초산과 Trisodium Phosphate로 처리한 닭고기의 소매점 판매와 냉장 동안 미생물 및 관능평가 (Microbiological and Sensory Evaluations of Chicken Wings Treated with Acetic Acid and Trisodium Phosphate during Retail and Refrigerated Storage)

  • Microbiological and sensory evaluations of chicken wings treated with acetic acid and trisodium phosphate(TSP) during retail(1${\pm}$2$^{\circ}C$) and refrigerated storage(4$^{\circ}C$). Chicken wings(average weight of 15${\pm}$2g per leg) were treated with 0.5∼2% aerobic plate counts(APC) on the surface of chicken wings for storage of 16 days at 4$^{\circ}C$. During storage of 12 days at retail store(1${\pm}$2$^{\circ}C$), the treating chicken wings with 7.5∼10% TSP solutions for 10 min showed significantly inhibitory effect in preventing the growth of aerobic microbes. For odor and appearance scores, chicken wings treated with 0.5∼2% acetic solutions resembled untreated wings for storage of 16 days at 4$^{\circ}C$. However, both odor and appearance scores of chicken wings treated with 2.5∼10% TSP solutions were similar to those of untreated wings for storage of 4 days, and a higher in the storage of beyond 8 to 12 days at retail store.

테트라싸이클린 젤 및 구연산함유 테트라싸이클린 젤의 도포가 치주염에 이환된 치근표면에 미치는 영향에 관한 실험 연구 (The effects of tetracycline gel with and without citric acid on periodontally diseased root surface - in vitro study)

  • The purpose of the present study was to evaluate the effects of 5% tetracycline(Tc) with or without citric acid on periodontally diseased root surfaces. Six single-rooted teeth extracted from one patient was selected and received thorough scaling and root planning, followed by saline irrigation. Each one tooth was divided into eight fragments with a thin separating disc. Total 48 fragments were prepared and setted into 4 groups for this study. Group I (control group)were treated with saline. Group II were treated with 5% Tc gel. Group III were treated with 33% citric acid-5% Tc gel. Group IV were treated with Tc solution. All the specimens are evaluated under Scanning Electron Microscope(SEM). Group I showed large amount of debris in spite of thorough scaling and root planing, but Group II, III & IV showed clean and soft root surface texture. In higher magnification(x3, 000), Group II, III & IV showed nunmerous dentinal tubules, especially Group IV showed collagen fibrils. In the present study, Tc gel and Tc gel with citric showed clinically successful result when treated on periodontally diseased root surface, in vitro.

생리활성 성분을 처방한 헤어토너가 탈색모발에 미치는 영향 (Effects of Hair Toner Formulated with Bioactive Substances on Bleached Hair)

  • Hair toners containing polyphenol or Vitamin B5 were investigated according to their recovering effects on hair damaged by bleaching. Surface morphology, CIE L*a*b* values, and tensile properties of hair were measured. The amount of protein leaking from hair was investigated using the Bradford protein assay. The amino acid composition of hair was examined using the HPLC instrument. Hair became severely damaged after bleaching, showing cuticle structure with surface melt down and rolled up tip, a decrease in tensile strength, an increase in protein leak, and an increase in the proportion of cysteic acid. When bleached hair was treated with the two types of hair toner, positive effects were seen in the recovery of cuticle structure and retention of bleached color, an increase in tensile strength, a decrease in protein leak up to certain days, and an increase in the retention of protein examined by the HPLC analysis of amino acids. Hair treated with B5 toner showed better effects on the increase of tensile strength compared to the hair treated with PP toner. Hair treated with PP toner showed better retention of color, less protein leak, and a lower proportion of cysteic acid compared to the hair treated with B5 toner.

The Effects of Surfactants on the Biosynthesis of Galactolipid and the Composition of Fatty Acids in Chloroplast Envelope rind Thylakoid Membrane of Chlorella ellipsoidea

