Packaging of dairy products: an overview

  • Dairy products, including milk, cheese, cream, yogurt, and butter, constitute excellent sources of essential nutrients such as calcium, proteins, and vitamin D; therefore, nutritionists recommend a constant daily dietary intake of dairy products. Packaging is an important feature that ensures high-quality products are delivered to consumers; different packaging materials and forms are required depending on the products. Packaging forms include pouches for butter, cheese, and milk powder; cartons for liquid, frozen, and coagulated milk; packets for pasteurized liquid milk; bottles for milkshakes and other liquid products; and cups for frozen and coagulated products. The increase in mobile lifestyles among consumers will lead to smaller households and greater preference for convenience, which will promote individual and smaller packaging for dairy products. This article reviews the development of packaging materials and forms, packaging requirements, and future considerations for the packaging of dairy products.

Microwave 오븐 가열에 의한 유지의 지방산과 토코페롤의 안정성 (Oxidative Stability of Fatty Acids and Tocopherols in the Fats and Oils during Microwave Heating)

  • Effect of microwave heating on the oxidative stability of the soybean oil, sesame oil, butter and margarine were investigated by mearsuring fatty acids amout and tocopherol losses. The index for chemical properteis, free fatty acid, peroxide value, anisidine value, carbonyl value, conjugated diene and triene levels were also mearsured in the oil samples for 5, 10, 15 and 20 min of heating in a microwave oven. No significant difference was observed on the fatty acids composition in the fats and oils before and after microwave heating. During microwave treatment, the oxidative degradation of the tocopherols in the samples became greater with increasing heating time. The amount of tocopherols in the soild fats, butter and margarine, dropped drastically after 5 min of heating and reduced to 95% of their original levels after 20min heating ${\gamma}$-tocopherol in butter showed the most unstable states and completely destroyed during microwave treatment for 20min. On the other hand, 80% of tocopherols in the liquid oils were still remained after 5min of heating except $\delta$-tocopherol in sesame oil.

국내 시판 땅콩 및 땅콩버터 중 Aflatoxin $B_1$ 오염 분석 (Analysis of Peanut and Peanut Butter Retailed in Korea for Aflatoxin $B_1$)

  • 식용 땅콩 40점(국산 28점, 수입산 12점)과 땅콩버터 30점(국산 12점, 수입산 18점)등 2003년 서울에서 무작위 선정된 총 70점의 국내 시판 중인 땅콩 및 그 가공품을 대상으로 aflatoxin $B_1$의 오염을 조사하였다. 본 곰팡이독소의 분석에는 형광검출 HPLC 방법이 사용되었고, 그 오염의 확인에는 HPLC-MS가 이용되었다. 두 가지 대표 시료들에 2 ppb수준으로 첨가된 aflatoxin $B_1$의 회수율은 모두 80% 이상으로 양호하였다. 또한 사용된 두 분석법 즉, HPLC-FD와 HPLC-MS의 검출한계는 각각 0.8과 0.1 ppb로 나타났다. 총 40점의 땅콩 중 10점(국산 4점, 수입산 6점)에서 aflatoxin $B_1$의 오염이 확인되었고, 국산 및 수입산 땅콩의 평균오염수준은 각각 19와 32 ppb이었다. 한편 aflatoxin $B_1$은 총 5점의 땅콩버터에서 검출되었고, 평균 오염수준이 국산과 수입산 땅콩버터 각각 10과 12 ppb이었다. 수입산 땅콩의 경우 aflatoxin $B_1$의 오염도가 보다 빈번히 나타났고, 특히 그 오염수준은 땅콩버터와는 다른 통계적으로 유의한 차이(p<0.05)를 지적하였다. 본 실험의 결과, 땅콩 및 땅콩버터는 한국인의 aflatoxin $B_1$ 노출에 있어서 주요 기여식품이 아님을 확인할 수 있었다.

쥐눈이콩(鼠目太) 첨가 냉동쿠키의 품질특성 및 최적화 (Quality Characteristic and Optimization of Iced Cookie with Addition of Jinuni bean(Rhynchosia volubilis))

  • The purposes of this study were firstly to optimize the recipe for iced cookies by cooking with five different ingredient levels of $Jinuni\;bean(X_1),\;butter(X_2)\;&\;sugar(X_3)$ and secondly to analyze the chemical and sensory test results by using RSM(Response Surface Methodology). As a result of this test, water activity decreased with increasing contents of butter or sugar, while hydrophilic browning decreased independently with increasing sugar content. There was a positive correlation(p<.001) between specific gravity and hardness, although the result was not uniform due to the interaction of each factor. There was a negative correlation(p<.001) between the spread ratio and gravity or hardness, and it tended to increase with increasing each content. Color value L and color value a had positive correlation (p<.001) and the value tended to decrease with increasing the quantity of Jinuni bean. Generally, the strength of the cookies showed a saddle point at the peak of the 3d graph. As a result of sensory evaluation, the color was sensitive to the contents of sugar and Jinuni bean, the texture was sensitive to the contents of butter and sugar, and the taste and overall quality were sensitive to all three factors. Color had a positive correlation(p<.05) with the taste, texture and overall quality. There were high positive correlations(p<.001) between the taste, texture and overall quality. The preference data showed an up-swollen, parabolic shape in the center of the 34 graph, which enabled the optimum value to be determined and the optimum mixture ratio which fulfilled all sensory items was Jinuni bean 93g, butter 188.5g and sugar 155g, indicating a substitution of flour by $44\%$.

