꽃게 가공식품 이용실태 및 개발 요구도 조사 (Current Use and Development Demand for Processed Blue Crabs)

  • This study is basic research focused on product development and market activation based on analysis of current usage and demand for development of processed blue crabs. A total of 556 subjects aged 20s to 60s living in the Seoul area were surveyed. According to the survey, 65.1% of subjects consumed blue crabs at home, and 82% of them purchased blue crabs whole and undressed. Respondents gave higher marks to taste, nutrition, and texture compared to ingredient preparation, eating method, and price. Majority of blue crab consumers had no experiences of consuming processed blue crabs. Exactly 57.0% of consumers purchased them at big shopping centers, and the reason for purchasing was their good taste. When female consumers purchased processed blue crabs, they checked every part carefully compared to male consumers. Women gave high scores to blue crab powder, blue crab extract, blue crab croquette, and blue crab cake compared to men, demonstrating the necessity of developing processed blue crabs. Furthermore, the experienced processed blue crab group recognized the necessity of developing processed blue crabs compared to the inexperienced group. People showed significant differences in purchasing processed blue crabs according to gender as well as previous experience of blue crab consumption.

Abundance Estimation of the Chesapeake Bay Blue Crab, Callinectes sapidus

  • This study is to estimate abundance of the Chesapeake Bay blue crab stock. Using 823 dredge tows which were conducted during the 1991 winter survey, blue crab abundance was estimated on the basis of newly developed methods which account for unequal dredge tow distances, size- and sex-specific heterogeneous overwintering spatial distributions, wintertime exploitation, the time period of quasi-hibernation, and dredge capture efficiency. The estimate of total abundance before correction by gear efficiency was 131.8 million crabs $(95\%\;C.I.\;=\;118.2\;million\;crabs\;to\;145.4\;million\;crabs),$ Dredge capture efficiency was estimated to be 0.474. Thus, the estimate of total abundance was calculated as 278.1 million crabs after correction by the efficiency factor.

Effects of Temperature and Heavy Metals on Extractable Lipofuscin in the Blue Crab, Callinectes sapidus

  • The potential role of environmental factors on extractable lipofuscin accumulation rate in the blue crab was studied by examining the effect of temperature on laboratory reared blue crabs and the effect of trace metals from samples collected at impacted sites (Baltimore Harbor) and a relatively pristine site (outdoor ponds at Horn Point Laboratory, Cambridge, MD, USA). Lipofuscin levels did not significantly related with sampling sites or heavy metal concentrations in the crab tissue. Heavy metal body burden was highly variable among sampling sites and tissue types but significantly higher for both impacted areas (Curtis Creek and Inner Harbor) in comparison to the reference site. Among tissue types, gills showed the highest metal concentrations with the exception of Hg, which was highest in muscle tissue. For two groups of crabs that were held at either ambient (4 to 1$0^{\circ}C$) or heated seawater (19$^{\circ}C$) for two months, normalized-lipofuscin levels were significantly different (P-0.001). Results suggest that temperature may affect lipofuscin accumulation (=0.25ng-lipofuscin/mg-protein/temperature-degree day). Therefore, temperature should be considered for accurate age calibration of crab populations using lipofuscin.

췌셰픽만 꽃게의 예망에 의한 채집효율성 추정 (Estimation of Dredge Sampling Efficiency for Blue Crabs in Chesapeake Bay)

  • 1992년 동계에 췌셰픽만의 꽃게자원에 대하여 예망을 사용한 연속채집법에 의한 어획 효율성을 조사하였다. 일반선형모델 분석에 따르면 26회에 걸친 야외시험 결과 어획효율성은 저질이나 수심, 사용된 조사선박에 따라 통게학적으로 유의한 차이가 나타나지 않았다. 예망효율(즉, 어획율)은 Leslies방법과 단순히 개조된 방법 등의 두 방법을 사용하여 추정하였다. 평균 어획율은 0.26 (표준오차:0.03)으로 추정되었는데 이는 한번의 예망을 사용하여 채집장소에 존재하고 있는 꽃게 가운데 단지 $26\%$($95\%$ 신뢰한계 : $20{\sim}32\%$)를 잡을 수 있다는 의미이다. 예망효율은 꽃게의 밀도가 증가함에 따라 지수적으로 감소하였다.

한국 서해안 꽃게, Portunus trituberculatus (Miers, 1876)의 난 성숙과 산란 (Gonad Maturation and Spawning of the Blue Crab, Portunus trituberculatus (Miers, 1876) from the West Sea of Korea)

