대두사포닌이 침투된 인공 인지질 생체유사막의 열에 의한 상변화에 관한 연구 (The Thermotropic Phase Behaviors of Artificial Phospholipid Liposomes Incorporated with Soyasaponin)

  • 인공 생체유사막을 인지질인 dimyristoyl phosphatidylcholine (DMPC)로 제조하여 인지질 막에 미치는 대두사포닌의 영향을 시차열량 분석계로 연구하였다. 대두사포닌이 침투되기 전, 후의 인지질막의 상그림을 얻어 상 전이시 엔탈피의 변화와 협동단위수를 상법에 따라 계산하였다. 대두사포닌이 침투된 인지질 막의 상그림은 순수 인지질 막의 상 그림에 비해 넓적하게 변하였으며 특이하게 상전이 온도를 낮추었다. 이것은 인지질막의 이중층에 침투된 대두사포닌이 인지질 이중층의 협동단위를 감소시킨 것으로 추정된다. 이러한 결과로 보아 대두사포닌은 인지질 막 이중층의 유동성에 중요한 영향을 미친다고 사료된다.

입원 노인의 연령별 영양불량 위험요인 (Risk Factors of Malnutrition by Age in Hospitalized Older Adults)

  • Purpose: Malnutrition affects all age groups, but older adults are particularly more vulnerable to nutritional deficiencies. This study evaluated the age-specific factors affecting malnutrition in hospitalized older adults. Methods: A retrospective study was conducted on inpatient elderly people who received artificial nutrition from 2010 to 2017. Data of demographics, diagnosis, type of nutrition therapy, number of comorbidity, fall risk assessment, Acute Physiologic Assessment and Chronic Health Evaluation (APACHE) score, and intensive care unit admission were collected. Malnutrition was defined as a body mass index (BMI) of less than 18.5 kg/m2. Patients were classified as the young-old (65~74 years old), the old-old (75~84 years old), or the oldest-old (85 years old or older). Results: A total of 7,130 older adults were included, and 4,028 patients were classified as the young-old, 2,506 into the old-old, and 596 into the oldest-old. Proportion of malnutrition was higher in the oldest-old compared to the other groups. In multivariate analysis, parenteral nutrition, alcohol, and high risk of falls were factors affecting malnutrition in all groups. Parenteral nutrition and alcohol in the young-old, high risk of falls in the old-old, and male sex in the oldest-old were the factors affecting malnutrition by the age group. Conclusion: Older age was the most significant factor affecting malnutrition. Specific strategies by age are needed to improve nutritional status in hospitalized older adults as influencing factors for malnutrition vary among different age groups.

  • Biotechnological researches in Central Asian Research Institute of Sericulture were developed since 1981 when laboratory of artificial diets for mulberry silk­worm was created. The researches were directed not only to creation of accessible artificial diets (AD) for off-season mass rearing of economical beneficial insect and for industrialization of sericulture but also to obtaining of easy reproducible source of animal proteins, carbohydrates, lipids, enzymes, enzymes inhibitors and other metabolites - bioresource for manufacture of oriental medicine preparations. Space experiments with silkworms became possible with use of AD. These experiments used mulberry silkworm as high effective board test organism with outstanding developmental, reproductive and transgenic properties having impor­tant significance in future of cosmonautics. Introduction to practice of bioprotective and ecologically pure method of drying and sterilizing of green cocoons and by-products of silk manufacture allows to increase efficiency of cocoons reeling technology as well as to preserve nativity of biological active substances in mulberry silkworm pupae that is unachievable by traditional methods of raw material processing. New spheres of application of two important silk proteins - fibroin and sericin in medicine, cosmetics, for bio- and nanotechnology are opening with use of biotechnological approaches. At present the achievements and experience of R & D in these fields are used in creation of modern pests biocontrol agents. Food Effect on the Diel Variations and Starvation of the Melania Snail Semisulcospira gottschei Using RNA/DNA Ratios

  • We investigated the nutritional status of the melania snail (Semisulcospira gottschei) using RNA/DNA ratios to evaluate the effect of feeding conditions (artificial versus natural) on the reaction times of the snails in a time course following starvation. In the short experiments (48 h), the RNA/DNA ratios of the artificial feeding groups were significantly higher than those of the natural groups. While two RNA/DNA ratio peaks were observed in the artificial food group during daytime, the natural food group showed a higher ratio at night. Under starvation conditions, the RNA content decreased whereas the DNA content was constant. The RNA/DNA ratios of the freshwater snail in both groups dramatically decreased after starvation and remained constant until the end of the experiment. We verified that the RNA/DNA ratio serves as an index of nutritional condition with respect to the effect of dietary differences. These results are important for understanding optimized aquaculture rearing conditions for this important commercial freshwater snail.

Selecting Optimal Algorithms for Stroke Prediction: Machine Learning-Based Approach

  • In this paper, we compare three models (logistic regression, Random Forest, and XGBoost) for predicting stroke occurrence using data from the Korea National Health and Nutrition Examination Survey (KNHANES). We evaluated these models using various metrics, focusing mainly on recall and F1 score to assess their performance. Initially, the logistic regression model showed a satisfactory recall score among the three models; however, it was excluded from further consideration because it did not meet the F1 score threshold, which was set at a minimum of 0.5. The F1 score is crucial as it considers both precision and recall, providing a balanced measure of a model's accuracy. Among the models that met the criteria, XGBoost showed the highest recall rate and showed excellent performance in stroke prediction. In particular, XGBoost shows strong performance not only in recall, but also in F1 score and AUC, so it should be considered the optimal algorithm for predicting stroke occurrence. This study determines that the performance of XGBoost is optimal in the field of stroke prediction.

