The purpose of this study was to determine the optimal mixing ratio of Alaska Pollack (Theragra chalcogramma) and olive oil in the preparation of sausage. The experiment was designed according to the central composite design for estimating the response surface, which demonstrated 10 experimental points including 2 replicates for Alaska Pollack and olive oil. The physical, mechanical and sensory properties of test materials were measured. A canonical form and perturbation plot showed the influence of each ingredient on the final product mixture. Measurement results of the physical and mechanical properties showed a significant increase or decrease in the following properties: dough sweetness (p<0.05); sausage L (p<0.05), a (p<0.001), and b (p<0.01); hardness (p<0.01), chewiness (p<0.05), and gumminess (p<0.01). Also, the sensory measurements showed a significant improvement in color (p<0.05), flavor (p<0.01), taste (p<0.001), tenderness (p<0.05), chewiness (p<0.01), mositness (p<0.05), and overall quality (p<0.01). As a result, the optimum formulation by numerical and graphical methods was calculated as Alaska Pollack 35.74 g and olive oil 7 g.
Variations of larval abundance and hatch timing of Dungeness crabs, Cancer magister Dana 1852, were investigated. Dungeness crab larvae were monthly collected at 16 stations arrayed in four transects, Upper Chatham, Icy Strait, Cross Sound, and Icy Point, in southeastern Alaska from May to September 1997-2004. Larval abundance at all transects was the highest in June except in the Icy Point transect. Larval abundance was the highest in the Icy Strait transect, moderate in the Upper Chatham and Cross Sound transects, and the lowest in the Icy Point transect. Zoeae I(ZI) was predominated in May; thereafter ZI decreased and late zoeal stages occurred. In May and June, small numbers of late stage larvae unusually co-occurred with ZI in three transects. These late stage larvae may have been transported from where hatching occurs earlier. The timing of ZI occurrence varied interannually and was related to degreedays during the egg incubation period of Dungeness crabs: later larval hatching in 1997 and 2002 when temperatures were colder, while earlier larval hatching in 1998 when temperatures were warmer. The distribution patterns of Dungeness crab larvae in southeastern Alaska were markedly different from those reported from other areas of the species distribution ranges: larvae occurring much later in the year, and late stage larvae occurring in inland waters.

Background: In 2012, the Alaska Section of Epidemiology investigated personnel potentially exposed to a Brucella suis isolate as it transited through three laboratories. Methods: We summarize the first implementation of the United States Centers for Disease Control and Prevention 2013 revised recommendations for monitoring such exposures: (1) risk classification; (2) antimicrobial postexposure prophylaxis; (3) serologic monitoring; and (4) symptom surveillance. Results: Over 30 people were assessed for exposure and subsequently monitored for development of illness. No cases of laboratory-associated brucellosis occurred. Changes were made to gaps in laboratory biosafety practices that had been identified in the investigation. Conclusion: Achieving full compliance for the precise schedule of serologic monitoring was challenging and resource intensive for the laboratory performing testing. More refined exposure assessments could inform decision making for follow-up to maximize likelihood of detecting persons at risk while not overtaxing resources.
Kelp life history pathways alternate between macroscopic sporophytes that produce spores and microscopic gametophytes that produce gametes. Occasionally, an alternative pathway is seen. This study examined the circumstances by which the high latitude estuarine bull kelp, Nereocystis luetkeana, foregoes the "free-living microscopic stages by releasing embryonic sporophytes directly from sori. Sori were collected from adult N. luetkeana sporophytes from eight locations within Kachemak Bay, Alaska in 2018 and 2020 to examine spatial and temporal development of embryonic sporophytes on sori. Distinctions were made between sori collected from first-generation and overwintered adults to assess the influence of parental age on embryonic sporophyte release. Further distinctions were made between sori collected from attached and drifting individuals to assess the influence of the status of parental attachment to substrate on embryonic sporophyte release. Inspection of propagules released from sori after 48-h incubations indicated that embryonic sporophytes were occasionally released alongside viable spores. Though embryonic sporophytes were released from sori as early as spring, it was not evident that they were bound by seasonal or spatial limits. The percent of propagules that were embryonic sporophytes ranged from 0% to 100% but were not significantly different between first-generation and overwintered adults, nor were they different between attached and drifting individuals. Nevertheless, the characteristic of directly releasing embryonic sporophytes from adult sporophytes might have ecological advantages for N. luetkeana.
The objective of this study was to investigate Alaska pollock Theragra chalcogramma roe grade distribution among blocks and its nutritional components by grade. M grade roe was predominantly distributed in blocks labeled as L and M (52.1 and 82.8%, respectively), and S grade roe was mainly found in blocks labeled as S (98.6%). Products labeled as containing KB and KC grade roe contained 77.1 and 65.5% normal roe, respectively. Among the five roe grades (L, M, S, G, and Off), total amino acid content was higher in normal roe than in abnormal roe. The major amino acids found in normal roe were leucine, aspartic acid, and glutamic acid, whereas G and Off grade roe contained leucine and glutamic acid, but not aspartic acid. The calcium, phosphorus, potassium, and iron contents of the five roe grades were within the ranges 13.0-20.0, 314.4-392.0, 124.1-157.7, and 1.7-2.2 mg/100 g, respectively. The five roe grades contained total fatty acid contents of 765-1,252 mg/100 g, with no significant differences among grades. The major fatty acids were 16:0, 18:1n-9, 20:5n-3, and 22:6n-3.
