Digestibility and Antioxidant Activity of Instant Cooked Rice with Seaweed for Home Meal Replacement (해조류 첨가 가정간편식(HMR) 즉석밥의 소화율 및 항산화 활성)

  • In recent years, the home meal replacement (HMR) market has expanded and the consumption of ready-to-heat (RTH) rice has significantly increased. In this study, RTH rice products containing seaweed were prepared with different types of grain: white rice, a mixture of white rice and barley, barley, and mixed grains. The control was a commercial RTH white rice without seaweed. The proximate components, total dietary fiber, in vitro starch digestibility, and antioxidant activity were compared. The ash content of the RTH seaweed rice was higher than that of the control (P<0.05). The total dietary fiber of the RTH seaweed rice was in the range of 1.03-6.57%, which directly impacted the in vitro starch digestibility. The in vitro antioxidant activity including total phenolic content, reducing power, DPPH (2,2-diphenyl-1-picryl-hydrazyl) and ABTS+ (2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid) radical scavenging activity of the seaweed rice with barley and the white rice/barley mixture was greater than that of the other rice products (P<0.05). These results indicate that the in vitro digestibility and antioxidant activity of the HMR RTH seaweed rice were greater than those of the control. In addition, when the RTH seaweed rice was prepared with barley, the functional activity improved.

Effects of Additional Levels of Phyllostachys bambusoides on Ruminal Fermentation Characteristics and Methane Emission in in vitro (왕대의 첨가수준이 반추위 in vitro 발효성상과 메탄 발생량에 미치는 영향)

  • The current study was to evaluate the antioxidant activity of Phyllostachys bambusoides (PHB) as a feed additives and investigate whether its antioxidant activity could be helpful for increasing rumen fermentation characteristics and methane reduction. The antioxidant activity results showed that total polyphenols and flavonoids contents were 43.54 ± 8.68 mg CE/g and 17.13 ± 0.45 mg QE/g, respectively, and the IC50 values for 1,1-diphenyl-2-prcrylhydrazyl (DPPH) and 2,2'-azino-bis (3- ethylbenzthiazoline-6- sulphonic acid) (ABTS) radical scavenging activity were 163.13 ± 19.25 ㎍/mL and 97.07 ± 4.46 ㎍/mL, respectively. Two heads of cannulated Hanwoo (450 ± 30 kg), consuming timothy hay and a commercial concentrate (60:40, w/w) twice daily (at 09:00 and 17:30) at 2% of body weight, with free access to water and a mineral block, were used as rumen fluid donors. An in vitro incubation experiment was performed after 6, 12, 24, 48, and 72 hr with PHB added at concentration of 2, 4, and 6% of timothy hay basis. Total gas emission decreased as the amount of PHB addition increased at 6 and 24 hr of incubation. However, PHB addition did not affect total volatile fatty acid production, and methane and carbon dioxide emission also decreased as the amount of addition increased at 48 hr of incubation. Therefore, PHB was expected to be used as methane reducing additives in the ruminants.

Physicochemical Characteristics and Physiological Activities of Naturally Fermented Glasswort (Salicornia herbacea L.) Juice (자연발효 함초액의 이화학적 특성 및 생리활성)

  • We investigated the physicochemical properties and physiological activities of glasswort juice fermented naturally for different periods of time. Glasswort juice fermented for six years (LFGJ) showed higher crude fiber and lower NaCl content than glasswort juice fermented for two years (SFGJ). Fermented glasswort juice contained K, Mg, and Ca as the main minerals, and the mineral content in both SFGJ and LFGJ were similar. The main free amino acids of fermented glasswort juice were determined to be alanine, proline, aspartic acid, and lysine. The leucine and aspartic acid content in LFGJ was higher than that in SFGJ. SFGJ had higher 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS$^+$) radical-scavenging activities than LFGJ. Fermented glasswort juice showed high ACE inhibition and ${\alpha}$-glucosidase inhibition activities regardless of how long it was fermented. An oral glucose tolerance test was carried out in rats fed diets containing 4% NaCl (control) or 4% NaCl+2% LFGJ (LFGJ). The LFGJ group showed enhanced glucose tolerance compared to the control group.

