Production of Mother Bulbs with High Quality Using Bulbils of Garlic (Allium sativum L.) (마늘의 주아(珠芽)를 이용(利用)한 우양종구생산(優良種球生産))

  • This study was carried out to determine the promising method for the production of mother bulbs using garlic bulbs at the experimental field of Ange high school, Eusung in Korea from 1996 to 1998. The bulbs and bulbils were taken from a local cultivar 'Eusung' garlic. The growth of bulbil and yield potential were compared with different harvesting times and cultivation methods of bulbil. The harvesting time of bulbils which were capable of producing the mother bulbs was ranged from 15 days to 30 days after the emergence of flower stalks. The best results based on the yield and number of bulbs were obtained from the bulbils sampled at the just before garlic harvesting, 30 days after flower-stalk emergence. The mulching with transparent polyethylene(PE) film in bulbil cultivation was more effective for the plant growth and bulb formation than that with black PE film. The PE mulching from 30 days after seeding of bulbils to 30 days (late-April) before bulb harvesting was the moot effective for the increase of bulb yield. In the cultivation of garlic bulbils, application of lime (150 kg/10a) and compost (3,000 kg/10a) without any chemical fertilizers produced more bulbs in comparison with the standard level of fertilizer (N - $P_2O_5$ - $K_2O$ - compost - lime = 24.8 - 8.0 - 19.2 - 3,000 - 150 kg/10a). It was determined that the involucre seeding and assemble seeding of bulbils was effective and labour-saving methods for the production of mother bulbs from garlic bulbils. Input of labour force for the involucre seeding was decreased up to 61% as compared with the conventional drill seeding of bulbils. Mean yield from the cultivation of bulbil-derived single cloves was remarkably increased up to 95% in comparison with that of the common cloves. The larger size of single clove produced more yields, and the optimum planting density of single clove was $20{\times}10cm$. The cloves differentiated directly from bulbil showed to have higher yield potential than that from common cloves.

Effects of Different Day / Night Temperature Regimes on Growth and Clove Development in Cool-type Garlic (Allium sativum L.) (한지형 마늘의 생육 및 인편 발달에 미치는 주야간 온도의 영향)

  • We investigated growth, clove development, and photosystem II activity in garlic (Allium sativum L.) grown under different day/night temperature regimes using Soil-Plant-Atmosphere - Research (SPAR) chambers to determine the optimum cultivation temperature and to assess the impact of temperature stress on garlic. In the early stages of growth, plant growth increased markedly with temperature. At harvest time, however, the pseudostem diameter decreased significantly under a relatively low day/night temperature range ($14/10-17/12^{\circ}C$), suggesting that these temperature conditions favor regular bulb growth. At harvest time, the bulb diameter and height were great at $14/10-23/18^{\circ}C$, whereas the bulb fresh weight and number of cloves per bulb were greatest at $17/12-20/15^{\circ}C$. However, the number of regularly developed cloves per bulb was highest at the relatively low temperature range of $14/10-17/12^{\circ}C$, as were the clove length and fresh weight. The photochemical efficiency ($F_v/F_m$) and potential photochemical efficiency ($F_v/F_o$) of photosystem II in the leaves of garlic plants were higher at $14/10-20/15^{\circ}C$ and lower at temperatures below $14/10^{\circ}C$ or above $20/15^{\circ}C$, implying that the $14/10-20/15^{\circ}C$ temperature range is favorable, whereas temperatures outside this range are stressful for garlic growth. Furthermore, at temperatures above $20/15^{\circ}C$, secondary growth of garlic, defined as lateral bud differentiation into secondary plants, continuous growth of the cloves of the primary plants, or the growth of bulbil buds into secondary plants, was enhanced. Therefore, to achieve commercial production of fresh scapes and bulbs of garlic, it may be better to grow garlic at relatively low temperature ranges of $14/10-17/12^{\circ}C$.

