Comparison of Blood Loss and Meat Quality Characteristics in Korean Black Goat Subjected to Head-Only Electrical Stunning or without Stunning

  • This study assessed the effects of non-stunning (NS) and head-only electrical stunning (HOES) slaughtering condition on meat quality traits of longissimus lumborum (LL) muscle from Korean black goat (KBG). Ten KBGs (18 months) were assigned into two groups and exposed to either NS or HOES treatments. Blood loss (BL) % was measured after exsanguination, and meat quality traits including muscle pH, meat color measurements (CIE $L^*$, $a^*$, $b^*$, Chroma, and hue angle), water-holding capacity (WHC), Warner-Bratzler shear force (WBSF), and sarcomere length were measured at 24 h postmortem. Results indicated that NS and HOES had no significant difference on BL %, the rate of pH decline, meat color properties, and WHC (p>0.05). It has only a small effect on WBSF and sarcomere length values, but the difference was marginal. These results suggested that meat quality of LL muscle from goat might not be affected by slaughter methods because neither NS nor HOES did result in poor quality of meat.

Effects of Black Ginseng (9 Times-Steaming Ginseng) on Hypoglycemic Action and Changes in the Composition of Ginsenosides on the Steaming Process (흑삼(구증구포인삼)이 혈당 강하에 미치는 영향 및 증포별 ginsenoside 조성 변화)

  • This study examined the effects of black ginseng (9 times-steamed ginseng) on hypoglycemic action in streptozotocininduced diabetic rats as well as changes in ginsenoside composition by the steaming process. As the number of steaming cycles increased, the amounts of crude saponin and most ginsenoside contents decreased, while the amount of ginsenoside- Rg3 and the ratio of PD/PT (=[$Rb_1+Rb_2+Rc+Rd+Rg_3]/[Re+Rb_1+Rh_1]$) increased. This ginsenoside composition is a unique characteristic compared to other types of ginseng products. In order to investigate the hypoglycemic effect of the black ginseng extract, in vivo studies were performed in rats with streptozotocin-induced diabetes. The studies showed that the administration of the black ginseng extract decreased high blood glucose levels (more than 300 mg/dL) to a normal level (102 mg/dL). These results suggest that this black ginseng extract has a significant hypoglycemic effect and can be used as an anti-diabetic substance for dietary supplements or new drugs.

The Clinical Study of Tongue Change in Diabetes Mellitus Patients as Oriental Diagnostic Method (糖尿환자의 27例의 舌診에 關한 臨床 硏究)

  • Tongue examination is the most unique and important diagnostic method of oriental medicine. It reveals patients condition and give some information about direction of therapy and background of disease as well as produces clue of duration of disease changing that grasps it from outside. The aims of this study show that results of tongue examination is related to somewhat special pattern. we study 27 patients(age of means: 63.01 years old, male: 14, female: 13) who come to Wonkwang University Oriental-Medicine Hospital at Chonju with diabetes mellitus or diabetes mellitus complications. Tongue colors of this study result in pale-red 8 cases, pale 6 cases, red 6 cases, crimson 5 cases, blue-green-purple 2 cases and tongue fur of this study result in white-fur 16 cases, yellow-fur 7 cases, black-fur 1 case, none-fur 3 cases. And the condition of tongue fur with grimy and thin result in thin-white-fur 12 cases, white-grimy-fur 4 cases, thin-yellow-fur 5 cases, grimy-yellow-fur 2 cases, black-fur 1 case. Means level of fasting glucose during 7 days was $223.24{\pm}32.l7mg/dl$ and postprandial 2hours was $286.37{\pm}24.54mg/dl$ There were no changes in tongue body and tongue color but changes occur in tongue fur with 9cases in this period. 5 cases of patient make a difference between FBS(fasting blood glucose) and postprandial blood glucose level more than l00mg/dl (2 cases of patient with thin-white-fur gradually turned to slight-yellow-fur. There were no changes in 2 cases of patient with crimson-none-fur and pale-white-fur. 1 case of patient with slimy-yellow-fur turned to black fur.) 11 cases of patient had lesser than $10\%$ hemoglobin $A_lC$ and tongue color of these patient were pale-red 5cases, pale 2 cases, red 2 cases, crimson 2 cases. 16 cases of patient had more than $10\%$ Hemoglobin $A_1C$ and tongue color of these patients were pale-red 3 cases, pale 4 cases, red 4 cases, crimson 3 cases, blue 2 cases. This result shows that quantity of Hemoglobin $A_1C$ make a somewhat role in tongue color. The above results show that tongue color, fur color, condition and change of fur in diabetes mellitus patients is various in pale-red, pale, crimson, none-fur. So it is difficult to give an exact diagnosis on pathology of diabetes mellitus only with tongue examination because there are a little matches between blood glucose level, prevalence-period, short-term blood glucose regulation and tongue and fur colors.

