Studies on the Storage of Functional Red Soybean Curd (기능성 홍두부의 저장성)

  • We prepared a functional red soybean curd (RS) from Ang-Khak according to various concentration (RS1 : red rice powder 0.1 g/10 mL, RS2: 0.2 g/10 mL, RS3: 0.3 g/10 mL, RS4: 0.4 g/10 mL, RS5: 0.5 g/10 mL, CS: control soybean curd). During the storage period of red soybean curd, pH, acidity, and microbial counts showed a minimum change in RS5. And in the case of color, all groups have slightly increased in yellowness except RS1. In the case of texture, hardness, gumminess, and springiness appeared to be increased for a few days and then fell down. As water drained out of soybean curd during storage at 1$0^{\circ}C$, it became so stiff and then rotten that the hardness of soybean curd increased in the early stage and then decreased after all. After a week, we could find a better preservative effect of RS than CS. Resultly, we need more efforts to prolong the shelf-life of soybean curd with applying the functionality of Ang-Khak.

Effects of Rice Straw (RS) on Allergic Contact Dermatitis (ACD) Induced by DNCB in Mice (볏집 도초(稻草)이 DNCB로 유발된 생쥐의 알레르기성 접촉성 피부염에 미치는 영향)

  • Objectives In the theory of Korean medicine, rice straw (RS) has been used effectively as treatments for dyspepsia, diarrhea, enteritis, inflammatory epigastric diseases and various dermatitis. However, the theory has not been studied intensively yet about anti-inflammatory effects for human. This study was to investigate effects of RS for a treatment of allergic contact dermatitis (ACD) induced by 2,4-dinitrochlorobezene (DNCB) in mice. Methods In this experiment, effects of RS were investigated on changes in body weights, dorsum skin thickness, clinical aspects on the dorsum skin, spleen and body weight among these four groups; normal group (NOR), control group (CON), RS spread group (RSS) and RS spread and administer group (RSS+Adm). In addition, the effects on proliferations of splenocytes were also investigated in vitro and in vivo study. Results RSS group and RSS+Adm group showed increasing in body weights, diminished dorsum skin thickness and treated dermatitis on dorsum skin. In RSS+Adm group, spleen weights were lowered significantly compared to CON group. Conclusions In conclusion, these data suggest that RS can decrease symptoms of ACD significantly, and it shows the anti-inflammatory and immunosuppressant effect as well. Therefore, RS can be useful to treat patients with ACD.

A Case Study on the Regional Activation Review on the Road Station in Japan (일본 미찌노에끼의 농촌지역 활성화 사례)

  • Since 2000, family tour has increased a lot by effect of five-day workweek in South Korea. So, it became much needed road station. however road station's facilities are lacking. Recently, there is a growing emphasis on rural regional activation. So the government is concentrating in rural policy. In Japan case study, Road Station(RS, Michinoeki) make regional activation by Road station service. Rs is rest area for motor driver in rural area. In general, it is construct at rural roads, not a highway. In this paper, we hope to take a lesson from the RS case study. 2015, 2016, in japan, we visited to 7 case study and interviewed to a staff. As a result, In Japan's Rs was offering convenient services to motor driver and raising farmers's profits by selling local produce. The aim of that this paper is to suggest to Korean Type's Rs. There are five results from this paper as follows : First, Japan Rs, it works well to improve in regional activation in rural area. Two, Also Rs has to community facilities attached to the culture, welfare, library etc. Three, 5 Korean Type Rs can sort out. There are Community type, Joint tourism type, 6th industrialization type, Urban-Rural Interchange type, Shopping center type. This RS is introduced to Korea hopes to contribute to the regional activation in rural area.

