakfast (P<0.001) increased noticeably after program participation. Based on 64 students performing dietary record, intakes of cereals (P<0.001), mushrooms (P=0.027), and fruits (P=0.002) increased while intakes of eggs (P=0.001) and fat and oils (P=0.019) decreased after the program. Consumption of energy (P=0.004), plant protein (P=0.012), carbohydrates (P<0.001), dietary fiber (P=0.026), iron from plant sources (P=0.009), potassium (P=0.043), zinc (P=0.013), vitamin $B_1$ (P=0.043), and vitamin C (P<0.001) increased whereas intake of cholesterol (P=0.002) decreased. Regarding school life, the score for 'comfortable and cheerful starting of a day' (P=0.001) and 'healthy starting of a day' (P<0.001) increased significantly. This study indicates that a regular 'Breakfast Club Program' may establish healthy eating habits and school life in teenagers.

The purpose of this study was to assess the quality characteristics of Moju made with Hovenia dulcis Thunb. and its physiological effects on ICR mice. According to the sensory score, we selected Moju made with 1% Hovenia dulcis Thunb. among Moju made with 0, 0.5, 1, 5, and 10% Hovenia dulcis Thunb. Compared to Moju made without Hovenia dulcis Thunb., Moju made with 1% Hovenia dulcis Thunb. had higher proportions of moisture (86.77 g/100 g) and carbohydrates (11.86 g/100 g). The mean values of the physicochemical analyses were as follows: pH 4.91, acidity 0.28, $^{\circ}Brix$ 12.63, reducing sugar 68.97, alcohol content 0.1, alcohol density 0.998. Moju made with 1% Hovenia dulcis Thunb. did not have effects on DPPH radical scavenging activity; however, superoxide dismutase activity was significantly higher than that of Moju made without Hovenia dulcis Thunb. For assessing physiological activities, 4-week-old male ICR mice were divided into six groups (n=10): normal control group (NC), ethanol-administered group (EC), EC plus low-dose Moju made with 0% Hovenia dulcis Thunb. (MCL), EC plus high-dose Moju made with 0% Hovenia dulcis Thunb. (MCH), EC plus low-dose Moju made with 1% Hovenia dulcis Thunb. (MDL), and EC plus high-dose Moju made with 1% Hovenia dulcis Thunb. (MDH). Serum triglyceride (TG) level was reduced by 11.17% and 19.61% in the MDL and MDH groups, respectively, compared to the EC group. Serum total-cholesterol levels of MDL and MDH groups were significantly lower as compared to the EC group. Serum high-density lipoprotein-cholesterol levels of the MDL and MDH groups were significantly higher than those of the EC group. Liver TG levels were significantly reduced in the MCL and MDL groups. From these results, Moju made with Hovenia dulcis Thunb. demonstrated antioxidant activity and reduction of hyperlipidemia markers. Therefore, Moju made with Hovenia dulcis Thunb. can serve as a non-alcoholic beverage and functional food source.

The purpose of this study was to measure the blood glucose level and glycemic index (GI) in response to persimmon (Diospyros kaki Thunb) syrup extracted from persimmon and extract of persimmon by-products. Major component analyses of persimmon syrup I (PSI, 95:5 mixture of purified persimmon syrup and non-purified persimmon syrup) and persimmon syrup II (PSII, 50:50 mixture ratio of purified persimmon syrup and non-purified persimmon syrup) were $0.3{\pm}0.1$ and $0.6{\pm}0.2$ mg/g for total polyphenolic compounds and $70.6{\pm}0.6$ and $66.6{\pm}1.6%$ for total carbohydrates, respectively. Blood glucose responses of PSI and PSII were determined using both normal ICR mice and streptozotocin (STZ)-induced diabetic male Sprague-Dawley (SD) rats. Further, oral glucose tolerance test (OGTT) was performed on diabetic rats to assess the effects of the experimental diets. Blood glucose response and OGTT showed that blood glucose levels were significantly lower in mice and diabetic rats fed PSI and PSII compared to those fed diets of sugar, maple syrup, or honey. The GIs of healthy volunteers in response to PSI and PSII were calculated to be 51.9 and 35.7, respectively. On the contrary, the GIs of healthy volunteers fed diets including sugar, maple syrup, or honey were 52.6, 20.0, and 93.0, respectively. These results suggest that persimmon syrup can be used for both the treatment of diabetics and healthy people due to its beneficial effects on blood glucose level.
The objectives of this study were to investigate the physicochemical characteristics of soybean leaves in different cultivars and to develop a soybean curd prepared with soybean leave powder as a functional food. Four cultivars (Daewonkong leaf, Daepungkong leaf, Hwangguemkong leaf, and Seoritae leaf) were selected for this experiment. A significant difference was observed in the proximate composition of soybeans leaves (p<0.05). Soybean leaves had the highest content of carbohydrates. The mineral composition and isoflavone content in soybean leaves were significantly different among the cultivars (p<0.05). In particular, Daepongkong leaf had the highest content of genistein, daidzein, and total isoflavones. This study was also conducted to determine the quality characteristics of a soybean curd developed from daepongkong leaf with various concentrations (0, 0.1, 0.2, and 0.3%) of soybean leaf powder (SLP). The soybean curd yield rate increased according to the level of SLP added, whereas the L and a color values decreased. In the sensory evaluation, intensity scores for color, after taste, leafy taste, and chewiness were highest for the 0.3% soybean curd. The soybean curd with 0.2% SLP soybean milk attained the highest overall acceptability score. These results showed that soybean leaf was preferred over soybean curd containing 0.2% soybean leaf powder.

