Brewing Method and Composition of Traditional Kochuzang (Red Pepper Paste) in Junrabook-do Area (전라북도지방(全羅北道地方) 전통(傳統)고추장의 제법조사(製法調査)와 성분(成分))

  • Brewing method and quality of 15 samples of traditional Kochuzang in Junrabook-do area were investigated. Average combination ratio of glutinous rice: Meju (soybean Koji): red pepper powder was 2 : 0.7 : 1.1. In order to improve the taste of Kochuzang, some amount of natural soysauce was added in the Kochuzang at early stage of fermentation. Average content of sodium chloride was 7.32%; amino nitrogen, 123.3%; total sugar, 31.9%; reducing sugar, 19.4%; ethyl alcohol, 1.13% and the activity of acid protease was 0.07; liquefying amylase, 9.67 and saccharogenic amylase was 15.82. Five samples were selected as excellent Kochuzang through sensory evaluation. These samples were similarly strong in hot and sweet taste with alcoholic flavor, glossy surface and brownish red color.

  • One of the most effective way to improve cache performance is to exploit both temporal and spatial locality given by any program executive characteristics. In this paper we present a high performance and low power cache structure with a bank selection mechanism that enhances exploitation of spatial and temporal locality. The proposed cache system consists of two parts, i.e., a main direct-mapped cache with a small block size and a fully associative buffer with a large block size as a multiple of the small block size. Especially, the main direct-mapped cache is constructed as two banks for low power consumption and stores a small block which is selected from fully associative buffer by the proposed bank selection algorithm. By using the bank selection algorithm and three state bits, We selectively extend the lifetime of those small blocks with high temporal locality by storing them in the main direct-mapped caches. This approach effectively reduces conflict misses and cache pollution at the same time. According to the simulation results, the average miss ratio, compared with the Victim and STAS caches with the same size, is improved by about 23% and 32% for Mibench applications respectively. The average memory access time is reduced by about 14% and 18% compared with the he victim and STAS caches respectively. It is also shown that energy consumption of the proposed cache is around 10% lower than other cache systems that we examine.

Dietary Behaviors Associated with Health Perception of Korean Adolescents from Multicultural Families: based on data from the 2017 ~ 2019 Korea Youth Risk Behavior Surveys (한국 다문화가족 청소년의 건강인식과 관련한 식행동 분석: 2017 ~ 2019 청소년건강행태조사 자료를 바탕으로)

  • Objectives: This study examined the association between dietary behaviors and perceived health status among Korean adolescents from multicultural families. Methods: This cross-sectional study included 2,459 Korean adolescents from multicultural families (aged 13 ~ 18 years) who participated in the 2017 ~ 2019 Korea Youth Risk Behavior Surveys. Information on the sociodemographic variables, dietary behaviors, and lifestyle variables was self-reported using a web-based questionnaire. The dietary behaviors analyzed in this study were the breakfast and food intake frequencies, including fruit, vegetable, milk, fast food, carbonated drink, sweet drink, and high caffeine/energy drinks. The adolescents' health perception was self-rated as healthy, average, or unhealthy. The dietary behaviors associated with health perception were examined using a multiple logistic regression after adjusting for the confounding variables. Results: In this study population, 7.6% of adolescents perceived their health status as unhealthy, and 25.4% perceived it as average. The adolescents who were girls, middle school students, and in households with a low economic status showed significantly higher percentages of poor health perception (P-values < 0.001). Skipping breakfast was significantly associated with a negative health perception. Compared to the adolescents who consumed fruits every day, those who did not consume fruits during the previous week showed a higher odd ratio (OR) for a negative health perception [OR = 2.29, 95% confidence interval (CI) = 1.32-3.97]. The adolescents who frequently consumed carbonated drinks (≥ 5 times/week) perceived their health status as unhealthy relative to those who did not consume carbonated drinks (OR = 2.15, 95% CI = 1.25-3.71). Skipping breakfast was significantly associated with an increased OR for a negative health perception in girls but not in boys. Compared to adolescents with a normal weight, those with overweight/obesity (OR = 1.75, 95% CI = 1.21-2.52) and underweight (OR = 2.19, 95% CI = 1.25-3.82) showed higher ORs for negative health perception. Positive associations of overweight/obesity and underweight with negative health perception were observed in boys but not in girls. Conclusions: Dietary behaviors and weight status were associated with the health perception in Korean adolescents from multicultural families. These findings suggest that nutrition interventions on breakfast intake and healthy food choices for this population might effectively improve their weight and perceived health status.

