This study evaluated the influence of cooking methods (blanching, pan-frying, and microwaving) on the antioxidant activity of Ligularia fischeri (LF) using myoglobin methods against five different reactive oxygen species (ROS) (i.e., 2,2-diphenyl-1-picrylhydrazyl (DPPH), hypochlorite ions, hydroxyl radicals, peroxyl radicals, and peroxynitrite ions). With respect to DPPH scavenging activity, the antioxidant activities of blanched LF and pan-fried LF were significantly higher (P<0.05) than that of fresh LF for all cooking times. Pan-fried LF and microwaved LF showed higher antioxidant activities against hydroxyl radicals and peroxyl radicals than uncooked LF, while the protective effect of blanched LF was low, except for the at the 3 min cooking time point. Microwaved LF showed high antioxidant activity against all ROS at the 2 min cooking time point. Interestingly, LF that had been microwaved for 2 min and 3 min had high antioxidant values, whereas blanched LF and pan-fried LF had low antioxidant values. The activities of cooked LF against five different ROS were characterized comprehensively by 5-axe cobweb charts.
This study was carried out to estimate the change of Hg content in contaminated food materials including rice grain, soybean sprouts and crucian carp during their washing and cooking processes. The residue level of Hg in contaminated rice at 1 ppm level was decreased to the extent of 24% by three-times washing whereas it was not decreased in cooking. The removal efficiency of Hg in soybean sprouts contaminated at 80 ppm level was about 26% in three-times washing. While the Hg content was not decreased in blanching or cooking of soybean sprouts as a whole, the extent of leached Hg into the fluid part varied in the range of 23-41% depending on the heating time, salinity and volume of cooking water. While the Hg content in fish contaminated at 1 ppm level was not decreased in cooking as a whole, the leaching ratio of Hg into the fluid part was in the range of 2-10% depending on the salinity of cooking water. Disposal of inedible portion in cooked fish could remove 32% of contaminated Hg residue.
As a step to investigate energy conservation in canneries, energy consumption pattern and energy usages of various unit operations in a mushroom cannery were examined. The results are as follows; 1. In the mushroom cannery, fuel oil and electricity were used mainly for temperature control of mushroom growing house in winter and various cultivation operation respectively. To grow and process 1 kg of mushroom, thermal energy of 4634 kcal and electrical energy of 0. 116 kwh were consumed. About 80% of all energy was consumed for cultivation. 2. Steam qualities at each respective processing line were $92{\sim}94%$, giving no great differences among lines. 3. As a direct energy in 1 day processing operations of 8 tons of mushroom, thermal energy of $301.5{\times}10^{4}kcal$ and electrical energy of 60.1 kwh were used. The energy intensive operations were blanching (35%) and retorting (38%).
Three mushroom cannerries were selected by size which are representative vegetable processing firms in korea for monitoring microbial contamination of processing water, washing water, mushroom before and after washing through first and second washing tanks and, blanched and prolonged mushroom for certain time at room temperature. Total contamination degree was expressed as colony forming unit (CFU) of mesophilic aerobes. The contamination degree of processing water was $10^{2}\;CFU/100\;ml$ and washing water in first and second washing tank were 10 to 100 times higher than processing water. When 2.3 tons of washing water was used for washing 1 ton of mushroom, washing effect was showed by reduction of microbial load but cutting it to 1.8 tonsIl ton of mushroom, microbial load was higher than that of raw mushroom level. Blanching reduced microbial load to 50-500 CFU/g of blanched mushroom and it was not seen much increase of CFU in blanched mushroom left at room temperature for 3 hours in $16^{\circ}C$ processing water. Just after injection of $80^{\circ}C$ brine in container, CFU/ml of brine in container was $84{\times}10^{4}$ but it was increased rapidly to $20{\times}10^{7}$ after 2 hours at ambient temperature.
Heating characteristics for retort pouches of Kimchi heated in hot water were determined as a function of various parameters for processing. Processing conditions in laboratory and commercial retort were also evaluated on the basis of storage test. D values for Lactobacillus plantarum isolated from test sample ranged from $D^{1.08}\;to\;D^{0.18}$ and z value was $10.5^{\circ}C$. Thermal diffusivity of Kimchi increased from 1.15 to $1.44{\times}10^{-3}cm/s$ by blanching for 15 min at $80^{\circ}C$. The rate of heat penetration was significantly decreased with increasing the thickness of the pouch although the decreases was less significant below 1.0cm thickness. Increasing in the ratio of solid to syrup up to 90:10 proportionately decreased $f_h$ value, but above the ratio $f_h$ values were nearly constant.
This survey was conducted to assess the perception of hazards and washing behavior of vegetables of 500 housewives in Korea. The subjects were selected by the stratified random sampling method. The survey was performed using a structured questionnaire through telephone interviews by skilled interviewers. Most people have bought vegetables and fruits in the supermarket or (traditional) markets rather than stores, department stores, or direct transactions. Eighteen percent of the subjects felt vegetables were secure and were not concerned about safety. But $42.8{\%}$ were concerned about vegetable safety. The perceptions of vegetable-related hazards differed significantly by the respondent's socioeconomic characteristics. Higher concern about vegetable safety was reported by subjects with higher income, children, and who usually buy vegetables in supermarkets or department stores. Most subjects ($88.6{\%}$) perceived that residues of chemical substances such as pesticides were the most significant potential vegetable risk factor, followed by heavy metal, and pathogens. Housewives mainly rinsed vegetables in flowing-water ($85.2{\%}$ of subjects), 3${\~}$4 times ($63.8{\%}$ of subjects), and without detergent ($90.6{\%}$). Subjects believed that hazards decreased by blanching or boiling vegetables rather than washing. Subjects realized more or less correctly the removal rate of pesticide and pathogen through the washing and cooking processes. However, the removal rate of heavy metals was less than subjects thought it would be. Therefore, the scientifically assessed results on safety in the washing and cooking process should be opened to the public to provide the right-to-know and assure confidence in consumers.

