  • As a specialty oil, furan fatty acids have gained special attentions since they are known to play important roles in biological systems including human. Although several studies reported chemical synthesis of furan fatty acids, their synthesis consisted of complicated chemical multistep with chemical catalysts. Recently, a simple one-step heat treatment method was developed to produce a novel furan fatty acid, 7,10-epoxy-octadeca-7,9-dienoic acid (7,10-EODA) from a dihydroxyl fatty acid 7,10-dihydroxy-8(E)-octadecenoic acid (DOD). In this report we studied about optimization of environmental conditions for the maximum production of 7,10-EODA from DOD by heat treatment. Production of 7,10-EODA was maximized at over $85^{\circ}C$ for at least over 48 hour in hexane. Solvent volume for maximum production should be over 300 mL per 10 mg DOD.

  • TMR feed developed by adding mugwort originating from Jeju Island, was fed to Hanwoo to investigate the effects of feeding mugwort on nutritional composition, as well as the feasibility of producing Hanwoo beef with high quality and functionality. The samples for the experiment consisted of Hanwoo fed fattening cattle TMR feed without mugwort (control), and Hanwoo fed fattening cattle TMR feed with added mugwort (treatment). Feeding mugwort did not lead to a significant difference in the moisture, crude protein, crude fat, crude ash, calorie, cholesterol, and collagen contents. There was no significant difference between the control and treatment groups in mineral components. The control and treatment groups had total mineral amounts of 3,559.20 and 3,998.01 ppm, respectively. The total amount of structural amino acids did not show any significant difference between the control (14.56%) and treatment groups (13.90%). The total amount of free amino acids did not show any significant difference between the control (763.044 ppm) and treatment groups (720.885 ppm). The composition of saturated fatty acids was 42.956% for the control and 40.918% for the treatment group. Further, the composition of unsaturated fatty acids was 57.044% for the control and 59.082% for the treatment group. Myristic acid, myristoleic acid, pentadecenoic acid, palmitic acid, and ${\gamma}$-linolenic acid were increased by feeding mugwort. Arachidic acid was contained the most among the fatty acid of Hanwoo fed feed without mugwort (p<0.05).

  • This paper examines the effects of dietary fats on the fatty acid composition and market enzyme activites during liver damage in 2-acetylaminofluorene treated rats. Weaning Sprague-Dawley male rats were fed the diet of beef tallow(BT source of sturated fatty acid) corn oil(CO source of n-6 fatty acid) and perilla oil(PO source of n-3 fatty acid) at the level of 15% fat. Ten days after feeding 2-acetylaminofluorene(2-AAF) was injected intraperitoneally twice every week at the level of 50mg/kg body weight for 7 weeks. Liver microsomal and cytosolic fractions were collected to determine the microsomal fatty acid composition lipid peroxide(malondialdehyde MDA) contents glucose 6-phosphatase(G6 Pase) activity cytochrome(Cyt) P-450 contents and cytosolic glutathione S-transferase(G6 Pase) activity cytochrome(Cyt) P-450 contents and cytosolic glutathione S-transferase(GST) activity. The fatty acid composition in microsomal fraction was reflected by different dietary fats. By 2-AAF treatment linoleic acids were increased regardless of the diet MDA contents were higher in CO group than it was in BT group. However 2-AAF treatment decreased MDA contents in all dietary groups. G6Pase activity of BT group was higher than those of the other gropus. CO group had the highest Cyt P-450 contents and 2-AAF treatment lowered Cyt P-450 contents only in CO gropu GST activites were higher in CO than in BT group whereas the enzyme activites were increased by 20AAF treatment in all dietary groups. These results suggest that dietary fats and 2-AAF treatment in all dietary groups,. These results suggest that dietary fats and 2-AAF treatment affect microsomal fatty acid composition The enzyme activities concerned with liver damage were influenced differently by dietary fats and 2-AFF treatment Although PO diet contains much more polyunsaturated fatty acids than CO diet PO diet doesn't cause more oxidant stress compared with CO diet in these data.

  • The soy milk prepared from soy protein concentrate was treated with pretense of various concentrations. Growth and acid production by Lactobacillus acidophilus or L. bulgaricus in soy milk containing partially hydrolyzed protein were investigated. Sensory evaluation of soy yogurt beverages prepared from pretense treated soy milk was also performed. The treatment of soy milk with pretense markedly enhanced acid production by lactic acid bacteria, particularly by L. acidophilus, whereas pH and number of viable cells were not .affected by pretense treatment. Protease treatment of 15 minutes greatly enhanced acid production by lactic acid bacteria, but further treatment up to three hours did not affect the acidity markedly. The sensory evaluation showed that overall acceptability of soy yogurt beverages was slightly improved when soy milk was treated with pretense of 0.1%. The amount of non-protein nitrogen was considerably increased by pretense treatment of 15 minutes and it reached the maximum value by treatment of two hours.