Functional Investigation of Ogaza Extract (오가자 추출물의 기능성 검정)

  • Multiple lines of study have shown that Acanthopanax species have anti-oxidant and chemopreventive effect. However, the suitability of Acanthopanax sessilifloru fruit (Ogaza) as a functional food source remains to be investigated. Therefore, we have investigated the effect of Ogaza as an anti-oxidant and anti-inflammatory substance. The phenolic content of Ogaza is 56.1${\pm}$5.2 mg gallic acid equivalents (GAE) per 1 g of Ogaza. The 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging effects of Ogaza extract at 0.25, 0.5, 1, or 2 mg/mL were 34.0, 73.0, 194.3, or 339.7 $\mu g$/mL vitamin C equivalent antioxidnat capacity (VCEAC), respectively. Ogaza extract (1 or 2 mg/mL) inhibited LPS-induced TNF-$\alpha$ production (decrease of 22${\pm}$2% or 19${\pm}$6%, respectively). It also inhibited LPS-induced IL-6 production (decrease of 18${\pm}$2% or 24${\pm}$3%, respectively). In addition, Ogaza extract (0.25, 0.5, 1, or 2 mg/mL) inhibited COX-2 luciferase activity (decrease of 80${\pm}$1%, 83.${\pm}$7%, 96${\pm}$4%, or 98${\pm}$2%, respectively). Overall, these results indicated that Ogaza is promising as a functional food source due to its antioxidant and anti-inflammatory effects.

Antioxidative Activities and Components of Gardenia jasminoides (치자의 항산화 활성 및 활성성분의 분리)

  • From the total methanolic extract of Gardenia jasminoides (Rubiaceae), various antioxidative characteristics were identified in terms of nitrite scavenging ability, 2,2'-azino-bis (3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radical cation inhibition, superoxide dismutase (SOD)-like activity, and elongation effect of lipid peroxidation using Rancimat. After successive partitioning with n-hexane, chloroform, n-butanol, and water, potent nitrite scavenging abilities were shown in the n-butanol fraction and water fraction, and $IC_{50}$ values were 183 ppm and 194 ppm, respectively. As for ABTS radical cation inhibition, the chloroform fraction was most potent and its $IC_{50}$ was 159 ppm. SOD-like activity was slightly low in all of the fractions. The elongation effect of lipid peroxidation also increased dose-dependently and the antioxidative index (AI) of the total methanolic extract was 2.93 in 1000 ppm, which was more effective than 1.66 of butylated hydroxy anisol in the same concentration. The compounds I and II were isolated through silica gel column chromatography of the active fractions, and identified as geniposide and crocin, respectively, by $^1H-NMR$ spectral data. The $IC_{50}$ values for the nitrite scavenging abilities of geniposide and crocin were 940 ppm and 77 ppm, respectively. In ABTS radical cation inhibition, the $IC_{50}$ values of geniposide and crocin were 684 ppm and 549 ppm, respectively. And the $EC_{50}$ value for SOD-like activity of crocin was 259 ppm, which was much smaller than 453 ppm by the positive control, chlorogenic acid. The $EC_{50}$ value of geniposide could not be identified.

Physicochemical and sensory evaluation of wheat cookies supplemented with burdock powder (우엉 분말을 첨가한 쿠키의 물리화학적 및 관능적 평가)

  • Burdock powder (BP) has shown diverse functional activities; thus, it seems a good way to increase its consumption by incorporating BP into suitable food products such as cookies. Studies were carried out on cookies prepared by incorporating BP (2%, 4%, 6%, and 8%) into wheat flour. The cookie dough and cookies were evaluated for their physical, chemical, and sensory characteristics. The pH and density of cookie doughs ranged from 6.70-6.85 and 1.19-1.21, respectively, with no remarkable differences. Moisture content and spread factor of cookies appeared to increase with higher content of BP in the formulation but did not show significant differences (p>0.05). For color values of cookie surface, $L^*$, $a^*$, and $b^*$-values significantly decreased as a result of BP substitution (p<0.05). The cookies became crispier as indicated by the reduction in the breaking strength value from 26.71 to 17.83 N. 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly increased (p<0.05) with higher substitution of BP, and they were well correlated. Hedonic sensory results indicated that cookies supplemented with 2% BP received the most favorable acceptance scores for all sensory attributes evaluated. Overall, cookies with BP could be developed with improved physicochemical qualities as well as consumer acceptability.