Evaluation of the Oral Acute Toxicity of Black Ginseng in Rats

  • We studied the acute oral toxicity of black ginseng (BG) produced by heat process in rats. Single acute BG extract doses of 0, 5, 10, and 15 g/kg dissolved in saline were administered by oral gavage and the animals were kept under observation for 14 days. The single administration of BG extract up to 15 g/kg did not produce mortality, behavioral change or abnormal clinical signs in the rats. These results indicated that the oral $LD_{50}$ of the BG extract in the rats is higher than 15 g/kg. Compared to the control group, no treatment-related biologically significant effects of BG extract were noted in the measurements of the body weight or food intake. At the end of the period, the biochemical parameters and hematological parameters were analyzed in the plasma and blood. A histopathological examination of the liver and kidney was also conducted. Only the blood nitrogen urea and potassium levels in the biochemical indices showed significant differences at 10 and 15 g/kg doses of BG extract compared to the control group. These changes were not considered to be due to the toxicity. None of the other clinical chemistry parameters were affected. Therefore, these results indicate that the BG by heat processing is virtually nontoxic.

Effects of Different Feeding Systems on Nutrient Availability, Nitrogen Retention and Blood Characteristics in Native or Crossbred Korean Black Goats (사료급여체계가 재래종 및 교잡종 흑염소의 영양소 이용율, 질소축적 및 혈액성상에 미치는 영향)

  • This trial was conducted to investigate effects of different feeding types of conventional or total mixed rations (TMR) provision on feed intake, nutrient digestibility, nitrogen retention and blood metabolite characteristics in different breeds of native and cross bred Korean black goats. Ten Korean native male goats and 10 Korean crossbred black male goats (Korean native $\times$ Australian feral crossbred, 50:50), average 18 kg of BW, were used in this trial, and each breed of Korean black goats was separated into conventional and TMR diets treatments in a randomized complete block design. Conventional diet was based on forages and commercial diet. All animals were housed in individual metabolism crates and were fed ad libitum. Water was available at all times. Experimental period totally lasted for 38 days, consisting of 14 days of adaptation, 10 days of preliminary period and 14 days of sample collection period. Daily dry matter intake was significantly (p<0.05) higher in TMR treatments of the crossbred goats. Within breeds, crossbred rather than native-bred consumed more highly, and within the feeding type, TMR diets were more fed in comparison with conventional diet. Average daily gain ranked the highest in crossbred : TMR, followed by crossbred: conventional diet, native-bred: TMR, and native-bred: conventional diet (p<0.05). Dry matter digestibility was significantly (p<0.05) higher for TMR than for conventional diets, and it was higher in crossbred than in native-bred Korea black goats. Nitrogen retention was highest in TMR treatments of crossbreed, whereas it was lowest in conventional diet of native breed (p<0.05). Plasma glucose and urea nitrogen concentrations were significantly (p<0.05) higher in crossbred than in native-bred Korean black goats. Overall, the results indicated that feeding total mixed ration to crossbred rather than native-bred Korean black goats had more favourable influences on their performances, intakes, digestibility, nitrogen retention and blood metabolite characteristics. In conclusion, it is conceived that the results may contribute to economical benefit to farms producing Korean black goats together with establishment of an efficient feeding management system.

A Study on the Color Preference and the Personal Color of University Students (대학생의 선호색과 자신의 이미지색에 관한 연구)

  • Colors are in the inseparable relation ia the all parts of human life. The color influences not only our psychological and physiological aspects, but also our way of behavior. The purpose of this study was to investigate the color preference and the personal color of 100 university students. As results of researching current university students color preference when we compare it with pre-studied results, it shows some differences. In pre-studied, the blue and black marked high degree, but for recent students, it has appeared that warm color is highly preferred. Also warm color has shown as the personal color. There were significant differences in the relation between the blood type and color preference. It appears that the blood type A and B were preferred to cold color while the blood type of B and AB were preferred to warm color.