This study analyzed the production and heat stability of an emulsion made from buckwheat sprout extracts with high rutin content. To obtain high rutin contents, buckwheat was sprouted and the polyphenols and rutin were extracted from buckwheat sprouts. Concentrated extracts were made into an emulsion using a homo mixer and hydraulic homogenizer, after which heat stability was analyzed. The polyphenol contents were highest in ground sprouts grown for 8 days (10.66 mg/g), which was 10 times higher than those of buckwheat seeds. Extraction with 50% ethanol after blanching was the most effective method for obtaining extracts with higher polyphenol content and rutin content. Extracts were concentrated up to 60% soluble solid content and then emulsified using a homo mixer and hydraulic homogenizer. Heat stability of the emulsion passed through the hydraulic homogenizer was slightly higher than that made using the homo mixer. The heat stability of the emulsion was more strongly affected by heating time than temperature. In conclusion, the buckwheat concentrate emulsion passed through the hydraulic homogenizer was more heat stable than buckwheat extract alone.
The purpose of this study was to investigate the differences in vitamin C and mineral contents in perilla leaves as a result of different cooking methods. The results are summarized as follows. In cutting up the perilla leaves, the vitamin C content decreased by 40% with no significant difference made to the mineral content. Steaming was more effective in retaining vitamin C compared to blanching. With increasing treatment times. decreasing amounts of vitamin C remained. There was no significant change in mineral contents except for potassium. In the case of treating with vinegar or lemon juice, more vitamin C remained than when not treated, and there was little influence on the mineral contents. In the solubilization effect of calcium seasoned with acid, rice vinegar was most effective followed by lemon juice, apple juice, brown rice vinegar, then persimmon vinegar. There was a little or almost no vitamin C remaining in kkaennip kimchi. In terms of storing time, raw seasoned kkaennip kimchi had higher mineral contents than blanched or steamed kkaennip kimchis.

Physicochemical changes were investigated for the shelf-life extension of cultured wild-ginseng roots during storage with various pre-treatments with blanching, CAMICA-SD and DF-100 and treatments with citric acid and vitamin C. The pH of cultured wild-ginseng roots showed the range of $6.06{\sim}6.42$ at $10^{\circ}C$, but showed higher ranges of $6.08{\sim}6.91$ and $6.08{\sim}8.68$ at 20 and $30^{\circ}C$, respectively. Browning index (a/b) was increased with increasing storage temperature, and the index at 10 and $30^{\circ}C$ were 0.405 and 0.469 after 2 weeks, respectively. Browning index and viable cell number of CAMICA-SD pre-treatment showed little changes compared to pre-teatment with blanching or DF-100. When the cultured wild-ginseng roots were treated with 1.0% citric acid and 0.2% DF-100 after pre-treatments with CAMICA-SD, viable cell number was slightly increased to $4.9{\times}10^2CFU/g$ for 3 weeks storage at $10^{\circ}C$. The mixture of citric acid and DF-100 was also used to prevent the growth of microbiology and to reduce browning reaction, especially enzymatic browning reaction. The mixture might effectively extend shelf life of the cultured wild-ginseng roots.

Studies on extraction and color characteristics of purple sweet potato (PSP) pigment were performed to provide the basic information for the utilization of PSP as a new source of natural food colorant. PSP pigment was extracted well with the polar solvents such as distilled water, ethanol, and methanol. but hardly extracted with the non-polar solvents. Among the tested solvents, 20% ethanol solution containing 0.1% citric acid was found to be the most efficient for extraction of the pigment from PSP. PSP contained high amount of pigment not only in the epidermis but also in the flesh of the potato. The PSP pigment was heat stable even under pretreatments such as autoclaving and blanching of the potato before extraction. The optimum temperature of the extraction for the PSP Pigment was decided to be $30^{\circ}C$ by considering the stability and the rate of extraction. The pigment was markedly influenced by the change of pH. The color of the pigment solution was red at the pH range of $1.0{\sim}3.0$, became blue at $7.0{\sim}8.0$, then turned green at $9.0{\sim}10.0$. A characteristic batho-chromic shift of the pigment solution was observed as the pH of the solution increased.