Dietary effects of protected fat, glycerol, and soybean meal on performance, physiological parameters, carcass characteristics, and behavioral measurements of late-fattening Hanwoo steers under heat stress conditions

  • Objective: This study aimed to determine the effects of increasing energy and protein levels in diets by including protected fat (PF), glycerol (GL), and soybean meal (SBM) on growth performance, physiological parameters, carcass characteristics, and behavioral measurements of late-fattening Hanwoo steers under heat stress conditions. Methods: Thirty-six steers (initial body weight, 724.9±58.3 kg; age, 25.5±0.4 month) were assigned into control (total digestible nutrient [TDN] 76%, crude protein [CP] 15%), PF (TDN 83.6%, CP 15%), PF+GL (TDN 83.6%, CP 15%) and PF+GL+SBM (TDN 83.6%, CP 16.5%) by randomized complete block design for a total of 16 weeks with division of 4-week periods. The average temperature-humidity index was 87.0 (1st period; severe), 82.8 (2nd; moderate), 71.4 (3rd; comfort), and 68.1 (4th; comfort). Results: The dry matter intake (DMI) showed no treatments differences during the whole experiment. However, DMI in 1st and 2nd period decreased by approximately 30% and 10% compared to 4th period, respectively. Higher average daily gain and feed conversion ratio were noted for treatments compared to control at both 1st and 2nd period (p<0.05). There were no treatment effects on rectal temperature (RT), cortisol, and behaviors during the entire experiment. However, both RT and cortisol in 0, 1st and 2nd period were higher than those of 3rd and 4th period (p<0.05). Carcass yield and grade remained unaffected by increasing TDN and CP levels. Behavioral changes in the hot season (1st period) included reduced lying (43%), increased standing (48%), decreased walking (62%), and decreased eating (38%) (p<0.05), with an increase in drinking by 54%. Rumination during standing was 53% higher, while rumination during lying was about 33% lower compared to the post-hot season (3rd period) (p<0.05). Conclusion: Dietary supplementation of protected fat in late-fattening Hanwoo steers under heat stress had a positive effect on preventing a reduction in performance.

Effects of Rare Earth Supplementation on Growth Performance, Blood Immune-Related Cell Population, Meat Quality and Fecal Odor Emission Gases in Finishing Pigs (사료내 희토 첨가가 비육돈의 생산성, 혈액내 면역관련 세포수, 육질특성 및 분 중 악취방출 가스함량에 미치는 영향)

  • This study was conducted to evaluate effects of dietary rare earth on growth performance, blood immune- related cell population, meat quality and fecal odor emitting gases in finishing pigs. The total of sixty four (Landrace×Yorkshire×Duroc) pigs(65.42±1.16kg in average initial body weight) were used for feeding trial during 10 weeks of experimental period. Dietary treatments included 1) NC(antibiotic free diet), 2) PC (NC diet+6 weeks 44ppm of tylosin/ 4 weeks 22ppm of tylosin) 3) RE1 (NC diet + 100ppm of RE), 4) RE2 (NC diet+200ppm of RE). There were four dietary treatments with four replicate pens per treatment and four pigs per pen. During the overall periods, there were no significant differences in ADG(Average daily gain), ADFI (Average daily feed intake) and gain/feed ratio among treatments(P>0.05). Dry matter and nitrogen digestibility were higher in RE2 treatment group than other groups(P<0.05). Also, energy digestibility was higher in RE2 treatment group than PC and RE1 treatment groups(P<0.05). At the 6th week WBC(white blood cell) was significantly increased(P<0.05) in RE1 treatment group than NC and RE2 treatment groups. L* value of M. logissimus dorsi muscle color was significantly increased(P<0.05) in rare earth supplemented groups compared to NC treatment group(P<0.05). However, a* value was lower in RE1 treatment group than PC treatment group (P<0.05). In fatty acid composition of Intramuscular fat, total MUFA was significantly higher in RE2 treatment group than other groups(P<0.05). Also, total UFA was significantly increased in RE2 treatment group compared with NC and PC treatment groups(P<0.05). In fatty acid composition of back fats, total SFA of rare earth supplemented groups were lower than in PC treatment group(P<0.05). UFA:SFA ratio was significantly higher in rare earth supplemented groups than PC treatment group(P<0.05). In fecal odor emission, NH3 was significantly decreased(P<0.05) in rare earth supplemented groups compared to NC and PC treatment groups. In conclusion, the results of the experiment was affected by rare earth supplementation on digestibilities, meat quality, fatty acid and fecal odor emission gases in finishing pigs.

