To get basic data for the utilization of Pinkpop Borisu fruit and leaf as a raw material in functional food, antioxidative activities were investigated. The radical scavenging activity of various solvent fraction from fruit and leaf against the DPPH and ABTS radicals increased with the increasing amount of various solvent fractions and butanol fraction of leaf showed the highest DPPH radical scavenging activities. Among the various solvent fractions from fruit and leaf of Pinkpop Borisu, butanol fraction of leaf showed the strongest scavenging effect on ABTS radicals. Reducing power and ferric reducing/antioxidant power (FRAP) of the various solvent fractions from fruit and leaf increased with the increasing concentration of fractions and butanol fraction of leaf showed the highest reducing power. The butanol fraction of fruit and leaf showed strong antioxidative activity on linoleic acid system. Total phenolics contents of butanol fraction from fruit and leaf were 106.34 and 252.46 mg/g, respectively. The antioxidative activities of the butanol fraction from fruit and leaf are attributed to phenolic compounds. The present results suggest that butanol fraction of Pinkpop Borisu leaf would have the protective potential from oxidative stress induced by free radicals.
The antioxidant properties of Eriobotrya japonica leaf extract were investigated using DPPH and ABTS radical scavenging assay. The 80% ethanol extract of leaves ($IC_{50}$ values for DPPH and ABTS were 13.9 and $10.9{\mu}g/mL$, respectively) and young leaves ($IC_{50}$ values for DPPH and ABTS were 20.7 and $17.3{\mu}g/mL$, respectively) showed high radical scavenging activity. Additionally, the quantitative method for estimation of ellagic acid and chlorogenic acid from E. japonica leaves was optimized by HPLC/DAD. This method showed high linearity of the calibration curve with a coefficient of correlation ($R^2$) equal to 0.999. The LOD values for ellagic acid and chlorogenic acid were 2.35 and $0.73{\mu}g/mL$, respectively, whereas LOQ values were 7.13 and $2.22{\mu}g/mL$, respectively. Recovery of the two compounds was 99.7-108.0% with RSD values less than 5.31%. These results suggest that 80% ethanol extract of E. japonica leaves could serve as a potential source of natural antioxidant for us in various industrial applications.
In the current study, antioxidant properties of extracts from different parts of Taraxacum officinale were determined by measuring the radical scavenging activity of 1,1-diphenyl-2-picryl hydrazyl(DPPH) and 2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS). The antioxidant activity of aerial and root parts of this plant was measured in extracts obtained from various solvents, e.g., water, 50, 70, 100% ethanol, and hot-water. The hot-water extracts had the highest radical scavenging activities. A further study was conducted to determine the total antioxidant activity of hot-water extract fractions obtained from different solvents, e.g., chloroform, ethyl acetate, n-butanol, and water. The ethyl acetate fraction of this extract displayed the strongest DPPH and ABTS radical scavenging activity and the highest total phenolic contents. The inhibitory effect of individual solvent fractions on the production of nitric oxide in LPS-stimulated RAW 264.7 cells was measured. The results indicated that the ethyl acetate fraction of aerial and roots part extracts significantly reduced nitric oxide productions.

This research analyzed cell survival rate according to antioxidative effect and cytotoxicity using Sasa quelpaertensis and Ethanol extracts. Sasa quelpaertensis used extracts of $95^{\circ}C$ boiled-water extract and 70% ethanol liquid each. For total polyphenol content, tannin content, and flavonoid content, polyphenol content of $95^{\circ}C$ boiled-water extract was 26.6 mg/g while that of 70% ethanol extract liquid was 22.3 mg/g, which means polyphenol content was higher in $95^{\circ}C$ boiled-water extract. Tannin content was 72.1 mg/g in $95^{\circ}C$ boiled-water extract which was higher than 61.2 mg/g in 70% ethanol extract liquid. Total flavonoid content was higher in 70% ethanol extract liquid (25.4 mg/g) than in $95^{\circ}C$ boiled-water extract (17.8 mg/g). Further, the researcher measured DPPH radical elimination and ABTS radical elimination. As a result, as the concentration of each extract increased, DPPH radical elimination and ABTS radical elimination increased. In the DPPH radical elimination, L-ascorbic acid was eliminated at 500 ppm and showed no change even though the concentration increased, whereas it increased in BHT and Sasa quelpaertensis leaf extracts according to concentration. ABTS radical elimination indicated the similar phenomenon, whereas BHT showed maximum elimination at 500 ppm and decreased gradually as the concentration increased. On the other hand, it gradually increased in Sasa quelpaertensis leaf extract and showed 90% elimination at 10,000 pm, and it increased in $95^{\circ}C$ boiled-water extract. Using human skin fibroblasts (3T3) to check the cell survival rate of Sasa quelpaertensis leaves showed that cell survival rate decreased between 85.6 and 66.6% in $95^{\circ}C$ boiled-water extract. The cell survival rate was between 95.4 and 92.1% when using 70% ethanol extracts. Sasa quelpaertensis has efficacy as a natural antioxidant as well as a material hyangjang.

In this study, we investigated the antioxidants activity by measuring electron donating ability and ABTS radical scavenging ability of the extracts from Rutaceae fruits (citron, grapefruit, lemon, mandarin orange, orange, trifoliate) to evaluate its use as a antioxidants in foods and cosmetics. Rutaceae fruits extract were separated in two parts of whole fruit (pulp, pulp fegment membrane, peel) and peel, dried, and then extracted with 70% ethanol. As a result of comparing the antioxidant effect at the concentration of 10,000 ㎍/mL, the electron donating ability was higher in the dried lemon peel extract (DLPE, 88.15%) and the dried citron whole fruit extract (DCWE, 80.44%), and the ABTS radical scavenging ability was highest in lemon peel and dried peel extract at 94.85% (FLPE) and 92.83% (DLPE). In conclusion, it was confirmed that lemon showed the highest antioxidant effect among the Rutaceae fruits(citron, grapefruit, lemon, mandarin orange, orange, trifoliate), and it was confirmed that the dried peel extract had a significant effect. Therefore it is considered that the dried lemon peel extract has the potential to be used as a natural antioxidant material in food and cosmetics.

