벼 등숙기 침관수 피해에 따른 수량 및 품질 특성 변화 (Change in Yield and Quality Characteristics of Rice by Flooding during the Ripening Stage)

  • 벼 등숙시기 및 침관수 조건별 피해에 따른 생육 및 수량, 품질특성에 미치는 영향을 분석한 결과는 다음과 같다. 1. 등숙기 침관수 피해에 따른 수량감소의 요인중 가장 영향이 컸던 요인은 등숙률 이었고, 등숙률은 호숙기(출수 후 14일)대비 유숙기(출수 후 7일)의 감소정도가 컸으며, 침수 조건별로는 탁수이면서 수중에 완전히 잠긴 관수 조건에서 침수기간이 길어질수록 피해가 심하였다. 2. 완전미율은 유숙기(출수 후 7일) 대비 호숙기(출수 후 14일)처리에서 감소정도가 컸으며, 이는 등숙 시기별 전분 합성 단계의 차이에 의한 것으로 생각된다. 3. 침관수 처리 전, 후의 광합성효율을 나타내는 최대양자수율(Fv/Fm)값은 침관수 처리에 따른 큰 변화가 없었으며, 이를 통해 등숙기에 4일 정도의 침관수 처리는 벼의 본체의 동화산물 생산능력 자체에는 큰 영향을 주지 못하였을 것으로 사료된다. 4. 자포니카 벼의 침관수 회피기작에 따라 침수 처리 시 처리별로 간장신장 반응을 보였으며, 이로 인한 이삭으로의 동화산물 공급저하는 출수 후 7일에는 등숙률의 감소, 출수 후 14일에는 완전미율 감소에 더 큰 영향을 주었을 것으로 생각된다. 5. 침관수 피해가 심한 처리구 일수록 수확기 엽색이 무처리 대비 푸른 상태를 유지하였는데, 이는 침관수 피해에 따른 이삭 낟알의 발육정지로 동화산물의 수요부(sink)가 제한되었기 때문으로 보인다.

김치의 숙성 및 발효중 오염지표미생물과 유산균의 변화-제1보 (Changes of Index Microorganisms and Lactic Acid Bacteria of Korean Fermented Vegetables (Kimchi) during the Ripening and Fermentation-Part 1)

  • This study was undertaken to investigate the changes of index microorganisms and lactic acid bacteria of traditional Korean fermented vegetables (kimchi) during the ripening and fermentation period. A type of kimchi, baechoo-kimchi, was prepared and stored at $10^{\circ}C$ for 8 days. The numbers of the total aerobic bacteria, psychrotrophilic bacteria, coliform bacteria, and Escherichia coli in the kimchi and also in raw materials of the kimchi (Chinese cabbage, green onion, ginger, garlic, and red pepper) were counted using appropriate media. The highest number of aerobic bacteria was detected from ginger, then red pepper, then garlic, then Chinese cabbage, and lowest number from green onion. The highest number of psychrotrophilic bacteria was detected from red pepper, then Chinese cabbage, then garlic, then ginger, and the lowest number from green onion. Coliforms and E. coli were not detected from all of the raw materials of kimchi. Total aerobic bacteria and lactic acid bacteria of the kimchi showed gradually increasing during ripening and fermentation. The number of psychrotrophilic bacteria showed a similar level in the kimchi. Coliform bacteria were detected at the 3rd, 4th, and 5th day of the kimchi fermentation period, although they were not detected from the raw materials of the kimchi. However, the bacteria were not detected in the kimchi after 6 days. E. coli was not detected in all kimchi samples. The pH value of the kimchi gradually decreased, and acidity increased over fermentation period. This study indicates that there was contamination of coliform bacteria during the process of kimchi preparation, and lactic acid bacteria proliferated in the kimchi during fermentation inhibited the growth of coliforms. More research is needed to evaluate the inhibitory effects of each raw materials of kimchi.

Evaluation of the functional phenolic compounds as to various ripening phases of the reddish rice cultivar(Oryza sativa, Superhongmi)

  • Recently, consumer's demands are increasing for new natural functional and healthful food. These demands have encouraged a better understanding of the biochemical, chemical and nutritional composition of plant products. Superhongmi rice variety was derived from a cross between CG2-3-5-2-6-2 (Heugjinju/Suwon 425) having reddish brown color and Daeribbyeo 1 having a large grain size. Superhongmi rice headed on Sep. 5th and has 94.7 cm culm length. Taxifolin, a phenolic compound in superhongmi rice extract had high ${\alpha}-glucosidase$ inhibitory activity. The ${\alpha}-glucosidase$ inhibitory activity of the superhongmi rice extracts correlated to the taxifolin content and antioxidant activity of the extracts. A new method for quantitative determination of taxifolin in superhongmi rice variety by high performance liquid chromatography was established. A reversed-phase system with Tosoh TSK-gel $C_{18}$ column using 60% methanol in water(pH 2.4) as a mobile phase was developed. Taxifolin was detected at 280 nm and the analysis was successfully carried out within 40 min. In ripening phase, the amount of taxifolin showed a mild decreasing slope. The highest contents was 59.27mg in 100g seed on the 30 days after heading(DAH). The optimum harvesting time, considering taxifolin content, maturity rate and thousand seed weight(TSW) was DAH 50. These results suggest that superhongmi rice which has high taxifolin content has the potential to contribute as a dietary supplement for controlling hyperglycemia and oxidative stress-linked diabetes complications.

