향미성 Natto 제조과정중 당류 및 아미노산 함량 변화 (Changes of Saccharides and Amino Acids in Natto Added with Spice during Fermentation)

  • Natto is a Japanese traditional food made from whole soybenas by fermentation of Bacillus natto. This study was attempted to improve the taste of Natto. Natto was compared with the changes in the various chemical properties after it had been produced by the addition of garlic and red pepper oleoresin. the remained content of total sugar fo Natto added with red pepper oleoresin decreased than other groups during 24hours fermentation. The remained content of reduced sugar of Natto added with garlic, red pepper oleoresin increased than other groups. The amount of total free sugar showed almost no differences in the case of garlic and red pepper oleoresin added. Amino type nitrogen content increased gradually after 24 hour fermentation in all samples. Free amino acid content increased in conventinal Natto.

고추품종을 달리한 전통식 고추장의 숙성중 이화학적 특성 변화 (Effect of Red Pepper Varieties on the Physicochemical Characteristics of Traditional Kochujang during Fermentation)

  • Physicochemical characteristics of kochujangs prepared with the powders from 4 different red pepper varieties, were investigated during 90 days fermentation to obtain information for the industrial production of traditional kochujang. Water activities and consistencies of all varities slightly decreased during fermentation, but in consistency Jangter kochujang was higher than others. The red values in color of all sample remarkably increased after 15 days. Especially L, a and b values of Hongkwang kochujang were higher than those of others. The acidities of 4 kochujangs linearly increased during fermentation. Reducing sugar contents of kochujang increased until 30 days but thereafter decreased slightly, showing highest value for Hongkwang kochujang. Ethanol contents increased until 75 days and were higher in Kumtop and Jangter kochujang. Amino and ammonia nitrogen contents rapidly increased until 30 days. Ammonia nitrogen content was gradually decreased after 30 days. Amino nitrogen contents were higher in Hongkwang kochujang.

1978년 진해만 적조와 양식굴의 대량폐사 (MASS MORTALITYS OF OYSTER DUE TO RED TIDE IN JINHAE BAY IN 1978)

  • 1978년 진해만에서 있었던 적조현상과 양식 굴의 대량폐사에 관한 조사결과를 요약하면 아래와 같다. 1. 진해만에서 1978넌 9월중 양식 굴의 대량폐사가 있었다. 폐사량은 $96\%$인 5,687M/T으로 피해액은 22억 7천 5백만원이었다. 2. 상기의 대량폐사는 지속된 고온, 대규모의 적조와 그로 인한 저층수의 빈산소 내지 무산소화로 인한 질식이 주 원인의 일보였다고 추측된다. 3. 적조의 원인종은 와편모조의 일종인 Ceratium fusus로서 각장 $340{\mu}m$, 각폭 $20{\mu}m$ 정도의 대형 식물플랑크톤이었다. 클로로필-a량은 최고 $50mg/m^3$ 이었다.4. 춘기의 가뭄과 6월의 다우로 성층이 형성된데다 지속된 고온과 장일조 그리고 해상의 평온함이 대규모의 적조를 유발시킨 원인의 일부라 생각된다.

적조 Cochlodinium polykrikoides 노출에 따른 양식산 참돔과 넙치의 생리학적 반응 (Physiological Responses of Cultured Red Seabream Pagrus major and Olive Flounder Paralichthys olivaceus During Exposure to the Red Tide Dinoflagellate Cochlodinium polykrikoides)

  • 본 연구는 양식산 참돔과 넙치를 Cochlodinium polykrikoides 적조에 노출시켜 노출 시간에 따른 생존율, 호흡수, 혈중 스트레스 지표 및 조직학적 변화를 비교 조사하였다. 대조구는 자연해수를 사용하였고, 실험구는 C. polykrikoides 밀도를 5,500±200 cells/ml로 설정하였다. 그 결과, 참돔은 적조 노출 1시간 이내, 넙치는 적조 노출 5시간 이내 전량 폐사하였다. 생리학적 반응을 분석한 결과, 참돔은 적조 노출 후 혈중 Glucose 농도가 감소하였으며, 혈중 GOT 및 GPT농도는 증가하였고, 혈중 SOD 농도는 감소하고, CAT 및 GPx 농도는 증가하는 경향을 보였다. 넙치는 적조 노출 후 혈중 Cortisol 및 GOT, GPT 농도가 증가하였고, 혈중 Glucose 농도는 적조 노출 1시간째 증가한 이후 감소하였으며, 혈중 SOD, CAT, GPx 농도는 노출 1시간째 감소한 이후 증가하였다. 조직학적 분석 결과, 참돔과 넙치의 아가미에 구조적인 손상이 발생하였다. 결론적으로 5,500 cells/ml 밀도의 C. polykrikoides 적조 노출은 양식산 참돔과 넙치에게 산화적 스트레스로 작용하여 체내 항산화 방어 기작을 활성화하고, 간과 아가미의 손상을 발생시키는 것으로 나타났다.

