전통주의 항치매 활성과 심혈관질환 활성 및 항산화 활성 탐색 (Characterization of Anti-dementia, Cadiovascular and Antioxidant Functionalities in Korean Traditional Alcoholic Beverages)

  • 새로운 고품질의 전통주 개발을 위한 자료를 얻고자 시판 전통주들을 수집하여 이들의 물리화학적 성질과 항치매활성, 심혈관질환활성 및 노화억제활성등을 조사하였다. 수집된 45종의 전통주들의 에탄을 함량은 $7.0%{\sim}52.0%$로 다양하였고 pH는 $3.05{\sim}5.28$이었으며 SBB-ju 전통주가 비교적높은 1.37%의 총산을 함유하고 있었다. 항치매성 $\beta$-secretase 저해활성은 PMR-ju가 42.5%로 제일 높았으나 acetylcholinesterase와 butyrylcholinesterase 저해활성은 없거나 20% 미만의 낮은 활성을 보였다. 항고혈압성 ACE저해활성은 YON-ju가 85.6%로 조사한 모든 생리기능성 중 가장 우수하였으나 혈전용해활성은 없었다. 항노화성 전자공여능은 SBB-ju(A)가 72.2%을 보여 높았으나 SOD 유사활성과 혈전용해활성등은 매우 낮거나 없었다. 최종 항고혈압활성 우수 기능성 주류로 선발된 YON-ju의 주, 부원료 추출물들의 항고혈압 활성을 조사한 결과 인삼의 물과 에탄을 추출물, 멥쌀의 물추출물 및 국화의 에탄올추출물에서 항고혈압활성이 높은것으로 보아 발효중에 이들로부터 항고혈압성 ACE 저해물질이 용출되거나 이들의 분해산물들이 YON-ju의 항고혈압 활성을 상승시킨 것으로 사료 되었다.

두유(豆乳)에서 젖산균의 생육(生育)과 대두(大豆)요구르트의 향미(香味) (Growth of Lactic Acid Bacteria in Soy Milk and Flavor of Soy Yogurt)

  • 농축대두단백으로 두유를 만들고 여기서 Lactobacillus acidophilus, L. bulgaricus, L. casci, Streptococcus lactis or S. cremoris를 각각 접종하여 젖산균의 생육과 산생성을조사하고 커드상의 대두요구르트로부터 액상(液狀)의 젖산균음료를 제조하여 관능검사를 실시한 후에 두유와 대두 요구르트에 들어 있는 몇가지 휘발성분을 측정하였다. 생육 실험의 결과를 보면 두유에 접종된 5종의 젖산균가운데 산생성은 대체적으로 L. bulgaricus가 가장 높았고 다음은 L. casci, L. acidophilus, S. lactis, S. cremoris의 순이었다. 관능검사의 결과를 보면 대두젖산균음료의 향미(香味)는 우유젖산균음료의 향미(香味)보다 떨어졌으며, 대두젖산균음료 중에는 산생성도가 가장 높은 L. bulgaricus로 만든 젖산균음료의 향미(香味)가 가장 우수하였고 산생성도가 가장 낮은 S. lactis로 만든 젖산균음료의 향미(香味)가 가장 저조하였다. 두유와 대두젖산균음료의 향미(香味)를 비교할 때 대두젖산균음료의 향미(香味)가 훨씬 우수하였으며, 젖산균발효에 의하여 두유에 들어 있는 n-hexanal은 크게 감소하였고 diacetyl이 새로이 생성되었다.

The effect of different drinks on the color stability of different restorative materials after one month

  • Objectives: The aim of this study was to evaluate the effect of three different drinks on the color parameters of four different restorative materials. Materials and Methods: Three different composites (Filtek Ultimate Universal Restorative, Filtek Ultimate Flowable, and Filtek Silorane, 3M ESPE) and a polyacid-modified composite resin material (Dyract XP, Dentsply DeTrey GmbH) were evaluated. Eighty-four disc-shaped specimens of 8 mm in diameter and 2 mm in thickness were prepared (n = 21 each). Color coordinates ($L^*a^*b^*$, ${\Delta}L^*$, ${\Delta}a^*$, ${\Delta}b^*$, and ${\Delta}E^*$) were measured using a $V{\dot{I}}TA$ Easyshade Compact ($V{\dot{I}}TA$ Zahnfabrik) after 24 hr of storage (baseline) and after 30 day of storage in three different beverages of black tea, Coca cola, or water (control) (n = 7). In each beverage, the specimens were stored three times a day, one hr each, for 30 day. The color changes (${\Delta}E$) were calculated and were analyzed by Kruskal-Wallis and Dunn multiple comparison test. Results: The color difference (${\Delta}E^*$) of the resin materials ranged between 1.31 and 15.28 after 30 day of immersion in the staining solutions. Dyract XP in Coca cola ($15.28{\pm}2.61$) and black tea ($12.22{\pm}2.73$) showed the highest mean ${\Delta}E^*$ value after 30 day, followed by Filtek Ultimate Universal Restorative ($5.99{\pm}1.25$) and Filtek Ultimate Flowable ($4.71{\pm}1.40$) in black tea (p < 0.05). Conclusions: The compomers displayed unacceptable color changes at the end of 30 day in all beverages. Among resin composites, the silorane based composite exhibited relatively good color stability than the others. Filtek Ultimate Universal Restorative and Filtek Flowable showed similar color changes in all beverages.