건조 단호박을 첨가한 냉동쿠키의 제조조건 최적화 (Optimization of Iced Cookie with the Addition of Dried Sweet Pumpkin Powder)

  • This study was conducted to develop a functional cookie with the addition of a sweet pumpkin powder on a cookie shape, that showed high preference level to all age group and that was very easily to store because of low moisture content, by substituting partially a sweet pumpkin powder for reducing content of wheat flour. This study has produced the sensory optimal composite recipe by making iced cookies, respectively, with each 5 level of Sweet pumpkin powder($X_{1}$), sugar($X_{2}$), butter($X_{3}$), by C.C.D(Central Composite Design) and conducting sensory evaluation and instrumental analysis by means of RSM(Response Surface Methodology). Sensory items showed very significant values in color, appearance, flavor, overall quality(p<0.05), texture(p<0.01), and instrumental analysis showed significant values in lightness, redness(p<0.01), yellowness, spread ratio, hardness(p<0.05). Also sensory optimal ratio of Sweet pumpkin cookie was calculated as sweet pumpkin powder 81.8g, sugar 116.6g, butter 210.7g, and it was revealed that the factors of influencing cookie aptitude were in order of Sweet pumpkin powder, butter, sugar.

국산 버터 중의 유리지방산에 관한 연구 (Studies on the Free Fatty Acids of Domestic Butter)

  • 국내에서 생산되고 있는 버터의 유리지방산 조성을 분석하기 위하여 silicic acid column chromatography 방법을 이용하여 버터로부터 직접 유리지방산을 분리 용출시켜 농축한 후 GLC로 분석하였다. 국산 버터 2종류 제품을 분석한 결과, 버터 A의 유리지방산 조성에 있어서는 $C_{18}$ 유리지방산$(C_{18_0},\;C_{18:1},\;C_{18:2}\;및\;C_{18:3})$ 함량이 52.83%로 가장 높았고, 그 다음으로 palmitic acid가 29.39%, myristic acid가 11.85% 함유되어 있었으며, 버터 B의 경우에는 $C_{18}$ 유리지방산이 47.50%, palmitic acid가 30.52%, myristic acid가 13.76% 함유되어 있었고, 그 외의 유리지방산은 소량씩 함유되어 있었다. 한편 함량면에서는 적지만 버터의 풍미에 중요한 영향을 미치는 것으로 알려진 butyric, caproic, capric 및 lauric acid의 농도를 분석한 결과, 버터 A에서는 각각 35, 10, 48, 60ppm, 버터 B에서는 각각 56, 11, 70, 126ppm이었다.

Anti-inflammatory Effect of Shea Butter Extracts in Canine Keratinocytes

  • Shea butter (Vitellaria paradoxa) is a fat extracted from shea tree nuts and contains relatively high levels of non-glycerides. Triterpenes, the main non-glyceride component, exhibit a variety of biological activities such as antitumor, antibacterial, and anti-inflammatory. Shea butter extract (SBE) has been used to treat various skin problems such as burns, eczema, and rash in human medicine, but little is known about the activity of SBE on canine skin. This study evaluated the cytotoxicity and anti-inflammatory effect of SBE in canine keratinocytes. Cytotoxicity of lipopolysaccharide (LPS, 5-50 ng/mL) and SBE (50-200 ㎍/mL) was evaluated using the CCK-8 assay. Non-cytotoxic concentrations of LPS and SBE were administered to canine cell cultures to evaluate anti-inflammatory effects. To evaluate the anti-inflammatory activity of SBE, the levels of IL-1β, IL-8, IL-12, and TNF-α were measured using ELISA kits. The concentration of each cytokine was quantified in control, LPS-treated, LPS + SBE-treated groups. Increased levels of IL-1β, IL-8, and IL-12 were found in LPS-treated groups relative to control groups. LPS + SBE-treated groups showed a lower level of IL-1β, IL-8, and IL-12 than LPS-treated groups. These results suggest that SBE may have application as a topical agent for canine inflammatory skin diseases. However, further in vivo study is needed to evaluate the safety and efficacy of SBE in dogs.

마분말 첨가 머핀 제조조건 최적화 (The Optimization of Muffin with Yam Powder Using Response Surface Methodology)

  • This purpose of this study was to develop a functional muffin by adding yam powder in the shape of a muffin as a partial surrogate for wheat flour. The yam has been found to be effective for liver and kidney function, as well as the digestion of protein, since it produces glucuronic acid in the body. Therefore, the purpose of this study was to determine the optimal mixing conditions of yam muffins by adjusting the amounts yam powder, butter, and sugar. The mixing conditions for the yam muffins included 3 categories: yam powder $(X_1)$, sugar $(X_2)$, and butter $(X_3)$ by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). The effects of the three variable additions on muffin quality were examined via physical and chemical experiments, such as the analysis of texture (hardness, cohesiveness, springiness, gumminess), coloration (lightness, redness, yellowness), and height. Lastly, we performed a sensory test, which revealed significant findings for gumminess, color, appearance, flavor, softness (p<0.05), redness, and overall quality (p<0.01). Consequently, the optimal mixing rate which best satisfied the sensory items were 34.35g of yam powder, 80.15 g of sugar, and 80.55 g of butter.