Dodok (Codonopsis lanceolata Bench. et Hook) root contains abundant pharmaceutical substances and is widely used as a food and a medicinal herb. To identify the major components, fermented Codonopsis lanceolata was analyzed for its chemical compositions prior to their pharmaceutical substances, which were used as the fundamental data. The contents of carbohydrate, crude protein, crude lipid and ash are 79.3%, 13.0%, 2.40% and 5.3%, respectively. The calories of fermented Codonopsis lanceolata was 390.5 kcal. Total dietary fiber was 47.4% of total carbohydrates. The protein was composed of 18 different amino acids. The contents of essential and non-essential amino acids were 8,118.18 mg and 10,913.42 mg. The K was the largest mineral followed by P, Ca and Mg, which means fermented Codonopsis lanceolata is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 37.76%, 3.84%, and 35.64%, respectively. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of crude saponin in fermented Codonopsis lanceolata was 60.1 mg/g. It is expected that a follow up study on fermented Codonopsis lanceolata through development and evaluation of processed foods for their functional properties would provide useful information as a source of medicinal foods.

The objectives of this study were to evaluate oral health status of children in multicultural families and compare oral health behaviors of multicultural mothers with those of ordinary Korean families. The mothers' social characters, oral health behaviors and oral health status of children were investigated so that the data from this study can be utilized in developing programs for oral health care promotion especially designed for multicultural families. The subjects were 135 pairs of multicultural mothers and their children who participated in the community programs in suburban areas of Ik-san city and 168 pairs of ordinary Korean mothers and their children residing in Ik-san city. The results were as follows : 1. The dft index and dfs index of multicultural subjects were 4.17 and 6.67, respectively, while ordinary Korean subjects were found to have 2.69 and 4.63($p$ <0.05). 2. The frequency of tooth brushing per day of children from multicultural families was lower than that of children from ordinary Korean families($p$ <0.01). 3. The ratio of practice of oral health behaviors of mothers from multicultural families was lower than that of mothers from ordinary Korean families($p$ <0.01). Tooth brushing instructions were the most frequently carried out by multicultural mothers, which was followed by teaching the importance of oral health, restriction of carbohydrates, and dental check-ups. Significant correlations were not detected between mothers'oral health behaviors and children's dental caries experiences($p$ >0.05).
We investigated the growth of cucumber plants, the uptake and use of mineral nutrients, such as $NO_3$-N, $NH_4$-N, $K^+$, $Ca^{+}^{+}$, $Mg^{+}^{+}$ and $Na^+$, absorbed from media solution, and the synthesis and distribution of soluble sugars under nutrient-deficient condition. Difference in plant growth revealed after 20 days of treatment. Nitrate uptake in nutrient-deficient condition was significantly reduced compared with nutrient-normal treatment, and its distribution was primarily in petioles, stem, roots and less in leaves. In contrast, ammonium content was markedly predominated in fast growing organs, and it was significantly different in growing leaves, expanded leaves, and roots under similar growth conditions. $K^+$, lack by deficient nutrient condition, was found in growing leaves. The $Ca^{+}^{+}$ content did not show significant difference between treatments and a substantial portion of $Ca^{+}^{+}$ remained in petioles. The $Mg^{+}^{+}$ content was significantly higher in the leaves of nutrient-normal condition compared with nutrient-deficient condition while significantly lower in stem and roots. The behavior of $Na^+$ in plant was similar to $K^+$ although its content was relatively little. The highest $CO_2$ assimilation was observed in fully expanded leaves of nutrient-normal condition, which was 1.7 times higher compared with nutrient-deficient condition. The instantaneous water use efficiency (A/E) and the A/gsratio, which is an index of leaf intrinsic water use efficiency for individual leaves, was 1.2 and 1.1 times higher, respectively. The total soluble sugar (TSS) contents were highest in leaves followed by petioles, stems and roots, and in younger leaves. The growing leaves contained about 7,200 mg $kg^{-1}$ of TSS in nutrient-normal condition whereas the TSS contents in nutrient-deficient condition were not significantly different between leaves. The $Mg^{+}^{+}$ and $NH_4$- N were positively correlated with the TSS whereas $NO_3$ - N was negatively correlated.