  • The treatment of acid rock drainage was reviewed and evaluated for the case of pyrite rocks distributed in a highway embankment. During the highway's construction, neutralization using alkaline water repellent was applied to the embankment section to prevent acid rock drainage. However, it still occurred long after the construction was completed owing to rain infiltration, and the acid rock drainage polluted the surrounding soils and streams. To solve this problem, treatment facilities such as SAPS (Successive Alkalinity Producing Systems) or ecological wetlands and sand filtration were installed. After the installation of the treatment facilities, the effluent and soils contaminated by acid rock drainage nearby the outlet of the facilities were analyzed and evaluated for a period of years. Measurements of the pH of the effluent and analysis of the heavy metal contamination of the soils confirmed that the neutralization treatment for acid rock drainage is being performed properly and that contamination of heavy metals in the acid rock drainage is also being stably controlled by the treatment facilities.

  • The experiment has been carried out to clarify the condition of acid treatment for preventing the crack formation caused by swelling and shrinking during acid leaching process. The borosilicate glass contained phosphorous pentoxide was chosen as the sample, which is recognized to be more homogeneous in phase separation. The various effects, such as kind, cocentration and acid temperature, were investigated. The experimental results are summerized as follows. (1) Sulfuric acid is more stable than hydrochrolic acid for preventing the crack. (2) The optimum concentration of acid lies in the range of 0.1~0.3N. (3) Higher temperature of the acid to treat the separated glass was more stable than lower temperature. (4) The rate of crack decreased with the longer period and the higher temperature of the heat treatment.

  • Organic acid is made with carbonized organic acid that is produced from charcoal burning process. It is evaluated whether carbonized organic acid is able to removed Enteromorpha in the laboratory and Porphra aquaculture farm test. The optimum condition for Enteromorpha removal are revealed ten times dilution and ten second immersion. The mortality rate of Enteromorpha is $95\%$ and diatom-detaching rate is $100\%$ by the organic acid treatment. On the other hand, the mortality rate of Porphra is lower than $5%\$. It was measured that nitrogen was 0.175 mg/l and phosphorus was 0.0158 mg/l. Therefore, Concentration of nutrients were lower than being necessary to Porphra growth. Growth rate of Porphra was $12\%$ increased by organic acid treatment with carbonized organic acid added nutrient.

  • To extend the shelf-life of freshly cut lotus roots, the effect of their heat treatment in water at $50^{\circ}C$ was investigated and compared with that of their treatment using 1 percent ascorbic acid and citric acid during their storage. In addition, consecutive heat and acid treatment was applied to freshly cut lotus roots to determine its synergy effect. The level of molds in the sample that was treated with $50^{\circ}C$ water for 60 minutes was the lowest among the treatments and 3.89 log CFU/g after 12-day storage, whereas the population of the control was 6.81 log CFU/g for the same number of days. During the storage, the surface color of the samples showed higher ${\Delta}E$ values and lower L values than that of the initial sample. The color with the heat treatment hardly changed, unlike in the control. The consecutive treatments with hot water and acid showed less quality loss than the simple heat treatment. The marketable quality was maintained for three days without any treatment, for nine days with the heat treatment, and for 12 days with the consecutive treatments of hot water and acid. The consecutive treatments with hot water and acid, especially with 1 percent citric acid, extended the shelf-life of the freshly cut lotus roots by inhibiting the growth of microorganisms and the browning.

  • To improve the quality and prolongation of chopped ginger, they were treated with NaCl, citric acid, ascorbic acid alone or combination of them at $5^{\circ}C$. The browning and stink of chopped ginger were prevented by adding 10% NaCl, $0.5{\sim}2.0%$ citric acid, but the control became severely browned and deteriorated after 1 month storage. The application of 0.5% citric acid maintained citrine color and decreased the activity of polyphenol oxidase(PPO) more significantly compared to 5.0% NaCl or 0.5% ascorbic acid. Ascorbic acid treatment become browned at $1.0{\sim}2.0%$ and easily deteriorated compared to citric acid. Citric acid(0.5%) or ascorbic acid (0.5%) treatment was largely variation of pH compared to NaCl(5.0%)+citric acid(0.5%) or NaCl(5.0%)+ascorbic acid(0.5%) treatment during 8 month storage. The activity of PPO in NaCl(5.0%)+ascorbic acid(0.5%) treatment was elevated after 4 month storage. In chopped ginger, NaCl(5.0%)+citric acid(0.5%)+ascorbic acid(0.25%) treatment was more effective than 5.0%+0.1%+0.1%, 5.0%+0.5%+0.1% during 12 month storage.

  • Using alkali treatment solution, neutrality treatment solution and acid treatment solution, the surface corrosion layer of copper plates and bronze plates that have been artificially corroded using HCl, $H_2SO_4$ and $HNO_3$ solutions were removed. In the case of alkali treatment solution, only air oxidation in the form of black tenorite and white cuproous chloride remained without being removed. In the case of using a neutrality treatment solution, a anhydrous type layer of reddish brown cupric chloride remained without being removed, together with this black and white corrosion substance. In the case of using an acid treatment solution, this red corrosion substance also remained, but all of the oxide was removed on the surface of the specimen that was treated by alternatively using alkali treatment solution and acid treatment solution. In the case of this treatment solution with the order of alkali-acid, oxidation no longer proceeded only through the distilled water cleaning process after treatment, thereby showing that oxidation from the cleaning solution no longer proceeded.