Effect of 'DaoCao' on the inflammatory cytokines in Human Jurkat cell and THP-1 cell (나초(糯草) 에탄올추출물이 Human 유래 Jurkat 세포와 THP-1 세포의 알러지 및 염증 사이토카인에 미치는 영향)

  • Objectives : The aim of this study is to investigate anti-inflammatory activity using various extracts of rice straw (DaoCao) extract (RS).Methods : To investigate the anti-inflammatory effect of RS, we examined the effect of RS on cytokines production on THP-1 cell. Cells were cultured in incubator (37℃, CO25%, 0.5% FBS-RPMI, 1X106cells/ml). One hour after,Dermatophagoides pteronissinus(Dp., 10 ug/ml) was treated into cell and at 6 hour after, each different concentrations(0.1, 1 and 10 ug/ml) of RS were treated. The cells were incubated for 16 hours and harvest the supernatant. The levels of IL-4, IL-5, IL-6, IL-8, MCP-1 and TNF-αwere determined using a commercially available ELISA kit.Results : We investigated whether RS has the inhibition of inflammatory response in Jurkat cells and THP-1 cells. RS suppressed secretion of IL-4, IL-5, and TNF-αinduced by house dust mites in Jurkat cells. It showed significant effects for all concentrations. RS suppressed the increased expression of IL-6, IL-8 and MCP-1 after treatment with mite in THP-1 cells. These results suggest that RS may be used as a valuable agent for treating allergic diseases such as atopy due to its anti-inflammatory property.Conclusions : RS showed significant biological activities with anti-inflammatory in the human T cells. These results suggest that RS may be used as a valuable agent for treating allergic diseases such as atopy due to its anti-inflammatory property. In terms of Korean traditional medicine, we expect the results to contribute to building of EBM (Evidence-Based Medicine).

Bifidobacterium adolescentis P2P3, a Human Gut Bacterium Having Strong Non-Gelatinized Resistant Starch-Degrading Activity

  • Resistant starch (RS) is metabolized by gut microbiota and involved in the production of short-chain fatty acids, which are related to a variety of physiological and health effects. Therefore, the availability of RS as a prebiotic is a topic of interest, and research on gut bacteria that can decompose RS is also important. The objectives in this study were 1) to isolate a human gut bacterium having strong degradation activity on non-gelatinized RS, 2) to characterize its RS-degrading characteristics, and 3) to investigate its probiotic effects, including a growth stimulation effect on other gut bacteria and an immunomodulatory effect. Bifidobacterium adolescentis P2P3 showing very strong RS granule utilization activity was isolated. It can attach to RS granules and form them into clusters. It also utilizes high-amylose corn starch granules up to 63.3%, and efficiently decomposes other various types of commercial RS without gelatinization. In a coculture experiment, Bacteroides thetaiotaomicron ATCC 29148, isolated from human feces, was able to grow using carbon sources generated from RS granules by B. adolescentis P2P3. In addition, B. adolescentis P2P3 demonstrated the ability to stimulate secretion of Th1 type cytokines from mouse macrophages in vitro that was not shown in other B. adolescentis. These results suggested that B. adolescentis P2P3 is a useful probiotic candidate, having immunomodulatory activity as well as the ability to feed other gut bacteria using RS as a prebiotic.

A Study on Feedstuff Utilization of Agricultural By-Products as a Major Feed Source in Korean Native Goat (농산부산물을 이용한 한국재래산양의 사료개발에 관한 연구)

  • This study was carried out to investigate the amounts of voluntary intake, digestibility and nitrogen retention in Korean native goats (KNG) fed agricultural by-products containing rice straw (RS) and apple pomace (AP) and to obtain a basic information for establishing the feeding system of KNG. The result are as follows. 1. Among the chemical composition of experimental diets, the highest values in crude protein (CP ; 18.6%) and crude ash contents (10.7%) were observed in alfalfa hay. Those of RS+AP treatment were significantly low 6.0 and 4.8%, respecitively. Acid detergent fiber (ADF), ether extract and non-structural carbohydrate (NSC) contents were shown an adverse tendency. 2. Dry matter (DM) intakes per day in KNG fed RS+commercial diet (CD), RS+AP and RS+AP+CD were significantly lower (P<0.05) 210.3, 228.3, respectively than 358.1g in alfalfa hay. 3. DM intakes per basal weight expressed as DM g/kg of BW0.75 and DM g/kg of BW(%) were highest (P<0.05) 60.5g and 3.3%, respectively in KNG fed alfalfa hay, any other treatments showed 35.6 to 42.5g and 2.0 to 2.3%, respectively and this result was similar to those of DM intake per day. 4. Digestibilities of DM, organic matter, CP, ADF, neutral detergent fiber (NDF). crude ash and ether extract in alfalfa hay and RS+AP+CD treatment were significantly higher (P<0.05) than RS+CD treatment. Those of CP, ADF and NDF of RS+AP treatment in not significantly different with these treatments. 5. NSC digestibility was higher in alfalfa hay (66.7%) than those of other treatments (44.2~52.0% ; P<0.05). 6. Nitrogen retentions expressed as N retention(g) and N retention (%) in KNG were highest (P<0.05) 0.6g and 15.6%, respectively in RS+AP+CD treatment and RS+CD treatment was lowest (P<0.05) -06g and -21.4%, respectively.