  • Recently, functional foods and bioactive components in foods have drawn the attention and interest of food scientists, nutritionists, health professionals, and general consumers. Bioactive whey protein is a highly concentrated milk serum isolate or concentrate, which is high in protein (80~90% protein by weight), carbohydrate- and sugar-free, and nonfat or very low in fat. Bioactive whey protein enhances both healthy and deficient immune systems. In general, ultrafiltered whey protein contains various whey protein concentrate peptides, which could be used for manufacturing probiotics added to health beverages. Hence, the objective of this paper was to review the published literature on research of new functionally improved health beverages using various bioactive components extracted from milk and dairy products.

Fluoride Intake by the Duplicate-Diet Technique and Urinary Excretion in Korean Children Aged 3-6 Years

  • This study aimed to determine the fluoride intakes in 120 preschool children aged 3 to 6 residing in Jumunjin (community water fluoridation area) and Gangneung (non-fluoridation area). The parents were asked to collect 24-hour urine samples and to duplicate the samples of all the diets that their children ingested in the day of urine collection. The acid-diffusible fluoride in the food and non-carbonate beverages were isolated by the acid-diffusion technique and then measured with a fluoride electrode. The fluoride in carbonate beverages, drinking waters and urine samples were measured directly with a fluoride electrode. The geometric mean (geometric standard deviation) of daily fluoride intakes from all kinds of diet was 5.99 (2.27) $\mu$g/kg/day in the children in Gangneung and that of the children in Jumunjin was 18.36 (2.69). The amount of fluoride intake by food and drinking water in fluoridation area were significantly larger than that in non-fluoridation area but the statistical difference of fluoride intake by beverages between two areas was not observed. The GMs (GSDs) of daily fluoride excretion by urine of children in non-fluoridation area and in fluoridation area were 8.39 (1.73) and 18.62 (1.77) $\mu$g/kg/day, respectively. The correlation between fluoride intake from diet excluding beverage and urinary excretion was statistically significant. It is concluded that the amount of fluoride intake of children living in fluoridation area did not exceed the upper intake level to avoid the risk of dental fluorosis (2.2 mg/day in 4- to 8-year-olds) and urinary excretion of fluoride was good indicator of fluoride intake from diets.

영양강조표시제품 중 비타민 C 함량 조사 (A Study on Vitamin C Content of Nutrition Emphasized Products)

  • Objectives: Vitamin C has various functions such as antioxidative effect and supporting absorption of iron (Fe). Aim of this present study was to provide vitamin C nutrition information and to briefly evaluate absorption interaction of vitamin C and Fe content of vitamin C emphasized products. Methods: Vitamin C emphasized foods including beverages, cereal, snacks, chocolate products, other cocoa products, and sugary products were examined by HPLC. Fe contents in samples after dry-ashing were examined by ICP. Results: Vitamin C content ranges in various products tested were the following: beverages (n=11) $20.15{\pm}0.08{\sim}845.41{\pm}6.07mg$, cereal (n=11) $52.50{\pm}0.23{\sim}262.50{\pm}0.07mg$, snacks (n=1) $50.00{\pm}0.25mg$, chocolate products (n=1) $311.73{\pm}2.44mg$, other cocoa products (n=1) $311.73{\pm}2.44mg$, other sugary products (n=2) $52.50{\pm}0.23{\sim}262.50{\pm}0.07mg$. Vitamin C (n=27) analysis values ranged from 82 to 450% of the labeled value. Vitamin C content in vitamin C emphasized food (n=6) was estimated 7.7 times~56.6 times more than Fe content. Conclusions: Analyzed samples ranged more than 80% of the labeled value in vitamin C emphasized products, which complied with food labeling regulation. But, beverages (n=3), cereal (n=4), chocolate products (n=1) were 2 times more than the labeled value. To provide accurate nutrition information, food manufactures should supervise nutrition labeling and understand the interactions between nutrients. Also, consumer should decide about the adequate amount of nutrient intake by thoroughly checking nutrition labeling.