  • The gonad maturation and spawning of blue crab, Portunus trituberculatus (Miers, 1876) using samples caught by trammer net in the western coast of Korea from January to December. The gonadosomatic index (GSI) showed the highest value of 15.0 in June and lowest value of 1.29 in August. Hepatosomatic index (HSI) showed the lowest in the spawning season from June to July. Thereafter, from August the value started to increase to 5.77 in December, showing an adverse trend against GSI. In the histological studies of the female reproductive organ, the gonad filled with primary oocytes from January to February and secondary oocytes in May. The female gonads mature from June, and mature and immature groups could be distinguished from December to February or March. In August, female developed another cycle of gonad development, showing new primary oocytes in the gonads again. Some of female crabs had receptaculum filled with already active sperm cells in it from March to May. In the time of August to September, almost all the females had the sperm sacs in the receptaculum. From the result, the coupling period estimated from August to September. Total RNA and DNA values of the crabs were highest in May (2.51, $0.57{\mu}g/mg$). The DNA value remained unchanged except for the value in May ($0.09-0.13{\mu}g/mg$). while RNA value was lowest in January ($1.08{\mu}g/mg$). The RAN/DNA ratio was the lowest (6.23%) in May and highest (18.05%) in July. The value of correlations coefficient between body weight and fecundity of the crabs was higher that of between carapace width and fecundity.

섶 속살이게, Pinnotheres pholadis의 기생이 진주담치의 번식력에 미치는 영향 (The Effect of the Pea Carb (Pinnotheres pholadis) on the Reproductive Capacity of the Blue Mussel (Mytilus edulis galloprovincialis))

  • 1981년 8월에서 1982년 5월까지 일본 암수현 대퇴만에서 섶 속살이게, Pinnotheres pholadis에 기생된 진주담치를 정기적으로 채집하고 기생군과 비기생군간의 각장에 대한 육중의 상관관계를 조사하고, 그 성숙도와 영양상태의 차를 조직학적 방법에 의해 구명했다. 섶 속살이게의 기생으로 말미암아 진주담치는 증육에 명백한 장해를 받음이 밝혀졌다. 또한, 생식선의 발달이 늦어질뿐 아니라, 생식세포의 수가 감소됨으로써 전체면적에 대한 생식선의 면적비가 낮아지게 되므로, 기생군의 번식력은 비기생군에 비해 현저하게 약한 것으로 추정된다.

한국 근해산 주요 게 종류의 함질소엑스분에 관한 연구 (Nitrogenous Constituents in the Extract of Crabs caught in the Korean adjacent Sea)

  • 한국 연근해산 대표적 인 3종 게(대게, 털게, 꽃게)의 육과 장기가 함유하는 함질소 엑스분의 분포를 성별, 부위조직별(몸통살, 다리살, 내장)과 생시료 및 열수추 출시료로 구분하여 분석하고,그 조성에 대하여 검토하였다. 3종의 게는 모두 육중에 함질소 엑스분을 약 3%이 상으로 함유하였다. 유리아미노산의 분포를 보면, 대게의 육에는 arginine, proline, glycine을, 털게와 꽃게 의 육에는 공통적으로 arginine, taurine, glycine을 많이 함유하였으며, 종류에 따라 그 조성에 상당한 차이가 있었다. 그리고 3종 게의 내장에는 arginine과 taurine을 많은 비율로 함유하였다. 유리아미노산과 유기 염기류의 양은 자숙하므로써 많은 증가를 보였으나, nucleotides는 그 양이 감소하였다. 유기 염기류 중 slycine betaine과trimethylaminoxide의 양은 조직별로 총 함질소 엑스분에 대하여 평균 30%이상의 많은 양을 함유하는 것이 특기할 점이었다. 본 연구에서 다룬 3종 게의 맛에 영향을 미치는 주 요 함질소 엑스성분은 육과 내장에 많은 양으로 분포하는 arginine, proline, glycine, taurine 등의 유리아미 노산과 glycine betaine과 trimethylaminoxide 등의 유기 염기류일 것으로 판단되었다.

초산 세척과 키토산 첨가에 의한 간장게장의 미생물학적 품질 향상 (Improvement of Microbiological Quality of Ganjang-gejang by Acetic Acid Washing and Addition of Chitosan)

  • 간장게장은 우리나라 전통 식품 중의 하나로 생 꽃게를 세척한 후 간장소스를 첨가하고 저온에서 숙성시켜 포장하여 상업적으로 판매하고 있다. 하지만, 간장게장 제조특성 상 열처리를 하지 않기 때문에, 간장게장의 미생물학적 품질을 유지하는데 어려움이 따른다. 따라서 본 연구에서는 원물 꽃게의 초기 미생물 저감화를 위해 여러 살균세척제의 효능을 비교하고 저장 중 간장게장 제품의 미생물학적 품질을 유지하기 위해 키토산의 항균 효능을 평가하였다. 먼저, 상온에서 생 꽃게를 염소수(50 mg/L), 과초산(40 mg/L), acetic acid (5%), lactic acid(5%)에 각각 10분간 침지시켜 일반세균수를 분석하였다. 결과를 살펴보면, 여러 살균세척제 중 5% acetic acid 세척이 생 꽃게에 존재하는 일반세균수를 약 1.5 log CFU/g까지 감소시켜 가장 효과적인 것으로 나타났다. 키토산 효능을 평가하기 위해 현재 상업적으로 제조되고 있는 간장게장(방법 1; 전해수 세척), 5% acetic acid로만 세척된 꽃게(방법 2), 5% acetic acid로 세척된 꽃게에 0.5%(방법 3)와 1%(방법 4)의 수용성 키토산이 첨가된 간장으로 제조된 간장게장을 각각 $4^{\circ}C$$12^{\circ}C$에서 최대 30일까지 저장하면서 일반세균수, 대장균군 및 대장균수를 측정하였다. $12^{\circ}C$에서 저장된 간장게장의 일반세균 수는 7일이 지났을 때 약 8 log CFU/g까지 증가하였다. $4^{\circ}C$의 경우, 1% 키토산이 첨가된 군(방법 4)에서 20일 동안 약 2.9 log CFU/g까지만 증가한 것으로 나타나 키토산 무첨가군(방법 1과2)과 0.5% 첨가군(방법 3)(4.2~4.5 log CFU/g)에 비하여 훨씬 효과적이었다. 본 결과에 따라, 생 꽃게를 5% acetic acid로 세척한 후 간장게장에 1% 키토산을 첨가하여 냉장온도에서 저장한다면 간장게장 제품의 미생물학적 품질 향상에 큰 도움이 될 것으로 여겨진다.

