Isolation and Identification of Starch Utilizing Yeast (전분이용성 효모의 분리 및 동정)

  • Direct starch-utilizing microorganisms were isolated from 50 samples. Among them, Y-5 strain was selected as one of the potential microorganisms which could utilize starch directly to produce protein or lipid as food resources. The Y-5 strain was identified as a strain of Sporobolomyces holsaticus. It grew on starch or inulin better than on glucose of fructose and its composition was 45% of crude protein, 16% of crude lipid and 9.2% of ash.

Prediction of Weight Losses and Quality Changes in Long Storage of Apples (사과 장기(長期) 저장(貯藏)에 있어서 중량감소(重量減少)와 품질변화(品質變化)의 예측(豫測))

  • Changes of weight loss and quality in 3 different apple cultivars and four storage conditions were investigated for 6 month storage. Weight loss changes in the pilot scale low temperature storage $(^{\circ}C)$ could be predicted with linear equations. Quality defects were remarkably increased at 5% of weight loss in all cultivars and storage conditions. It was possible to predict by linear equations the quality of apples by measuring acidity and texture highly correlated to the sensory scores.

  • This paper examined the impacts of the welfare reform program, California Work Pays Demonstration Program(CWPDP), implemented in 1992. CWPDP was designed to move welfare recipients into the labor market by reducing the amount of AFDC grants and one-third earned income disregard. The evaluation of the policy impacts on the welfare recipients was conducted in two areas: employment and earnings. This study used a subset of a database created by the California Department of Social Services, and University of California Data Archive and Technical Assistance. The subset is composed of 3,936 AFDC-FG cases selected in LA County: 1,311 control cases and 2,625 experimental cases. The control group was kept on the AFDC rules as of September 1992, while the experimental group was subject to AFDC rule changes implemented under CWPDP. The analyses of the employment and earnings using the random effects probit model and the random effects regression model, respectively, indicated that CWPDP did not effectively encourage female heads to participate in the labor market. It also revealed that CWPDP did not significantly increase the earnings of female heads. The findings imply that the disincentive structure of the public assistance program is not the main barrier preventing female heads from getting jobs and leaving the welfare rolls. Rather, participation in the labor market and exit from welfare is mainly determined by their own demographic characteristics and the economic cycle. Based on the findings, policy implications are suggested on the National Minimum Protection Program in Korea. Those include a flexible exemption rate for the earned income of beneficiaries, affordable child care services, and guaranteed public jobs.

  • The sorption characteristics of red pepper powder stored at various relative humidity and temperature were studied. At low relative humidity below RH 57%, the sorption equilibrium was easily attained, whereas at higher relative humidity above RH 75%, the powder was browned by higher equilibrium moisture content. The moisture content of monolayer value for the powder was ranging from 11.32% to 12.13% with temperature. First order regression equation of equilibrium moisture content for relative humidity was determined.

Microflora of Decayed Onion Bulbs and their Suppression by Fumigation Treatment (양파의 부패원인균 분포 및 훈증처리에 따른 억제효과)

  • Putrefactive microorganisms from infected onion bulbs collected at several areas were isolated and identified. The infecting microorganisms were mostly the species of Botrytis, Fusarium, Penicillium, Ericinia and Pseudomonas, among which the last was not pathogenic to onion bulbs. Fumigation of onion bulbs with Tetrachloroisophthalonitrile cut down decay rate by half of the control and the onion bulbs stored at 80% RH showed slow decay rate than those stored at 90% RH. The decay of onion bulbs was mainly caused by molds and the portions of them were 78-85% of Botrytis, 11-17% of Fusarium and 3-5% of Penicillium.

  • Fumigation of onion bulbs with Tetrachloroisophthalonitrile reduced weight loss by half of the control. The weight losses of the control onion bulbs stored at 80% RH were lower than those stored at 90% RH but no significantly different in case of fumigated onion bulbs. No rooting and sprouting to outside were detected during low temperature storage ($0^{\circ}C$) and $Q_{10}$ value of onion bulbs during storage was the range of 1.9-2.1. The weight losses of onion bulbs during storage were mainly due to decay rather than respiration, because there was positive correlation between weight loss and decay rate during storage period but not respiration ratio.

  • Sesamolin and sesamin in the five domestic varieties and seven of imported sesame seed were analyzed by High Performance Liquid Chromatography to evaluate quality of sesame oil. Their stability against roasting, changes of content during storage of sesame oil and differences in carry-through ratio by extracting method were also analyzed. The results indicated that the HPLC method was simple, rapid and reliable in the evaluation of sesame oil quality.

Energy Accounting in Peach Canning Operations (복숭아통조림의 가공중 에너지소비)

  • In order to establish the energy conservation strategy in canning of acid food, the enery consumption of peach canning factory was monitored. The energy intensity was investigated and quantification of thermal and electrical energy was undertaken in individual operations. For processing of 1 kg raw peach, thermal energy 864 kcal and electrical energy 0.045 KWh was consumed in overall factory. From daily processing of 14 M/T peach, 2060 kg waste like seeds and 1510 kg low grade product were produced, and syrup of 6240 kg was prepared for filling in can. Enery intensive operations were lyepeeling(35%) and pasteurization(53%). Steam quality in the monitored factory was in the range of $87{\sim}88%$ with no difference among processing lines and 23% of supplied thermal energy in pasteurization was utilized actually for heating food.

Energy Consumption in Sterilization Process (통조림 식품의 살균중 에너지 소비)

  • In order to obtain practical information for efficient energy usage in sterilization, energy consumption was monitored for various processing variables, i.e. heat transfer type (conduction and convection), can size (No. 202-2, No. 301-3, No. 301-7, and No. 603-2), retorting temperature $(110^{\circ}C-121^{\circ}C\;and\;130^{\circ}C)$, and sterilization method (steam, and hot water sterilization). Less energy was consumed for smaller can size and higher temperature, and this trend was more distinguished in conductive food than convective food. Hot water sterilization could lower energy consumption in conductive food, but not in convective food. Energy consumption data of this work was reasonable when compared with energy consumption of sterilization in canneries, and therefore thought to be able to be used for estimation, design and optimization of energy consumption in sterilization.

Longitudinal Patterns of Financial Kin Support and Welfare to Single Mother Families

  • This study examines longitudinal patterns of financial kin support and welfare given to single mother families using life table techniques. Drawing on the 1985-1993 Panel Study of Income Dynamics(PSID), I followed 560 single mothers from the time they began a single motherhood spell. About 30 percent of these single mothers received financial support from relatives, and 40 to 50 percent received AFDC and Food Stamps, respectively. Results indicate that kin support is more likely to be given in a transitional period and tends to decrease over time. In comparison, receiving welfare appears positively time-dependent.