  • This study was designed to investigate the effects of sea tangle (Laminaria japonica) extract (Dasi-Ex group: dry base 4.0%) and fucoidan-added (Fuco-I, II, III group: fucoidan of 1.0%, 2.0%, 3.0% added to Dasi-Ex) beverages on the anti-stress action. ICR male mice (20$\pm$2g) were fed basic experimental diets and given free through water bottle filled with these beverages instead of water for 18 days including sociopsychological stress. Body weight gains were consistently lower in Dasi-Ex and Fuco-I,II,III groups compared with control group, expecting in a inhibitory effect of obesity. Dasi-Ex group resulted in a significant decrease of 25% in serum corticosterone (CS) secretion, while Fuco-I,IIand IIIgroups resulted in a marked decreases of 45~55% in serum CS secretion compared with control group. Noradrenaline (NA) secretions were significantly increased about 15% in Dasi-Ex group, and 20~22% in Fuco-I,II,III groups compared with control group. Significant differences in brain MHPG-SO4 levels of Dasi-Ex group could not be obtained, but Fuco-I,II,III groups resulted in a marked decreases of 20~25% in brain MHPG-SO4 ratio of brain, but Fuco-I,II and III groups resulted in a marked increases of 45~60% in NA/MHPG-SO4 ratio of brain compared with control group. These results suggest that fucoidan beverage may play a effective role in a ridding of the sociopsychological stress by pivotal anti-stress effect of fucoidan.

건강음료로서의 자작나무 수액의 유출량에 미치는 영향인자 (Factors Affecting on Sap Flows of Birch Trees, Betula platyphylla as a Healthy Beverages)

  • Lately public interest in tree saps of maple and birch trees stimulated to increase demands for sap drink as a natural medical beverage. In order to understand factors affecting tree sap flows, birch species, particularly Betula platyphylla in Mt.Sobaek area, were monitored for daily sap flows according to factors, such as DBH, tapping hole sizes and direction of hole drilling on the trunks. The chemical constituents of saps were also analyzed. The sap flow initiated from the end of March and finished at the end of April. The flow maxima appeared from April 14th to April 26th. Total amounts of the sap flow obtained from birch tree were over 1,800 ml per day per one tree. Sap flows were increased with increasing DBH and tree age. Six milimeter drilled hole resulted in the highest sap flows. Sap flows increased with increases of diameter and height of the trees. Hole drilling to downward side(south-facing) of tree produced almost doubled sap flows than that of upward one(north-facing), while rightside drilling produced same amounts of saps to that of leftside one. Six mm drilling gave the best results not only in maximum flows but also effective hole occluding rates. The saps have in the range of 4.5 to 5.6 pH and l.0 - 2.0% of saccharinity. Sucrose, glucose, fructose and high mineral contents were found in the saps of birch tree. The tree saps could be utilized not only medicinal drink, but also one of the healthy beverages.

한국 전통음료에 관한 문헌적 고찰 -I. 전통음료의 종류와 제조방법- (Literature Review on the Korean Traditional Non-alcoholic Beverages -I. Types and Processing Methods-)

  • 우리나라 전통 음청류에 관한 역사적 배경을 고찰하고 8세기부터 1940년대까지의 기록으로부터 주류를 제외한 전통음료의 종류와 제조방법을 조사하였다. 옛 문헌에 기술된 음청류는 모두 70여가지로 집계되었으며 이들을 제조방법과 품질특성에 따라 순다류, 유사다류, 탕류, 장류, 숙수류, 미음류, 미식류, 식혜류, 수정과류, 화채류의 10가지로 분류하였다. 옛 문헌에서는 장(漿), 탕(湯), 청(淸), 다(茶)사이에 명확한 구분을 하고 있지 않았다. 밥을 유산균 발효시켜 물로 회석하여 만든 음료인 장(漿)은 신라, 고려시대에는 보편화된 음료로 보이나 오늘날에는 완전히 잊혀진 것으로 판단된다. 그 외의 음료는 18세기에 기술된 제조방법과 오늘의 제조방법 사이에 큰 차이를 보이지 않고 있다.

Carbohydrate-electrolyte drinks exhibit risks for human enamel surface loss

  • Objectives: The aim of this investigation was to give insights into the impact of carbohydrate-electrolyte drinks on the likely capacity of enamel surface dissolution and the influence of human saliva exposure as a biological protective factor. Materials and Methods: The pH, titratable acidity (TA) to pH 7.0, and buffer capacity (${\beta}$) of common beverages ingested by patients under physical activity were analyzed. Then, we randomly distributed 50 specimens of human enamel into 5 groups. Processed and natural coconut water served as controls for testing three carbohydrate-electrolyte drinks. In all specimens, we measured surface microhardness (Knoop hardness numbers) and enamel loss (profilometry, ${\mu}m$) for baseline and after simulated intake cycling exposure model. We also prepared areas of specimens to be exposed to human saliva overnight prior to the simulated intake cycling exposure. The cycles were performed by alternated immersions in beverages and artificial saliva. ANOVA two-way and Tukey HDS tests were used. Results: The range of pH, TA, and ${\beta}$ were 2.85 - 4.81, 8.33 - 46.66 mM/L and 3.48 - $10.25mM/L{\times}pH$, respectively. The highest capacity of enamel surface dissolution was found for commercially available sports drinks for all variables. Single time human saliva exposure failed to significantly promote protective effect for the acidic attack of beverages. Conclusions: In this study, carbohydrate-electrolyte drinks usually consumed during endurance training may have a greater capacity of dissolution of enamel surface depending on their physicochemical proprieties associated with pH and titratable acidity.