A Study on the Riboflavin Intake and EGRAC of Young Healthy Korean Women (한국인 젊은 여성의 리보플라빈 섭취상태와 EGRAC에 관한 연구)

  • This study was conducted to determine riboflavin status of young healthy Korean women. Eight subjects consumed general Korean diet for 3 weeks. Riboflavin intake was measured during the period and Erythrocyte Glutathione Reductase Activity coefficient (EGRAC) was analyzed at the end of experimental period. The subjects who showed EGRAC value above 1.20 were supplemented 6 mg riboflavin per day for 1 week. The average age of subjects was 22.1 years old, height was 154.4cm, weight was 49.2kg, chest circumference was 81.2cm, the sum of skinfold thickness of 3 parts was 79.5mm and Body Mass Index(BMI) was 20.6. Hemoglobin concentration was 13.0g/100ml, hematocrit value was 44.0% A/G ratio was 1.4, and the activity of sGOT, sGPT, alkaline phosphatase was 14.3, 11.0 and 6.5, respectively. The average daily intake of energy, protein and riboflavin was 1745kcal, 56.1g and 1.14mg, respectively. The mjor source of riboflavin were milk, egg, Korean cabbage, rice, beef and so on. The average EGRAC value was 1.2748. percentages of subjects who showed EGRAC value above 1.20 was 65.2%. After oral administration of 6mg riboflavin, the EGRAC value of all these subjects was returned to normal range. Riboflavin intake was correlated positively with energy as well as protein intake, and correlated negatively with EGRAC value. However, riboflavin intake per 1,000kcal was not correlated with EGRAC value.

A Case Study on the Estimation of the Resource Recovery Potentials by Landfill Mining (매립지 정비에 의한 순환이용 가능량 산정 사례 연구)

  • As many local governments have faced increasing conflicts on landfill use and the time of end use, it is difficult to provide an alternative landfill or conclude a consensus of lifespan extension for the existing landfill site. Therefore, the purpose of this study is to contribute improving of the landfill capacity by calculating the resource recovery potentials of landfilled waste previously and in the future by landfill mining. For this, rate of volume increase, weight ratio, and apparent density were adopted as major parameters and their values were calculated through previous cases. The rate of volume increase was calculated to 1.42 by averaging previous cases of three areas. The average weight ratio of soil matter was 45.6% by calculating for the three areas. For the combustible waste and incombustible waste, statistical data can be used. The apparent densities were divided by combustible waste, incombustible waste, and soil matter using an average of two areas value, i.e., $0.35ton/m^3$, $1.40ton/m^3$ and $1.58ton/m^3$. We analyzed the resource recovery potential of Cheongju landfill by using the estimated parameters. The additional landfill capacity was 45% of the existing landfill capacity by recovering landfilled waste by landfill mining. In addition, it is analyzed that the lifespan is extended to 20 years, if the combustible waste of new inputting waste is sorted and combusted for energy recovery and incineration ash, incombustible waste, and soil matter are only reclaimed into the existing Cheongju landfill. It is expected that the methodology and parameters of this study will be used as basic data when resource recovery potential is analyzed for another case study of landfill mining.

A Study of the Anthropometric Indices and Eating Habits of Female College Students

  • A study was conducted to investigate the anthropometric indices, fat distribution, eating habits and levels of daily physical activity based on the body mass index (BMI ; kg/㎡) of 180 female college students. This stady was based on survey 2001 using a questionnaire. The results are as follow ; The mean age, height, weight and BMI were 20.41 ${\pm}$ 1.82 years, 161.86 ${\pm}$ 4.51cm, 53.49 ${\pm}$ 7.02kg, and 20.43 ${\pm}$ 2.65kg/㎡, respectively. The group with BMI of under 20 (the lean group) comprised 48.9% : the group with BMI of 20 to 25 (the normal group) comprised 44.4% and the group with BMI of over 25 (the obese group) comprised 6.7% of the subjects. Even though the lean and the normal groups were determined according to BMI. 12.5% of the lean group and 31.3% of the normal group had more than 25% body fat. Of the students, 11.5% of the lean group, 25.0% of the normal group and 58.3% of the obese group had of more than 0.8 waist/Hip Ratio (WHR). The medical problems suffered by the subjects were constipation (24.4%), gastroenteritis (20.6%), anemia(15.0%) and edema(13.3%), which was a result of their eating habits. Out of all the subjects, 27.2% ingested their meals irregularly, 74.4% skipped breakfast, and 92.4% of the lean group, 89.2% of the normal group and 81.8% of the obese group ingested snacks on a daily basis. Their favorite types of snacks were cookies breads and cakes (33.7%), spicy sliced rice cakes pork sausage and boiled fish cakes (18.5%), fruits (15.2%), juices and sodas (13.5%) and hamburgers and pizzas (3.9%). Their consumption of high calorie and processed foods was high, Of the subjects, 38.9% ate out daily. 45.1% had tried weight loss. Those with large upper bodies comprised 11.5%, large intermediate bodies 18.5% and large lower bodies 69.0%. Most of the students were dissatisfied with their body snaps. Of the subjects, 95.1% exercised irregularly. Daily physical activity tended to increase significantly with an increase in BMI : the lean group's average energy consumption was 1509.40㎉ the normal group's was 1792.21㎉ and the obese group's was 2334.63㎉, which were below the recommended value. This study suggests that the maintenance of an ideal weight, the improvement of eating habits and adequate exercise are needed for female college students to improve their health and nutritional status. A Evaluation Study on Nutrient Intake Status and Diet Quality of Middle and Old Aged Vegetarian Women in Korea (채식을 하는 중$\cdot$노년기 여성의 영양소 섭취 상태와 식사의 질 평가)

