쌀의 이화학적 특성과 저장 쌀빵의 노화성과의 관계 (Interrelation between Physicochemical Properties of Milled Rice and Retrogradation of Rice Bread during COld Storage)

  • The interrelation between physicochemical properties of milled rice and retrogradation of rice bread during cold storage was examined to compare the varietal difference in maintenance of rice bread quality. Twelve rice materials showed big varietal difference on physicochemical properties of rice starch such as amylose content(0.0~29.2%), gel consistency(20~98mm), and alkali digestion value(2.0~7.0). Rice bread made from milled rice of Jungwonbyeo, AC 27 and IRAT 177 exhibited soft texture and late retrogradation of rice bread during cold storage(4$^{\circ}C$). The amylose content of milled rice was closely associated with gel consistency negatively and with springiness of rice bread positively. The retrogradation of rice bread texture during cold storage was correlated with gel consistency of rice flour positively and with alkali digestion value of milled rice negatively.

조미 건조김의 흡습특성에 관한 연구 (Study on the Moisture Sorption Characteristics of Seasoned Dried Laver)

  • 상업적으로 생산되는 조미김의 흡습특성을 조사하기 위하여 조미김과 2종의 흡습제 (silica gel, zeolite)의 등온흡습곡선을 30, 40, 5$0^{\circ}C$에서 포화염용액을 사용하여 측정하였다. 실험온도 및 상대습도 범위내에서 평형수분함량에 도달하는데 조미김은 4~6시간, silica gel은 20~25시간, zeolite는 43~46시간이 소요되었다. 조미김과 흡습제의 등온흡습곡선은 모두 전형적인 sigmoid형 곡선을 나타냈다. BET식을 활용하여 구한 단분자층 수분함량은 조미김이 각 온도(30, 40, 5$0^{\circ}C$)에서 5.26, 4.46, 3.49% (d.b.)이었고, silica gel은 17.32, 15.24, 12.89% (d.b.), 그리고 zeolite가 16.87, 14.92, 14.33%(d.b.)로서 조미김에 비해 흡습제가 높은 범위의 단분자층 수분함량을 나타냈다. 또한 단분자층 수분함량은 온도가 증가함에 따라 실험온도 범위 내에서 직선적으로 감소함이 발견되었다 포장재의 투습도 역시 온도의 영향을 받음을 알 수 있었는데, 조미김 포장재의 투습계수의 온도의존성은 Arrhenius식으로 표시할 수 있었다.

국내산 우뭇가사리로부터 미생물 배지용 한천의 pilot규모 정제와 특성 (Pilot-scale preparation and physicochemical characteristics of microbiological agar from Gelidium amansii in Korea)

  • 우뭇가사리로부터 조한천을 조제하고, 이를 실제 산업에 적용할 목적으로 $0.4\;{\mu}m$ 기공을 가지는 여과 막을 microfiltration한 후, $50{\circ}C$의 온수로써 가용성 물질을 제거하고, 0.25 N NaOH로 $70{\circ}C$에서 2시간 처리하는 알칼리 처리를 거쳐 미생물 배지용 한천을 조제하였다. 이화학적 특성을 측정한 결과에 의하면, 겔강도는 $460g/cm^2$에서$738g/cm^2$으로 상승하였고, 점도는 12 cp에서 5.2 cp로, 황산기 함량은 $1.8{\%}$에서 $0.4{\%}$로, 그리고 이수율은 $10.3{\%}$에서 $5.4{\%}$로 저하하여 제품의 품질이 월등히 향상되었다. 상용되는 미생물 배지용 한천은 겔강도가 $358{\~}368g/cm^2$, 점도는 8 cp, 황산기 함량은 $2.18{\~}2.39{\%}$ 및 시너레시스율은 $11.3{\~}12.4{\%}$로 분석되어 본 실험법으로 정제한 한천이 물성 및 성분에 있어서 휠씬 우수 하였다.