Relationships between kernel quality of appearance and yield characters in japonica and Indica rice cultivars

  • Subspecific difference of the percentage of white immature kernels (WIK) between japonica and indica rice cultivars was analyzed in relation to ripening temperature and yield characters. Thirty-three Chinese and 10 Japanese rice cultivars, including 32 japonica and 11 indica, were cultivated with three different cropping seasons for three years. The results were as follows: (1) Indica had less number of panicles, larger number of spikelets per panicle with higher yield, and longer and narrower kernels than japonica. In japonica, Chinese cultivars had less number of panicles and larger number of spikelets per panicle than Japanese cultivars. In addition, WIK was significantly higher in Chinese cultivars than in Japanese cultivars, because of the higher percentage of milky white kernels, even at similar temperature conditions during ripening. On the other hand, WIK in indica was not significantly different between the production areas and between the cropping seasons. (2) Regardless of subspecies, WIK in a large number of Chinese cultivars increased with increasing temperature during ripening within 20 days after heading, while this relation was uncommon in Japanese cultivars, showing the low temperature response. However, some Chinese cultivars had the low WIK with the low temperature response. (3) WIK in japonicawas positively correlated with 1000-kernel weight, spikelet density, kernel width and thickness, but negatively correlated with panicle length and grain filling percentage, while in indica it was positively correlated with panicle number per area, grain filling percentage, brown rice yield and kernel width, but negatively correlated with kernel length. These results indicated that WIK in both subspecies had a close relation to kernel size, and that WIK was high in japonica cultivars with wide and thick kernels and in indica cultivars with short and wide kernels.

The Simple and Rough Screening Method of Phosphorus Deficient Tolerance Rice

  • Even though phosphorus (P) is essential element for plant growth and development, it is not enough for crop production in soil. To breed more P deficient tolerance rice, screening and selection in rice population is needed. We tried to develop more simple and rough screening method for breeding of P deficient tolerance rice. In P deficient condition, tiller number was dramatically decreased among yield components in rice. Though this result, we confirmed tiller number could be the best marker in screening of P deficient tolerance rice. 480 rice genetic resources were cultivated in rice bed tray filled with P deficient soil for four weeks and each dry weight was measured. Among them, the 55 kinds of genetic resource were selected then cultivated in paddy field with 3 fertilizer conditions. Plant dry weight and tiller number in ripening stage were shown significant difference according to P condition. Plant dry weight and tiller number in ripening stage was highly correlated especially in P deficient condition. Furthermore, the tiller number in ripening stage and plant dry weight in rough screening were shown high degree correlation. Though these results, we might expect measuring of plant dry weight after cultivation in rice bed tray filled with P deficient soil could be a simple and effective screening method in selection of P deficient tolerance rice.

Effect of Sodium-Alternative Curing Salts on Physicochemical Properties during Salami Manufacture

  • To identify the effect of sodium-alternative curing salts on the quality properties of salami through the ripening process, four salami treatments were prepared with different curing salts, T1 (-control, NaCl 1.9%), T2 (+control, NaCl 1.9%+NaNO2 0.01%), T3 (KCl 1.9%+NaNO2 0.01%), and T4 (MgCl2 1.9%+NaNO2 0.01%), under 40 days ripening conditions. Sodium-alternative salts (T3 or T4) showed characteristically different quality traits compared with T2. Especially, T3 had lower pH, water activity, volatile basic nitrogen, and lipid oxidation after 20 days of ripening period, compare with T2 or T4 (p<0.05). Sodium nitrite had critical impact on increased a* values, and T3 showed higher a* values compared with T2 or T4 (p<0.05). Sodium nitrite reduced initial growth of coliforms but sodium-alternative salts did not affect microbial growth patterns. T2-T4 containing sodium nitrite had higher content of umami nucleotide flavor compounds compared with T1, regardless of the chlorine salt species. The combined use of sodium-alternative curing salts and minimal sodium nitrite was found to be an applicable strategy on development of low sodium salami without a trade-off of the product quality.