Changes in Quality Characteristics of Jeungpyun containing different Levels of Malt Extract during Storage (엿기름 추출액의 첨가량에 따른 증편의 저장 중 품질 특성 변화)

  • This study evaluated the effects of different levels of malt extract on the hardness, moisture, water soluble starch (WSS) contents, and in vitro starch digestibility (IVSD) of Jeungpyun during storage at room temperature ($25{\pm}1^{\circ}C$) and refrigeration temperature ($4{\pm}1^{\circ}C$). Resistant starch (RS) and soluble starch (non-RS) contents were also evaluated. During storage at both temperatures, hardness increased in Jeungpyuns with the malt extract-added Jeungpyun groups (malt-added Jeungpyuns) exhibiting lower hardness than the control. The rate of retrogradation was faster upon storage at refrigeration temperature. Moisture and WSS contents as well as IVSD of Jeungpyuns decreased, whereas these levels were higher in malt-added Jeungpyuns compared to control. Storage increased RS contents in Jeungpyuns stored for up to 4 days, particularly at $4^{\circ}C$, whereas there was a decrease in RS content after 7 days of storage. However, RS content was lower in malt-added Jeungpyuns compared to control. Soluble starch (SS) contents of Jeungpyuns decreased. However, SS content was higher in malt-added Jeungpyuns than that of control. The reduced hardness and RS content as well as the rate of increase in other parameters of malt-added Jeungpyuns were dependent on the concentration of malt extract. These results reveal that addition of malt extract delayed retrogradation of Jeungpyun, whereas retrogradation possibly increased the content of RS during storage at both temperatures, however, that of RS decreased with increasing level of malt extract, suggesting that the level of malt extract as well as the storage conditions are important for obtaining acceptable texture and retaining the RS content of Jeungpyun, which is known to possess physiological activity.

Effect of micro-environment in ridge and southern slope on soil respiration in Quercus mongolica forest