랫드의 간압발생과정에서 홍삼의 항암효과와 자연살해세포의 (Involvement of the Enhancement of Natural Killer Cell Activity on the Anti-Cancer Effect of Red Gingseng during Rat Hepatocarcinogenesis)

  • This study was performed to examine the anti-cancer effect of Red Ginseng in the DENGalN-PH-induced hepatic tumor model system in rats. One hundred of male SPF Sprague-Dawley rats(6weeks old) were randomly divided into five groups. Rats in groups 1, 2, 3, and 4 were administered to diethylnitrosamine intraperitoneally 200 mg/kg body weight for the caner initiation. Rats in group 5 were given to saline as a control. On two weeks after cancer initiation, rats in groups 1 and 3 were fed on diet containing 0.01% of acethylaminofiuorene(AAF) which is strong cancer-promotor for 6 weeks, while rats in groups 2 and 4 were fed on water containing 0.05% of phenobarbital which is weak cancer.promotor for 6 weeks. Rats in groups 1 and 2 were treated with diet containing 3% of Red Ginseng for six weeks(from 9th week till 15th week after cancer initiation). Rats in all groups were necropsied time-sequencially at 8, 15, and 36 weeks. The hepatic lesions of rat treated with carcinogens expressed glutathione S-transferase placental form(GST-P) at 8 week. The GST-P positive foci of rats treated with AAF were larger than that of any other rats, while the GST-P positive foci of rats treated with AAF and red ginseng were significantly decreased. This anti-cancer effect of Red ginseng might be involved in the enhacement of natural killer cell activity. To know whether there is direct relationship between Red Ginseng and natural killer cell activity, the activity of natural killer cell was examined after treatment AAF, AAF+Red ginseng and Red ginseng only, respectively. Comparing with natural killer cell activity in AAF-treated group, natural killer cell activity was significantly activated in AAF+ Red ginseng-treated group. This indicated that Red ginseng might enhance natural killer activity after treatment carcinogen in rats. These results suggested that Red ginseng might have a cancer prevention ability by promoting natural killer cell activity during hepatocarclnogenesis.

Immunoglobulin productivity assay를 이용(利用)한 홍삼투여(紅蔘投與) 실험동물(實驗動物)의 IgG, IgM, IgA 비교(比較) 연구(硏究) (The Comparative Study of IgG, IgM, and IgA in Laboratory Animal Administrated Red-ginseng, Using Immunoglobulin Productivity Assay)

  • Objective : The immune system is a complex of systems, all of which work together to clear infection from the body. In Korea, red ginsenghas been one of the herbs most widely used to enhance the immune system for thousand of years. More recently, red ginseng has been reported to have many positive effects on the immune system. The purpose of this study was evaluate the effects of Korean red ginseng and Chinese red ginseng on IgG, IgM, and IgA, using immunoglobulin productivity assay. Methods : Male SD rats were separated into 3 groups. We administered Korean red ginseng (KRG) to one group and Chinese red ginseng (CRG) to another, with normal saline for the Control group consecutively and orally for 3 months. The dose of red ginseng was 500mg per day, as a powder with soluble water. Immunoglobulin levels from spleen cell were estimated by ELISA kit. Results : In immunoglobulin productivity assay (cell), the IgG level of the KRG group significantly increased but there was no significant difference in the IgG of the CRG group. The IgM level of the KRG group significantly increased stimulated with PWM. When it was unstimulated, the level of IgM in KRG and CRG increased together. The IgA level of the KRG group significantly increased when it was stimulated with PWM and unstimulated. Conclusion : According to the above results, oral administration of red ginseng for 3 months is considered useful for immunomodulatory effect, and Korean red ginseng may be superior to Chinese red ginseng in that effect.

고추를 첨가한 매운국이 체온, 혈압, 식욕 및 섭취열량에 미치는 영향 (Effects of Spicy Soup with Red Pepper on Body Temperature, Blood Pressure, Appetite and Energy Intake)

  • We examined the effects of 5 g red pepper powder in soup preload given at breakfast on food intake, blood pressure, body core temperature, hunger, fullness and thirst scores in 29 female collage students. All subjects received two kind of soup preloads in random order. After ingesting a soup, subjects ate other food items as a breakfast ad libitum. Two soups were of the same composition and volume but differed only in 5 g red pepper. So one soup designated as "beef-vegetable" and the other soup designated as "red pepper". Red pepper soup consumption significantly enhanced energy and macronutrient intake by 17%. The hunger scores after test meals were inversely correlated with energy and nutrient intake in beef-vegetable meal. However, the postprandial hunger scores were not correlated with energy and nutrient intakes in red pepper meal. The fullness scores at 90 min after the red pepper meal were inversely correlated with energy and nutrient intake whereas the fullness scores after beef-vegetable meal were not correlated with energy and nutrient intake. These results suggest that hot red pepper ingestion may desensitize some gastrointestinal vagal afferents and disturb feeling of hunger and fullness. The postprandial changes of body temperatures in red pepper meal were higher for a longer time in comparison with those in beef-vegetable meal. For the red pepper meal there frequently were higher correlations between blood pressures and anthropometric measurements, compared to those in beef-vegetable meal. These results might be explained partly by the enhancing effects of capsaicin on thermogenesis and sympathetic nervous system activity. It is concluded that the ingestion of spicy soup with red pepper can increase appetite, energy and nutrient intakes in Korean females, and this effect might be related to disturbed feeling of hunger and fullness.hunger and fullness.

