천연 염지제를 첨가한 오리훈제의 항산화 활성과 영양적 특성 (Antioxidant activities and nutritional characteristics of smoked duck marinated in natural curing agent)

  • Purpose: This study investigated the question of whether the addition of natural ingredients (pear fermented solution, celery powder, vitamin C) in curing agents may influence antioxidant activities and nutritional characteristics of smoked duck. Methods: Smoked duck samples with general or natural curing agent containing three additive ingredients were examined to determine total polyphenol contents, antioxidant activities, pH, TBARS, and food additives residue (nitrite ion, antioxidant, sodium glutamate). Results: Smoked duck with natural curing agent showed a higher level of total polyphenol content and antioxidant activities than smoked duck using general curing agent (p < 0.05). The pH and TBARS of smoked duck were significantly decreased by the addition of natural curing ingredients compared to those of smoked duck using general curing agent (p < 0.05). The residues of food additives were not detected in smoked duck using natural curing agent. Conclusion: Findings suggest that the addition of pear fermented solution, celery powder, and vitamin C in natural duck curing agent may improve the antioxidant activities and nutritional characteristics of smoked duck and provides health benefits.

폐타이어 분말을 활용한 리사이클 고무 매트의 합성 및 항산화성에 관한 연구 (A Study on Synthesis and Antioxidant Recycled Rubber Mat used Waste Tire Powder)

  • Antioxidant agent, 1,1,3-tris(2-methyl-4-hydroxy-5-tert-butylphenyl)butane were prepared and investigated the antioxidant activity on recycled rubber mat manufactured with waste tire powder. Mechanical properties of rubber mat are influenced by many factor such as compounding ingredients and state of cure, process of rubber, and fillers. Our study aim is to investigate influence of antioxidant activities on ozone cracking and the thermal aging time. In this work, the degradation of recycled rubber mat was studied and suggested mechanism to involve two-type of degradation, thermal aging and cracking both of which can be contained antioxidant or non-antioxidant agent.

식용대두유에 대한 Chelating agent의 항산화 효과 (Antioxidant Effect of some Chelating Agents on Soybean Oil)

  • 식용대두유의 산화방지를 위하여 항산화제로서 Chelating agents의 항산화효과를 mild한 조건(67ml $O_{2}/min$, $50^{\circ}C$)하에서 A.O.M.법으로 측정하였으며 기기분석법 (UV,IR,MMR)에 의한 측정의 가능여부를 시험한 결과 다음과 같다. 1. Chelating agents의 항산화 효과는 diphenic acid(109.3%), naphthoquinone(111.2%), pyremellitic acid(168.6%), Quinolinic acid(183.6%), naphthalic acid(921.2%) 순으로 증가하였으며, Control에 비하여 각각 9.3, 11.2, 68.6, 83.6, 821.2% 증가하였다. 2. Chelating agents는 항산화 효과를 나타냈으며, 철과 등을 첨가했을 경우에 현저하였다. 또 이들의 항산화 효과는 화합물의 관능기와 분자구조에 따라 다르며 diphenic acid, naphthoquinone 등에서 낮았다. 3. 본 실험과 같이 mild한 조건하에서 NMR 분석법을 이용하여 항산화 효과를 측정할 수 있었으나 UV와 IR은 적당치 않았다.

The Effect of Aspalatone, a New Antithrombotic Agent, on the Specific Activity of Antioxidant Enzyme in the Rat Blood

  • The antioxidant efficacy of aspalatone, a new antithrombotic agent, has been recognized in the neurotoxic model and in the cardiotoxic model in proliminary studies. We examined the specific activity of antiosidnat enzyme in the rat blood following administrations of aspirin, maltol, aspirin together with maltol, salicylmaltol (major metabolite of aspalatone) and aspalatone, respectively. Our assessment showed that salicylmaltol, maltol, aspalatone enhanced antiperoxidative activity. In addition, neither aspirin nor combination of aspirin and maltol, showed any significant effect on the activity of antioxidant enzyme. Because $H_{2}$$O_{2}$ accumulation may stimulate the thrombogenesis in blood, the result suggests that the induction of blood antiperoxidative activity produced by aspalatone may have beneficial effects on the thrombogenesis.

접골목 추출물에 의한 항산화 활성이 정상 간세포의 t-BHP 유발 산화스트레스에 미치는 영향 (Antioxidant Activity and Protective Effects of Extracts from Sambucus williamsii var. coreana on t-BHP Induced Oxidative Stress in Chang cells)

  • In the present study, antioxidant activity and protective effect of extracts from Sambucus williamsii var. coreana stems (SWC) were evaluated on tert-butyl hydroperoxide (t-BHP) induced oxidative stress in human liver (Chang) cells. Antioxidant activities of the SWC extracts were determined by various radical scavenging activities, such as DPPH, ferric reducing antioxidant power (FRAP), 2,2'-azinobis-(3-ethybenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity and oxygen radical absorbance capacity (ORAC) assay. SWC extracts showed strong antioxidant effect on various assay. To determine the hepatoprotective effects of SWC on t-BHP induced oxidative damage, cell viability was measured using MTT assay. Pretreatment of SWC extracts showed increasing cell viability, decreasing ROS and restoring mitochondria membrane potential on t-BHP induced oxidative stress in Chang cells. Our findings suggest that SWC extracts may be considered a potential agent for therapeutic protective effect from oxidative stress through its antioxidant activity.