간장으로 염지한 꽃게장의 화학적 성분 (Chemical Composition of Blue crabs Preserved in Soy Sauce)

  • 생꽃게의 영양학적 조성에 대한 조사와 간장에 침지한 후 꽃게장의 영양학적 및 화학적 조성 변화에 대하여 알아보았다. 수분함량은 생꽃게보다 꽃게장에서 감소하는 추세를 나타냈고 회분함량은 꽃게장이 생꽃게보다 다소 높은 수치를 나타내었다. 생꽃게의 식염함량이 1.50%인데 반해 꽃게장은 7.89%로 염장 후 그 함량이 증가하였으며, pH도 염장 후 증가하였다. 유리당의 함량은 생꽃게에서는 소량으로 검출되었지만 염장후에는 그 함량이 모두 증가하였고 특히 fructose가 현저히 증가하였는데 그 이유에 대해서는 진일보의 연구가 필요하다. 생꽃게와 꽃게장의 아미노산의 함량은 전반적으로 염장후 그 함량이 감소하였고 유리아미노산은 염장후 증가하였다. 생꽃게와 꽃게장의 주요 아미노산은 glutamic acid. arginine 및 aspartic acid이었고 유리아미노산은 arginine, proline 및 alanine이었다. 지방산함량은 염장 후 그 함량이 감소하였고 주요지방산은 palmitic acid, oleic acid, EPA 및 DHA이었다.

꽃게 통발용 미끼 및 미끼통의 형광 특성 (Fluorescent characteristics of baits and bait cages for swimming crab Portunus trituberculatus pots)

  • In order to develop the substitutive materials for natural baits of swimming crab pots, the fluorescent characteristics of the baits were analyzed, and the preference of fluorescent dyes were investigated by the mean entrapped catch number to the pots through the water tank experiments and fishing experiments. On the investigation of fluorescent characteristics by the 5 kinds of baits, mackerel, krill, manila clam, pig's fat and chicken's head which were used in substitutive baits for test in the UV long wave(365nm) area, it showed clear blue fluorescence in the skin of mackerel, shell of krill, manila clam and bill of chicken's head, and green fluorescence in the mackerel s muscle and internals, and yellow fluorescence in the pig's fat and chicken's head. On the investigation of fluorescent characteristics by the bait cages in the UV short wave(254nm) and long wave(365nm) area, it showed each green, red and blue fluorescence in the cylinderical or hexahedral red plastic bait cages which were painted each green, red and blue fluorescence dyes, but it showed yellowish green flourescence in the cylinderical or hexahedral red plastic bait cage which was painted yellow fluorescent dye. On the preference investigation of the fluorescent dyes of swimming crabs by the 5 kinds of the bait cages which were put the mackerel in the non-fluorescent red plastic cage($RF_N$), red, yellow, green and blue fluorescent plastic cages(RF, YF, GF, BF) each, nonfluorescent red plastic cage($RF_N$) was entrapped mean 2.0(6.7%), but blue fluorescent plastic cage(BF) was mean 5.0(16.7%) and it was more 2.5 times comparing to $RF_N$, and red fluorescent cage(RF) was same level and green fluorescent cage(GF) was 50% of catch number comparing to $RF_N$, and yellow fluorescent cage(YF) was entrapped nothing(F 46.324, P < 0.05). On the investigation of the entrapped catch number to the pots which were put the mackerel in the blue fluorescent hexahedral plastic cage(HP) and blue fluorescent silicon mackerel model cage(SM), HP was mean 3.4(11.3%) and it was a little more comparing to SM which was entrapped mean 3.2(10.7%)(t 0.775, P > 0.05). Fishing experiments on the preference investigation of swimming crabs by the pots which were put in the non-fluorescent red plastic cage($RF_N$) and blue fluorescent plastic cage(BF) were conducted 3 times. Mean catching number and weight of $RF_N$ were 71.7 ind.(18.3%) and 16.9kg(64.3%), and those of BF were 93.0 ind.(23.1%) and 19.8kg(64.5%), respectively.