Physicochemical and sensory characteristics of sponge cakes supplemented with black tea powder (홍차 분말을 첨가한 스펀지케이크의 품질 및 항산화 활성)

  • Black tea is rich in phenolic antioxidants that has shown diverse health benefits such as protection against cardiovascular diseases and cancers. Thus, it is rational to incorporate black tea into suitable food products such as sponge cakes to enhance their nutritional and functional qualities. The aim of this study was to investigate the effect of the addition of black tea powder (BTP) on the quality of sponge cake. The pH of cakes ranged from 7.00~7.17, with no remarkable differences. Height decreased while baking loss rate and hardness significantly increased with increases in the content of BTP in the formulation (p<0.05). For crumb color values, $L^*-value$ decreased while $a^*$ and $b^*-values$ increased as a result of BTP substitution. 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly increased (p<0.05) with increases in the content of BTP which were well correlated. Hedonic sensory results indicated that sponge cakes supplemented with 2~4% BTP obtained the most favorable acceptance scores. On the basis of the overall observations, sponge cakes supplemented with 2~4% BTP were found to be benefit from the functional properties of BTP, without compromising on consumer acceptance.

Quality and Antioxidant Properties of Pound Cakes Supplemented with Flaxseed Powder (아마씨 분말을 첨가한 파운드케이크의 품질 및 항산화 활성)

  • The feasibility of incorporating flaxseed powder up to 8% (w/w) as a value-added food ingredient in convenient food products was investigated using pound cake as a model system. The moisture content, volume, height, and hardness of cakes decreased significantly with increasing levels of flaxseed powder (P<0.05). On the other hand, baking loss increased with higher flaxseed powder in the formulation (P<0.05). Lightness and yellowness decreased, whereas redness increased significantly (P<0.05). 1,1-Diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities increased significantly (P<0.05), and they were well correlated. The consumer acceptance test indicated that addition of 2% flaxseed powder had the most favorable effect on consumer preferences in general. Based on the overall observation, pound cakes with 2% flaxseed powder is recommended to take advantage of its functional properties without sacrificing consumer acceptability.

Protective Effects of Green Tea Seed Extract against UVB-irradiated Human Skin Fibroblasts (인체 피부 섬유아세포에서 자외선 조사에 대한 녹차나무 씨 추출물의 보호효과)

  • In this study, we investigated the protective effects of green tea seed extract (GSE) against UVB-induced skin damage in human skin fibroblasts. GSE was first analyzed for antioxidant activity using 1,1-diphenyl-2picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radical scavenging assays. Treatment of UV-irradiated fibroblast with GSE at 10~50 ${\mu}g/mL$ significantly increased DPPH and ABTS radical scavenging activities in a dose-dependent manner. GSE treatment inhibited matrix metalloproteinase (MMP-1, MMP-3, and MMP-9) expression and MMP-1 secretion caused by UVB irradiation. Moreover, treatment with GSE significantly increased type-1 collagen expression and production. We next examined levels of antioxidative enzymes (SOD, catalase, and GPx). Reduced antioxidative enzyme activities caused by UVB irradiation were recovered by treatment with GSE at 30 ${\mu}g/mL$ and 50 ${\mu}g/mL$. In conclusion, these results show that GSE has protective effects against UVB-induced skin damage in human skin fibroblasts by regulating antioxidative defense systems and MMP expression.

  • Constituents of the essential oil (EO)s and hydrosol of rosemary (Rosmarinus officinalis L.) and lavender (Lavandula angustifolia Mill.) were analyzed by gas chromatography-mass spectrometry (GC-MS). The identified major constituents were ${\alpha}$-pinene (40.96%), camphor (34.44%), verbenone (45.31%), and camphor (67.04%) in rosemary EO, lavender EO, rosemary hydrosol, and lavender hydrosol, respectively. The antioxidant activity of EO and hydrosol extracted from rosemary and lavender were evaluated. Both EO showed di(phenyl)-(2,4,6-trinitrophenyl) iminoazanium (DPPH) and 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) free radical scavenging activities as well as $Fe^{2+}$ ion chelating activity but no alkyl radical scavenging activity. Rosemary EO showed higher DPPH radical scavenging activity than lavender, whereas lavender EO showed higher $Fe^{2+}$ ion chelating activity. Both rosemary and lavender hydrosols showed alkyl radical scavenging activity, but only lavender hydrosol showed an activity on $Fe^{2+}$ chelating assay. Both rosemary and lavender hydrosols also protected the dermal fibroblast and the HaCaT keratinocytes against $H_2O_2$-induced cytotoxicity.