  • To analyze the effects of surfactants on the biosynthesis of galactolipid and the composition of fatty acids, the chloroplast envelope and thylakoid membrane were cultivated in medium treated with anionic surfactants, such as linear alkylbenzene sulfonate (0.002%, LAS), a-olefin sulfonate (O.01%, AOS), and sodium lauryl ether sulfate (0.08%, SLES), respectively. During the cultivation, the chloroplast envelope and thylakoid membrane were isolated from the cells collected at the early and middle phase of the culture and the contents of their fatty acid composition were compared with the control. When treated with surfactants, the contents of total lipid MDGD methylesters, and DGDG methylesters decreased significantly when compared with the control. It was also confirmed that more unsaturated fatty acids were involved in the biosynthesis of galactolipid. The fatty acids utilized in the biosynthesis of MGDG were in the chloroplast envelope and in the control, and linoleic acid in LAS, linolenic acid and oleic acid in AOS, and linolenic acid and oleic acid in SLES. The fatty acids in the biosynthesis of DGDG were linolenic acid and oleic acid in the control linolenic acid and stearic acid in LAS, oleic acid and linolenic acid in AOS, oleic acid and linolenic acid in SLES. In the thylakoid membrane, the major fatty acids in the biosynthesis of MGDG were linolenic acid and oleic acid in the control, oleic acid and linolenic acid in LAS, linolenic acid and linoleic acid in AOS, linolenic acid and palmitoleic acid in SLES. The fatty acids in the biosynthesis of DGDG were linolenic acid and oleic acid in the control, oleic acid and linolenic acid in LAS, linolenic acid and linoleic acid in AOS, palmitoleic acid and oleic acid in SLES.

산화양모의 효소처리에 의한 양모섬유의 개질(제1보)-화학적 성질의 변화- (Modification of Oxidation Wool Treated with Protease(Part I)-Changes of chemical properties)

  • The purpose of this study is the investigation of chemical properties of wool treated with oxidants and protease at low temperature. The chemical degradation of the fibers were investigated by measuring $\alpha$-amimo acid contents and FT-IR analysis. In addition, urea-hydrogensulfite solubility was measured to compare to the oxidation and protease treated wool. The results were as follows. 1) By the oxidation of wool, cystine is oxidised to cysteic acid by way of the intermediate oxides, cystine-S-monooxide and cystine-S-dioxide, in the case hydrolysis catalysed by the protease catalyse. Also, $\alpha$-amimo acid contents is increased, and urea-hydrogensulfite solubility was lower than that of untreated wool. This chemical degradation of wool was occurred due to oxidate hydrolysis in the order of permonosulfate>dichloroisocyanuric acid$\geq$chlorine. 2) The chemical degradation of wool was accelerated by the protease treatment of oxidized wool. Oxidation of wool is considered to make the fiber more susceptibled to enzymatic attact by opening disulphide bond within wool. Enzymatic attact was effectively directed to the wool oxidised by permonosulfate.

Inhibitory Effects of Ultrasound in Combination with Ascorbic Acid on Browning and Polyphenol Oxidase Activity of Fresh-cut Apples

  • This study was conducted to investigate the effect of ultrasound with ascorbic acid on the quality of fresh-cut apples. Prepared apple cubes were dipped in distilled water (US) or in 1% ascorbic acid solution (AS), both were treated with ultrasound at 40 kHz, while the other sample was just dipped in 1% ascorbic acid solution for 1 min (AA). All samples were stored at $4^{\circ}C$ for 12 days. AS treatment had an effect on apple cube color as indicated by its significantly higher L values and lower ${\Delta}E$ value whereas AA- and US-treated samples showed a considerable browning. Higher inhibition rate on browning and polyphenol oxidase (PPO) activity of 46 and 98%, respectively, were observed after AS treatment. The highest total phenolic content of AS-treated samples was shown during whole storage periods. This investigation revealed that the use of ultrasound in combination with ascorbic acid had a positive effect on quality maintaining of fresh-cut apples.

절임 배추의 세척 조건에 따른 김치의 숙성중 품질 변화 (Effect of Washing Conditions in Salted Chinese Cabbage on the Quality of Kimchi)

  • 김치의 저장성을 연장하기 위한 시도의 하나로 1,000 ppm 농도의 자몽종자추출물(grapefruit seed extrtact, GFSE)과 구연산 용액에 절임 배추를 각각 씻어서 김치를 담근 다음 숙성시키면서 품질 특성의 변화를 측정하였다. GFSE 및 구연산에 세척한 배추로 담근 김치는 대조구에 비하여 pH 저하 및 적정산도의 증가가 늦어지는 것으로 나타나 숙성 기간의 연장 효과가 있는 것으로 나타났다. 또한 환원장은 GFSE로 처리한 시험구가 숙성 20일까지 가장 높은 값을 나타내어 발효가 억제되는 것으로 나타났다. GFSE를 처리한 시험구는 숙성 10일까지 대조구에 비하여 총균수 및 유산균수가 낮은 것으로 나타났으나 구연산 처리구는 대조구와 큰 차이를 나타내지는 않았다.