Phytochemical Characterization of Vitex negundo Leaves: a Potent Antiandrogenic and Antioxidant Agent

  • This study was conducted to characterise phytochemicals and to explore the biological activities of Vitex negundo leaves. The washed, course powder of V. negundo leaves were extracted with different solvents of increasing polarity. All the extracts were characterized and biological activities were compared. The results revealed that the ethanolic and cold water extracts showed the presence of all phytochemicals studied except protein compared to other extracts. Further, the quantitative estimation of phytochemicals showed that the ethanolic extract had highest yield and maximum amount of total polyphenols, flavonoids, and alkaloids with the least amount of tannins compared to other extracts studied. Furthermore, the highest total polyphenol content corresponds with the potent biological activities. Indeed, in vitro antioxidant and antisteroidogenic activities were highest in the ethanolic extract than others. To conclude, the present study is the first to report the characterization and antiandrogenic property of V. negundo leaf extracts. The ethanolic extract of V. negundo leaves can be used as an antioxidant and antiandrogenic agent. Hence, it can be considered for the treatment of hyperandrogenic conditions like polycystic ovary syndrome, etc.

Alterations in the Activities of Antioxidant Enzymes of Human Dermal Microvascular Endothelial Cells Infected with Orientia tsutsugamushi

  • Changes in the Activities of several antioxidant enzymes in transformed human dermal microvascular endothelial Cells (HMEC-1) by infection with the obligate intracellular bacterium Orientia tsutsugamushi, the causative agent of scrub typhus, were investigated. The activities of glucose-6-phosphate dehydrogenase, catalase, and glutathione peroxidase were significantly decreased in HMEC-1 cells infected with Ο. tsutsugamushi. However, the level of superoxide dismutase increased slightly. Furthermore, Increased levels of intracellular peroxide was observed in HMEC-1 during infection. These results support the hypothesis that cells infected by this intracellular bacterium experience oxidant-mediated injury that may eventually contribute to cell death.

  • It has been known that quercetin is one of bioflavonid compounds and has anti-tumor effect by suppressing tumor growth in vitro and in vivo, including multiple biological effects by antioxidant and effective anti-inflammatory agent. The present study investigated whether quercetin can enhance antioxidant enzyme activity (glutathione proxidase: GPX, superoxide dismutase: SOD, catalase: CAT) and regulate the intracellular reactive oxygen intermediate levels on the B16F10 murine melanoma cells in the presensece of vitamin E, L-ascorbic acid (vitamin C) and reduced glutathione (GSH). 염산 독소루비신 주사액의 안정화 (Stabilization of Doxorubicin Hydrochloride in Injections)

  • Effects of various formulation factors using $L_8$ orthogonal arrays with the stability of doxorubicin hydrochloride injections(DHls) were investigated. The degradation of DHI may be occured by pH, temperature, light and metal ions. It is known that DHI should be stored on refrigerated condition of $4{\sim}8^{\circ}C$ because of its unstability on the room temperature. The employed factors were sodium chloride as isotonic solution, sodium bisulfite or sodium pyrosulfite as an antioxidant, disodium edetate as a chelating agent, methyl parahydroxybenzoate as a dissolution time shortening agent, and hydrochloric acid or citric acid as a pH adjusting agent at $22^{\circ}C$. From the results of $L_8$ orthogonal arrays, an optimal formula, including sodium chloride, disodium edetate, sodium bisulfite and hydrochloric acid, was obtained and the shelf-life of the formula was determined as 560 days approximately.

식물성 천연항균처리에 의한 저장 명태와 우렁쉥이 어육제품의 항균 및 항산화효과 (Antibacterial and Antioxidant Effect of Botanical Antimicrobial Agent-Citrus product on Pollack or Ascidian Fishmeat)

  • The antibiotic and antioxidant effect of botanical antimicrobial agent-citrus product(BAAC) prepared from citrus fruits were investigated by using fishmeats made from pollack and ascidian fillet. We inoculated Salmonella typhi into fishmeats that were aferwards treated with BAAC varying the concentration level (50-500ppm) including the control not-treated with BAAC. While specimens were stored at 5$^{\circ}C$ for designated period, we measured changes of total number of bacteria, peroxide level and textural properties. In addition, we performed organoleptic examination, focusing on appearance, texture and odor for fishmeats treated with BAAC and stored for designated period. For pollack and ascidian fishmeats, the initial total number of bacteria were 3.7${\times}$l0$^4$CFU/g and 7.5${\times}$l0$^4$CFU/g, respectively. After they were treated with 250 ppm of BAAC solution and stored for 5 days at 5$^{\circ}C$, the figures reduced to 2.5${\times}$l0CFU/g and 8.4${\times}$10CFU/g. No bacteria were found in fishmeats treated with above 500 ppm of BAAC, which remarkably proved antibiotic effect of BAAC solution. Furthermore, all the BAAC-treated specimens exhibited notable antioxidant effect. Fishmeats which were previously treated with 500 ppm of BAAC solution and stored for 30 days at 5$^{\circ}C$, showed the lower peroxide level of 16.5 meq/kg than 68.9 meq/kg in the control of pollack and 21.2 meq/kg than 80.7 meq/kg in the control of ascidian. In the results of texture and organoleptic evaluation we could also observe good effects of BAAC on maintaining the freshness of fisher products.