A case study of red tide detection around Korean waters using satellite remote sensing

  • Korea has experienced 10 a Cochlodinium polykrikoides red tide outbreaks during the last 10 years (1993-2002). The monitoring activities at National Fisheries Research and Development Institute (NFRDI) in Korea have been extended to all the coastal waters after the worst of fish killing by C. polykrikoides blooms in 1995. NFRDI is looking forward to finding out the feasibility of red tide detection around Korean waters using satellite remote sensing of NOAA/AVHRR, Orbview-2/SeaWiFS, IRS-P4/OCM and Terra/MODIS on real time base. In this study, we used several alternative methods including climatological analysis, spectral and optical methods which may offer a potential detection of the major species of red tide in Korean waters. The relationship between the distribution of SST and C. polykrikoides bloom areas was studied. In climatological analysis, NOAA, SeaWiFS, OCM satellite data in 20th and 26th August 2001 were chosen using the known C. polykrikoides red tide bloom area mapped by helicopter reconnaissance and ground observation. The 26th August, 2001 SeaWiFS chlorophyll a anomaly imageries against the imageries of non-occurring red tide for August 20, 2001 showed the areas C. polykrikoides occurred. The anomalies of chlorophyll a concentration from satellite data between before and after red tide outbreaks showed the similar distribution of C. polykrikoides red tide in 26th August, 2001. The distribution of the difference in SST between daytime and nighttime also showed the possibility of red tide detection. We used corrected vegetation index (CVI) to detect floating vegetation and submerged vegetation containing algal blooms. The simple result of optical absorption from C. polykrikoides showed that if we use the optical characteristics of each red tide we will be able to get the feasibility of the red tide detection.

한국 고대 붉은 간토기의 적색 안료 및 교착제에 대한 과학적 분석 (Study on Scientific Analysis about Red Pigment And Binder - The Korean Ancient Red Pottery -)

  • 본 연구에서는 한국 고대 붉은 간토기 중 국립김해박물관 소장품인 적색마연완 붉은 간토기(신석기시대), 단도마연 붉은 간토기(청동기시대), 적색마연가지문 붉은 간토기(청동기시대)에 사용된 적색 안료와 교착제를 확인하여 고대 붉은 간토기에 사용된 적색 안료와 교착제의 종류에 대한 자료를 구축하고자 하였다. 과학적 분석 결과, 붉은 간토기 3점 모두 소지층과 적색의 표면층으로 구분되었으며, 적색의 표면층에서는 적색 안료 입자와 광물의 결정이 보였다. SEM-EDS, Raman 분석을 통해 적색 안료는 산화철(Fe2O3)을 주 발색원으로 하는 토양성 안료 중 석간주로 추정하였으며, FTIR-ATR을 통해 Urushiol polymer의 특징에 의한 성분 피크가 검출되었다. GC/MS 분석 결과, 적색층에서 옻칠의 방향구조에 기인하는 성분인 Benzenemethanol-2-propenyl, 4-heptyl phenol, 1-Tetradecanol, Heptafluorobutyroxytridecane 성분이 검출되었다. 따라서 국립김해박물관 소장품인 붉은 간토기 3점의 적색 안료는 석간주(Fe2O3)를, 교착제로는 옻칠을 사용하여 제작된 토기인 것으로 판단되었다.

Foliar Colonization and Growth Promotion of Red Pepper (Capsicum annuum L.) by Methylobacterium oryzae CBMB20

  • In order to exploit Methylobacterium oryzae CBMB20 as of plant growth promoting agent, different inoculation methods have been evaluated. The present study aimed to evaluate soil, foliar, and soil+foliar inoculations of M. oryzae CBMB20 to improve the growth, fruit yield, and nutrient uptake of red pepper (Capsicum annuum L.) under greenhouse conditions. The population range of green fluorescent protein (gfp)-tagged M. oryzae CBMB20 using the three inoculation methods was 2.5-2.9 ${\log}_{10}$ cfu/g in the rhizosphere and 4.5-6.0 ${\log}_{10}$ cfu/g in the phyllosphere of red pepper plants. Confocal laser scanning microscopy results confirmed the colonization of M. oryzae CBMB20 endophytically on leaf surface. Plant height, fruit dry weight, and total biomass were significantly higher ($p{\leq}0.05$) in all M. oryzae CBMB20 inoculation methods as compared to non-inoculated control. Furthermore, uptake of mineral nutrients such as N, P, K, Ca, and Mg in red pepper plants in all M. oryzae CBMB20 inoculation methods was higher than in non-inoculated control. Comparative results of inoculation methods clearly demonstrated that soil+foliar inoculation of M. oryzae CBMB20 lead to the highest biomass accumulation and nutrient uptake which may be due to its efficient colonization in the red pepper rhizosphere and phyllosphere.