  • Data mining is known useful in medical area when no availability of evidence favoring a particular treatment option is found. Huge volume of structured/unstructured data is collected by the healthcare field in order to find unknown information or knowledge for effective diagnosis and clinical decision making. The data of 5,179 records considered for analysis has been collected from Korean National Health and Nutrition Examination Survey(KHANES) during 2-years. Data splitting, referred as the training and test sets, was applied to predict to fit the model. We analyzed to predict chronic kidney disease (CKD) using data mining method such as naive Bayes, logistic regression, CART and artificial neural network(ANN). This result present to select significant features and data mining techniques for the lifestyle factors related CKD.

파프리카색소와 김치향 첨가 후 감마선 조사된 김치의 관능적 품질 개선 (Sensory Quality Improvement of Gamma-irradiated Kimchi after Addition of Paprika Oleoresin and Artificial Kimchi Flavor)

  • 본 연구에서는 고선량 감마선 조사에 의한 김치의 탈색, 이미 및 이취의 발생을 억제하고 품질을 개선하기 위해 파프리카 색소와 김치향을 첨가하였다. 첨가물의 최적 첨가량 결정을 위한 관능평가 결과, 파프리카 색소와 김치향의 최적 첨가량은 각각 0.2%로 결정되었다. 김치의 적색도와 capsanthin 함량은 25 kGy의 감마선 조사로 인해 감소하였으나 0.2%의 파프리카 색소를 첨가한 후 적색도와 capsanthin 함량은 증가하였고 $35^{\circ}C$, 30일의 저장기간 동안 적색도는 유지되었다. 또한 관능평가 결과로부터 파프리카 색소 및 김치향이 감마선 조사에 의한 김치의 관능적 품질 저하를 방지하는데 효과적임을 알 수 있었다. 따라서 파프리카색소, 김치향 첨가 및 고선량 감마선 조사의 병용처리는 멸균된 김치의 관능적 품질을 개선하기 위한 효과적인 방법으로 판단되었다.

초등학생의 식습관과 인공지능 푸드스캐너로 측정한 학교급식 섭취의 연관성 연구 (A Study on the Relationship between the Eating Habits of Elementary School Students and the School Meal Intake Measured by an Artificial Intelligence Food Scanner)

  • The lower elementary school grades are an important period in which eating habits are formed. We examined the relationship between eating habits and school meal intake in the lower grades of an elementary school in Seoul. The eating habits were investigated using the Nutrition Quotient (NQ) for children. The school meal intake rates and preferred menus were obtained by automatically scanning the plate before and after meals using an artificial intelligence food scanner. The average school meal intake rate for the 347 subjects was 68.5±12.2%, and the nutrient intakes through the school meals were 353.5±70.0 kcal of energy, 51.8±10.2 g of carbohydrates, 14.6±3.1 g of proteins, 10.3±2.3 g of fats, 87.0±20.0 mg of calcium, and 1.8±0.4 mg of iron. The preferred menus were rice, grilled food, and dairy products, and non-preferred menus were salad, beverages, and stewed food. The eating habits that showed a positive correlation with the school meal intake rate were 'Diverse side dishes (r=0.332, P<0.001)', 'Vegetable side dishes (r=0.166, P<0.01)', 'Kimchi side dish (r=0.230, P<0.001)' and 'Less TV watching and computer game time (r=0.105, P<0.05)'. The NQ score also showed a positive correlation with the rate of school meal intake (r=0.216, P<0.001). The balance score was positively correlated with fruit (r=0.192, P<0.001), and the diversity score had the highest positive correlation with Kimchi (r=0.362, P<0.001). The regularity score was positively correlated with fried food (r=0.114, P<0.05). In conclusion, it was found that elementary school students in the lower grades had a higher school meal intake rate when their eating habits included eating side dishes evenly, and consuming vegetable side dishes and Kimchi.

병아리의 장에서 분리한 Lactobacillus salivarius의 생균제로서 특성 (Probiotic Properties of Lactobacillus salivarius Isolated from Chicken Intestines)

  • For the isolation of probiotics which may be used for the human beings and animals, we have screened the microorganisms from chicken intestines which have acid and bile tolerance and the growth inhibition of pathogenic E. coli and Salmonella typhimurium. Among them, a strain which was identified as Lactobacillus salivarius had around 66% of survival after 2h incubation in the artificial gastric juice and 9% of survival after 24h incubation in the presence of 0.3% bile salts, and showed complete inhibition against both path ogenic E. coli and Salmonella typhimurium after 24 h coincubation. Its storage stability after lyophilization could be improved by adding polyvinylpyrrolidone.

생선 내장에서 분리한 Alteromonas putrefaciens KS-90에 대한 Eicosapentaenoic Acid 생산 (Eicosapentaenoic Acid Production of Allteromonas putrefacients KS-90 Isolated from Fish Intestines)

  • Marine baceteria of fish interstines were screened for high eicosapentaenoic acid(EPA) productivity. An isolated bacteria, KS-90, identified and designated as Allteromonus putrefaciens KS-90. A. putrefaciens KS-90 was found to be a rich source of EPA production and it was observed on incuibation at 4~12.5$^{\circ}C$ and pH 7.0. The production of EPA reached 18mg/g of dry cell weight when A. putrefaciens KS-90 was grown in the medium containing 1.0% pepton, 0.5% yeast extract, 0.025% meat extract and 2.0% glucose in 1/2 concentration of an artificial seawater, pH for 48 hr at $25^{\circ}C$. This value accounted for 24.7% of the total fatty acid in the extractable lipids.
