Taste Compounds of Salted and Fermented Big Eyed Herring and Slimy (밴댕이 및 주둥치젓의 정미성분(呈味成分))

  • Fermented big eyed herring. Harengula zunasi, and slimy, Leiognathus nuchalis, were widely used and contributed in diet of people in southern coast of Korea. In this paper, in order to elucidate the taste compounds of fermented big eyed herring and slimy, the nucleotides and their related compounds, free amino acids, TMAO, betaine, total creatinine, and minerals were analyzed. In fermented big eyed herring, lysine, alanine, leucine, isoleucine and valine were dominant holding 88.6% of the total free amino acids while alanine, leucine, isoleucine and lysine in fermented slimy were dominant holding 84.4% of total free amino acids. In the nulceotide and their related compounds, hypoxanthine was the major component in both samples. The contents of betaine, TMA and total creatinine were 99.7mg%, 24.2mg% and 432.8mg% in fermented big eyed herring, 107.6mg%, 19.5mg% and 258.8mg% in fermented slimy, while the contents of TMAO appeared trace in both samples. In the minerals of both samples Na and Ca were dominant holding 37,471-45,100.8ppm, 14,117.1-19,948.1ppm, respectively. From the omission test and chemical analysis, it is concluded that the major taste compounds of fermented big eyed herring and slimy were amino acids such as alanine, lysine, leucine and isoleucine. Minerals, nucleotides and their related compounds, betaine and total creatinine acted as an auxiliary role in taste of both fermented samples.

A Case Study of Untact Lecture on Albert Camus' La Peste using Big Data (빅데이터를 활용한 『페스트』(알베르 카뮈) 비대면 문학 강의 운영 사례 연구)

  • This is a case study on the use of Albert Camus' La Peste, which has gained its popularity in today's generation of post-COVID as well as the use of big data analysis tools for major and elective classes. First, we asked students majoring in French to compare the use of vocabulary and the number of appearances for characters using big data analysis, for about 400 pages of the original text. As a result, we were able to confirm a similar relationship between Camus' Absurdism and the vocabulary used within La Peste, in addition to noting the heavy frequency of resistant characters. Students in elective classes were asked to read the literature in a Korean-translated version to determine the frequency of vocabulary and characters' appearances. Students were able to strongly relate to La Peste due to its commonality between COVID and the plague in the literature. We also received high levels of class satisfaction regarding the use of big data analysis tools. The students showed a positive response both towards choosing La Peste as the work of literature and using big data, the main tool in the Fourth Industrial Evolution. We were able to identify good results even in a non-contact environment, as long as the literature does not rely on traditional methods but rather lectures to reflect current situations.

Housework and Care in the Era of the 4th Industrial Revolution through Big Data: Changes in the Aspects of Household Service based on the Platform (빅데이터로 살펴본 4차 산업혁명 시대의 가사노동과 돌봄: 플랫폼을 통한 가사서비스 양상 변화)

  • The 4th industrial revolution came deep into family life and changed the way of housework and care. The change in the family caused by the technological change of the 4th industrial revolution is remarkable in terms of socialization of housework. In this study, the socialization of housework, which is accelerating in the era of the 4th industrial revolution, was examined focusing on the change in the aspect of "household service" through the "platform". Since 2015, when technological changes in the 4th industrial revolution began to decline, related newspaper articles were extracted for daily and economic newspapers nationwide and analyzed big data. The results of big data analysis show that the platform economy using the 4th industrial revolution technology is rapidly spreading the socialization of housework not only at the business level but also at the public policy level. It has been confirmed that support for household services through the platform is growing into a new business area of companies, and at the public policy level, it is being treated as an important policy task in supporting work-family balance or responding to infectious diseases. This study is meaningful in that it provided an opportunity to reflect on the roles and tasks of the family, market, and state for housework and care in the future through changes in housework and care caused by the 4th industrial revolution technology.

  • As global interests in the 4th Industrial Revolution have recently increased, it becomes critical for the construction industry to pro-actively cope with it. For effective actions, the construction industry needs to make active use of 4th Industrial Revolution technologies based on the up-to-date understanding of the trends of construction technology development employing the 4th Industrial Revolution technologies. The objective of the study is to investigate and identify key trends of ICT construction technology development over the last ten years based on Big Data Analytics. The study identifies eleven key trends and discusses that ICT construction technology development has not been as active as expected and software technologies have been less developed compared to hardware technologies.