'대석조생' 자두(Prunus salicina L.)의 숙기에 따른 1-Methylcyclopropene 처리효과 (The Effects of 1-Methylcyclopropene on the Quality of 'Ooishiwase' Plums (Prunus salicina L.) with Different Ripening Stage)

  • Pre-climacteric 단계의 '대석조생' 자두(Prunus salicina L.)를 착색정도 따라 3단계로 구분하여 1-Methylcyclopropene (1-MCP, $1\;{\mu}L\;L^{-1}$ for 24 hours at $10^{\circ}C$)을 처리한 후 $10^{\circ}C$에서 유통시키면서 에틸렌 생성 량, 호흡량 경도, 산도, 색도 변화 등의 품질변화를 관찰하였다. 1-MCP처리에 의한 에틸렌 생성과 호흡량 감소가 모든 숙기에서 유의성이 인정되었다. 또한 1-MCP는 숙기와 관계없이 경도, 산도, 색도를 유지시키고, 가용성 고형물함량에는 아무런 영향을 미치지 않아, 악영향 없이 자두의 품질유지 효과를 나타내었다. 따라서 1-MCP를 적용하면 자두의 유통기간을 연장 할 수 있으므로 수확시기를 늦춰 맛있는 자두를 수확하여 유통시켜 소비자에게 좀더 맛있는 자두를 공급할 수 있을 것으로 예상되었다.

벼 성숙기 침관수 피해양상 (Phase of Overhead Flooding Damage during Maturation of Rice)

  • '98년과 '99년의 집중 호우시 침관수 피해지역과 태풍 피해지역을 대상으로 벼 생육 실태를 조사한 결과, 벼 감수분열기 토시유입에 의해 지상부의 10%이상이 매몰되면 출수가 지연 되고 고위분얼이 발생하며 등숙비율이 불량해져 수량이 감소하였다. 출수후 탁수가 관수되어 이삭에 흙앙금이 부착되면 등숙비율과 정현비율이 낮아져 수량이 감소하였는데, 흙앙금으로 인한 피해는 등숙이 진전될수록 경감하였으며, 베노밀과 다코닐 처리에 의해 피해가 경감되었다. 벼 도복후 7일정도 경과하면 대부분의 벼 품종은 수발아가 발생하고, 수발아 정도는 조생종>중생종>중만생종의 순이었다.

Evaluation of Chemical-Nutritional Characteristics of Whey and Ricotta Obtained by Ewes Fed Red Grape Pomace Dietary Supplementation

  • This study aimed to investigate the effect on the chemical quality of whey and Ricotta obtained from ewes fed a red grape pomace (GP) dietary supplementation. The analyses were performed on whey, before and post Ricotta cheese-making, and in Ricotta after 1 (T1) and 5 (T5) d of ripening at 4℃. Moreover, fatty acid profile of whey before ricotta (WBR) cheese-making and Ricotta T1 of ripening and volatile profile of Ricotta T1 and T5 were investigated. The diet did not affect whey and Ricotta lipid content, conversely, significant variations were instead observed with regard to color. A lower amount of total phenolic compounds was found in WBR cheese-making, on the contrary, an opposite trend was highlighted in Ricotta T1 although no variations in antioxidant properties were detected. Moreover, GP modified fatty acid profile of whey and Ricotta but did not have any effect on protein profile of the main whey protein. The reduction of hexanal in Ricotta during the ripening suggest a better oxidative stability. The obtained results therefore suggested that the GP inclusion in the ewes diet, while modifying some chemical parameters, did not induce negative effects on the characteristics and quality of dairy by-products.

등숙기의 차광 처리에 의한 광합성능 및 쌀 수량 변화 (Change of photosynthetic efficiency and yield by low light intensity on ripening stage in japonica rice)

  • 최근 육성된 고품질 벼 품종인 보람찬, 호품 및 호농을 공시하여 질소 시비량(9, 18 kg/10a) 및 출수 직후 차광처리(50, 70%)에 의한 등숙기 일조부족이 광합성 특성 변화와 수량 및 수량구성형질 등에 미치는 영향을 검토한 결과를 요약하면 다음과 같다. 1. 등숙기 차광처리에 의해 Fv/Fm 및 SPAD값은 차광률이 높을수록 그 감소율이 적었으며, 질소 시비량을 증가에 따른 유의적인 변화는 없었다. 다른 품종과 달리 호농의 경우 18 kg 처리시 자연광에서 자란 시료에서도 감소율이 완만하게 나타났다. 2. 등숙기 차광처리에 의해 천립중과 수량은 차광에 따라 감소하였고, 차광률에 따라 더 높은 감소율을 보였다. 천립중은 세 품종 중 보람찬이 가장 많이 감소하는 경향을 보였다. 차광 70% 처리시 질소 시비량의 증수에 따라서 감소율이 더 급격히 나타나 등숙기 일조부족에 질소질 비료의 추가시용은 비효율적임을 알 수 있었다. 3. 등숙기 차광처리시 백미 단백질 함량은 증가하였고 50% 차광 보다 70% 차광에서 높았으며, 호농이 보람찬과 호품에 비해 단백질 함량의 변화가 적었다. 4. 등숙기 차광처리시 아밀로스 함량 변화는 감소하는 경향을 보였으며, 호농이 보람찬과 호품에 비해 변화가 적었다. 5. 등숙기 차광처리에 따른 쌀의 품위 분석 결과 보람찬과 호품은 차광에 의해 완전립 비율이 차광율 70%일 때 64.8-70.9%로 크게 감소하였는데 이는 분상질립의 증가로 인한 것으로 판단된다.
