To identify effective food packaging compounds that could significantly affect the freshness of stored food, the efficiency and performance of porous polypropylene film containing mustard oil as a freshness maintenance ingredient was studied by GC-MS analysis and storage testing of bread. AITC (allyl-isothiocyanate)-emitting properties of films impregnated with mustard oil were evaluated by GC-MS. AITC was extracted from mustard oil, and used as a vapor as an effective antimicrobial agent. Films were prepared under four different conditions (the film types were abbreviated 25SF1, 25SF2, 50LF, and IAF) and the amounts of AITC inside vinyl packs constructed using the four films were measured. The results showed that the 25SF2 film (width 25 mm, length 20 cm) yielded a greater amount of AITC than did the 50LF film (width 50 mm, length 20 cm). We confirmed that the amount of gas emission showed better between layer and layer of the film side than the internal film. In storage testing using various films at $35^{\circ}C$ for 25 days, 25SF2 film provided excellent preservation of bread compared with 50LF film. This was in line with the fact that 25SF2 film yielded the highest amount of AITC. Emission capacities AITC of 2 cm film were measured using bottles various volumes (43 mL, 500 mL, 1000 mL) and both closed and open systems. The AITC content of the film in 43 mL bottle was much higher than that yielded by other films in the closed system, and AITC was rapidly emitted, with relatively low residual gas emission after 4 days in an open system. Mustard oil is a useful freshness maintenance ingredient hence, analysis of AITC emission kinetics from various films were helpful to develop films with optimal antimicrobial effects, and will allow application of such films in food packaging systems.

Coptis chinensis is used in oriental medicine for soothing, anti-inflammation, antimicrobial and antipyretic properties, and its main ingredient berberine is known to have strong antibacterial activity. In this study, we investigated the anti-microbial effect of hot water extract of Coptis chinensis (CW) on skin related microorganism and the airborne microbe, the antifungal effects of fungi, which are frequently detected in residential environments. CW showed antibacterial effect against Propionibacterium acnes, Staphylococcus aureus and Staphylococcus epidermidis, against the airborne microbe, which was collected in four different places. At the concentration of 100 mg/mL, the antimicrobial activity continued for 42 days, showed heat stability without change in the antimicrobial activity even after heat treatment. The MIC and MBC of CW against S. aureus was 0.03, 0.05 mg/mL, against S. epidermidis was 0.50, 0.75 mg/mL and against P. acne was 0.10, 0.15 mg/mL. As a result of measuring the MIC of four kinds of fungi with high detection frequency in the surrounding environment, Gliocladium virens was 65 mg/mL by determined as MIC which can inhibit one hundred percent of mycelial growth. The concentration 90 mg/mL was determined as MIC against Aureobasidium pullulans and 100 mg/mL against Penicilium pinophilum and Chaetomium globosum. CW was considered a safe extract that showed no irritation even in the ocular mucous membrane irritation evaluation test, a patch test. Therefore, these results suggest that Coptis chinensis has antimicrobial, antifungal and safety on human body and can be applied to the development of materials for cosmetic and residential environment industries.
Silkworm larvae often suffer from viral infections causing heavy losses to the economy of silk industry. Insects exhibit both humoral and cellular immune responses that are effective against various pathohens like bacteria, fungi, protozoa, etc., but no insect immune responses is effective against viral infection. To obtain genes related to insect antiviral immunity from Bombyx mori, the cDNA library was constructed from B. mori nucleopolyhedrovirus (BmNPV)-infected B. mori. From the cDNA library, we selected 411 differentially expressed clones, and the 5' ends of the inserts were sequenced to generate ESTs. In this work, 135 unigenes were generated after the assembly of 411 differentially expressed clones ESTs. Of these 135 unigenes, we selected 109 antiviral response-related candidates except 26 clones that high similarity with genes derived from BmNPV. Among 109 unigenes, a total of 80% had significant matches to genes from other organisms in the database, wheres 20% of the unigenes had not matched in the database. Functional groups of these sequences with matches in database were constructed according to their putative biological function. Three largest categories were control of cellular oraganization (52%), metabolism (20%), and protein fate (10%). The genetic information reported in this study will provide more information about antiviral-related genes in silkworms.
Post-harvest rot of grape causes a severe economic loss and lower of the grape quality. It is also one of the important limiting factors for grape export. Grape rots and their casual agents on 'Red Globe' variety imported from Chile were identified. Grapes shown rotting symptom were collected from the storages near the import harbor. The 3 different rots were identified on the imported 'Red Globe'; melting decay, gray mold, and blue mold. A bacterium that isolated from a typical melting decay symptom was identified as Gluconobacter cerinus on basis of its nucleotide sequence of 16S rDNA and fatty acid profile. By inoculation on grape, it caused cracking and dissolution of epidermis of grape which were the characteristics of melting decay. Botrytis cinerea and Penicillium expansum were isolated from grapes showing gray mold and blue mold. The 2 fungal isolates were identified on basis of their morphological characteristics and nucleotide sequence of their beta-tubulin genes. They showed strong pathogenicity on 'Campbell Early' variety that is a major table grape in Korea.