Physicochemical Properties and Antioxidant Activities of Garlic (Allium sativum L.) with Different Heat and Pressure Treatments (열처리 방법에 따른 마늘의 이화학적 특성과 항산화활성)

  • The objectives of this study was to compare the physicochemical properties and antioxidant activities of raw, microwave-treated, steam-treated and high temperature and pressure-treated garlic. The hardness and strength of microwave-treated and steam-treated garlic decreased compared to raw garlic. The hardness and softness increased but strength decreased in dried garlic-treated at $60^{\circ}C$ for 48 hr. The reducing sugar content of raw garlic was 0.041 g/100 g, and reducing sugar content of high temperature and pressure-treated garlic increased temperature. Total polyphenol content of microwave-treated and steam-treated decreased compared to raw garlic, while that of high temperature and pressure-treated increased with increasing temperature. $IC_{50}$ value of the electron donating ability of raw garlic was 3.07 mg/mL, and the highest $IC_{50}$ value was 2.16 mg/mL for microwave-treated garlic at the 4 min. The ABTS radical scavenging activity of raw garlic was 40.94 mg AEAC/mL, and the highest AEAC value was 76.51 mg AEAC/mL with high temperature and pressure-treated garlic at $150^{\circ}C$ at the 2 hr.

Protective Effect of Garlic (Allium sativum L.) Extracts Prepared by Different Processing Methods on DNA Damage in Human Leukocytes (마늘의 조리방법에 따른 DNA 손상 보호 효과의 비교)

  • DNA damage including base modifications, loss of base and breaks in DNA strands can occur by exposure to irradiation, smoking and several components of food. Unrepaired DNA damage is known to lead to cellular dysfunction, cell death, cancer, and other diseases such as arteriosclerosis and diabetes. The protective effect of garlic on oxidative stress induced DNA damage has been reported recently. In this study, we investigated the protective effect of garlic extracts prepared by different processing methods (raw garlic extracts, RGE; grilled garlic extracts, GGE; pickled garlic extracts, PGE) on leukocytic DNA damage using comet assay. Human leukocytes were incubated with ethanol and methanol extract of garlic at various concentrations (1, 5, 10, 50 ${\mu}g$/mL), followed by oxidative stimuli (200 ${\mu}M$ $H_2O_2$ or 200 ${\mu}M$ 4-hydroxynonenal (HNE)). The methanol and ethanol extracts of RGE, GGE, and PGE showed inhibitory activities of DNA damage induced by $H_2O_2$ or HNE. Especially methanol extract of RGE ($ED_{50}$; 13.3 ${\mu}g$/mL) had a higher antigenotoxic effect on $H_2O_2$ induced DNA damage than those of GGE (23.5 ${\mu}g$/mL) or PGE (24.5 ${\mu}g$/mL). HNE induced DNA damage tended to be effectively inhibited by the lower concentration of all garlic extracts. Therefore, garlic might have protective effects against oxidative DNA damage regardless of processing methods (raw, grilled, pickled) which are the general consumed forms of garlic in Korea.

Effects of Applying Slow-Release Fertilizer on Southern Type Garlic (Allium sativum L.) Cultivation (난지형 마늘 재배 시 완효성 비료 시용효과)

  • This experiment was conducted to evaluate the effect of slow-release fertilizer on warm type garlic cultivation in the Southwestern region of Korea. The slow-release fertilizers used were UF(Urea-Formaldehydes)70, 100, 130, CDU(Crotonylidene Diurea)100, and IBDU(Isobuty- lidene Diurea)100. The slow-release fertilizer treatment slightly increased plant height, leaf sheath diameter, and leaf number compare with conventional fertilizer treatment. Also, large bulb rate, nitrogen and pyruvic acid contents of garlic in slow-release fertilizer plot were higher than other treatments. Application of slow-release fertilizer increased the commercial yields.

  • This study was designed to evaluate the effects of garlic extracts of various concentrations on the growth of various pathogens and human colon cancer cell lines in vitro. For antibacterial effects against microorganisms, minimal inhibition concentrations (MIC) of alliin were from 5,000 to 20,000 ppm. MIC of ethanol extract were from 1,250 to 10,000 ppm. For cytotoxic effect of alliin and ethanol extract against human colon cancer cell lines (HCT-15), the growth rates of the cancer cells in medium containing alliin and ethanol extract were inhibited gradually to a significant degree in proportion to the increase of these concentration. Morphology of HCT-15 cells in medium containing alliin and ethanol extract were seen to be shrinked and fragmented. The results show that the causes of the antibacterial and cytotoxic effect against a wide range are thermostable substances isolated by the ethanol.

