Relationship between health behaviors and high level of low density lipoprotein-cholesterol applying cardiovascular risk factors among Korean adults: based on the sixth Korea National Health and Nutrition Examination Survey (KNHANES VI), 2013 ~ 2015 (성인의 심혈관계 위험인자를 적용한 고저밀도지단백-콜레스테롤혈증과 건강행태의 관련성 연구 : 국민건강영양조사 제6기 (2013 ~ 2015) 자료 이용)

  • Purpose: This study was designed to determine the relationship between health behaviors and high levels of low-density lipoprotein-cholesterol (LDL-cholesterol) according to cardiovascular risk factors among Korean adults. Methods: This cross-sectional study was based on the sixth Korea national health and nutrition examination survey (KNHANES VI). Participants were 13,841 adults aged 19 years and older. Cardiovascular risk factors were stroke, myocardial infarction or angina, diabetes mellitus, smoking, hypertension, aging, high density lipoprotein-cholesterol (HDL-cholesterol) under 40 mg/dL and HDL-cholesterol over 60 mg/dL. Cardiovascular risk groups were classified as very high risk (stroke, myocardial infarction or angina), high risk (diabetes mellitus), moderate risk (over 2 risk factors), and low risk (below 1 risk factor). The prevalence of high LDL-cholesterol was calculated using the LDL-cholesterol target level according to cardiovascular risk group. Results: The prevalence of high LDL-cholesterol was 25.5% in males and 21.7% in females. Complex sample cross tabulation demonstrated that the high LDL-cholesterol and normal groups differed significantly according to age, education, body mass index, percentage of energy from carbohydrate, fat, saturated fat and n-6 in males and females. These two groups were also significantly different according to smoking in males and the percentage of energy from n-3 in females. Complex sample multiple logistic regression analysis adjusted for multiple confounding factors demonstrated that the probability of high LDL-cholesterol was significantly associated with current smoking (OR: 1.66, 95% CI: 1.40-1.99), obesity (OR: 1.95, 95% CI: 1.64-2.31) in males, and current smoking (OR: 1.73, 95% CI: 1.19-2.52), obesity (OR: 1.63, 95% CI: 1.39-1.90), percentage of energy from n-3 (quartile 1 vs. quartile 2; OR: 0.77, 95% CI: 0.62-0.96; quartile 1 vs. quartile 3; OR: 0.73, 95% CI: 0.56-0.94; quartile 1 vs. quartile 4: OR: 0.67, 95% CI: 0.51-0.87) in females. Conclusion: This study reveals the impact of smoking, obesity, energy percentage of nutrient intake on LDL-cholesterol.

Effects Against Obesity and Diabetes of Red Pepper (Capsicum annuum L.) Fermented with Lactic Acid Bacteria (유산균을 이용한 홍고추의 발효를 통한 항비만과 항당뇨 효과)

  • The red pepper (Capsicum annuum L.) is one of the most important vegetables in traditional Korean food, containing vitamins A, C, and E, polyphenol, and flavonoids. In addition, red peppers have high anti-oxidant ability and are known to be effective in preventing obesity, diabetes, hypertension, digestive disorders, stress, and aging. In this study, we investigated the effects against obesity and diabetes of both fermented and non-fermented red pepper. C57BL/6N mice with induced obesity from an eight-week 45% high fat diet (HFD) were then fed either an HFD or diets containing 2.5% non-fermented red pepper marc (NRM), 1.25% fermented red pepper marc (FRM), or 2.5% FRM for a further eight weeks. An oral glucose tolerance test was performed seven weeks after dietary intake, and body weight, liver, epididymal fat weight, serum insulin level, and HOMA-IR were measured and a lipid content test performed at eight weeks. The results show that the 2.5% FRM diet reduced body and tissue weight, lipid content, serum insulin levels, and HOMA-IR compared to the 2.5% NRM and HFD diets. These results suggest that fermented red pepper is effective against obesity and diabetes. We will use this information as the basic data for the development of health food materials using red pepper.

Performance assessment of an urban stormwater infiltration trench considering facility maintenance (침투도랑 유지관리를 통한 도시 강우유출수 처리 성능 평가)