Change of phase transformation and bond strength of Y-TZP with various hydrofluoric acid etching

  • Objectives: The purpose of this study was to quantify phase transformation after hydrofluoric acid (HF) etching at various concentrations on the surface of yttria-stabilized tetragonal zirconia polycrystal (Y-TZP), and to evaluate changes in bonding strength before and after thermal cycling. Materials and Methods: A group whose Y-TZP surface was treated with tribochemical silica abrasion (TS) was used as the control. Y-TZP specimens from each experimental group were etched with 5%, 10%, 20%, and 40% HF solutions at room temperature for 10 minutes. First, to quantify the phase transformation, Y-TZP specimens (n = 5) treated with TS, 5%, 10%, 20% and 40% HF solutions were subjected to X-ray diffraction. Second, to evaluate the change in bond strength before and after thermal cycling, zirconia primer and MDP-containing resin cement were sequentially applied to the Y-TZP specimen. After 5,000 thermal cycles for half of the Y-TZP specimens, shear bond strength was measured for all experimental groups (n = 10). Results: The monoclinic phase content in the 40% HF-treated group was higher than that of the 5%, 10%, and 20% HF-treated groups, but lower than that of TS-treated group (p < 0.05). The 40% HF-treated group showed significantly higher bonding strength than the TS, 5%, and 10% HF-treated groups, even after thermal cycling (p < 0.05). Conclusions: Through this experiment, the group treated with SiO2 containing air-borne abrasion on the Y-TZP surface showed higher phase transformation and higher reduction in bonding strength after thermal cycling compared to the group treated with high concentration HF.

Effect of Lactobacillus buchneri 40788 and Buffered Propionic Acid on Preservation and Nutritive Value of Alfalfa and Timothy High-moisture Hay

  • The effects of Lactobacillus buchneri 40788 and buffered propionic acid on preservation, intake and digestibility of alfalfa (Medicago sativa) and timothy (Phleum pratense) hay were investigated. During baling, forages were treated with L. buchneri 40788 (1.2${\times}$10$^6$ CFU/g) as a liquid (LLB) or as a granular preparation (GLB), with buffered propionic acid (10 mL/kg, BPA), or left untreated (control). Triplicate 500 kg round bales of each treatment were put up at two moisture levels for each forage: 17%${\pm}$0.33% and 20%${\pm}$0.30% for timothy and 17%${\pm}$0.20% and 19%${\pm}$0.27% for alfalfa (mean${\pm}$SD). Bales were sampled for chemical and microbiological analyses after 0, 30 and 60 d of storage. Compared to controls, all preservatives reduced (p<0.05) heating of both forages at all moisture levels with the exception of alfalfa baled at 19% moisture. After 60 d of storage, GLB reduced (p<0.05) moulds in 17% timothy hay as compared to other treatments, but at 20% moisture, moulds were reduced in LLB- and BPA-treated timothy as compared to controls. In alfalfa at 17% moisture, total bacteria were lower (p<0.05) in GLB-treated bales than LLB or control bales, but yeast and total bacteria were only reduced in BPA-treated alfalfa at 19% moisture. In situ DM disappearance of timothy (both moisture levels) and alfalfa (19% moisture level) increased (p<0.05) with LLB treatment compared to control. Digestibility of both forages did not differ (p>0.05) among treatments, however, voluntary DM intake of LLB-treated timothy (1.32 kg/d) was 22.3% higher (p<0.05) than control, and 14.1% higher than BPA-treated timothy. Treating timothy and alfalfa hay with L. buchneri 40788 or buffered propionic acid may improve the nutritive value of the hay when baled at 17 to 20% moisture.

Resistance Induction and Enhanced Tuber Production by Pre-inoculation with Bacterial Strains in Potato Plants against Phytophthora infestans

  • Efficacy of resistance induction by the bacterial isolates Pseudomonas putida (TRL2-3), Micrococcus luteus (TRK2-2) and Flexibacteraceae bacterium (MRL412), which were isolated from the rhizosphere of plants growing in Jeju Mountain, were tested in a greenhouse. The disease severity caused by Phytophthora infestans was effectively reduced in the potato plants pre-inoculated with bacterial isolates compared with those of the untreated control plants growing in a greenhouse. In order to estimate the level of protection by the bacterial isolates, Mancozeb WP (Diesen $M^{(R)}$, Kyong nong) and DL-3-amino butyric acid (BABA) were pre-treated, whereas Dimethomorph WP ($Forum^{(R)}$, Kyong nong) and phosphonic acid ($H_{3}PO_{3}$) were post-treated the challenge inoculation with the pathogen. Disease severities of chemical pre-treated as well as post-treated plants were reduced compare to those of the untreated. The disease reduction in the plants pre-treated with Mancozeb WP was the highest, whereas that of post-treated with Dimethomorph WP was the lowest. The yields of plants pre-inoculated with three bacterial isolates were greatly increased than those of control plants. These results suggest that biological control by bacterial isolates might be an alternative strategy against late blight disease in potato plants growing in greenhouse.