  • Background: Soil respiration (Rs) is a major factor of the absorption and accumulation of carbon through photosynthesis in the ecosystem carbon cycle. This directly affects the amount of net ecosystem productivity, which affects the stability and sustainability of the ecosystem. Understanding the characteristics of Rs is indispensable to scientifically understand the carbon cycle of ecosystems. It is very important to study Rs characteristics through analysis of environmental factors closely related to Rs. Rs is affected by various environmental factors, such as temperature, precipitation, soil moisture, litter supply, organic matter content, dominant plant species, and soil disturbance. This study was conducted to analyze the effects of micro-topographical differences on Rs in forest vegetation by measuring the Rs on the ridge and southern slope sites of the broadly established Quercus mongolica forest in the central Korean area. Method: Rs, Ts, and soil moisture data were collected at the southern slope and ridge of the Q. mongolica forest in the Mt. Jeombong area in order to investigate the effects of topographical differences on Rs. Rs was collected by the closed chamber method, and data collection was performed from May 2011 to October 2013, except Winter seasons from November to April or May. For collecting the raw data of Rs in the field, acrylic collars were placed at the ridge and southern slope of the forest. The accumulated surface litter and the soil organic matter content (SOMC) were measured to a 5 cm depth. Based on these data, the Rs characteristics of the slope and ridge were analyzed. Results: Rs showed a distinct seasonal variation pattern in both the ridge and southern slope sites. In addition, Rs showed a distinct seasonal variation with high and low Ts changes. The average Rs measurements for the two sites, except for the Winter periods that were not measured, were $550.1\;mg\;CO_2m^{-2}h^{-1}$ at the ridge site and $289.4\;mg\;CO_2m^{-2}h^{-1}$ at the southern slope, a difference of 52.6%. There was no significant difference in the Rs difference between slopes except for the first half of 2013, and both sites showed a tendency to increase exponentially as Ts increased. In addition, although the correlation is low, the difference in Rs between sites tended to increase as Ts increased. SMC showed a large fluctuation at the southern slope site relative to the ridge site, as while it was very low in 2013, it was high in 2011 and 2012. The accumulated litter of the soil surface and the SOMC at the depth range of 0~5 cm were $874g\;m^{-2}$ and 23.3% at the ridge site, and $396g\;m^{-2}$ and 19.9% at the southern slope site. Conclusions: In this study, Rs was measured for the ridge and southern slope sites, which have two different results where the surface litter layer is disturbed by strong winds. The southern slope site shows that the litter layer formed in autumn due to strong winds almost disappeared, and while in the ridge site, it became thick due to the transfer of litter from the southern slope site. The mean Rs was about two times higher in the ridge site compared to that in the southern slope site. The Rs difference seems to be due to the difference in the amount of litter accumulated on the soil surface. As a result, the litter layer supplied to the soil surface is disturbed due to the micro-topographical difference, as the slope and the change of the community structure due to the plant season cause heterogeneity of the litter layer development, which in turn affects SMC and Rs. Therefore, it is necessary to introduce and understand these micro-topographical features and mechanisms when quantifying and analyzing the Rs of an ecosystem.

Effect of Resistant Starch on Body Weight and Defecation in Loperamide-induced Constipated Rats (저항전분 투여가 loperamide 유도 변비 쥐의 체중변화와 배변상태에 미치는 영향)

  • The present study was conducted to evaluate the effects of resistant starches (RS2, RS3) on weight change and defecation states in rats with constipation induced by loperamide. Sixty male Sprague-Dawley rats were divided into the following six groups: normal control-5% cellulose (NC), constipated-5% cellulose (CC), constipated-5% pectin (CP), constipated-5% RS2 (CR2), constipated-8% RS2 (CR2-H) and constipated-5% RS3 (CR3). The animals were fed AIN76-based experimental diets for 5 weeks. Supplementation of RS2 and RS3 resulted in significantly lower feed efficiency ratios and body weight gain as compared to cellulose supplemented group. Large intestine length was significantly longer in the resistant starch and cellulose groups than in the pectin group. Relative fecal weight to feed intake was significantly higher in the RS3 resistant starch group than in the pectin group, and the appearance of feces was similar to that of the cellulose group. Supplementation of RS3 or cellulose significantly shortened gastrointestinal transit time in the constipated rats as compared to pectin. The results of the present study demonstrated that resistant starch supplementation, especially RS3, may help in depress body weight gain and alleviate constipation through an increase of fecal weight and shortening gastrointestinal transit time in constipated animals.

Mapping of QoS Information Elements and Implementation of Rs/Rw Interface Resource Control Protocols in NGN (NGN에서의 QoS 정보요소 매핑 및 Rs/Rw 인터페이스의 자원제어 프로토콜 구현)

  • NGN is a packet-based converged network to support session and non-session services in QoS-enabled broadband transport network. QoS based resource control must be defined to support differentiated services for various network users in NGN. We designed and implemented DIAMETER protocol as the Rs interface, and also defined mapping rules between DIAMETER information elements and SDP(Session Description Protocol) attributes for QoS based resource control in NGN. We selected and implemented DIAMETER protocol among alternate resource control protocols in ITU-T as the Rw interface because of simple interworking method with Rs interface and adequate AAA functionality. We defined mapping rules of messages and information elements between Rs and Rw interfaces for resource control from a service layer to a transport layer. Based on the mapping rule of QoS information elements and the interworking method between Rs and Rw interfaces, we built up a test-bed that support differentiated delivery services.