Antioxidant Activities of Domestic Garlic (Allium sativum L.) Stems and Garlic Bulbs according to Cooking Methods (조리법에 따른 국내산 마늘종과 마늘의 항산화 효능)

  • Antioxidant compounds and activities of raw and cooked (blanching, pan-frying, soy sauce pickle, Kochugang pickle) domestic garlic stems were investigated. The contents of chlorophyll, carotenoid, vitamin C, phenolic compounds and allicin in raw and cooked garlic stems were measured. Various cooking process increased significantly chlorophyll and $\beta$-carotene contents of garlic stem, but decreased vitamin C, phenolic compounds and allicin contents (p<0.05). Antioxidant activities of methanol extracts from raw and cooked garlic stem such as electronic donating ability (EDA), superoxide dismutase (SOD)-like activity and nitrite scavenging ability (NSA) were compared. The antioxidant activities were found to have lowered in the order of raw> pan-frying> blanching> garlic stem soy sauce pickle> garlic stem Kochujang pickle. Antioxidant activities of cooked garlic stems were more than 65% of cooked garlic bulbs.

  • Screening of anticoagulant activity was conducted for the hot water extracts of 73 kinds of medicinal herbs, 41 kinds of Korean edible plants, and 5 kinds of sea weeds using plasma recalcification test(Tr). In the first screening several extracts of the plants, Alisma calndiculatum, Corydalis ternata Panax notoginseng, Allium sativum, Ganderma luidum, Codium fragile, showed high activities. When the plants were reextracted with various solvent conditions, acidic water extracts of Codium fragile showed the highest activity in APTT. A crude polysaccharide fraction(CF-1) was prepared by methanol reflux, ethanol precipitation, dialysis and Iyophilization of the acid extracts. CF-1 comprised 80.8% total sugar consisting of arabinose, galactose and glucose as the main monomers, 8.7% protein, and 13.3% sulfate. The anticoagulant activity of CF-1 was not changed by pronase digestion, but decreased by periodate oxidation, and this indicated that the anticoagulant activity was attributed to the polysaccharide portion.

Physicochemical Characteristics of Garlic from Daejeong Jeju and Major Cultivation Areas in Korea (제주 대정 및 전국 주요 산지별 마늘의 이화학적 품질 특성)

  • To investigate the physicochemical characteristics of garlic(Allium sativum L.), general composition, mineral, vitamin C, free sugar and total acidity were determined in nine sample groups from Daejeong Jeju(DJ; Alttre, Gasiorum, Seoyukgaeri), four from Korea domestics(KD; Danyang, Uiseong, Taean and Namhae), and one from China. The average composition of the group from DJ included 63.0% of water, 35.6% of organic matter, and 1.40% of inorganic matter, which were similar to that of the group from KD. The contents of magnesium, phosphorus and sodium in the group from DJ were higher than those of the group from KD, whereas the contents of iron and calcium and total acidity showed a similar level. The mean vitamin C concentration in the group from DJ, especially from Alttre, was much higher than that in the groups from KD and China. It was also observed that the free sugar content of the group from DJ(Alttre) was the highest of all other garlic groups except that from China. In conclusion, the nutrient profiles of garlic groups from Daejeong Jeju are so comparable to those from Korean domestics, and so Daejeong Jeju should be recommended as the garlic cultivation area with acceptable quality.

Effects of simulated acid rain on garlic in spraying copper hydroxide solution (쿠퍼 수화제 살포시 마늘에 미치는 인공산성비의 영향)

  • This experiment was conducted to investigate the effects of acid rain in spraying copper hydroxide 77% wettable power(WP) on leaf surface morphology and crop injury of the garlic(Allium sativum L.). Leaf chlorosis, hooked leaves, wrinkled epidermal cells and increased stomata open of garlic were induced by foliar application of simulated acid rain(SAR). It was become to be severe in application of copper hydroxide solution after application of SAR, but those yield of garlic was not significantly different from the untreated control. Leaf chlorosis was sharply increased above 100 ppm of copper ions. Amount of solved copper ions in copper hydroxide solution was remarkably increased below pH 5.5 and the residue in garlic leaves was significantly increased by application of copper hydroxide solution after spraying SAR compared with application of copper hydroxide solution only. When calcium carbonate was applied together with copper hydroxide leaf chlorosis was less than copper hydroxide only.