This study examined the effects of feeding whole-crop barley silage (BS), corn silage (CS) and the mixture of BS and CS (CB) on feed consumption, daily gain, nutrients apparent digestibilities and blood parameters in order to investigate the feed evaluation in Korean black goats. BS, CS, and CB were fed to twelve Korean black goats, which were allocated into three groups in metabolic cages according to the latin-square design. As a result, dry and organic matter intakes for goats per day have shown a tendency to decrease in the order of CS, CB and BS, but there were no significant differences. We also found a similar tendency when the intakes of crude protein, crude fat, and non-fiber carbohydrates (NFC) were examined. However, ADF and NDF consumptions showed a decreasing tendency in the order of CB, BS and CS. Dry matter intakes per metabolic body weight showed the decreasing tendency in the order of CS (57.6g), CB (53.8g) and BS (52.7g), however with no statistical differences. Average daily gain of 64.2 g in CB was significantly higher than the other groups (42.0g to 46.0g). Nitrogen intakes and nitrogen retention showed a decreasing tendency in the order of CS, CB and BC. Nevertheless, nitrogen retention in CS group was higher by 30% than that of the BC group with p<0.05. Apparant digestibilities of dry and organic matters were 72.6 and 72.8% for the CS group respectively, which were significantly higher than those of the BS group (67.5 and 69.0%) and the CB group (66.0 and 67.1%). In conclusion, the results of this study demonstrated that the CS group showed more positive feed consumption, digestibility, and nitrogen retention in Korean black goats than those of BS group. The CB group, however, showed similar results to the results of the CS group.

To enhance the utilization of Allium hookeri (AH) as a food, characteristics of AH roots and leaves cultivated under open field and greenhouse conditions were investigated. The moisture content of the roots and leaves were 81.05 to 84.18% and 88.85 to 90.12%, respectively. The moisture content of AH cultivated in the open field was 2 to 3% lower than the moisture content of AH cultivated in the greenhouse for both roots and leaves. The content of nitrogen-free extract, carbohydrates, was 13.49 to 16.20% in the roots and 7.08 to 7.79% in the leaves. The main mineral generated from both open field and greenhouse cultivation was potassium, at 503.98 to 512.08 mg% in leaves. The free sugar content of roots cultivated in the open field was four times higher than the content in the leaves, and roots cultivated in the greenhouse contained three times lower free sugar than the leaves. In particular, the fructose content of roots cultivated in the open field was about 12 times higher than roots cultivated in the greenhouse. The crude saponin and total polyphenol content was higher in leaves than roots, and was higher in the open field than the greenhouse. The $IC_{50}$ for DPPH radical scavenging activity was highest, 2.74 mg/mL, in 70% MeOH extracts of AH leaves cultivated in the greenhouse. Water and 70% MeOH extracts of AH leaves cultivated in the greenhouse showed no cytotoxicity to RAW 264.7 cells. Water extracts of AH leaves cultivated in the open field markedly inhibited the production of the inflammatory mediator nitric oxide. These results suggest that AH may be used as the material of health functional food.