  • In this study, the influence of sub-factors of Big Five personality (extraversion, agreeableness, conscientiousness, neuroticism, openness to experience) to job satisfaction and turnover intention, and mediating effect of job satisfaction between Big Five personality and turnover intention were empirically analysed. Also the relationship between job satisfaction and turnover intention was investigated. The sample of this study were customer-contact employees of restaurant among Youngnam province. 243 questionnaires were used for the empirical analyses. According to the empirical analysis results, openness to experience and conscientiousness respectively had positive influences to job satisfaction and turnover intention. Also neuroticism gave negative influence to turnover intention. Another research finding of this study was that mediating effect of job satisfaction existed in the causal relationship of 'openness to experience' and conscientiousness to turnover intention. Managerial implications of the research findings are that restaurant managers are recommended to select employees of having much of conscientiousness and 'openness to experience', and to employ those of having much of agreeableness. In the field of restaurant industry, training is very important for employees to foster these personalities, because this industry does not have environment of hiring employees of having much of these personalities. Also training can be applied to employees of having high neuroticism for minimizing their turnover intention.

  • This paper proposed an accident prediction model in order to prevent accidents in mountain areas using a big data analysis. Data of accidents in mountain areas are shown as graphs. We have analyzed cases: the number of accidents per year, day of week, time of day to find patterns of the negligent accident in mountain areas. The proposed prediction model consists of weighted variables of the accident in mountain through visualized big data analysis. The model of danger index performance is demonstrated by showing accident-prone areas with weighted variables.

  • 4차산업 혁명의 여파로 국내에서는 다양한 분야에 인공지능과 빅데이터 기술을 활용하여 이전에 시행 중인 다양한 서비스 분야에 기술적 접목과 보완을 시도하고 있다. 특히 금융권에서 자금을 빌린 기업들을 대상으로 여신 안정성을 확보하고 선제적인 대응을 위해 온라인 뉴스기사들과 SNS 데이터 등을 이용하여 부실가능성을 예측하고 실제 업무에 도입하려는 시도들이 국내 주요 은행들을 중심으로 활발히 진행 중이다. 우리는 국내의 국책은행에서 수행한 비정형 데이터 기반의 기업의 부실징후 예측 시스템 개발 과정에서 시도된 다양한 분석 방법과 결과 그리고 과정 중에 발생한 문제점들에 관해 기술하고 관련 이슈들에 관하여 다룬다. 결과적으로 본 논문은 레이블이 없는 대량의 기사들에 레이블을 달기 위한 자동 태거(tagger) 개발과 뉴스 기사 예측 결과로부터 부실 가능성을 예측하기 위한 모델 및 성능 면에서 기사 예측 정확도 92%(AUC 0.96) 및 부실 가능성 기업 예측에서도 정형 데이터 분석결과에 견줄만한 성과를 이루었고 이에 관해 보고한다.

Understanding the Food Hygiene of Cruise through the Big Data Analytics using the Web Crawling and Text Mining

  • The objective of this study was to acquire a general and text-based awareness and recognition of cruise food hygiene through big data analytics. For the purpose, this study collected data with conducting the keyword "food hygiene, cruise" on the web pages and news on Google, during October 1st, 2015 to October 1st, 2017 (two years). The data collection was processed by SCTM which is a data collecting and processing program and eventually, 899 kb, approximately 20,000 words were collected. For the data analysis, UCINET 6.0 packaged with visualization tool-Netdraw was utilized. As a result of the data analysis, the words such as jobs, news, showed the high frequency while the results of centrality (Freeman's degree centrality and Eigenvector centrality) and proximity indicated the distinct rank with the frequency. Meanwhile, as for the result of CONCOR analysis, 4 segmentations were created as "food hygiene group", "person group", "location related group" and "brand group". The diagnosis of this study for the food hygiene in cruise industry through big data is expected to provide instrumental implications both for academia research and empirical application.

  • This study explains how to solve engineering problems easily and efficiently by using cloud based big data platform. To do this, we propose a cloud based big data analysis platform. The application helps users easily create models for data analysis using cloud based big data analysis platform. Analytical models modeled using components are analyzed through an analysis engine. Our platform include pre-processing, analysis, and visualization algorithms required for data analysis. Finally, we show an application of effluent concentration in a sewage treatment process.

The Effect of Big Toe Flexors on Single Limb Balan (엄지발가락 굽힘근의 제한이 한발서기 균형에 미치는 영향)

  • Purpose: The purpose of this study was to examine changes of postural sway between the normal group and treatment group of same people through COP movements. Methods: Fifty men with no history of sensory, neurological and orthopedic disorders were participated in this study. Participants were tested on single limb balance during 30 seconds on EMED system with bared foot. Each of them performed two methods and 5 trials totally each method: (1) non-treated group (2) treated group(with big toe flexion limitation). Data on the moving length, average velocity, instantaneous maximum velocity, mediolateral(x axis) maximum velocity, and anteroposterior(y axis) maximum velocity of COP were measured in single limb standing position. Results: The moving length and average velocity of COP were significant difference between normal and treatment group(p<0.05). On correlation of parameters, the faster average velocity of COP, the higher moving length, instantaneous maximum velocity, mediolateral maximum velocity, and anteroposterior maximum velocity of COP increase. The more Instantaneous maximum velocity of COP, the faster is anteroposterior maximum velocity of COP. Conclusions: Limitation of big toe flexors function affected single limb balance of the normal.