도루묵(Arctoscopus japonicus) 어묵의 제조 및 품질특성 (Quality of Steam Cooked Surimi Gel Prepared using Sandfish Arctoscopus japonicus Meat)

  • This study examined the effect of pretreated sandfish Arctoscopus japonicus meat as a surimi complex for preparing sandfish flavored fish paste. To prepare the sandfish-flavored paste, fine chopped sandfish meat including backbone was added in a ratio of 0 to 50 wt.% to thawed Alaska pollock Theragra chalcogramma surimi to make a mixed surimi gel. To prepare the sandfish-flavored paste, the mixed surimi was ground with salt using a silent cutter, mixed with starch and stabilizers 0.2% transglutaminase and gluconolactone 0.3%, stuffed in a rectangular container, left for 3 h at $25^{\circ}C$, cooked in hot water for 30 min at $90^{\circ}C$, and finally chilled for 20 min at $4^{\circ}C$. The effects of the pretreatment of sandfish meat were investigated by analyzing the quality of the paste produced. The proximate composition of FP (fish paste containing 40% steam-cooked sandfish meat and 0.3% gluconolactone) was moisture 76.1%, crude protein 12.0%, crude fat 3.8%, carbohydrate 6.1%, and ash 2.0%. The major minerals in FP were Na (23.77 mg/L), Mg (1.46 mg/L), Zn (1.04 mg/L), and Fe (0.41 mg/L), and the major free amino acids were taurine, anserine, alanine, and glutamic acid. The monounsaturated fatty acid content of FP was 566.22 mg%, and the polyunsaturated fatty acid content was 498.43 mg%. The n-3 fatty acid content was 398.01 mg%, and C20:5n-3 (218.85 mg %) was a major component.

  • In this study, ordinary portland cement, slag cement and micro cement which have been used in the construction fields were evaluated for the environmental effects and compression strength characteristics for curing solution. To find the leaching of C $r^{6+}$ characteristics in cement grouts, C $r^{6+}$ content tests were performed for the raw materials(cement powder). In addition, C $r^{6+}$ leaching tests were peformed for the homo-gel samples according to change of pH and each curing solution with the deionized water and leachate. Then, the unconfined compression strength tests were peformed with the homo-gel samples and the amount of changed C $r^{6+}$ was measured by curing solution.

졸-겔법에 따른 실리카 유리 제조에 있어서 DCCA의 역할에 관한 연구 (The Role of DCCA in the Sol-Gel Process Preparing Silica Glass)

  • In this study, the effects of catalyst and DCCA content were investigated in order to determine the optimum conditions of monolithic silica gel formation through sol-gel process. Formamide, oxalic acid, glycerol and dimethylformamide are used as DCCA. To observe the phenomena in drying and heat-treating of gels, we examined structural exchange of gels using FT-IR, TG-DTA and XRD. Monolithic gels were obtained by adding formamide and dimethylformamide as DCCA. According to the heat treatment schedule, silica glass is prepared by heat-treatment up to 1050$^{\circ}C$.

Sol-gel 합성에 의한 자성 garnet $Y_{3-x}Bi_xFe_5O_{12}$의 결정학적 및 Mossbauer 분광학 연구 (Crystallographic and Mossbauer Studies of Magnetic Garnet $Y_{3-x}Bi_xFe_5O_{12}$ by a Sol-Gel Method)