This study was carried to investigate the efficiency of antimicrobial plant extracts as natural preservative in the cosmetic formulations. Ethanol extracts of different plants were tested using the disc diffusion (paper disc) method and the minimum inhibitory concentration (MIC) method for their antimicrobial activity against the common poultry pathogens. Terminalia chebula and Rhus japonica (gallut) extracts exhibited antibacterial activity against Staphylococcus aureus, Pseudomonas aeruginosa and Escherichia coli. Cinnmomum cassia extract exhibited antifungal activity against Candida albicans and Aspergillus niger while the remaining plant extracts showed no activity. A study of the preservative efficacy of the cosmetic formular containing the T. chebula, R. japonica and C. cassia extracts demonstrated sufficient preservative efficacy against bacteria and eukaryotic test microbes. Also, the cosmetic formulations containing antimicrobial plant extracts more effectively inhibited the microoranisms than the mixture of traditional chemical preservatives. These results suggest that the mixture of antimicrobial plant extracts, T. chebula, R. japonica and C. cassia is incorporated as preservative in the cosmetic formulation and the mixture have considerable effect on its efficacy.

The crude galactomannans (GMs) were obtained from the culture of a newly isolated fungus Trichoderma erinaceum DG-312 and their anti-inflammatory activity was investigated in mice. The maximum concentrations of mycelial biomass and GMs reached 9.44 g/l, 2.72 g/l at day 3 in a 5-l stirred-tank bioreactor, respectively. The results of Sepharose CL-6B gel chromatography and compositional analysis revealed that the crude GMs contain heterogeneous polysaccharides consisting of $74.9\%$ mannose and $24.1\%$ galactose. The GMs was shown to possess a significant anti-inflammatory activity against acetic acid-induced inflammatory mouse model in a dose-dependent manner, when mice were treated with 100 and 200 mg GMs/kg body weight. The inhibition in vascular permeability $(60.6\%)$ and in writhing response $(62.5\%)$ evidenced an anti-inflammatory activity of the GMs. The marked anti-inflammatory and writhing-lowering properties of the GMs suggest its potential therapeutic use.
Potassium Sorbate (PS) is a potassium salt version of sorbic acid, which has antimicrobial and fungistatic features in foods. Therefore, PS is used as a food preservative against fungi and mold. PS has been found to be non-toxic even when taken in large quantities given its trait to be broken down in the body into water and carbon dioxide. Gap Junctional Intercellular Communication (GJIC) is essential in the maintenance of tissue homeostasis during development and differentiation. This study was made of the effects of PS on GJIC in WB-F344 rat liver epithelial (WB) cells. We found dramatic decrease of cell viability in time- and dose-dependent manners when WB cells were treated with PS. The effect of PS on GJIC is strong inhibition, and it took place in parallel with a hyperphosphorylation of connexin 43 expression. The finding that PS interferes with gap junction functionality should be considered with respect to the mechanism of PS-induced hepatotoxicity.

Thirteen sesquiterpene lactones isolated from the flower of Chrysanthemum coronarium L., which has been widely cultivated in Korea as a vegetable for a long time, were investigated their antimicrobial activities against eight bacteria and five phytopathogenic fungi. The antimicrobial activities of dihydrochrysanolide (6) and 1-epi-dihydrochrysanolide (7) showed strong activities against all the bacteria such as Bacillus subtilis, Bacillus cereus, Staphylococcus aureus and Vibrio parahaemolyticus. Especially, Staphylococcus aureus was investigated that have very strong antibacterial activity to $1.56\;{\mu}g{\cdot}disc^{-1}$, respectively. Also, most of sesquiterpene lactones, which have ${\alpha}-methylene-{\gamma}-butyrolactone$ group, were exhibited strong activity to Gram(+) bacteria than Gram(-) bacteria. In the antifungal test, Rhizoctonia solani and Phytophthora capsici known as phytopathogenic fungi have exhibited all extensive activity about compounds that have ${\alpha}-methylene-{\gamma}-butyrolactone$ group.
Bioactivities of Korean ginkgo (Ginkgo biloba L.) extract were investigated against several fungi, general bacteria and insect pests. Crude methanolic extracts of different parts of Korean ginkgo showed different bioactivities depending on the target organisms. The methanolic extract showed in vitro antimicrobial activity at dose of 200 ug per paper disc. The extract of ginkgo stalk was some higher than seed coat and root. The extract also showed a remarkable in vivo antifungal activity against green mold (Trichoderma harzianum) on compost surface of spawn bags and in vivo insecticidal activity to Nilaparvata lugens, Plutella xylostella and Tetranychus urticae. This study suggests that Korean ginkgo extracts have a potential as a natural pesticide.
Streptomyces griseorubiginosus var. soyoensis previously identified, produced two kinds of antifungal antibiotics, trans-cinnamamide and another new substance. The latter was identified to be a new substance of tetraene family by establishment of UV, IR, NMR, mass spectra and chemical reactions and rotatively named as Tetraene KM-A. Through an antimicrobial activity test using serial agar dilution method, Tetraene KM-A showed strong growth inhibitory activity against fungi and yeasts, but not against procaryotes tested. The inhibitory action of Tetraene KM-A on fungi was remarkably ineffective when some of sterols were added to the cultural media. $LD_{50}$ of the Tetrene KM-A to mice and rats by intravenous injection were 84.3 and 90.4 mg/kg respectively. $LD_{50}$ to mice by oral feeding was 1503mg/kg.