  • Stormwater runoff containing considerable amounts of pollutants such as particulates, organics, nutrients, and heavy metals contaminate natural bodies of water. At present, best management practices (BMP) intended to reduce the volume and treat pollutants from stormwater runoff were devised to serve as cost-effective measures of stormwater management. However, improper design and lack of proper maintenance can lead to degradation of the facility, making it unable to perform its intended function. This study evaluated an infiltration trench (IT) that went through a series of maintenance operations. 41 monitored rainfall events from 2009 to 2016 were used to evaluate the pollutant removal capabilities of the IT. Assessment of the water quality and hydrological data revealed that the inflow volume was the most relative factor affecting the unit pollutant loads (UPL) entering the facility. Seasonal variations also affected the pollutant removal capabilities of the IT. During the summer season, the increased rainfall depths and runoff volumes diminished the pollutant removal efficiency (RE) of the facility due to increased volumes that washed off larger pollutant loads and caused the IT to overflow. Moreover, the system also exhibited reduced pollutant RE for the winter season due to frozen media layers and chemical-related mechanisms impacted by the low winter temperature. Maintenance operations also posed considerable effects of the performance of the IT. During the first two years of operation, the IT exhibited a decrease in pollutant RE due to aging and lack of proper maintenance. However, some events also showed reduced pollutant RE succeeding the maintenance as a result of disturbed sediments that were not removed from the geotextile. Ultimately, the presented effects of maintenance operations in relation to the pollutant RE of the system may lead to the optimization of maintenance schedules and procedures for BMP of same structure.

The Customary Employment of So Dalguji(Ox-Cart) among the Old Generation in a Mountain Village and its implication (산간농촌 노년층의 소달구지 이용관행과 그 의미)

  • The basic approach of this study was to take the theory of cultural fluctuations to investigate the early modern and modern patterns of the use of ox carts and@ the social and economic appropriateness and cultural significance of ox carts. The study chose a village that was the only place that used ox carts in Bugye-myeon. The findings will help to understand how traditional cultural elements would continue or change according to the natural, geographical, economical, and cultural characteristics of a village. Located in Gaho-2-ri, Bugye-myeon, Gunwi-gun, Gyeongbuk Province, Dongrim Village started to use ox carts during the Japanese rule and replaced the traditional version with an improved one in 1972 when a reservoir was built. Until the 1970s, they used ox carts to carry agricultural products and luggage and to visit the markets in distant Bugye-myeon or Gunwi-eup. In the early 1980s when a cultivator was first introduced into the village, ox carts gradually disappeared in the village and eventually remained as a mere means of transportation. As the younger generations were active in introducing modern means of transportation, a cultivator became the main means of transportation in the village in the 1980s and a truck since the latter half of the 1990s. Despite those changes, however, the elderly in their seventies or older continued to use ox carts. With aged labor and inability to use modern means of transportation, they grew cows and oxen to cultivate the inclined fields and gain easy access to fields distributed in distant locations and continued to ox carts through reform. In Dongrim Village, the heritage of using reformed ox carts is the practice of appropriate technology by the old farmers and a cultural representation of an aged agricultural society. That is, the elderly recognized the appropriateness and practicality of traditional culture and renewed a traditional means of transportation called an ox cart. The phenomenon of the old men and women frequently using ox carts in an agricultural village in the mountain with geographical limitations has settled down as a cultural representation of the elderly in Dongrim Village. The continuing usage of ox carts in Dongrim Village is attributed to the fact that ox carts well suit the natural, geographical, and economic aspects of the village and the cultural inertia of the elderly with the aging of the farmers. Thus it is once again shown that human beings transmit and alter culture according to their overall situations and conditions.

Effect of Heat-Killed Enterococcus faecalis, EF-2001 on C2C12 Myoblast Damage Induced by Oxidative Stress and Muscle Volume Decreased by Sciatic Denervation in C57BL/6 Mice (산화스트레스에 의해 유도된 C2C12 근세포 손상과, 신경절제에 의해 근감소가 유도된 C57BL/6 마우스에서 열처리 사균체 엔테로코커스 패칼리스 EF-2001의 효과)

  • Muscle dysfunction may arise from skeletal muscle atrophy caused by aging, injury, oxidative stress, and hereditary disease. Powdered heat-killed Enterococcus faecalis (EF-2001) has anti-allergy, anti-inflammatory, and anti-tumor effects. However, its antioxidant and anti-atrophy effects are poorly characterized. In this study, we examined the effects of EF-2001 on muscle atrophy. To determine the protective effect of EF-2001 on oxidative stress, C2C12 myoblasts were treated with $H_2O_2$ to induce oxidative stress. This induced cell damage, which was reduced by treatment with EF-2001. The mechanism of EF-2001's effect was examined in response to oxidative stress. Treatment with EF-2001 reversed the expression of HSP70 and SOD1 proteins. Also, mRNA levels of Atrogin-1/MAFbx and MuRF1 increased under oxidative stress conditions but decreased following EF-2001 treatment. To evaluate muscle volume, two and three dimensional models of the muscles were analyzed using micro-CT. As expected, muscle volume decreased after sciatic denervation and recovered after oral administration of EF-2001. Therefore, EF-2001 is a candidate for the treatment of muscular atrophy, and future discovery of the additional effects of EF-2001 may yield further applications as a functional food with useful activities in various fields.