  • Single phase garmet Y3-xBixFe5O12(x=0.0, 0.25, 0.5, 0.75, 1.0)을 ethylene glycol을 용매로 하여 sol-gel 법으로 합성후 x-ray diffraction, Mossbauer 분광기, vibrating sample magnetometer (VSM)를 이용하여 결정학적 및 자기적 특성을 연구하였다. Y과 Fe의 수화 반응을 통하여 얻은 Y3Fe5O12의 x-ray 회절 분석 결과는 결정구조가 cubic임을 알 수 있었고 Y에 Bi를 치환한 경우 또한 cubic 구조이었으며 Bi의 치환 량이 증가할수록 격자 상수가 선형적으로 증가함을 알수 있었다. Bi를 첨가한 Y3-xBixFe5O12 (x=0.0, 0.25, 0.5, 0.75, 1.0)의 단일상의 garnet이 형성되기 시작하는 온도는 80$0^{\circ}C$이고 secound phase (BiFeO3)가 생성되기 시작하는 온도는 x=0.75는 100$0^{\circ}C$이며 x-1.0은 95$0^{\circ}C$였다. Mossbauer 분광 실험과 VSM측정 결과 Birk 치환 될수록 포화 자화 값과 coercivity값이 감소하는 경향을 보였으며 Curic 온도는 Bi의 치환 양이 증가할수록 약간 증가하는 경향을 보임을 알 수 있었다.

Preparation and Properties of Sol-Gel Processed Lead Lanthanum Titanate Thin

  • In order to investigate the dependence of a content in lead lanthanum titanate (PLT) films and heat treatment, sol-gel process has been used. Four types of PLT thin films with the chemical formula, Pb$\_$1-x/ La$\_$x/Ti$\_$1-x/4/O$_3$(X=18, 21, 24 and 28 mole %) have been fabricated on Pt/Ti/SiO$_2$/Si multi-layers and ITO/glass substrates, The post-annealing temperature in the range of 400~700 $\^{C}$ is applied for the formation of perovskite structure in PLT films. The structureal, electrical and optical properties of PLT film with the addition of La content are estimated. The films orientation and surface structure of films are studied by XRD (X-ray diffraction) and SEM(scanning electron microscopy). The P-E hysteresis loop become narrower with increasing La content. The average transmittance of the films is about 80%.

Effects of Moisture Content on Non-Fracture Dynamic Properties and Fracture Quality of Pacific Whiting Surimi

  • The effects of moisture content on non-fracture dynamic properties and fracture gel quality of Pacific whiting surimi were investigated to determine their relationships. Surimi samples were tested at various moisture contents (75, 78, and 81 %). Torsion test showed that shear stress decreased rapidly and strain values decreased gradually as moisture concentration increased. Dynamic storage modulus (G') also decreased as moisture content increased. A strong positive correlation ($R^2=0.90$ to 0.99) was found between the G' measured at temperatures between 10 and $45^{\circ}C$ and fracture stress values. The results indicate that dynamic rheological measurements could be used as a tool for early gel quality assessment.

Sol-gel 법으로 합성된 SiC-C 복합분말을 사용하여 제조된 Si-SiC의 기계적 특성 및 전기저항 특성 (Mechanical and Electrical Properties of Si-SiC Fabricated Using SiC-C Composite Powders Synthesized by Sol-gel Process)

  • In this study, Si-SiC composites were fabricated using a Si melt infiltration method using ${\beta}$-SiC/C composite powders synthesized by the carbothermal reduction of $SiO_2-C$ precursors made from a TEOS and a phenol resin. The purity of the synthesized SiC-C composite powders was higher than 99.9993 wt% and the average particle size varied from 4 to $6{\mu}m$ with increasing carbon contents of the $SiO_2-C$ precursors. It was found that the Si-SiC composites fabricated in this study consist of ${\beta}$-SiC and residual Si, without any trace of ${\alpha}$-SiC. The 3-point bending strengths of the fabricated Si-SiC composites were measured and found to be higher than 550 MPa, although the density of the fabricated Si-SiC composite was less than $2.9g/cm^3$. The bending strengths and the densities of the fabricated Si-SiC composites were found to decrease with increasing C/Si mole ratios in the SiC-C composite powders. The specific resistivities of the Si-SiC composites fabricated using the SiC-C composite powders were less than $0.018{\Omega}cm$. With increasing C content in the SiC-C composite powders used for the fabrication of Si-SiC composites, the specific resistivity of the Si-SiC composites was found to slightly increase from 0.0157 to $0.018{\Omega}cm$.
