The Reestablishment of Event Factors in Buffet Restaurant Choice Process and the Interactions between Customer Satisfaction and Behavioral Intention (뷔페레스토랑 행사요인 발굴 후, 고객만족과 행동의도와의 관계성 연구)

  • This study explored the factors that decided to choose buffet restaurant. We have identified and recently, developed event factors that are of increasing importance. The event factor demonstrated the relationship between customer satisfaction and behavioral intention. As a result, the event factors had a positive effect on customer satisfaction and behavioral intention. In this study, event factors were derived and measurement questions were developed using semiotic analysis. The developed measurement questions were tested and surveyed to demonstrate the scale.

  • This study applied the Q methodology to customers using the Ethnick restaurant in Itaewon to understand subjective perceptions of customers using the restaurant. The purpose of the study is to characterize the subjective structure of the restaurant and to describe and analyze the characteristics of the types of subjective. As a result of type analysis, a total of five were derived. Type 1 (N=4) : Ethnic Food Preferred Type, Type 2 (N=5): Mainland flavour Seeking Type, Type 3 (N=3) : Food Material Sanitary Conditions Type 4 (N=6): The restaurant's Restaurant Service Preference Type, and Type 5 (N=2) : The mood sensibility type were analyzed to have various characteristics of each type. In future studies on Ethnick restaurants, we intend to modify and supplement the detailed Q methodological questions and analysis methods based on many literature and empirical studies to analyze the various opinions of the respondents in a specific and in-depth manner.

A Study on the Influence of Experiential Marketing in Deluxe Hotel Restaurants on Brand Personality (특급호텔 레스토랑의 체험 마케팅이 브랜드 개성에 미치는 영향)

  • The purpose of this study is to investigate the impact of experiential marketing on brand personality in the hotel restaurant. Especially, it verifies the relationship between experiential marketing and brand personality factors in hotel restaurants. Research methods targeting customers with deluxe hotel dining experience draw detailed brand personality factors and hotel restaurant experiences, along with an investigation of relationship between brand personality and strategic experience. As a result, among five factors of sense, emotions, perception, behavior, and relationship, only action and relationship influence competence, good feelings, activity, sophistication among five factors of competence, good feelings, activity, sophistication and strength. Therefore, future research should include the comparison of brand personality dimensions and the development of criteria for brand personality.

  • Although the effect of menu quality is very important in customer satisfaction and restaurant management, there are so many problems; many restaurants have not gotten out of their existing frames and ideas of customer services and management. Thus, this study chose some family restaurants, O, T, V, B, M in Seoul and Gwangju and examined the relationships of customer satisfaction, trust and revisit intention identified by their menu quality, using statistical data of total 199 copies of questionnaire. First, menu quality turned out to influence customer satisfaction partially. Second, customer satisfaction turned out to influence revisit intention. Third, trust of a customer turned out to influence revisit intention. In this respect, the image from menu quality of family restaurants perceived by customers must have affected customer satisfaction, trust, and revisit intention positively. Thus, it is expected that the study can contribute to working out effective business strategies in family restaurants in future.

  • This study examined customers from restaurants in hotels in the Busan and Gyeongnam region, South Korea, to confirm if dinging area decoration has any indirect effect on behavioral intention via customer emotional response and the mediating effects of customer emotional response in order to provide the basic materials of marketing strategies for continued customer visit to the hotel restaurants. The implications of the study are summarized as follows: First, if restaurant space is designed in consideration of gustatory, visual, auditory, tactile, and olfactory aspects, it becomes a reason for customers to re-purchase and spread good words of mouth. Second, restaurant food space should be designed to make customers pleasant and exciting. Third, the design of food restaurant design that induces customer emotional responses elevates customer re-purchase and intention to deliver words of mouth.

  • This study aimed to examine the roles of perceived convenience and usefulness of restaurant customers' revisit intention. To achieve the purpose of this study, it reviewed the theoretical background about perceived convenience, perceived usefulness and revisit intention and conducted an empirical analysis of them. For the empirical analysis, a questionnaire was given to a total of 228 regular restaurant customers at Busan area. The results were as follows. 1) The regular restaurant customers' perceived convenience and perceived usefulness had a significant effect on their revisit intention. 2) The regular customers' perceived convenience had an effect on their perceived usefulness. 3) Time elements and experience of visiting a restaurant had an effect on the perceived convenience. 4) Utilitarian values and hedonic values had an effect on the perceived usefulness.

A Comparative Study of Restaurant Customers' Waiting Time in a Quasi-experimental Setting (유사실험설계에 의한 레스토랑 고객의 대기시간 비교연구)

  • In recognition of the significance of waiting time in restaurant management, a quasi-experimental design was employed to measure the gap between actual and perceived waiting time in a real restaurant setting. In particular, this study focused on a comparison of Americans and Koreans to explore gender and culture differences in customer waiting behaviors. The results indicated that compared to American women, Korean women are more tolerant of waiting, and reported perceived waiting time as much longer than actual waiting time. However, there are no gender differences in both cultures. It is anticipated that managers will be able to adjust their operational strategies based on these results.

  • This study focuses on the analysis of the service process and interaction mode of the serving robot used in the restaurant, Through user research, shadowing research and indepth interviews with customers and catering service personnel, this paper analyzes the contact points between catering service machines, people and users, constructs user journey map to understand users' expectations. In addition to the delivery service that can be allocated to the machine and people, the blueprint construction of ordering, reception and table cleaning services can also included in the service process. The final proposal is to improve the existing machine human interface and design a new service scheme.

  • This study measures the impact of restaurant franchise brand equity and brand value on consumer loyalty and customer satisfaction. The purpose of this study was to investigate the relationship between variables based on previous studies. The survey for this present study was conducted from consumers who visited in a franchise restaurant within three months. in Seoul and the metropolitan area. Research revealed that brand equity and value of the franchise restaurant appeared to have a positive impact on customer loyalty, and then consumer loyalty exhibiting a positive impact on consumer satisfaction. In addition, brand equity and value of the franchise restaurant showed a positive impact on customer loyalty.

Effects of Service-environment and Waiting Time on Customers' Quality Perception in Fast-food Type Restaurants (패스트푸드 레스토랑의 서비스 환경과 대기시간이 고객의 품질인지에 미치는 영향)

  • Service environments are known to have effects on quality recognition in fine-dining and family type restaurants. The current study explores that the effects are also likely in the fast-food type ones. To verify the research method factor and reliability analysis of SPSS version 18.0 are applied. The program is also used to test the influences among variables. With multiple regression analysis the study finds that there is a significant effect of service environment on quality recognition in fast-food type restaurants. The study also finds that employees' uniform and cleanliness are more influential than waiting time which is generally known as a key factor in fast food service restaurants.