Chemical compositions of different cultivars of astringent persimmon (Diospyros kaki Thunb.) and the effects of maturity (떫은감(Diospyros kaki Thunb.) 품종 및 수확시기에 따른 영양 성분 변화)

  • This study aimed to determine the chemical components of different cultivars (Gabjubaekmok, Sangjudungsi, and Godongsi) of persimmon (Diospyros kaki Thunb.) and the effects of maturity. The detected free sugars were fructose and glucose, and glucose levels tended to increase with maturity. Palmitic acid, oleic acid, linoleic acid and stearic acid, and potassium were major components. In the amino acid component analysis, the following were usually present in the following month: glutamic acid in Gabjubaekmok in July, lysine in Sangjudungsi in August, and threonine in Godongsi in October. Vitamin C tended to increase with aging, and fruit harvested in July had the highest total phenolic and flavonoid contents. In the metabolite analysis, there were significant differences among cultivars and with maturity. The major physiological compounds were analyzed using ultra performance liquid chromatography quadrupole time-of-flight tandem mass ($UPLC/Q-TOF/MS^2$) and were citric acid and gallic aicd. As maturity progressed, citric acid increased but gallic acid decreased.

Growth and Useful Component of Angelica gigas Nakai under High Temperature Stress (고온 스트레스에 따른 참당귀의 생육 및 유용성분 특성)

  • Recently, the pace of global climate change has tremendously increased, causing extreme damage to crop production. Here, we aimed to examine the growth characteristics and useful components of Angelica gigas under extreme heat stress, providing fundamental data for its efficient cultivation. Plants were exposed to various experimental temperatures (28℃, 34℃, and 40℃), and their growth characteristics and content of useful components were analyzed. At the experimental site, the ambient and soil temperature were 19.38℃ and 21.34℃, ambient and soil humidity were 81.3 % and 0.18 m3/m3, solar radiation was 162.05 W/m2. Moreover, the soil was sandy-clay-loam (pH 6.65), with 2.66% organic matter, 868.52 mg/kg soil available phosphate, and 0.14% nitrogen. Values of most growth characteristics, including the survival rate (85%), plant height (38.66cm), and fresh and dry weight (41.3 g and 14.24 g), were the highest at 28℃. Although the highest content of useful components was observed at 34℃ (3.24%), there were no significant differences across temperatures. Growth characteristics varied across temperatures due to detrimental effects of heat stress, such as accelerated tissue aging, reduced photosynthesis, and delay of growth. Similar content of useful components across temperatures may be due to poor accumulation of anabolic products caused by impaired growth at extremely high temperatures.

The Optimal Operation on Auxiliary Spillway to Minimize the Flood Damage in Downstream River with Various Outflow Conditions (하류하천의 영향 최소화를 위한 보조 여수로 최적 활용방안 검토)

  • Recently, as the occurrence frequency of sudden floods due to climate change increased and the aging of the existing spillway, it is necessary to establish a plan to utilize an auxiliary spillway to minimize the flood damage of downstream rivers. Most studies have been conducted on the review of flow characteristics according to the operation of auxiliary spillway through the hydraulic experiments and numerical modeling. However, the studies on examination of flood damage in the downstream rivers and the stability of the revetment according to the operation of the auxiliary spillway were relatively insufficient in the literature. In this study, the stability of the revetment on the downstream river according to the outflow conditions of the existing and auxiliary spillway was examined by using 3D numerical model, FLOW-3D. The velocity, water surface elevation and shear stress results of FLOW-3D were compared with the permissible velocity and shear stress of design criteria. It was assumed the sluice gate was fully opened. As a result of numerical simulations of various auxiliary spillway operations during flood season, the single operation of the auxiliary spillway showed the reduction effect of maximum velocity and the water surface elevation compared with the single operation of the existing spillway. The stability of the revetment on downstream was satisfied under the condition of outflow less than 45% of the design flood discharge. However, the potential overtopping damage was confirmed in the case of exceeding the 45% of the design flood discharge. Therefore, the simultaneous operation with the existing spillway was important to ensure the stability on design flood discharge condition. As a result of examining the allocation ratio and the total allowable outflow, the reduction effect of maximum velocity was confirmed on the condition, where the amount of outflow on auxiliary spillway was more than that on existing spillway. It is because the flow of downstream rivers was concentrated in the center due to the outflow of existing spillway. The permissible velocity and shear stress were satisfied under the condition of less than 77% of the design flood discharge with simultaneous operation. It was found that the flood damage of downstream rivers can be minimized by setting the amount allocated to the auxiliary spillway to be larger than the amount allocated to the existing spillway for the total outflow with simultaneous operation condition. However, this study only reviewed the flow characteristics around the revetment according to the outflow of spillway under the full opening of the sluice gate condition. Therefore, the various sluice opening conditions and outflow scenarios will be asked to derive more efficient utilization of the auxiliary spillway in th future.