Ojeok-san has been commonly used to treat low back pain disease. We performed the experiments on simultaneous analysis of 11 compounds and antioxidant effects of Ojeok-san. A HPLC method was established for simultaneous analysis of 11 compounds. The detection wavelengths were set at 230, 254, 280, 320, and 330 nm. The detected 11 compounds from Ojeok-san water extract showed good linearity($r^2{\geq}0.9997$). Limit of detection(LOD) and limit of quantification(LOQ) were 0.04-0.87 ${\mu}g/mL$ and 0.13-2.63 ${\mu}g/mL$, respectively. The antioxidant effects of Ojeok-san water extract were investigated by DPPH and ABTS assays. Ojeok-san water extract significantly increased the DPPH and ABTS radical scavenging effects in a dose-dependent manner. The $RC_{50}$ value of Ojeok-san on DPPH radical was 284.71 ${\mu}g/mL$ and that of ABTS radical was 96.16 ${\mu}g/mL$.

The present study examined the anti-inflammatory and anti-oxidative effects of Pinus koraiensis (PK) cone shell extracts in vitro. Anti-inflammatory and anti-oxidative effects of PK cone shell extracted with hot water, 20% ethanol (EtOH), or 50% EtOH were examined using 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging assay, superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPx) activites, as well as nitric oxide (NO) and anti-inflammatory cytokine measurements. The 20% EtOH extract of the PK cone shell decreased the NO and inflammatory cytokines secretion, and increased the ABTS radical scavenging, SOD, CAT, and GPx activities. This indicates that the 20% EtOH extract of the PK cone shell would be helpful in inflammation and oxidation systems. Therefore, the 20% EtOH extract of PK cone shell has great potential as a useful health food.
The effect of the addition of Allium hookeri on the quality of fermented sausage made with meat from sulfur fed pigs was examined, throughout a 60 d ripening period. There were two treatments in animal management: normal feed fed pigs, and sulfur fed pigs given 0.3% sulfur mixed normal feed. Fermented sausage manufactured with meat from normal feed fed pigs, and with meat from sulfur fed pigs, and 1% A. hookeri-containing fermented sausage processed with meat from sulfur fed pigs, were determined at 1 d, 15 d, 30 d, and 60 d. The meat qualities in fermented sausage were measured by DPPH radical scavenging activity (DPPH), $ABTS^+$ radical scavenging activity ($ABTS^+$), total phenolic acids, and total flavonoid contents. Fermented sausage made from pigs that had been fed with 0.3% sulfur was protected from oxidation by reduced free radical, as shown by the significant increase in DPPH and $ABTS^+$ values, compared with fermented sausage made from normal feed fed pigs (p<0.05). A. hookeri-added fermented sausage with sulfur fed pork was shown to increase the values in DPPH, $ABTS^+$, total phenolic acid, and total flavonoid contents, by comparison with both the control sausage, and sausage with sulfur fed pork, at 60 d. These results suggest that A. hookeri in meat from sulfur fed pigs could be a source of natural addition, to increase quality in the food industry.

This study was conducted to investigate the antioxidant activities of 70% ethanol extracts from different parts (root, stem, and leaf) of Epimedium koreanum Nakai. Ethanol extracts from the three parts of Epimedium koreanum Nakai were assessed for total phenolic content, total flavonoid content, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity, myoglobin protective ratio, and ferric reducing antioxidant power (FRAP). Root part showed the highest total phenolic content ($2.468{\pm}0.017mg$ chlorogenic acid equivalent/g) and total flavonoid content ($2.071{\pm}0.002mg$ quercetin equivalent/g). Leaf part showed the strongest radical scavenging activities (DPPH radical; 80%, myoglobin protective ratio; 90% and FRAP; 98.7% at 20 mg/mL). Root part showed the highest ABTS radical scavenging at 1 mg/mL. Therefore, the results of the antioxidant activity test were correlated with total phenolic and flavonoid content values. Thus, Epimedium koreanum Nakai has great potential as a natural source for human health.

This study was performed to evaluate the antioxidant activity capacity of extracted seed oils by pressure method using domestic plant resources as a cosmetics material. Four type of oil were extracted from pumpkin seed, camellia seed, red pepper seed, peanut. The extracted seed oils were analyzed for fatty acid composition by GCMS, The antioxidant activity evaluated by DPPH radical scavenging activity, ABTS radical cation decolorization activity. Pumpkin seed oil(PSO), camellia seed oil(CSO), peanut oil(PO) showed higher ratio of unsaturated fatty acid than saturated fatty acid. After heat treatment, the content of unsaturated fatty acids was higher than that of saturated fatty acids except for red pepper seed oil(RSO). In the result of DPPH, ABTS antioxidant activity, RSO were the highest 87.84%, 76.72% at the $200{\mu}{\ell}/m{\ell}$, PSO, PO and CSO were the highest antioxidant activities at the $1000{\mu}{\ell}/m{\ell}$. Compared with the positive control olive oil, DPPH radical scavenging activity of RSO, PSO and PO showed higher than the control. ABTS radical cation decolorization activity of RSO and PSO is stronger than the control. After heat treatment, the antioxidant activity capacity showed a slight difference, four type of oils is expected as having potential to be useful as a cosmetic material.