  • The purpose of this study was to evaluate on nutrient intake status and diet quality of middle and old aged vegetarian women in Korea, The research group was composed of vegetarian women (n=91), all of them were Seven Day Adventists, who had been on vegetarian diets, over 20 yrs. Their anthropometric measurements, dietary intakes, and diet quality indices were compared to omnivores (n=122). The average age of vegetarians and omnivores were 61.8 yrs and 60.3 yrs, respectively. The mean daily energy intakes of vegetarians and omnivores were 1428.8 kcal and 1424.5 kcal, respectively and there was no significant difference. The vegetarians consumed significantly lower intakes of protein (p < 0.05), zinc (p < 0.001) and vitamin $B_{2}$ (p < 0.05) compared to omnivores. In the diet quality, zinc and vitamin $B_{2}$ nutrient adequacy ratio (NAR) of vegetarians were significantly lower than those of omnivores. Mean adequacy ratio (MAR) of vegetarians and omnivores were 0.80 and 0.77, respectively and there was no significant difference. The KDDS (Korean's Dietary Diversity Score) of vegetarians and omnivores were 3.7 and 4.0, respectively, and there was significant difference (p < 0.01). The KDQI (Korean's Diet Quality Index) of vegetarians (1.5) was significantly lower than that (2.1) of omnivores (p < 0.001). In conclusion, vegetarian women have low intake status of protein, zinc and vitamin $B_{2}$, and partly low diet quality. Therefore it was needed that well planed diets to replace the nutrients supplied from excluded food groups in middle and old aged vegetarian women. A Study on the Nutrient Intake and Food Habits of College Students in Chung-Nam Area (충남 일부지역 대학생의 식이섭취 및 식습관 실태조사)

  • The study examined nutritional conditions to enhance the quality of meals and to provide the basic data for more proper dietary life of college students. Our analysis was based on the body measurement, food intake and food habits for 200 students of Chung-Nam. The nutrient intake was examined using the 24-hour recall method. The data were analyzed by the Computer Aided Nutritional Analysis Program and then the diet quality was estimated using the Mean Adequacy Ratio(MAR), the Nutrient Adequacy Ratio(NAR) and the Index of Nutritional Quality(INQ). The average weight and height of male students were $67.57{\pm}8.66kg,\;174.64{\pm}5.87cm$, while those of female students were $53.46{\pm}6.86kg,\;159.10{\pm}4.19cm$, respectively. The total energy intake of the male students was $3221.71{\pm}200.39kcal$, while that of the female students was $1884.67{\pm}100.93kcal$. The male students are higher than female in % of RDA. The percentages of carbohydrate, protein and lipid for male students were $57.18{\pm}7.83%,\;15.15{\jpm}3.36%\;and\; 27.67{\pm}6.68%$, while those of female students were $58.77{\pm}7.68%,\;15.51{\pm}4.55%\;and\;25.72{\pm}6.20%$, respectively. There was no significant difference in calcium intakes for both groups, however they are less than the RDA. In terms of iron, the male students took $16.98{\pm}5.57mg$ and the female students took $11.35{\pm}2.68mg$, with significant difference (p<0.001). The male and female students showed sufficient intake of vitamins, with significant difference between two groups except for vitamin A. The mean MAR, an index of overall dietary quality, was significantly higher in the male students than female students(p<0.01). Male and female students enjoying two meals or more a day were 59%, and those having enough time for one meal or less a day were 36.5%. Male and female students having no breakfast were 39%. Male and female students having vegetables intake were 53.5%, and having milk or milk products every day were 29.5% of them. In conclusion, nutritional education is recommended to increase the calcium intake and fruit and vegetable consumption for dietary fiber, and to emphasize regularity of meal time.