Global Rice Production, Consumption and Trade: Trends and Future Directions

  • The objectives of this paper are (i) to analyze past trends and future directions of rice production, consumption and trade across the world and (ii) to discuss emerging challenges and future directions in the global rice industry. Rice is a staple food of over half of the world's 7.7 billion people. It is an important economic, social, political, and cultural commodity in most Asian countries. Rice is the $1^{st}$ most widely consumed, $2^{nd}$ largely produced, and $3^{rd}$ most widely grown food crop in the world. It was cultivated by 144 million farms in over 100 countries with harvested area of over 163 million ha producing about 745 million tons paddy in 2018. About 90% of the total rice is produced in Asia. China and India, the biggest rice producers, account for over half of the world's rice production. Between 1960 and 2018, world rice production increased over threefold from 221 to 745 million tons (2.1% per year) due to area expansion from 120 to 163 million ha (0.5% per year) and paddy yield increase from 1.8 to 4.6 t/ha (1.6% per year). The Green Revolution led massive increase in rice production prevented famines, provided food for millions of people, reduced poverty and hunger, and improved livelihoods of millions of Asians. The future increase in rice production must come from yield increase as the scope for area expansion is limited. Rice is the most widely consumed food crop. The world's average per capita milled rice consumption is 64 kilograms providing 19% of daily calories. Asia accounted for 84% of global consumption followed by Africa (7%), South America (3%), and the Middle East (2%). Asia's per capita rice consumption is 100 kilograms per year providing 28% of daily calories. The global and Asian per capita consumption increased from the 1960s to the 1990s but stable afterward. The per capita rice consumption is expected to decline in Asia but increase outside Asia especially in Africa in the future. The total milled rice consumption was about 490 million tons in 2018 and projected to reach 550 million tons by 2030 and 590 million tons by 2040. Rice is thinly traded in international market because it is a highly protected commodity. Only about 9% of the total production is traded in global rice market. However, the volume of global rice trade has increased over six-fold from 7.5 to 46.5 million tons between the 1960s and 2018. A relatively small number of exporting countries interact with a large number of importing countries. The top five rice exporting countries are India, Thailand, Vietnam, Pakistan, and China accounting for 74% of the global rice export. The top five rice importing countries are China, Philippines, Nigeria, European Union and Saudi Arabia accounting for 26% of the global rice import. Within rice varieties, Japonica rice accounts for the highest share of the global rice trade (about 12%) followed by Basmati rice (about 10%). The high concentration of exports to a few countries makes international rice market vulnerable to supply disruptions in exporting countries, leading to higher world prices of rice. The export price of Thai 5% broken rice increased from 198 US$/ton in 2000 to 421 US$/ton in 2018. The volumes of trade and rice prices in the global market are expected to increase in the future. The major future challenges of the rice industry are increasing demand due to population growth, rising demand in Africa, economic growth and diet diversification, competition for natural resources (land and water), labor scarcity, climate change and natural hazards, poverty and inequality, hunger and malnutrition, urbanization, low income in rice farming, yield saturation, aging of farmers, feminization of agriculture, health and environmental concerns, improving value chains, and shifting donor priorities away from agriculture. At the same time, new opportunities are available due to access to new technologies, increased investment by the private sector, and increased global partnership. More investment in rice research and development is needed to develop and disseminate innovative technologies and practices to overcome problems and ensure food and nutrition security of the future population.

Bioactive compounds in food for age-associated cognitive decline: A systematic review (인지기능 개선을 위한 식품유래 생리활성소재에 대한 체계적 문헌고찰)

  • The rapid aging of society has led to a surge in cognitive dysfunction in the elderly. As there is limited evidence for the development of dementia in medicine, a shift in focus on prevention strategies using bioactive compounds in food is required. This systematic review evaluated the effects of various bioactive compounds on age-associated cognitive decline. The literature was searched for terms related to bioactive compounds in cognitive decline and article selection was limited to clinical randomized controlled trials for a single bioactive compound. We identified 21 studies that evaluated the strength of the evidence. ω-3 fatty acids and vitamin B presented a strong evidence level, whereas vitamin D and E, anserine/carnosine, and chromium were defined as having moderate levels of evidence. ω-3 fatty acids relieved cognitive decline and reduced amyloid β-related protein accumulation. Vitamin B decreased homocysteine levels, which is accompanied by alleviation of cognitive function. In conclusion, ω-3 and vitamin B have the potential to improve age-associated cognitive decline.