노가리는 명태, Theragrachalcogramma(PALLAS)의 미성어라고 오래전부터 알려져 왔으며 우리나라 수산자원보호령의 미성어 보호대책 규정에 의해 종래에는 그 어획이 금지되어 있었다. 그러나 수산당국은 자원학적 견지에서 노가리를 어획하여도 무방하다는 해석을 내려 1974년부터 노가리에 대한 어획금지규정을 폐기하였으며 현재까지 어획을 허용하고 있다. 명태는 우리나라 국민의 중요한 식량원이며 동해안에서 비교적 산업적 가치가 높은 데도 불구하고 이 집단에 대한 자원생물학적 지견과 자원의 변동법칙은 아직 잘 알려져 있지 않으며 일부 어민들은 심지어 노가리는 명태의 미성어가 아니라고 주장하고 있는 것이 현상이다. 명태는 개체 또는 집단으로서 넓은 변이성을 가진 어종이라고 알려져 있지만, 현금과 같은 격렬한 어업 압력에 과연 얼마나 견딜 수 있는가를 규명하는 일이 요청되고 있다. 본고에서는 노가리와 명태에 대해 몇가지의 형태학적 집단표징을 관찰하여 검토한 결과를 보고한다.
명태육의 식품가공적성과 이용성을 높이기 위해 pronase에 의한 명태단백의 가수분해조건과 fruit-와 stem-bromelain에 의한 plastein의 합성 반응조건을 검토하였다. Pronase 가수분해 최적조건인 반응pH 7.0, 반응온도 $40^{\circ}C$, 기질 g당 효소첨가량 1,000units 및 반응시간 4시간에서 89% 분해도를 보이는 명태단백의 가수분해물을 제조하였다. Plastein은 pH가 각각 5.0(stem-bromelain)과 7.0(fruit-bromelain)으로 조정된 기질 30% 용액에 bromelain 1%를 가하여 $40^{\circ}C$, 24시간 진탕반응하여 합성하였다. 이 최적조건에서 합성된 plastein은 각각 22.6과 20.8 아미노산 잔기를 가진 펩타이드로 구성되어 있었으며 관능검사에 의해 반응초보다 크게 쓴맛이 제거되는 결과를 나타내었다.
The United States is the world's leading importer of frozen processed groundfish products, with over two thirds of total world imports. Over 90% of the U.S. groundfish demand is met by inports, while about 2 million mt of groundfish are taken from U, S. waters by joint-venture and foreign fleets. The objective of this paper is to provide descriptive information concerning the U.S. groundfish market and the potential for groundfish resources off Alaska to become a major source of supply to this market. The size of the U.S. market, U.S. imports, trade policies, and catch from U.S, waters are discussed, and a comparison is made between the potential domestic catch of groundfish off Alaska and current U.S. groundfish consumption. The total optimum yield of 2.3 million mt for flounders, cod, and pollock is about four times the round weight equivalent of U.S. imports of these species in 1984.
Bench Scale급 건식 가스화기에서 중국 Datong탄과 미국 Alaska Usibelli탄으로부터 생성된 Slag의 구조적인 특성과 화학적인 특성을 조사하였다. Datong slag은 표면이 매끄럽고 검으며 속이 약간 비어 있는 구형을 띄고 있고 Alaska Usibelli탄으로부터의 slag은 속이 조밀하게 차여있는데, 이들 slag의 내부는 Datong, Alaska Usibelli탄 두 경우 다 회분이 결정화된 형상의 특징을 보여주고 있다. 그리고 Cu, Zn외 11가지 중금속이 slag에 다량으로 농축되어 제거되었음을 알 수 있었으며, slag들의 침출여부를 조사하기 위하여 용출시험을 수행한 후 용출액에 대하여 중금속 분석을 한 결과 대부분 중금속들은 검출되지 않았다. 내화재의 주성분인 Cr이 slag에 포함되어 나오는 것으로 측정되었으나 용출시험 결과 검출이 안되어 2차오염에는 전혀 문제가 없음이 입증되었다. 따라서 건식 가스화기로부터 생성된 slag을 재사용할 때, 용출되는 중금속에 관한 2차 환경오염이 유발되지 않을 것으로 확인되었다.
The fishes that are mostly used in our homes such as Pacific Mackeral, hair Tail and Alaska Pollack were devided into Freezing group, Refrigerating group and Room temperature group according to storage temperature. TVB-N, TMA-N, TMA-O and pp.H. were measured in natural state, after water washing and 3% NaCl-water washing. The results are as follows: 1. Regardless of the kinds of fishes, TVB-N in room temperature showed that rottenness first appeared after 5~8 hours in raw state, 6~12 hours in water washing, and 8~12 hours in 3% NaCl-water washing. 2. Regardless of freezing and refrigeration, Pacific Mackeral became rotten after 14 days in raw state, 14~17 days in water washing and 17 days in 3% NaCl water washing. Alaska Pollack and Hair Tail showed rottenness after 8 days in raw state, 11 days in water and 3% NaCl water washing. 3. Even in hot summer days, freshness could be preserved for 10 days if fishes were freezed ($-20^{\circ}C$) or refrigerated (4~$8^{\circ}C$) after bowel excluded, washed in NaCl water and enveloped in poly-ethylene bag.