  • A blood biochemical analysis was carried out for the serum of wintering sea bream (red sea bream Pagrus major, black sea bream Acanthopagrus schlegeli, rock bream Oplegenathus fasciantuas) with green liver syndrome. GOT and GPT were significantaly elavated in the diseased sea bream. The value of $NH_{3}$ was slightly higher but those of TBIL. TP and UA were lower than the control. But there were no differences in albumin. Ca and glucose between the diseased and the control. These results suggent that a green liver syndrome in the sea bream might be related with nutritional defects and the stress of low water temperature during the winter.

  • The moon bear lived in Sulak Mt. and Gili Mt. in 1949. It was reported that one bear was captured in sulak Mt. in December 19571 and the last one was killed by poacher in Sulak Mt. in May 22. 1983. Currentlyi the number of bear are decreased sharply so that Korean government designated them as their 329th natural monument in November 4. 1982. In September 2. 1997. the administration of cultural monument applied for the blood sample of bear to detection for poaching. We collected blood sample to 5 bears which are Moon bear, Malayan sun beard American black bears Ezo brown beard European brown bear. Before blood collectingl we injected to bear with Ketamine hydrochloride and Xylazine hydrochloride (10:2) to anaesthetize.

Comparison of Oxidative Stress in Red Blood Cells Induced by Hair Dyeing Application to Young Women (염모제 도포방법에 따른 인체 적혈구의 산화스트레스 비교)

  • To ascertain the effects of hair dyeing application on oxidative stress in human, a mixture of permanent black colored hair dye with the same amount of oxidant containing 6% hydrogen peroxide was used. A hair dyeing with contacting the scalp (conventional dyeing) and a hair dyeing with 3 to 4mm away from the scalp (alternative dyeing) were applied to each 15 young healthy women. Blood was taken from the brachial vein at two sampling times, just before and 6 hours alter the hair dyeing, and antioxidant enzyme activities and antioxidant contents were measured in red blood cells. After dyeing, malondialdehyde(MDA) contents for conventional dyeing group was shown to a tendence of more increased than alternative dyeing group. After dyeing, reduced glutathione (GSH) contents for conventional dyeing group was shown to a tendence of more decreased than alternative dyeing group. After dyeing, superoxide dismutase (SOD) and catalase (CAT) activities were significantly decreased in conventional dyeing group (p < 0.01), however, SOD and CAT activities were not significantly decreased in alternative dyeing group. After dyeing, there was no significant decrease in glutathione peroxidase (GPX) activity both for conventional dyeing group and alternative dyeing group. Therefore, after dyeing, the degree of oxidative stress in red blood cells for alternative dyeing group was appeared to be lower than conventional dyeing group.

Antioxidative and Anti-diabetic Activity of C3GHi, Novel Black Rice Breed (Cyanidine-3-glucoside (C3G) 색소의 함유량이 증대된 쌀 신품종(C3GHi)의 항산화 및 항당뇨 활성)

  • C3GHi, a novel black rice variety developed by conventional breeding has more high contents of cyanidine-3-glucoside (C3G) and a more strong antioxidant than normal black rice. In this study, we investigate the antioxidative potential and anti-diabetic activity of C3GHi and extract of it for the purpose of development of functional materials or replacement meal for diabetic patients. Using in vitro antioxidative activity assay system such as DPPH radical quenching assay, superoxide anion radical scavenging assay, inhibition of lipid peroxidation and DNA breakage assay, C3GHi extract was observed to have more high antioxidative activity than normal black rice breed. The glycemic index of a freeze dried powder of C3GHi brown rice showed $43.7\pm18.8$, which belonged to low GI food (GI of 55 or less). Using in vivo diabetic model such as db/db mice model and streptozotocininduced diabetic model, C3GHi rice extract decrease blood glucose level and inhibit oxidative stress in blood. From the results, we think that the C3GHi varieties have a potential for the functional materials or ingredient of meal replacement for diabetic patients.
